CEO’S REPORT

DEAR MEMBERS This is an exciting time for Canterbury. The Club is debt free and we are working our way through a detailed strategic plan to take the business into the future. This long term strategic plan is being developed around the five key pillars of Community, Membership, Growth, People, and Systems and Processes. As part of the strategic plan, the Board and Management have been completing a building masterplan. This is a significant plan encompassing more than ten years’ worth of potential building development work for the Club including new food areas, bars and lounges, an auditorium, a function centre and a hotel. Whilst we could have commenced work on aspects of the building program earlier, by incorporating all potential future projects into a single masterplan we will significantly reduce the likelihood of abortive works in the future as well as saving money and increasing the ease of deliverability for future projects. The masterplan will ensure that the Club’s back of house infrastructure is

built to an adequate level to sustain future developments. These areas such as loading docks, preparation kitchens, waste disposal etc. are critical to ensuring that the Club can cost effectively deliver additional projects such as restaurants and function areas. We have recently undertaken a review of the existing Flame Restaurant which is over six years old. Following a review of trading patterns and industry restaurant trends the decision has been made to change the style of the restaurant from Modern Australian to a Steakhouse and Pizzeria. The new Flame Pizza & Grill will have a focus on high quality, generous servings in the same relaxed environment. I encourage you all to check out the new menu on our website along with a sample of some of the new dishes on page 8. The new Restaurant is open for lunch and dinner from Wednesday to Sunday. Renovations have commenced at our Lakemba Club. This $2 million renovation will see the club given a modern contemporary feel, along with a new Asian Dumpling & Noodle Restaurant. Check out some of the plans on page 30.

With Galaxy now more than 6 months old we have made some alterations to the area to improve its operation. The entry has been moved to the front of the play area with access directly from the Banyan seating area and a small foyer has been constructed. Internally the play equipment has been reconfigured to allow easier access into the central ball pit area for staff and parents and a small movie viewing room has been built. Along with these alterations we have also changed the way the play area operates. Parents can access supervised paid play during peak periods and can supervise their own children’s play for no cost at off peak times. I look forward to seeing you around the Club.

COMMUNITY Canterbury’s Biggest Morning Tea In May, Canterbury held a Biggest Morning Tea to raise funds for the Cancer Council. With terrific support from staff and members, a total of $1,252 was raised. Thank you to everyone who donated and joined us on the day. Your cup counts in the fight against cancer and together your backing will raise vital funds for cancer research, prevention and support services.

Canterbury Team Get Moving Canterbury staff have been taking part in the Global Corporate Challenge, a team walking challenge designed to help improve the health and wellbeing of staff through regular physical activity.

The Challenge has been running since 23 May and concludes on 12 September. Each staff member involved was provided with a pedometer which records the number of steps they take each day. To add a bit of friendly competition the staff were grouped into four separate teams to compete against each other as well

as other organisations. “This has created some fun and friendly competition in the workplace” said CEO Dave Brace. “The program provides a number of benefits including increasing worker health, teamwork and engagement”.

SEPTEMBER 2013 The Business Concierge Canterbury has partnered with training organisation The Business Concierge to deliver their Survivor Life Skills program into schools in the Canterbury area. The Survivor program focuses on providing students with life skills they will need in order to avoid getting themselves into

trouble as they move from school to the real world. The course covers 60 topics including getting a driver’s licence, buying a car, getting a job, travelling safely, setting life goals, being a smart banker, being a responsible mobile phone owner and keeping a debt list.

“Providing local youth with opportunities to succeed in life has always been important for the Canterbury group, be it on the sporting field, employment in one of our clubs or in the classroom as part of our community support program. We are proud to partner with The Business Concierge to deliver their Survivor Life Skills program to local schools” said Dr. George Peponis OAM, President of Canterbury League Club.

Variety Day Each month Canterbury puts on a special show for local seniors, particularly those who now reside in nursing homes. This special variety day, in operation for over 25 years combines a high quality show with a subsidised meal in the Banyan Brasserie. For many of the people attending the show, this is their only opportunity to get out and about each month and is something that they look forward to. To assist with getting to the show, Canterbury also provides a complimentary bus service to pick up local patrons from nursing homes that don’t have access to their own transport. One group who enjoys the show each month is Nurses on Wheels from Bexley who have been coming for the past five years. Nurses on Wheels pick up nine of their clients from their homes and bring them to the shows. According to Kerrie Spano, from Nurses on Wheels “The clients love getting out for the day, enjoying a show, having a dance and a delicious meal.”

