Happy Anniversary MEL: AN UNINTENDED JOURNEY
Thirty-five years have passed, and all I can say is wow! Actually, it’s more like 36 or maybe even 39½. After all, it was 1975 when Enid passed a casual remark to her stressed-out husband, who, approaching the age of 47, was contemplating a future of unending stress related to his real estate and homebuilding business. Out of the blue, Enid said to me, “Why don’t we build a fat farm? People need to lose weight, eat right and exercise regularly, so why don’t we provide a place where that can happen?” Yeah, sure, I thought, what’s that got to do with me? In one ear and out the other! Fast-forward just three years, and there I was running off to a fat farm, because I felt awful and needed to shed 25 pounds. Truly, I had no memory of Enid’s prophetic suggestion. During that four-week stay, I had an epiphany and, before I knew it, we were on the path to building the first Canyon Ranch. Based on the wisdom of bankers, investors and just about everybody else, an all-healthy resort never should have been built back then – certainly not by me, and most definitely not in remote Tucson, Arizona. All these years later, we are filled with millions of memories and endless gratitude to everyone who’s helped make Canyon Ranch a success. I thank our amazing professionals and every staff member for demonstrating true generosity of spirit every day. I thank our thousands of guests who have come here with open minds and hearts and left with enlivened spirits and the inspiration to live healthier. The love shared at Canyon Ranch lifts us each to higher fulfillment. So thank you, thank you, thank you.

To this day, I’m still awed by the sheer beauty and magic of the destination resorts in Tucson and Lenox. Even more, I’m pleased that our staff culture is alive and well in all our ventures, on land and on cruise ships around the world. We hire people from many nations and backgrounds, and the first requirement is that they can pass our “Love Machine Test” for genuine caring. People tell me all the time how wonderfully our staff represents the Ranch. Pure, heartwarming joy to me!

So, our impossible dream became a one-in-a-million reality. All Enid and I really wanted to do was relax, live a healthy, stress-free life and be happy. I didn’t entirely lose the stress, but all the unintended results made everything worthwhile. I consider a Canyon Ranch vacation to be perfection, yet somehow I know it will keep getting better. At 86, I’m looking forward to great things!
ENID: GRATEFUL EVERY DAY Thirty-five years! I can remember when that was considered middle age. Of course, I could be talking about people or about Canyon Ranch. Today there’s a world of knowledge and tools out there to keep us healthy and thriving – the sky’s the limit! When we started out, I pictured the Ranch as a nice little retreat. Today we’re going global! (Was that even a buzzword back then?) I never take any of this for granted. I still look around at the smiling faces here each day and wonder how all of you heard about us. We’ve been able to spread our healthy living message, and we constantly meet wonderful people we would never have known otherwise. I thank each one of you for coming along on this journey with us. We’re endlessly grateful to our wonderful staff – some who have been with us since the beginning – and to our immediate family, which has grown by four grandchildren and two greats (well, I think they’re all great). Cynthia’s story is one of many at Canyon Ranch with a happy ending. Hers began with a doctor visit. “Cynthia was 60 when I met her in 2003,” recalls Mark Liponis, MD, Corporate Medical Director. “She came to Lenox with an autoimmune eye condition called uveitis, and was being cared for by a top specialist at NYU.” Uveitis often leads to blindness, which was of great concern to Cynthia and her doctors. Could Dr. Liponis help solve the mystery of what was causing her condition? Eyes were not his specialty, he explained – but agreed to conduct a comprehensive physical. In the course of the exam, the doctor learned Cynthia took an antacid for frequent heartburn. “It was a clue,” he says. “Cynthia’s CRP (C-reactive protein, a marker of inflammation) was elevated – meaning her immune system was highly activated. We wondered if the bacterium involved might be Heliobacter pylori, which not only activates the immune system but can cause heartburn. At the time we were treating H. pylori with antibiotics* so we went ahead and treated Cynthia.”
Oddly enough, once Cynthia’s infection cleared up, so did her eye condition. “It was the first known cure for uveitis,” Dr. Liponis says. Two years later, the journal Infection (April 1, 2005) published the first report in the medical literature confirming the link between H. pylori and uveitis. “Cynthia’s story is an example of what integrative medicine does best,” Dr. Liponis says. “It involves going deeper with each patient, taking as much time as you need to really learn what’s going on – then finding the best possible treatments, approaches and practices across a number of disciplines.” Guests are often amazed when their first medical consultation at the Ranch turns out to be an unhurried, meaningful and life-enhancing experience. In many cases, they report it is their first genuine communication with a doctor – a chance to explore issues that lie beyond surface symptoms.

