he world and our times are moving fast, technology ensures the race is rampant and raging daily, hourly. The simpler times of America’s past decades seem so distant to us now. The people and places from that era of youthful exuberance have faded away. We try and hold on to those nostalgic memories with classic cars, music on vinyl, and reruns of old TV shows, but those years have passed. Yet with Goldie Hawn we feel them again, in the here and now, stoking those deep emotions of yesteryear. Goldie is an American icon whose youthfulness, energy, excitement, humility, talent, and beauty now span more than four decades. Wow! In this issue, we find our cover star just as she was, one of America’s special treasures, ushering to us that sweet taste of an idyllic past and assuring us that—it is so—some great things never change...

EYES WIDE OPEN

esign has always called to me. When done well, the relationship between shapes inhabiting a space—whether that relationship be one of contrast or harmony—will stop me in my tracks every time. From something as simple as finding an eyecatching wallpaper to accent a bathroom to the beauty of random grill marks speckling a bright yellow cob of corn, design seeps into every aspect of our daily lives...if we stop to take it in. Opening our eyes leads us to new appreciation of the beauty around us. With our awakened senses, we see more beauty, which leads to more appreciation. A vicious circle, it would seem, but of the best kind. Our cover star is someone who has lived her life with eyes wide open. Goldie Hawn is the embodiment of what it means to appreciate life: she treats every moment as a wonder and a stepping stone to the next opportunity. Each of her successes, it seems, only leads her to feel more grateful for what she has achieved and shares with her ever-growing family—the latest of which is her new home with longtime love Kurt Russell. Designed with family in mind, the home is spacious and beautiful but not untouchable, much like you would expect Goldie herself to be. Cozy rooms replete with treasures from travels abound, creating spaces in which to pass on to her grandchildren the art of finding joy in every moment. We create this magazine with that same curious spirit. With that in mind, I invite you to find a quiet place to linger over this issue of Cambria Style. I hope you will find something in here that will catch your eye, your taste buds—or perhaps your imagination—in the pursuit of living your best life.

Enjoy,

KITCHEN

Gray-marbled Cambria Ella on the backsplash and island unify the black and white elements of the high-contrast palette, while a trio of brass-trimmed pendants and a beveled edge on the island adds a touch of glam.

The moment interior designer Iris Dankner claps eyes on this striking home conceived by a builder and his style-savvy wife, she’s in love. “What I adore most about this house is the continuity of color,” she says. Think of it as classic monochrome…with a highcontrast twist. “It’s important to have a common design thread running through a home,” she explains. “The black and white here tells a dramatic story.” Indeed. Take the study’s barn-style roof, its soaring pitch emphasized by deepest charcoal walls. Or the unexpected black of a bathroom door. Set against a budgetfriendly lick of white paint or the minimalist sophistication of Cambria stone countertops, the juxtaposition of light on dark has loads of graphic charge. To keep the vibe from skewing too stark when using such a bold palette, add transitional furnishings: items neither too traditional nor too modern. “Simplicity is key to this look, and different textures,” Dankner says. Think chandeliers with clean lines. White oak floors distressed by hand. And for a dose of glamour? Go for gold. Milk-white stools in the kitchen are a canny choice as they disappear into the creamy backdrop of the Cambria stone kickboard, allowing the trio of light fixtures above— with their zingy metallic detail—to take center stage. Talk about eye-catching. C A M B R I A U S A . C O M / S T Y L E

LIVING ROOM

“The living room strikes a softer, more romantic note,” says Dankner. “Yet the dark fireplace void carries through that impactful black, creating continuity with the rest of the house.” Seating and other furniture is transitional, a mix of two ever-popular looks—traditional and contemporary—that hits the sweet spot between

STUDY

To highlight architectural details—like this soaring ceiling—try a swath of dark paint contrasted against white for drama. Pair white accessories with black shelving (or the reverse) to match. “It riffs on positive and negative space,” Dankner explains.

