COVER: In the Chinese culture dragons are benevolent creatures with supernatural powers and they represent strength and good luck. Ancient Chinese emperors took on the symbolism of the Dragon to bring good fortune to their lands and ever since dragons have been deeply entrenched in the Chinese culture. CEO’S REPORT change daily along with our regular Journal specials (see page 8). In January we will be featuring a range of Aussie-inspired dishes to celebrate Australia Day while February sees some Chinese-themed dishes to celebrate Chinese New Year. I am pleased to report that despite the ongoing renovations through 2015, Canterbury was able to continue to trade strongly posting a profit for $10.6 million for the year. This is an excellent result and one of the strongest in our history. On behalf of the Board, Management and Staff, I thank you for your continued patronage and support of Canterbury.
Dear Members, Happy New Year to all our Members for what is shaping up to be a massive year for Canterbury. Work on the new Bakehouse Café continues with this exciting new outlet due to open later in the year. Keep an eye on our website and social media pages for updates as we get closer to opening, including sneak peeks at what this new restaurant will look like and tasty new menus. After launching a new menu in Flame Pizza + Grill late last year, Head Chef Kamal Mudunkothge and his team have been hard at work over the past couple of months reviewing the menu in the Banyan Brasserie. The new Banyan menu launches this month and includes all your favourite dishes along with some exciting new additions. Our focus on Banyan is to provide a consistent range of high quality value-formoney meals that you can enjoy every day. Along with the regular menu items, make sure you check out the new Chef’s Special Boards for different lunch and dinner specials that
Visitors to the Club through December will have noticed some changes to the entry to the car park. A number of steel supports have been erected alongside the driveway into the Club. These supports underpin a working platform above the driveway to allow for construction of the upstairs lounge and Banyan Brasserie extension. This ensures that you can continue to enjoy unimpeded access to the car park throughout the build. You will also notice that the Club’s beautiful front garden has been removed. Rest assured that this impressive landmark has only been temporarily taken away in order to construct the new underground multistorey car park at the front of the Club. Excavation will shortly commence to dig down four levels for the car park and once completed, the structure will be covered and the garden replanted again on top. I look forward to seeing you around the Club.

CONSTRUCTION OF UNDERGROUND CAR PARK COMMENCES
ONE OF CANTERBURY’S ICONIC PALM TREES BEING CAREFULLY REMOVED
The start of a new year brings Canterbury one step closer to completing Phase Two of construction and the unveiling of its brand new dining outlet, Bakehouse Café, in the upcoming months. The Bakehouse Café, with seating available for approximately 200 people, will be serving up a menu full of fresh new options including gourmet sandwiches, yogurt cups, protein balls, light meals and salads. For sweet tooths, the new café will also have a dessert window filled with cakes, muffins, slices, mousses, and tarts. Members and guests of Canterbury will also notice the newly completed
04
temporary driveway on the right hand side of the Club leading into the aboveground multi-storey car park. This new driveway will replace the previous entrance into the Club as excavation of the new underground car park continues. Behind the hoarding, all the trees and plants from the former front garden of the Club have been carefully removed while it undergoes construction. Over the next few months, contractors are expected to remove thousands of tonnes of soil and rock to make way for the four-level basement car park. “It is business as usual at the Club; trade has been going well even amongst construction due to it
being carefully planned to minimise disruption to our Members and guests. The feedback about the construction from our customers has been overwhelmingly positive as everyone looks forward to Canterbury’s transformation and your favourite club becoming even better,” said Dave Brace, CEO of Canterbury League Club. You can keep up-to-date with all the latest development news by following the Canterbury website, Facebook and Twitter pages. Regular updates will also be available in every Journal.

COMMUNITY HEAD CHEF KAMAL MUDUNKOTHGE WITH HIS TWO NEW APPRENTICES, KHA TRAN (MIDDLE) AND JUSTIN NGUYEN (RIGHT)
PARTNERSHIP WITH BANKSTOWN TRADE SCHOOL BEARING FRUIT Canterbury’s Chef team has welcomed two new apprentices into its ranks as part of a brand new partnership with Saint Yon Trade Training Centre in Bankstown. Justin Nguyen and Kha Tran, both current Year 11 students at the trade school, will be completing their first year apprenticeships in Canterbury’s kitchens while learning tricks of the trade from Head Chef Kamal Mudunkothge. “We are very excited to have Justin and Kha join us in the Canterbury team – we’ve designed the Canterbury apprenticeship program to cover training in all major areas of the kitchen and will be aiming to provide our apprentices with a well-
rounded education in the hospitality industry,” said Kamal. “Our apprentices will be doing one to two days per week in conjunction with their Year 11 studies, with a shift to full-time work during their school holidays. We will be constantly working together with Justin and Kha to provide them with a safe environment to work in as well as on-going mentorship throughout the program so that they get the most out of their time here.” As part of Canterbury’s transformation to becoming an iconic destination and workplace of choice, the Club will be offering more apprenticeships and traineeships in the upcoming months in many different job roles. The
one-year program exposes trainees to the different pathways available in hospitality and they will receive a TAFE Certificate III in Hospitality on successful completion. “For the first time Canterbury is offering paid traineeships in 2016 open to local young adults who are interested in a hospitality career. This is an opportunity for young adults and school leavers to have access to industry mentors, training, and valuable work experience. Canterbury is committed to providing a well-rounded traineeship program with lots of hands-on experience to prepare young adults for their future careers,” said Dave Brace, CEO of Canterbury League Club.