HEALTH & HEALING: THE EARLY YEARS From the beginning, founders Mel and Enid Zuckerman envisioned Canyon Ranch as a place of healing as well as fitness and relaxation. When Canyon Ranch in Tucson opened in 1979, a health resort was an innovative concept, setting it apart from the trendy “fat farms” and pampering spas of the day. The Zuckermans took it in a more professional direction, hiring registered dietitians and experts in exercise and stress management as well as massage therapists and fitness instructors. By the mid-’80s, the founders focused on expanding the health and healing potential of the Ranch. They began to recruit specialists to deliver a wider range of services. Construction was begun on a facility dedicated to providing preventive health care, assessment and therapeutic services.

In 1988, the Health & Healing Center opened. It was dedicated to Mel’s father, Norman Zuckerman, whose death in 1977 became his son’s emotional catalyst to pursue good health. In the early days at the Health & Healing Center, guests came for consultations in medicine, nutrition, biofeedback, hypnotherapy, stress management, smoking cessation and movement therapy. The now-famous physician Andrew Weil provided alternative medicine consultations. Over the years, new components were added to augment or complement Western medical traditions – such as acupuncture, herbal healing, genomics and other diagnostic testing, podiatry, chiropractic, shockwave and laser therapy and Healing Touch.

A whole-person approach to wellness – including mind, body and spirit – has always been a foundation of Canyon Ranch Medicine. It involves professionals in various disciplines who collaborate to help each guest reach his or her health potential. At Canyon Ranch, a team of physicians, nurses, nutritionists, exercise physiologists, behavioral experts and others view you as a whole person, not as a collection of individual symptoms or body parts. Team members share assessments and expertise to create a fully rounded understanding of your health profile and needs.
Today, “concierge medicine” and “medical vacations” are familiar concepts, but it wasn’t always so. Back in the early '80s, nobody had ever heard of a resort where you could have a complete physical, consult with a Life Management professional, learn about herbal remedies, get your posture aligned and go home with prescriptions for nutrition and exercise.
In some cases, the best treatment might be surgery. In others, lifestyle changes alone may bring about great improvements. Often, a Life Management service such as biofeedback will be recommended. Asian therapies such as acupuncture can be of great help in alleviating pain while the underlying condition is resolved. “If you’re struggling, we’re not going to say ‘Live with it,’ and let it go at that. EXERCISE Your Options Lifetimes ago, staying in shape was no problem. All you had to do was chop wood for heat, haul water from the well, wash your clothes in the creek, build a fort with your own hands and harvest your own crops. Results are still guaranteed, but this probably wouldn’t suit your lifestyle today. While times have changed, your body hasn’t. It still needs challenge and activity to be strong and at its best. For 35 years, guests have turned to Canyon Ranch for expert exercise guidance that suits their tastes, busy schedules and individual needs.
MATTERS OF CHOICE “In the early days of Canyon Ranch, this department offered only one service,” says exercise physiologist Michael Hewitt, PhD, at Canyon Ranch in Tucson. “It was called, not surprisingly, Exercise Physiology Consultation. The guest met with a professional, and they developed a fitness plan together. It was almost always for weight loss back then.” The concern about weight is timeless, of course. It comes with living in an industrialized country, where every convenience – from remote controls to computers in eyeglasses – is meant to spare you even the smallest effort. On the positive side, modern life allows you the flexibility to choose the best fitness activities for you – activities you enjoy and that give you the results you want. “Every guest is unique, so we offer many choices,” Michael says. “Specific services might target weight management, cardiorespiratory endurance, bone health, strength training, balance enhancement, injury recovery – you name it. In every instance, we listen to what the person needs and make our recommendations based on his or her personal goals, challenges and abilities.” Guests at the Ranch can explore areas of fitness here that they never considered