A timber floor, wire-brushed for texture, warms the overall vibe, as do carefully chosen furnishings. “Today you see a great mix of styles and eras, new and old, all in one home,” Dankner adds. “Here, the antique-style desk and transitional pendant soften the graphic color scheme.”

EXTERIOR

First impressions count! So, do as these homeowners did and ensure the outside hints at what’s inside. “Here, the mullion-grid window panels, black-tile roof, and white facade give a taste of the graphic setting to come,” says Dankner. “Exterior and interior work in seamless harmony.” To soften architectural edges, just add greenery.

A simple bathroom won’t date. But veer too plain and it becomes boring. Here, buff-colored flooring with a subtle herringbone pattern adds welcome detail, while a frameless glass shower creates the illusion of more generous space. Cambria Ella tops vanity counters for maximum durability. Dankner explains the appeal for designers: “I’ve always loved white marble but it stains. So to have what Cambria makes—a beautiful, tough, stain-resistant white stone with the look of marble—is so much more helpful to me as a professional.”

MODERN MASTERPIECE A home with pedigreed architectural heritage gets a new lease on life. By A M A N D A L E C K Y Photography by S T E V E H E N K E

Sixty-four years ago, architect Curtis Green—co-founder of famed architectural practice HGA, designed his home in Minneapolis’s Golden Valley as a testimony to his fledgling firm’s modernist style. With its spare geometric lines, flat roof, walls of glass, and wood paneling, the house was built to embody the mid-century modern movement, the hallmarks of which include an emphasis on form and material with minimal ornamentation. Green and his family lived in the house for decades, adding to the original structure over time (including an indoor pool), before selling. Successive homeowners made their own touches until the property came on the market 12 years ago. That’s when Greg Walsh and Dana Swindler entered the picture. “We’d been looking for a while when we came across the house online,” says Walsh. “We were interested immediately but because of a snafu with the real estate agent we couldn’t actually get inside to see it. We ended up looking through the windows. It was right after a snowstorm in February, so there was at least a foot of snow on the ground. The house looked a mess and the site hadn’t been well kept. It just seemed like too big a project, so we passed.” Months later, a price drop finally got the 2 6

couple inside for a closer look. What they found might have deterred other buyers: An awkward layout, a Mondrian-like color scheme of primary colors, and cheap replacement materials. But the pair could look past the surface problems to the home’s appealing, clean lines. “We could see that all the ugliness was basically bad decorating,” Walsh recalls. “The house had great bones and we knew that a few small changes would make a huge difference.” So, they took the plunge, buying the house and meticulously mapping out a two-phase plan to return it to its former glory, while simultaneously creating a comfortable home suited to a contemporary lifestyle. Phase one—getting the house back in shape—started with improving the floor plan by removing walls and built-ins. Two

small bedrooms on the main floor became one large study and lounge that doubles as a guest room. Eliminating a mudroom created a generous, open kitchen. A closet and hallway made way for a laundry room. And removing a wall upstairs created a master bedroom. Throughout, the design team took care to preserve the redwood strips that clad both interior and exterior walls. “It was as much a restoration as it was a remodel,” Walsh explains. “The most painstaking part was labeling the paneling so it would match when we put it back on the walls. But it’s amazing—when you walk around now you can’t tell where we intervened.” Clearing years of overgrowth let light and views into the house through the floor-to-ceiling glass. “Before, there were buckthorn and scrub trees Cambria designs shown (left to right): Cambria Black, Hamilton, Ella

GET THE LOOK You can add a dose of mid-mod flair to your home even if you don’t live in a mid-century house, says Cambria design expert Billy Beson. Here, he shares the elements that create the style.

SIMPLICITY

COLOR BLOCKING

“Mid-century modernism in its purest form began in the early 1950s and was based on Bauhaus principles, which emphasized a very pared-down aesthetic,” says Beson. Look for furnishings and fixtures that make their impact through strong form as opposed to applied detailing, and consider eliminating hardware from cabinetry, as Walsh and Swindler did in the kitchen.