CHEF’S TABLE FINALIST

sixth straight year that the Flame team has made the finals.

Flame Pizza and Grill is open for lunch and dinner Wednesday to Sunday.

Congratulations to Flame Restaurant Chef’s Justin O’Bree and Nick Cooke for making the finals in the ClubsNSW Chef’s Table competition. Nick and Justin battled it out with chefs from 14 other clubs to see who would claim Gold, Silver or Bronze. The Chef’s Table competition was created by ClubsNSW to recognise the many talented chefs, cooks and apprentices in clubs across New South Wales. Participating culinary teams are judged on a 3-course menu including the use of key ingredients, cooking techniques, creativity, balance of flavours, recipe costing accuracy, execution and presentation. Although we did not win the top prize, congratulations to Justin and Nick and the Flame team on making it so far. This is the

SEPTEMBER 2013 Flame receives another Accolade Congratulations again to the Flame team for being named a finalist in the 2013 Savour Australia Restaurant & Catering HOSTPLUS Awards for Excellence. Flame has been nominated in the “Restaurant in a Club” category and winners will be announced at a presentation in September. The Awards for Excellence is the most dependable and authoritative guide to Australia’s best restaurants, which has set the National benchmark for objectively recognising best practice.

“We are very proud of our team and honoured to be named a finalist for the second year in a row. It is a great effort to be nominated for

such a prestigious award which looks at the entire dining experience” said Dave Brace, Canterbury CEO.

SUPPORTING YOUNG TALENT For many years Canterbury has been assisting talented young people achieve their goals via the Sport & Tourism Youth Foundation. Founded by former Federal Minister for Sport, the Honorable John Brown AO, the Foundation awards scholarships to talented young Australians in the fields of sport, tourism and entertainment. For the past two years Canterbury has awarded a $10,000 scholarship through the Foundation to singer Nathan Allgood. Earlier this year we were thrilled to follow Nathan’s progress on ‘The Voice’, where the 20 year old made it through the Blind Auditions and the Battle Rounds as a Member of Team Delta. BUDDY DAY – SUNDAY 9TH JUNE The Bateau Bay Bowling Club Members were asked to find a buddy, relative, neighbour or a friend and bring them along on Sunday 9th June for a game of bowls. Over 200 people attended the day including 84 bowlers and their 84 buddies plus volunteers and plenty of spectators. Buddy Day was sponsored by The Bay

Sports Club and the Peck Family business NEUSolutions. A perfect day saw on offer a BBQ, plenty of prizes, a big spider with 168 bowls colliding in the middle of the green trying to claim one of the 73 prizes. This was followed by 2 games of bowls (10 ends) for all the bowlers. It was a great day. Thank you to the organisers, committee, volunteers, sponsors and all that participated on the day… We look forward to seeing you again next time.

Transforming Lakemba This month work will begin on a $2 million renovation of Lakemba Services. The refurbishment will see Parkview Constructions give the entire ground floor trading area of the Club a fresh new look. The renovation will be staged over approximately six months and the Club will continue to trade as per normal throughout. The first stage will be the construction of a new central bar area. This stylish modern outlet is expected to take around

30

three months to complete, during which a temporary bar on the site of the existing restaurant will be in operation. Along with the new bar, a full service café will be constructed to serve a range of coffees, snacks and light meals throughout the day and night. Following the completion of the bar and café, construction will begin on a new restaurant and a refurbishment of the entertainment lounge. The new restaurant will be an Asian offering and will include a dumpling and noodle

bar. This type of eatery is one of the hottest dining trends in major metropolitan areas and we are excited to be introducing this style of dining to the Lakemba area. Seating for the new area will be a mix of tables, chairs, high benches and stools. The TAB is also set for a makeover with a large new full service outlet being built with the latest technology including electronic race sheets and full sports betting functionality. In addition, a small display for the Club’s historical memorabilia collection will be built to showcase these valuable artefacts in a


SEPTEMBER 2013 modern appealing way. Externally the Club will be given a modern look with the dated brickwork rendered and new signage installed. So make sure you drop into Lakemba throughout the renovation to check out the progress of this exciting new development.