before, often in ways that aren’t possible elsewhere. The signature, two-part Metabolic Exercise Assessment is an amazing opportunity for almost anyone, Michael says. It measures fitness level (VO2 max), fuel efficiency, heart size, lung function, caloric burn and much more. “This same assessment is administered to astronauts and Olympians. You can’t get it just anywhere,” Michael says. “Comprehensive exercise evaluations at the Ranch measure upper and lower body strength, cardiorespiratory endurance, flexibility, body composition, blood pressure, pulse and more. This tool allows us to really understand a person’s current status and plan strategically for best results.”
THE POWER OF KNOWLEDGE Michael explains that functional assessment has grown into a major emphasis at Canyon Ranch. Testing methods today range from simple to sensitive and sophisticated. They all yield valuable, usable information. “Our DEXA Body Composition test is state of the art,” Michael says. “It gives us precise and accurate measures for bone density, lean body mass and fat distribution. We use all that information to optimize an exercise prescription for that individual.” He pays

attention to every detail, too. Pointing to a thick folder for a guest he’s worked with for 20 years, he still remembers that she missed a bone scan in the late ’90s. “It’s terrific when we can track someone over time and observe changes. We can adjust the exercise plan whenever circumstances and goals change.” Michael says he’s particularly interested in measuring lean body mass. “A person may not be overweight but can be ‘underlean,’ meaning there’s just not enough muscle mass. “Everyone hears about the importance of BMI, or the ratio between height and weight. At the Ranch, we go for a fuller, deeper picture. A person could have a great BMI, for instance, but be frail because of lack of muscle.” He also notes that a person might weigh more but be trim because he or she has a greater lean body mass, which is denser than fat. So, a person with more lean mass can be firmer and trimmer than one who weighs a little more but has low lean mass. “We focus much more on lean mass than on fat.”
MEASURING AGE These days Michael is excited about developing trends at the Ranch. He notes
the value in determining your “fitness age.” It’s the scientific way to understand how your body is faring over time. “We now assess fitness age with a submaximal rowing ergometer or treadmill test, a body composition evaluation, muscle endurance tests and balance assessment. We even test vertical leap as a measure of lower body power.” As with other assessments, Michael says, fitness age at the Ranch is based primarily on comparison with other Canyon Ranch guests, who tend to be more active and health aware than the general population. It sets a higher standard. “Nobody wants to be their chronological age,” he says. “We all want to live younger longer.”
FIT FOR NOW & THE FUTURE Looking ahead, Michael sees significantly increased use of technology in exercise. “It doesn’t help much to use heart monitors or FitBits to measure exertion for one week of vacation, so we’re training people how to use that kind of wearable technology at home, too. That can be great for staying on track.” He also notes a growing interest in activities that people can do throughout their lives. “More and more people are exploring
aquatic exercise,” he says, “because it’s an outstanding workout with less chance for injury or joint damage. Plus, people just like it. I see aquatics activities expanding a lot.” That goes along with Michael’s well-known philosophy that the best exercise is the one you enjoy – because you’ll keep doing it. “We don’t know what’s coming next in fitness,” says Michael, “only that we exercise physiologists have to be ready. Exercise trends come and go, but everyone needs movement. Those specific needs are different for every person, however. Today I might consult with a pregnant woman, followed by someone recovering from surgery, followed by somebody training for a marathon. The thing that never changes is the one-on-one relationship. “Getting to know our guests over time and partnering with our nutritionists and doctors creates a team approach. We share all our areas of expertise and work toward the same result.” You probably don’t cut firewood on a regular basis anymore, but, by making appropriate choices, you can get a day’s worth of work out of just an hour or so of exercise – and have fun doing it! ■

LIFE MANAGEMENT WHAT IS IT & HOW CAN IT HELP?
Ever since people first stressed over hunting enough mastodons to put on the table, and who did most work around the cave, life has overflowed with challenges – often to crisis point and beyond. Basic needs, personal trauma, dysfunctional relationships and all that makes us human have always existed. Fortunately, we’ve made huge strides in the tools and attitudes that help us overcome problems and enhance our lifestyles. Life Management is about helping people make changes, improve their health, or learn more about themselves, says Canyon Ranch in Lenox Life Management therapist Joan Levitt. “There’s a whole spectrum of concerns everyone faces,” she says, including relationship issues, loss, major life transitions, aging and brain health, developing healthier eating or exercise habits, issues with sleep or sexuality, or learning more about your personality and psyche. Possible avenues to explore are endless, says Joan. Health-damaging stress may be addressed using biofeedback, meditation or learning new ways to integrate stress-busting habits into your current lifestyle. Weight concerns may involve looking at factors like body image, motivation, strategies for changing food habits, or taking a new look at nutrition. In the case of kicking smoking, the toolbox may include exploring ways to avoid self-sabotage, developing personalized strategies, and harnessing the power of the unconscious mind through hypnosis and meditation. “In most cases, we can conquer challenges by change in behavior or mindset,” she says.
TRANSFORMATION STARTS WITH AWARENESS Whatever change you want to make, the starting point is the same. “We begin with awareness of where you are and where you want to move toward,” says Joan. “Take relationships – you need to look at your expectations, and move them into a more positive domain. Discover what you want to create, and let go of what’s not working.” Similarly, “When a person is stressed, we look for the source of the stress – and what they may be doing to add another layer to an already stressful life.” Stress is particularly harmful, says Richard Carmona, MD, MPH, FACS, 17th U.S. Surgeon General, Vice Chairman of Canyon Ranch, and President of Canyon Ranch Institute.® “If you’re stressed at work or in your relationships, your cortisol and stress hormones increase, causing inflammation. Round-the-clock stress is deleterious to the health of your brain.”