“Modernist designers used contrasting solid color to define architectural transitions or add interest,” says Beson. Walsh and Swindler surrounded the open passageways between rooms with a wide border of redwood to mark the different spaces without interrupting flow and gave the kitchen impact with a trio of Cambria designs. pressed right up against the windows,” says Walsh. “Now, there’s light and air and you can see the huge oaks around the property.” Since phase one took “twice as long and cost twice as much” as the pair had planned, they took a few years off before launching phase two: the addition of a three-car garage and second-floor master suite. This project received just as much attention to detail. The architecture flows seamlessly from the original structure: window styles match and redwood paneling clads the bedroom walls and bathroom ceiling. Furnishings and fixtures with strong rectilinear shapes echo the modernist lines of the house, and natural materials—metal, stone, leather—play a starring role. When it came to decorating, Walsh and Swindler were led by the architecture but didn’t hew strictly

DINING ROOM

A pared-back color scheme keeps the focus on the bold pendant fixture and witty Lone Ranger and Tonto painting.

“If you look at this house by Curtis Green, you can immediately see the rectilinear shapes throughout, and that’s very common in midcentury design,” explains Beson. Incorporating rectangles and spheres—note the shape of the tub and vanities in the master bath or the dining room pendant light—or patterns with overlapping geometric shapes is an easy way to get an Atomic Age look.

“Hard-working materials were favored by the modernists,” says Beson. Concrete, metal, glass, wood, and stone all played an important role in mid-century design and can do the same in your own home. “Chrome or brushed brass furnishings and light fixtures or monochrome Cambria stone countertops are a great way to incorporate the look into any space,” says Beson.

to a style or period. “We mixed three genres: original mid-century pieces like the Mies van der Rohe Barcelona chairs in the living room, sleek contemporary elements, and belongings amassed over a lifetime of collecting. We wanted a period edge but not museum rooms.” The result is an eclectic and highly personal home that is as soothing as a retreat at the end of a 12-hour day as it is a spectacular backdrop for entertaining. After two major projects and more than a decade in the house, Walsh and Swindler have settled into their 3 0

roles as stewards of this architectural treasure. The success of their efforts shines through every inch of the space, as confirmed by a true expert not long after the renovation was completed. Curtis Green’s widow came to visit, with her daughters, recounts Walsh. “She hadn’t been in the house for at least 20 years and it took her a little while to figure out where she was in the layout. But at the end of the visit she gave me a big hug and whispered in my ear, ‘Curtis would have liked you.’ That’s when I knew we’d done well.”

FINDING CLARITY

The quartz in the stone slabs is selected for its purity, allowing for designs with greater visual depth.

he spark of creation flashes to life deep inside a stone mine. There, the highest quality quartz in the world glints and gleams, already spectacular in its natural beauty. The clarity is beyond anything the eye could imagine but when it comes to the quartz bound for Cambria for countertops, only the best will make the cut. Loaded onto trucks bearing the dragon crest, this stone is only at the beginning of its journey. It is not until the fleet reaches its destination in tiny Le Sueur, Minnesota, that the true artistry begins, when nature meets innovation at the hands of Cambria’s world-class craftspeople. To walk into Cambria’s state-of-the-art facility is to witness a wonder. The technology, the science, the cleanliness, the hum of dedicated people: This is a revolution in the age-old craft of stone countertops. Cambria has certainly mastered the science of stone, but—make no mistake—in this exceptional workshop magic happens each and every day. From cutting to polishing, the stone is slowly transformed. Nowhere is that more evident as when a slab moves through the polishing stage. Like artisans perfecting gemstones, Cambria’s craftspeople soften the grit of the stone with each successive polish, coaxing out the natural luster of the quartz. With every pass, its innate brilliance shines more deeply, revealing a beauty that is not only pleasing to the eye but also—because quartz is one of the hardest minerals on earth—incredibly durable, suited to PRECISION CUT everyday wear and tear. ever made. Any imperfections in the space (undulations in the wall or a tight and irregular corner, for instance) are carefully accounted for to ensure that every slab fits like a glove. Perfection in an imperfect world: It’s a refreshing mantra that Cambria craftspeople adopt not just as a motto on a plaque but as their guiding philosophy. Cambria is the epitome of what a family-owned and -operated company should feel like, from the unflagging spirit of cooperation and unwavering commitment to quality right down to the names of its designs. “Cambria” from the Welsh word for Wales (“Cymru”) pays tribute to the Davis family’s Welsh heritage. The designs and their names celebrate the rich natural abundance of Great Britain’s landscape and geology. It is those inspirations that have lead Cambria to create the most beautiful, innovative, and durable designs in the industry.

