CEO’S REPORT The Bistro is open every day for lunch and dinner with a menu that is designed to please everyone. The new Lavico Italian Restaurant has been overwhelmingly embraced by Members and guests, with the restaurant fully booked nearly every weekend since opening. We have also been fortunate to have a number of food reviewers visit the restaurant over the past couple of months with all of them coming away impressed by the beautiful décor and the quality of the food. Our Pizza Chef Maurizio Bruno even graced the small screen teaching the hosts on Channel 10’s morning show Studio 10 how to make the perfect Christmas pizza in December. With The Bistro now open our dining precinct now includes approximately 1,000 seats across four great restaurants – The Bistro, Lavico Italian Ristorante, Bakehouse Café and Dynasty Chinese Restaurant. Work on our new club on Moxon Road in Punchbowl, called Moxon Sports Club, continues to progress and we anticipate the club being opened around March. We have recently engaged a caterer to run the club’s new restaurant and we are excited to welcome Gary Di Paola and his team. The restaurant will serve a range of popular bistro style meals with a Mediterranean twist along with a range of delicious pizzas perfected from Gary’s years of experience running the popular La Piazza in Bankstown. Happy New Year. 2018 is shaping up to be a milestone year for Canterbury as our existing building project is due to be completed. This will see the new front car park opened, level one completed including a stunning new bar hovering over the atrium and stage two of The Bistro featuring a spectacular al fresco dining area overlooking our new gardens at the front of the Club. In relation to The Bistro, I am pleased to report that stage one of this exciting new restaurant opened in December. Built on the site of the previous Banyan Brasserie, The Bistro is a brand new offering featuring an entirely new menu and service style.
I trust everyone had a safe and enjoyable Christmas and New Year. The celebrations haven’t stopped yet, however, as we celebrate Australia Day later this month and Chinese New Year in February. I look forward to seeing you around the Club.

DEVELOPMENT
The front extension of the Club which will form The Bistro’s outdoor al fresco area
STAGE ONE OF THE BISTRO NOW OPEN After just four months of construction, Canterbury’s latest dining offering, The Bistro, is now open for trade. Occupying the space of the former Banyan Brasserie, The Bistro has undergone a complete transformation and now features a light neutral palette with hexagon tiles as a dominant design element. There are suspended birdcage lights at the centre of the room which help draw the eye to the high ceilings and the exciting new menu is helping to cement Canterbury’s reputation for offering a varied Dining Precinct to Members and Guests. Turn to page 8 to see the latest menu offering.
along with expanded function rooms. Canterbury now has two basement production kitchens; the newest one is more than twice the size of the one that is underneath Lavico. Once all construction has finished, the entire Club will be accessible via basement hallways, all connected by multiple lifts and stairways. At the front of the Club, Parkview are currently building the external extension which will eventually form The Bistro’s outdoor al fresco area and the
outdoor area of the level directly above it. The construction will take several months and once the shell is completed, MPA will finish the interior. You can keep up-to-date with all the latest development news by following our website, Facebook and Twitter pages. Regular updates will also be available in every magazine. CanterburyLeaguesClub @Canterbury_LC
“I invite everyone to come and try The Bistro – it’s the perfect place for you to bring the family during school holidays,” said Dave Brace, CEO of Canterbury. The changes at the restaurant front are matched by the changes at the back-ofhouse with builders constructing a large production kitchen to increase the capacity of the Club’s food preparation facilities which will eventually include more than 350 extra seats in The Bistro