People are living longer, and brain health is recognized as an integral part of lifelong wellness. “We’re outliving our brains,” says Dr. Carmona, author of Canyon Ranch 30 Days to a Better Brain. You can help your mind stay active by exercising regularly to keep neural networks strong and functioning optimally, and doing mentally stimulating activities to prevent your brain from atrophying. Tools for maintaining brain health are many, and recent trends have multiplied options for cognitive health along with other aspects of life enhancement. They range from long-established methods like meditation, visualization and relaxation to high-tech cognitive, memory and personality assessments. Biofeedback, for example, allows people to visually monitor – and learn to control – brainwave, blood pressure and heart rate changes in response to stressors.

TRADITIONAL METHODS MEET HIGH TECH
High tech methods are very useful tools, Joan says, but looking to the future, other modalities will remain equally important. “We’re moving into greater balance between the ‘softer’ aspect – using tools like life-mapping, relaxation and hypnotherapy that call forth your ability to enter a relaxed state and gain a felt sense of who you are – and the science side, such as neurofeedback. We want to use all the technologies we have, because woven together they make a more effective means for change.”
One of the biggest changes she’s seen is how people view the idea of therapy. “There used to be a stigma around it. Today, people have a more sophisticated understanding and vocabulary. They sample all kinds of therapy, from couples counseling to 12-step programs. They’re much more accepting of therapy as a tool for transformation. The underlying attitude is that it’s okay; it’s safe to find new things about yourself and to move into unexplored territory with help from expert practitioners.” ■

Occasionally, a particularly exciting event stands out on the calendar – such as her upcoming visit to Canyon Ranch in Lenox, as the featured speaker October 18 and 19 at a discussion and book signing of her second novel When We Fall, published earlier this month by Penguin Random House.
Still, some days can get a little crazy. “It can be a challenge to put a nutritious meal on the table. We don’t always get to sit down together to eat dinner.” Her husband sometimes works late hours, and the boys have their somewhat picky food preferences. Emily tries not to stress about it. “The truth is, my kids will eat a little junk food. As long as I can be sure they eat the good stuff – veggies, fruits and some protein – I allow them a certain amount of treats.”
A LIFE IN BALANCE A native New Yorker, Emily honed her organizational skills at ABC News where she was an executive assistant and helped produce television specials for Peter Jennings Reporting. Her passion for writing soon led to an opportunity to become editor of The WAG, a luxury lifestyle magazine covering Westchester and Fairfield counties. For five years she wrote about travel, fashion, celebrities and beauty, eventually establishing herself as a freelance journalist whose work appeared in The Huffington Post, Robb Report, Oprah.com and more. The family recently relocated to Connecticut, where Emily feels lucky to enjoy a flexible work schedule. “I still have deadlines, but I can meet them however I want because I make my own hours. I’m doing the work that I love, but I can

For Emily Liebert, it’s all about being organized. As a busy mom, journalist and published author, it could hardly be otherwise. Sticking to a schedule that involves book deadlines and hectic publicity tours – plus maintaining order in a household that also includes a hardworking entrepreneurial husband and active preschoolers (sons Jaxsyn, 5, and Hugo, 4) – requires plenty of discipline to maintain a healthy lifestyle.
“I am so looking forward to returning to Canyon Ranch,” Emily says. Recalling her first visit with her husband several years ago, she’s excited at the idea of a little R&R along with her book program. What makes it even more of a kick is that the Ranch figures into her story of the two central characters in When We Fall. “In my book, the friendship of these two women, Allison and Charlotte, reaches a pivotal point when they spend time together at Canyon Ranch.” Canyon Ranch in Lenox