Bringing that originality home to the United States takes innovation and entrepreneurial spirit, and the desire to strive continuously to improve and forge exciting new design directions. The result is a history of firsts, like Cambria Matte, which pairs the unrivaled stain-resistance and longevity Cambria is known for with a matte finish that evokes the subtle sheen of time-worn marble. It’s the perfect example of the intersection of art, craft, and science; a testament to the dedicated artisans who guide each design along its path from quarry to finished slab. Quartz may be the most abundant natural material on earth but there’s nothing common about crafting a Cambria countertop. Thanks to a family legacy of bold vision and exacting standards of quality, it’s an unparalleled natural stone surface that is as hard-wearing, stain-resistant, and easy to live with as it is easy to love.

The stone’s journey takes it from North American quarries to the crafting facility in rural Le Sueur, Minnesota, and then on to design projects worldwide. C A M B R I A U S A . C O M / S T Y L E

friendship, Goldie learned about Cambria natural quartz, and in 2016, when she and Kurt, who had downsized as empty nesters, reversed course and decided to build a home large enough to accommodate their five grandchildren, she made a call to Cambria. Right away, VP of Design Joe Marso flew to Los Angeles to help the star pick out designs that would best complement what Goldie describes as “classic, traditional” decor. Today, a host of Cambria quartz designs adorn the home’s walk-up bar, outdoor baker’s rack, a stair alcove, the garage, and a powder room for which the company—at Goldie’s request—created a custom chair rail trim. “Cambria is a beautiful product!” Goldie says. “There are abundant choices; so many designs that are also indestructible! It’s a great, great material.” Indestructibility matters, for although Goldie’s new home is large, it’s also comfortable and unpretentious: a lived-in house, with her grandkids’ bikes leaning on their kickstands near the garage. They were both people who didn’t give up and worked very hard for a living.” When Laura Hawn opened a ballet school, three-year-old Goldie became one of its first students. By her teens, she’d dropped out of college to dance professionally. Her rise came quickly thereafter. She was in her early twenties when she was “yanked out of the chorus line” and into her first TV role, which led to breakthrough

But it wasn’t necessarily easy. “If you want to be a dancer you can’t give up,” she says. “When you’re learning how to do a pirouette, you don’t stop if you fall over. You do it again and again and again. You dance with bleeding toes. You dance with teachers who are putting sticks under your leg, telling you to hold your leg higher. You work through not being able to walk down the steps at school because you went back to dance class and you’re so sore. You must have the passion and will to get through it. “My parents were very vested in me both as a person and as a performer,” she adds. “I remember once at dinner, my older sister said she was worried because I hadn’t learned to type. She said, ‘What’s Goldie going to do?’ My mom said, ‘She’s going to dance, that’s what!’ My dad said, ‘No, she’s going to act first, sing second, and dance third.’ “There was a time when I was dancing in LA and so wanted to come home,” she continues. “My father told me, ‘You know, the umbilical cord stretches 3000 miles. Just have fun, do what you’re doing, and do it well.’” Goldie’s deep bond with her parents lasted the rest of their lives. Edward Hawn died in 1982, and Laura in late 1993; Goldie says she had the “privilege” of caring for her mother at the end of her life. “The day she died was her 80th birthday. I wanted to be next to her but