Students from Lakemba Primary School gaining water experience at the pool
CANTERBURY SURVIVAL SWIM PROGRAM HELPS EDUCATE LOCAL YEAR 4 STUDENTS In response to the spate of drownings that always happens in the summer months, Canterbury League Club banded together with City of CanterburyBankstown Council and Royal Life Saving NSW to deliver a new swim survival program to local primary schools. The pilot program, called Canterbury Aquatic Survival Skills Project, engaged 306 Year 4 students from seven schools including Campsie Public School, Lakemba Public School, Wiley Park Public School, Croydon Park Public School, Canterbury Public School, Penshurst Public School and Wangee Park School. The first part of the program involved a pool session where students received hands-on experience with accredited swim instructors and learned how to do safe entry/exits, bubbles, floating, torpedo swim and remaining calm while submerged in water. This practical pool session was followed up by a water safety presentation at school where students learned about hazards at the beach, rivers, lakes and pools, how to spot danger and how to be water smart. Students also got the chance to try on life jackets and practice pool noodle rescues with their peers.
6
“We have a lot of students who are non-swimmers so this is an excellent opportunity for them to learn about water safety. It’s a fabulous program, more schools should get involved,” said Teresa Kergis, teacher at Lakemba Public School. “Canterbury identified this program as a high-need for our local community because the Canterbury-Bankstown region has a high migrant population – many migrants and their families may not have had as much exposure to bodies of water and the hidden dangers. We are lucky to have many beautiful beaches and rivers in Australia however with that comes the responsibility of being water smart and safe,” said Dr George Peponis OAM, Chairman of Canterbury League Club.
“This program is aimed at getting more children into the water to practice and familiarise themselves so that they’ll be more likely to remain calm in the event of an emergency situation. As the weather heats up, families naturally gravitate to the water to try and cool down.” Expressions of interests from local primary schools are now being accepted for the 2018 survival swim program. Please contact info@canterbury.com.au for more information.

NOW
OPEN Say hello to the latest addition to Canterbury’s Dining Precinct. Serving an exciting menu of gastro-pub style dishes, there is plenty to choose from when you next visit The Bistro.
MEET EXECUTIVE CHEF STEPHANIE AZAR Stephanie joined the Canterbury team in 2016 and since then has been a driving creative force for the Club’s Dining Precinct including Bakehouse Café, Lavico Italian Ristorante and now, the newly-opened The Bistro. We spent five minutes with her to find out what is so special about The Bistro. What is the inspiration for The Bistro? We wanted to create a place where people can enjoy great food in a pleasant environment that is comfortable, familyfriendly and relaxed. What sort of dishes will be available on the menu? We will have a great selection of classic favourites like chicken schnitzel
8
and house battered fish and chips. There will also be a new burger range, hearty main meals and a handful of shared meals for those that enjoy a more community dining feel. How do you and the chef team feel about cooking for 700 people when the finished restaurant is at full capacity? It is not often as a chef that you are faced with an opportunity to be a part of something like The Bistro; the opportunity to cook for such a large capacity restaurant is an exciting prospect for our team and we look forward to the challenge of doing so. What will be The Bistro’s signature dish? We will have lots of exciting new dishes
for our customers to enjoy, so we’ll let them decide what becomes our ‘signature’ dish. How does The Bistro sit within the other restaurant offerings that Canterbury provides currently? The Bistro sits comfortably within the Canterbury restaurant portfolio as the casual ‘please all’ restaurant that can be enjoyed by everyone every day. With everything from healthy options to big hearty meals and the latest on trend meals from around the globe, The Bistro is the perfect place to bring the entire family safe in the knowledge that everyone will find something to suit their taste.

THE BULLDOGS
It has been an exciting time to be around Belmore since the end of the 2017 campaign with many changes taking place that have Bulldogs fans eagerly anticipating the start of next season. A large contingent of media converged at the spiritual home of the Dogs in September, to see former player Dean Pay unveiled as the new Head Coach. Dean spoke openly to the gathered media about his joy at being able to start his ‘dream job’ and how he was looking to bring back Bulldog values to the club. This news coincided with former legend Steve Mortimer re-joining the Board, as the club started to undertake plans to draw people back together through their shared passion. Assistant Coaches Steve Antonelli and Steve Georgallis joined current incumbent David Penna, to stabilise the coaching team, while another club stalwart in Andrew Farrar was brought into the role of Football Manager to add another part of Bulldogs history to work with the players. One of the biggest announcements to follow was the formation of the Captains Circle. This brought together the five most recent Premiership winning captains in Dr George Peponis, Peter Tunks, Steve Mortimer, Terry Lamb and Andrew Ryan to act as a Mentoring Group to the current coaching staff and playing roster. The idea was simple. Have the current players work with some of the stars from the past to help create that bond and recognition of what had gone before. The values of toughness, resilience and family are the core of the Bulldogs and are exemplified by Peter ‘Bullfrog’ Moore’s famous quote that ‘A club is not about the four walls surrounding us. It’s about the people the four walls surround.’
14
OF OLD ARE BACK
The next step was aligning the facilities of Belmore with the history of what had gone before. A major project was undertaken to recognise the past by creating a new look Belmore where the key features included were: • A Wall of Honour featured in the players workout area • Images of the Hall of Famers, 50th and 70th Year Teams and Team of the Decade • A huge ‘Pride Wall’ located at the Northern end of the field showcasing the years the Bulldogs have won Premierships • NRL locker rooms connecting current players with past Club legends Sponsors, Ex Players and Media were taken on a tour of the new look facilities, while Members were able to see for themselves during a ‘Members Only’ evening held at the ground. The future is looking bright. The success of the new girls U18 team in the Tarsha Gale Cup, has been rewarded with a sponsorship from the University of Western Sydney, while the Bulldogs Merchandise Store was recently re-opened after an upgrade. The New Year will see the introduction of popular Front-rower Aaron Woods, who will join the ‘Pack’ and team up with another new recruit in Kieran Foran, while former Rugby League World Cup Chief Executive Andrew Hill, has taken over the reins as CEO. It’s a fun time to be a Bulldogs fan and the countdown is underway to season 2018!