She keeps in shape with barre workout classes five or six times a week. “I used to run, but I decided that as I am getting older, I’m interested in something that will help me build longer, leaner muscles. So, barre classes and occasionally, tennis.”
MODERATION, NOT DEPRIVATION She applies this philosophy to herself, as well. Although very nutrition-conscious (one of her memorable Canyon Ranch experiences was an enlightening visit with a nutritionist), Emily loves to cook, and that means indulging in the occasional decadent pasta dinner or yummy dessert. “I enjoy eating healthfully – lots of veggies, lean proteins like fish and chicken – so I don’t deprive myself. I believe that as soon as you start feeling deprived, you want, want, want what you can’t have!” Her favorite nutrition advice? “Cut back on liquor, sugary juices and sodas. Why waste the calories on something you drink? I would rather chew!” Looking forward to her return to the Ranch this fall, Emily muses on what she’d most enjoy doing for fun and relaxation. “Definitely, I would love to attend one of the cooking demos! Or try a yoga class or Pilates Reformer … hmmm, maybe a massage. I’m really interested in things I don’t get to do at home.” ■

“Do you feel the magic?” These were the first words founders Mel and Enid Zuckerman said when they discovered the Tucson property in 1978 – and it’s been like that ever since. “The Ranch has always been a spiritual place,” says Canyon Ranch Director of Spirituality Julie Haber, M.Div. “From the beginning, we’ve offered an environment and experiences that touch the spirit. Originally, though, the focus was more on physical health. Today, we’re seeing an increase in people who see spirituality as an integral part of health and well-being. We listen to the guest and suggest ways of integrating spiritual perspective and practice into his or her life – often opening up new ways of looking at a life situation. We used to be a mind-body resort. Now we truly embrace mind, body and spirit.” Exploring spirituality can help people learn how to accept, let go, trust and connect with hope, says Julie. “Sometimes people turn to spirituality as a last resort, when they hit challenging times. As part of a holistic path to optimal health, we try to encourage people to have spirituality be part of their lives at all times.”
LIVING WITH SPIRITUALITY Business executive Randy Eisenman of Fort Worth, Texas, first stayed at Canyon Ranch in Tucson 15 years ago. Initially focused on exercise activities, he decided to try a spirituality consultation that caught his interest. Since then, spirituality has become a major focus of each visit, he says. “I’ve experienced numerous perspectiveshifting insights.” While many people believe they need to get away from everyday distractions in order to look inward, Randy incorporates spirituality as part of his and his company’s everyday business. “I don’t think in terms of having a home life and a work life,” he says. “I’m the same person, whether I’m at work or at home. I live one integrated life.” A partner at Satori Capital, an investment firm, Randy focuses on working with companies “with a commitment to a deeper purpose, and a focus on creating value for all stakeholders – including employees, customers, suppliers, investors and the broader community. My team and I are committed to using our investment platform to make the world a better place.” He begins every company meeting with a brief interlude of journaling, followed by silent meditation. “These practices raise awareness and contribute to individual growth and development. They allow us all to be more centered, and ultimately more productive,” he explains.
Randy visits the Ranch frequently, where he continues his inner journey, not always knowing where it will take him. “Often, I just book time with Julie Haber and see what develops. I trust the process.”
THE MAGIC CONTINUES From Julie’s perspective, personal spiritual needs have become more complex over the past decades. “The news affects us, and events in our nation and our world are often challenging. This is one reason I’ve seen many people turn to spirituality. With the technology boom, more people are connected while being physically isolated. More people are acknowledging their need for spiritual community and deeper connection, both with themselves and others. Spirituality is connected with what brings meaning, purpose and value into our lives. When we feel more connected to our spirituality, we feel more fulfilled.” Because of increased interest in spirituality among guests, Canyon Ranch decided to create beautiful new Spirituality Centers in Tucson and Lenox. “These places help inspire people to relax and get in touch with what really matters,” says Julie. “Guests are having experiences beyond their expectations. Want to get people excited about the natural world and healthy eating? Plant a seed. That’s the concept behind CRI Healthy Garden, a program bringing open spaces and cooperative gardening to urban settings – starting with Savannah and the South Bronx.