he house takes your breath away. Scott McGillivray, the hard-working host and executive producer of HGTV’s popular Income Property, spent a decade improving other people’s homes. So when he got the chance to build one for his own wife and kids, he poured every bit of knowledge learned on the job into the project. “My first home was great for a couple,” he says. “But I wanted a home for a family.” Scott and his wife, Sabrina, had a long wish list for their dream house. Privacy was a priority, as was plenty of space and kid-friendly storage. (Daughters Myah and Layla are 5 and 3.) They wanted a house that was practical but glamorous, and glamorous but not fussy. It should be ideal for entertaining but also cozy; feel cleanly contemporary in style, while also giving a nod to tradition with elements such as high ceilings and crown molding. Working with renowned designer Jane Lockhart, head of her namesake Toronto firm, they achieved all that and more. The new McGillivray home, set on 2 acres in a leafy suburb outside Toronto, is gorgeous and grand, evincing the homeowners’ flair for detail. Its custom look includes G R E AT R O O M exuberant and innovative use of one of Scott’s favorite products, Pale gray plays Cambria natural stone. well with gilded “Welcome to the project to accents; the fireplace end all projects!” Scott says surround was with a smile, gesturing around custom crafted from his new kitchen. shouldered and handsome yet utterly approachable. His and Sabrina’s discerning taste and style are stamped throughout their new home. Start with the kitchen, which he says he placed “literally in the middle of the house,” to represent its central place in family life. It has two islands, one for food prep, the other with barstools, a setup that allows a cook to work and socialize at the same time. (Dirty pots stay out of view in the separate C A M B R I A U S A . scullery; the servery, which includes a butler’s pantry and customized wine racks, offers storage.) “This is where we entertain and hang out,” Scott says. Indeed the generous size can accomodate the extended McGillivray clan, which includes grandparents and multiple siblings with their spouses and children. “When we hosted Christmas last year, we had 40 guests!” Scott recalls. However, it’s not just the kitchen that’s welcoming. An open plan knits together the cooking area with the adjacent great room, hall, and a large playroom for the girls, extending the possibilities for togetherness. Leading to the home’s second story is a dramatic curved staircase with open risers, what Scott calls a “statement piece,” its metal balusters laser cut and entirely without welds. Upstairs, the master bedroom’s many comforts—a coffee bar, fireplace, blackout blinds, mammoth walk-in closet, and two separate reading areas—offer what he calls “the pampered feel of a high-end hotel, somewhere you could easily imagine spending the whole day.” The basement contains a guest suite, plus an entertainment center and bar and a synthetic ice hockey rink. Scott admits that the theater room, which holds a dozen recliners and a 14-foot screen, wasn’t high on his original must-haves but has fast become a family favorite. “Going to the movies with young children isn’t always a fantastic experience and date nights can be nonexistent,” he says with a grin. “This really makes watching movies fun.” Remarkably, the build was completed in a year, with cameras recording the entire process for a 10-part HGTV Canada series Moving the McGillivrays. The project that Scott calls “the hardest thing I’ve ever done” was accomplished without any major surprises, though he admits going over budget “by a pretty significant amount” on lighting. “Some of the rooms ended up larger than I originally planned, with ceilings higher than I’d anticipated,” he says. “I suddenly realized you can’t put a plain little light fixture in that space. Shame on me for not being more prepared! It kind of gives me a new appreciation for every homeowner I’ve ever worked with.” There was never a question that the project would make ample use of Cambria. Both designer and homeowner have used—and loved—Cambria for many years. In fact, in May 2016, Scott became one of the company’s collaborative partners, teaming up with Lockhart to host a nine-part video series: “Dream. Plan. Do.” The series, offered directly on Cambria’s website, helps anyone beginning the daunting task of a kitchen remodel by KITCHEN providing practical expert advice. willing to push the industry forward. When I met Cambria’s President and CEO Marty Davis, I saw a man of vision, someone who believes that if you’re going to do something, you should be the best at it.” Scott, whose own company, McGillivray Group, employs many relatives, also appreciates that Cambria is family owned. “It takes a lot of confidence to bring your family into a business,” he emphasizes. “You don’t take anything for granted.” Scott, who is not only a TV host but also a successful real estate investor, has long emphasized that creating home value requires spending wisely where it counts. “Countertops are not like a paint color you can switch out if something doesn’t work,” he says. “That means