MEMBER OF THE MONTH Congratulations to our member of the month for January, Jeannie Petratos Jeannie has been a C-Life member since 2015, since this time she has undergone significant changes to her body, mind and lifestyle.
BEFORE
When Jeannie initially joined C-Life, Jeannie’s workouts included participation in cardio Group Exercise classes and the use of cardiovascular equipment. She found that she achieved results, felt healthy, looked good but wanted more. About 6 months ago Jeannie re-evaluated her exercise goals with a focus on improving her strength, posture and improved body tone. With her goals set and the help and support from C-Life trainers Jeannie started focusing all her workouts on resistance training. She started working out at least 4 sessions per week using light weights, high repetition and training at a high level of intensity. Jeannie’s dedication to her strength training has enabled her to achieve some great results including improved strength, posture, metabolic rate, body shape and body tone. Alongside the changes to her body, Jeannie has also had positive changes to her nutrition, mood and demeanour. She finds that her day to day choices have been defined by the change that she decided to make and her overall lifestyle has improved immensely. Special mention to her in-house trainer, George Boutros for his efforts in assisting with technique, form correction and exercise selection,C-Life trainer Mark Stagg, Marketing Coordinator Ray Sedrak along with fellow gym members who she calls her second family who keep her accountable.
AFTER
Congratulations Jeannie on your great achievements.

COMMEMORATING REMEMBRANCE DAY On the 11th November, the Lakemba RSL Sub-Branch held a small ceremony to acknowledge Remembrance Day and those who served and died during World War I. Approximately 20 sub-branch members and their guests, including Canterbury-Bankstown Deputy Mayor Nadia Saleh, gathered at the memorial in front of The Lakemba Club to lay poppies and wreaths during the ceremony. After the ceremony, everyone adjourned back into the club for light refreshments. Thank you to everyone who attended.

Workers building the new retaining walls at the front of the Club which will contain a large garden bed
CONSTRUCTION TO EXPAND MOXON HAS STARTED Aside from a new name and logo, new bathrooms and relocating the kitchen, the other main change to the former Canterbury-Bankstown Tennis & Bowls Club building is the new extension at the front of the Club. After receiving DA approval from Council, work has started on building the new retaining walls which will contain a large garden bed and drainage – these new works will extend the front of the Club by approximately two meters. It will be an open space with timber louvres to shield
patrons from the weather and the rich timber feature will continue throughout the front entrance of the Club. Inside the Club, workers have removed all the old services and wiring and have replaced it with new services that are more streamlined and modern. New air conditioning ducts have also been threaded amongst the ceiling beams to provide a comfortable environment for patrons during the cold winters and hot summers.
New aircon ducting to help keep the Club at a comfortable temperature
As part of the rebranding to Moxon Sports Club, the club will receive a brand new website and Facebook page which will be up shortly. The new website will provide information on menus, What’s On, the contact details for the tennis school, sporting sub-clubs and other relevant details. More details will be released shortly as the construction progresses.

RISING TENNIS STARS TAKE OUT COMPETITION Junior tennis players from Moxon Sports Club cleaned up at the recent Canterbury Bankstown Tennis Association (CBTA) Championships which was held at Panania Tennis Courts on 18-19 November 2017. Students from Kellert Tennis Academy, which is based out of Moxon, had 16 students enter the competition aged 7 to 17. Players from five other tennis centres – Panania Tennis Courts, Smith Park East Hills, Deverall Park Tennis Courts, Roger Bowman Tennis Courts Sefton and Centre Court Tennis Georges Hall – made up the rest of the competition.