“It’s a great way to bring people together around a positive activity that absolutely affects their health,” says Jennifer Cabe, Executive Director of Canyon Ranch Institute. “When you take that first breath of fresh air after a stressful day, or have that bite of a veggie from your own garden – you feel hopeful, which is the first step to a healthy life.”
The goal is to make the CRI Healthy Garden available to all communities, adapted for local climate and available space. In the South Bronx, that means a rooftop garden on the second floor of the Urban Health Plan building, a community resource and long-time partner of Canyon Ranch Institute. Chad Lewis, CRI Fellow, is co-creating the CRI Healthy Garden curriculum for future efforts.
Savannah’s CRI Healthy Garden, located on the grounds of the lovely Trustees’ Garden, is already thriving. Trustees’ Garden is the location of numerous Canyon Ranch Institute wellness programs offered through support from Canyon Ranch guests and Savannah civic leaders Charles H. and Rosalie Morris. In May, more than 60 community members helped create raised garden beds, and filled them with soil, seeds and plants that quickly grew into robust eggplant, tomato, squash, and bean plants – plus lots of tasty herbs. Guided by CRI, the volunteer gardeners include a range of ages and occupations – including physicians and their patients, master gardeners and first-time gardeners.

Even at my age,” says Mrs. Torrence, “when a plant shoots up from the ground, it’s exciting.
“Digging in the dirt is a great equalizer,” Jennifer says. “It brings the community together for a healthy purpose. People are doing something active and eating fresh, healthy food.” Gardening also helps manage stress, which is a major focus of the CRI Healthy Garden program.
“I learned from my father, who grew up on a farm,” Chad says, “and he learned from his father, who learned from his father before him. Sharing that wisdom and gardening tradition is so important, not only because of the physical health benefits, but also the emotional and spiritual benefits. I meet volunteers who are eager to learn about gardening and connect with nature. We’re excited to offer them this opportunity, so they can pass it along to family and friends.” Chad says each CRI Healthy Garden will reflect local ideas of peace and beauty, as well as cooking tastes. In the South Bronx, the community wants Caribbean favorites such as yauntía, which is a root vegetable, and gandules or pigeon peas. In Savannah, any veggie crop had better include okra.
At 83, Catherine Torrence is an enthusiastic volunteer gardener. Teaching Ranch Founder Mel Zuckerman about fitness sounds like teaching Mozart to play piano or Babe Ruth to pitch a baseball – but Mel credits Karma Kientzler for setting him on the road to healthy living. They met in early 1978, when he checked into a spa in Ojai, California. Mel was 49, in poor health and overweight. As assistant director and fitness instructor at the spa, Karma worked with him daily, and when he left he was in the top 2 percent for fitness for men of his age.
Before Canyon Ranch in Lenox opened, we needed a gardener. Ben Fieman offered to create showcase grounds for the historic Bellefontaine mansion. But with a background in historic preservation and as an administrator for New York’s Central Park, a landscape architect at Harvard University and as current director of horticulture for the New York Metropolitan Museum of Art, he sounded a shade overqualified.
Founding Hiking Director Phyllis Hochman, who joined Canyon Ranch in Tucson the day it opened, created the Hiking Department single-handedly.
“He was the mover and shaker,” says Karma. I was the motivator and supporter. When you have support, there’s nothing you can’t do.” When Mel and Enid created Canyon Ranch, they hired Karma as executive fitness director. She helped plan the resort and designed its fitness, movement and aquatic programs and associated facilities and equipment from the ground up. “My mandate was to create the top fitness program in the world,” she says. And she did, becoming vice president of fitness development and movement therapy. Today, Karma works for Canyon Ranch as a consultant, helping to enhance and develop the fitness experience at all Ranch properties.
He stayed in touch, and a year later received a call. The city of Lenox wanted the parking lot screened from view of the road. Could he help? Ben accepted the challenge. “Rather than just a hedge, we planted thousands of forsythia and hemlock trees, and pine trees along the parking lot,” he says. His one-year contract at the Ranch turned into a 24-year endeavor. Ben divides his time between Lenox and his ongoing job with the Met. “Canyon Ranch is about growth and renewal,” he says. “I started with a blank canvas. … We planted little trees, and now they’re a composition.” While Ben has transformed the grounds, the Ranch has also restored him. “I came to this job in my early 40s as a burned out workaholic. I didn’t exercise. At Canyon Ranch I’ve learned skills for a healthy lifestyle. “The garden is really a metaphor for what we do at Canyon Ranch,” he says. “It’s like health and wellness – it doesn’t happen overnight. It takes consistency and commitment.”