There are some 16 designs used in 20 rooms: atop the islands in Sabrina’s craft room; the master bedroom closet and coffee bar; in the foyer, laundry, and mud rooms; on multiple bathroom vanities; and the basement bar and entertainment center. In the servery, the dramatically dark shades of Ellesmere are reflected in a mirrored backsplash. taste,” Scott says. “I really love Brittanicca. It’s one of those designs that appeals to everyone: soft, calm and clean but with loads of character.” Both Scott and Jane jumped at the chance to get creative with the product. “Because I’ve used Cambria so much, I know its possibilities,” says Jane. Case in point: Custom-cut strips of Cambria’s terrazzo-esque Minera pattern add a jewel-like sparkle of gunmetal to the master bath floor. Cambria creates a smooth, groutless surface Jane notes, “and because it’s nonporous, you never have to worry about soap scum, condensation from use of scented oils, or that someone will clean by mistake with something that etches the material.” The pièce de résistance, however, is the enormous fireplace in the great room, where a 24-foot ceiling soars. Cambria is often used in this manner, Scott says, but not usually on such a grand scale. “I wanted something completely different,” he says. “As if it was carved out of the side of a mountain.” Made entirely of Brittanicca, the surround stands almost six feet high and is of even greater width. “Imagine trying to explain that you want to build something that has never been done before,” jokes Scott. “I love that Cambria took on the challenge. It took an experienced crew over a full day to install it. It’s breathtaking and unique; a piece of art.” No one could miss the pleasure on his face as he looks around what he hopes will be his “forever home.” “My family got everything we wanted,” he says. “It was win, win, win!” For product details see “Sourcebook,” page 64.

4 ears of fresh corn olive oil, to brush the corn 1 Tsp. chili powder dash of salt and pepper 4 Tbsp. plain Greek yogurt or sour cream ½ cup grated Parmesan cheese ¼ cup fresh cilantro, chopped 1 lime, cut into wedges DIRECTIONS

Preheat grill to medium-high. Peel back the husks of the corn, but do not remove them; remove and discard the silk. Using butcher’s twine, tie the husks together, creating a “handle” (see page 52). Brush or spray each ear of corn with olive oil. In a small bowl, combine chili powder and a dash of salt and pepper. Set aside. Grill the corn until nicely browned, about 10 minutes. Before serving, spoon Greek yogurt over the corn, sprinkle with the chili powder mixture, Parmesan, and cilantro. Serve with lime wedges on the side.

of olive oil, and minced garlic; toss to coat, then season with salt and pepper to taste. Set aside to marinate. When the grill is hot, brush the grates with olive oil. Place the corn directly on the grill and cook for 8 minutes, turning regularly as it chars. Make the salad dressing. Combine all dressing ingredients in a blender and process until smooth. If the mixture is too thick, blend in water 1 tablespoon at a time; season with salt if needed. When corn is done, remove from the grill and set aside to cool. Add the halved romaine hearts to the grill, sliced side down, and grill for 3 to 4 minutes until slightly charred and wilting. Remove from the grill and arrange cut-side up on a large platter. Cut the kernels of corn from the cob with a knife, and sprinkle them over the romaine. Spoon the marinated tomatoes over the corn, discarding any juices that have collected in the bowl. Drizzle the salad with dressing and serve.

½ of 1 large avocado juice of 1 lime ½ cup packed basil leaves ¼ cup olive oil ¼ cup water 2 Tbsp. apple cider vinegar 1 clove garlic, roughly chopped ½ Tsp. Kosher salt DIRECTIONS

INGREDIENTS FOR PORK

¼ cup Sriracha hot chili sauce plus extra for serving 1 Tbsp. extra virgin olive oil 2 lbs. pork belly, rind removed, cut into 1½-inch pieces sea salt lime wedges for serving INGREDIENTS FOR SALAD

4 Lebanese cucumbers (or 1 English cucumber), peeled, seeded, finely chopped 2 Tbsp. white vinegar 1 Tbsp. grated palm sugar (or brown sugar) 1 Tsp. grated ginger cracked black pepper DIRECTIONS

Preheat grill to high. In a small bowl, mix Sriracha and oil. Set aside. Thread 6 pork cubes onto each skewer. Cook skewers for 8 minutes, turning regularly. Brush pork with Sriracha mixture and cook, turning and brushing twice more, for 4 minutes or until charred and cooked through. Make cucumber salad. In a small bowl, mix vinegar, sugar, ginger, and pepper. Whisk until sugar dissolves. Add cucumber and toss well. Top skewers with salad and salt. Serve with lime wedges and extra Sriracha.

GRILLING TIPS For the sweetest grilled corn, prepare it the same day you buy it, before the sugar in the kernels converts to starch. Rotate corncobs every two minutes as you grill them, to char all sides evenly. Flat metal skewers will prevent your meat or veggies from rotating on the skewer as you turn them. If using wooden skewers, be sure to soak them in water for at least 30 minutes to prevent burning. Before grilling lettuce (firm varieties like romaine, endive, and radicchio work best) rinse and dry well as damp lettuce will steam on the grill, resulting in limp leaves. Cut lettuce heads in half but leave the root ends intact to hold the leaves together as you grill.

PICKLED ONIONS Makes 6 8-ounce jars INGREDIENTS

2 cups white vinegar ¹/ 3 cup sugar pinch of salt 2 bay leaves 25 peppercorns 2 red onions, thinly sliced 6 8-ounce canning jars DIRECTIONS

Combine vinegar, sugar, salt, bay leaves, and peppercorns in a heavybottomed saucepan. Heat on high until the mixture comes to a boil, then add the onion slices. Lower the heat and simmer for 30 seconds. Turn off heat and allow the mixture to cool slightly. Pour onions, spices, and liquid into the jars and cool completely before putting the lids on. For best flavor, wait at least 24 hours to eat. Keep refrigerated for up to three weeks.

There’s no need to tend a garden overflowing with produce to enjoy a tasty batch of refrigerator pickles. Inventive takes on pickled fruits and vegetables seem to be everywhere these days. But you may have thought that unless you had a huge garden, and equally large kitchen, you were out of luck when it came to home pickling. Good news: Refrigerator pickles are ideal to make in small spaces and small batches. A trip to the market and forage in your spice cabinet will yield enough for a few jars of fresh, flavorful combinations. The pickling process is quick and easy, almost impossible to get wrong, and there’s no time-consuming canning required. Just pop them in the fridge when complete, and enjoy!

BUBBLIES

SPARKLING WINES FROM GERMANY, ITALY, SPAIN, AND NEW ZEALAND ARE GIVING CHAMPAGNE A RUN FOR ITS MONEY.

By A M A N D A L E C K Y Photography by S T E V E H E N K E

Champagne lovers, raise a glass to this good news: There’s a world of sparkling wines to discover, many of them every bit as elegant and delicious as the French classic. Almost every winemaking region in the world produces a sparkling variety. “Champagne, while definitely one of the most celebrated regions for bubbly, has some serious competition,” confirms certified sommelier Leslee Miller of Amusée in Minneapolis. Indeed, there’s a sparkling wine out there for every taste, from dry whites to light blushes and rich, fruity reds. Not just for special occasions, these varietals are as well-suited to dinner as they are to dessert. Best of all, it’s easy to find a bubbly in budget: Delicious sparklers exist at every price point (and nearly all of them are less expensive than French Champagne). Read on for more fizzy fun.