She’d moved from New York to Tucson three years earlier, after being bedridden for weeks with spinal arthritis. She took up hiking to help rebuild her strength, and discovered its healing potential. She heard the Ranch was being built, and called on Mel to propose a hiking program. In the predawn of the fitness revolution, hiking was barely a blip on the radar, but her proposal was compelling. Why would guests come to Tucson and not want to explore the stunning surroundings? “Would you go to Paris and not see the Eiffel Tower?” Initially working as volunteers, Phyllis and a handful of guides operated the Hiking program from the back of her car, driving guests who responded to her handwritten sign-up sheets. Today, the Ranch provides vans for hikers. When Phyllis retired as Hiking Director in 1996, her staff numbered 35. She continues to work as a consultant for Ranch hiking programs. Her favorite trail? “Whichever I’m on that day.” At 83½, she works out regularly, and still does level 1 hikes. Returning guests, many of whom she introduced to hiking, often ask for her by name. The feisty veteran of hundreds of hikes celebrated her 80th birthday by hurtling along the zip line at the Ranch in Tucson. She still has spinal arthritis, but refuses to let it slow her down. “I’m delighted to be an example in terms of fitness in the ninth decade of my life.”

TODAY’S HEALTHY CANYON RANCH CUISINE EMBRACES FLAVOR, FRESHNESS

HEALTHY The Sensational ’70s were abuzz with exciting movements in popular culture – the far-out fashions, the innovative music, the iconoclastic films, the explosive politics! But food trends, at least in the U.S., fell somewhat short of memorable. Let’s just call it “The Decade of Ranch Dressing” and leave it at that. When Canyon Ranch opened in 1979, its healthy-living philosophy and invitation to explore life’s possibilities transformed the spa, health and wellness industry. Guests flocked to the Ranch and raved about all of it – except the typical fatfarm menu. “This was the era of low-calorie, low-fat, bland food,” says Judy Deutsch, nutritionist in Lenox. “In those days, anyone who came to a health resort expected sparse meals, and that’s exactly what they got.” Typically, according to Judy, the Ranch daily menu featured one main entrée and one alternate for each meal. Nutrition information consisted of the calorie count, period – and your total was prescribed at 800 to 1,000 calories a day. The Sides and Salads menu may have offered Steamed Vegetables (100 calories), One Half Whole Wheat Bagel (80 calories) or, tragically, a single Rice Cake (35 calories). Dessert was hardly worth the bother. “It was kind of scant, especially if you’d been exercising all day.” Snacking was not encouraged. “You could have a piece of fruit, but that was about it.” That was then. …