ICY DELIGHTS Sparkling wine is a natural choice for an after-dinner treat, and not simply for sipping. Pour prosecco over fresh berries, pomegranate seeds, and mint, then freeze in molds to create the world’s most elegant dessert on a stick, or pair bubbly with citrus juice and freeze for an invigorating granita.

TASTING TIPS

THE ART OF SPARKLE

Like any wine, sparkling styles are best tasted with the guidance of an expert. But if you’re imbibing at home, follow sommelier Leslee Miller’s serving advice:

How do bubblies get their fizz, anyway?

Make it Bubble

Names and Places

There are four methods of producing sparkling wine. The traditional method, or méthode champenoise, was developed in the Champagne region of France and involves fermentation in the bottle. Sparkling wines made in this style are generally fuller, more rich, and more yeast-driven than other types. Champagne and cava are made this way by law. The faster and less expensive charmat method, fermented in tanks, is typically used for mass production of prosecco and light sparkling wines. The transfer method is a mix of the aforementioned techniques and often used for mid-range offerings. Finally, the injection method, which deploys carbon dioxide to produce very large, soda-like bubbles, is used for the lowest-priced sparkling wines.

French sparkling wine made outside the Champagne region is called crémant. Spain is famous for its cava; Italy for prosecco, brachetto, Lambrusco, Franciacorta, and Asti Spumante; Austria for sparkling Welschriesling and Grüner Veltliner; and Germany for sparkling Riesling, among others. You’ll also find fine bubblies hailing from the U.S. (particularly from California, Oregon, and New Mexico) as well as Australia, New Zealand, and South America.

Dry or Sweet? Just like Champagne, sparkling wines are categorized according to sweetness. To find a wine that best suits your taste, look out for these terms on labels (ordered from driest to sweetest): brut nature, extra brut, brut, extra dry, dry, demi-sec, doux.

1

T E M P E R AT U R E

“Most sparkling wines should be served at approximately 45˚F. But for Champagne— especially vintage ones— bump that up to 50˚F.”

DID YOU KNOW?

The famous Bellini cocktail, invented at Harry’s Bar in Venice, Italy, was originally made with prosecco, not Champagne.

2

“The Champagne region in France is actually trying to ban flute-style glasses for drinking Champagne, but flutes are fine for prosecco or cava. If you’re drinking French Champagne or an American sparkling wine made in the Champagne style, select a Burgundy glass instead of a flute.”

GERMANY LOVES “SEKT”

Per capita, Germany’s annual consumption of sparkling wine (called “Sekt”) is the highest in the world. Prost!

MODEL PAIRINGS Don’t only save your sparkle for a special toast; enjoy it in a cocktail or with food, as you would any still wine, says sommelier Leslee Miller. Here are a few of her favorite combinations: PROSECCO | Elevate movie night (La Strada, anyone?) by sipping this famous Italian sparkling wine with your snacks. “Prosecco and lightly salted popcorn: the perfect combo!” says Miller.

BRACHETTO | Choose this “lightly sweet, slightly red” sparkling wine from Piedmont, Italy, to serve with a rich dessert like panna cotta or cheesecake, especially one topped with ripe raspberries or strawberries.

SPARKLING RIESLING | Give your cheese board a German accent with this dry, effervescent wine that complements practically any cheese, whether made from cow, goat, or sheep milk.

SPARKLING SAUVIGNON BLANC | For a refreshing brunch cocktail, mix a New Zealand sparkling white with passion fruit puree, an orange slice, and a touch of club soda.

STORAGE

“If you will be drinking your sparkling wine within a year or so, storing the bottles upright is fine as long as the they are away from direct sunlight, heat, and vibration. Sparkling varietals should be kept at the same temperature and humidity as the rest of your wine: 55˚F and 70 percent, respectively. However, if you have a collection of vintage wines (they’ll have an actual vintage, or year, listed on the bottle versus N/V for “non-vintage”), I would recommend laying the bottles on their sides.”