BRING ON THE HEALTHY FATS Canyon Ranch nutritionists and chefs today understand that deprivation will only undermine a person’s effort to maintain a healthy weight. Gone are the ultra-low-fat diets. “Brain research has told us that withholding fat from the diet can be harmful, and will only leave you unsatisfied,” says Judy. “Over the last six to eight years we’ve upped the percentage of fat in our food, to about 25 or 30 percent. But the important thing is – and this is what we stress in our nutrition talks with guests – we use good fats. “There’s really no reason to use fake fats. We used to make our ‘guacamole’ with pureed peas, spinach or asparagus. Now we only serve the real deal. Avocado is very good for you, rich in omega fats.” Today’s Ranch recipes also make liberal use of herbs and spices because “we understand that they bring major health benefits, in addition to the great flavors.”
FOODIE Today, a guest in Tucson or Lenox can select from soups, appetizers, salad bar, desserts and a choice of six or seven entrées on the menu – 1,600 to 1,800 healthy, balanced and great-tasting calories a day, with mouth-watering descriptions such as Grass-Fed Beef Tenderloin with Wild Mushroom Jus and Potato Pancake. For a meatfree choice, try the Tofu-Topped Vegetable Stir-Fry with Mongolian BBQ Sauce and Brown Rice.
ALWAYS SOMETHING NEW TO LEARN Many Ranch guests today are nutrition savvy – and yet, “there are important things we can teach them or help them to better understand,” Judy says. One example is the glycemic index. Lower GI foods, by virtue of their slow digestion and absorption, produce gradual rises in blood sugar and insulin levels and have proven benefits for health. Many people find it confusing, and what makes it even trickier is that combining a higher-glycemic food such a banana with a with lower-glycemic food such as nuts can actually lower their glycemic number, turning them into a smart choice.
EVOLVING TRENDS AT THE RANCH These days, more guests are coming to the Ranch with nutritionrelated health concerns. “I’m seeing many more people with issues,” Judy says. “Digestive issues, reflux, diabetes or insulin resistance, food sensitivities. … More guests are asking for private sessions, and they want to look into medical services in conjunction with nutrition. “I’m also seeing more male guests,” Judy adds. “I think men are really getting the message that the Ranch isn’t just a massage place. Some choose the health packages because they really like that they can get here what they can’t get at home – attention to their health concerns.” One man, during a nutrition consultation with Judy, happened to mention some digestive symptoms. She suspected he might benefit from a particular diagnostic test. The guest asked his doctor for the test, and it turned out he had an overgrowth of bacteria in his small intestine, which had been causing the distressing symptoms. Nutrition services have always been a hit with Ranch guests, and Judy sees this trend continuing to grow into the future. Combination services are especially appealing, such as the new Mind Over Mealtime, which involves Life Management as well as nutrition professionals. People increasingly want to know about the Ranch philosophy of “clean eating” (as free as possible of pesticides, antibiotics, hormones and other harmful chemicals) and, Judy says, guests who may have been skeptical of the value of organic foods often become believers after attending a nutrition presentation. Locally sourced, organic, sustainable, unprocessed and flavorful – these food preferences have steadily gained ground in Canyon Ranch kitchens, where chefs continue to expand the menu offerings to accommodate changing tastes. The Ranch has come a long way from rice cakes and fake guacamole. “The low-calorie, low-fat, minimalistic mealtime mindset is over,” Judy says. So, go ahead and order that yummy cheesecake (yes, it’s on the menu)! ■
“Another confusing topic is fats. Olive oil usually is a great choice, but it’s not recommended if you’re cooking with high heat – coconut oil might be better for that. By now, almost everyone has learned to avoid hydrogenated fats. So when you read a food label and it says canola, or corn, or sesame oil, you might think ‘well, that’s ok.’ But if it doesn’t say ‘expeller-pressed’ or ‘cold-pressed,’ it is processed fat and not good!

AVOCADO ORANGE SALSA
1 cup diced avocado
1 tablespoon fresh lime juice
1 tablespoon all-purpose flour
¾ cup diced orange segments
3 tablespoons minced scallions
1 teaspoon cane sugar

with AVOCADO ORANGE SALSA Packed with healthy omega-3 fats from avocados and a splash of vitamin C from citrus, this recipe is one you’ll want to make again and again. The Latin Spice Rub adds an extra kick of flavor and a boost of antioxidant nutrition.
3 tablespoons LATIN SPICE RUB (see below)
1 pound Mexican yellowtail, cut into 4 equal portions
2 cups fresh snow peas, julienned
1 teaspoon extra virgin olive oil Pinch crushed red pepper ¼ teaspoon sea salt ¼ teaspoon freshly ground black pepper 1 fresh lime, cut into sections
In s t ruc t i o n s 1. Combine all ingredients for salsa in a medium bowl and mix well. 2. Preheat broiler. Season each fish fillet with 1½ teaspoons Latin Spice Rub. Place fish on the middle rack to prevent burning the Latin Spice Rub. Broil fish for 3 to 4 minutes on each side, or until done. 3. In a medium sauté pan, sauté snow peas over medium heat in olive oil with crushed red peppers until peas are tender. Remove from heat and season with salt and pepper. 4. Place ½ cup sautéed peas on a plate. Place 1 fish fillet on peas and top with 1/3 cup Avocado Orange Salsa. Chef’s note: Preparing the fish in the broiler will tend to cook it through. If you would prefer your fish to be cooked less, you may instead sear it in a medium-hot pan for one to two minutes on each side.

1 tablespoon black peppercorns
2 tablespoons whole coriander seed
2 tablespoons whole cumin seed
¼ cup cane sugar
1 tablespoon sea salt
Inst ruc t i on s Toast peppercorns, coriander and cumin seed. Place in a spice or coffee grinder. Grind to a powder. Mix with sugar and salt.
