Man of the Ranch
When Canyon Ranch opened in 1979, I believe I was the only male owner in what was loosely referred to as the “spa” industry. It was led by amazing, trailblazing women, and catered to a 99 percent female clientele. I approached the arena with respect, passion and an all-inclusive vision in mind. Because I had been a real estate developer for the previous 20 years, people might have assumed that building Canyon Ranch was just another business decision for me. Nothing could be further from the truth. Enid and I were driven by a vision to create an all-healthy environment that we could live in and share for the rest of our lives. I had had my Aha! moment in California at The Oaks at Ojai – a typical spa or “fat farm” for that day – when I discovered the power of healthy living. Our plan was to take that concept to a broader and deeper level, where guests’ interests were supported by every staff member, and profound change was possible. We were determined to go well beyond weight loss to allow for each person’s openness to fitness, nutrition and overall lifestyle. And we needed to make the Ranch a beautiful, healthy, fun vacation that anybody could enjoy – including a guy like me. An original thought back then! From our earliest planning, we included a wide range of activities, programs and facilities to appeal to men as well as women. Our tennis, handball, squash and racquetball courts alone set us apart from the old fat farms. We wanted everyone to understand we were different.

One of our earliest decisions was never to use the word “spa” to describe the Ranch. “Fitness resort” better described us and, we believed, had broader appeal. As it happened, we had to give up on that purist approach when the media started touting us as a groundbreaking “spa.” Then the readers of Condé Nast Traveler regularly voted Tucson and Lenox as Best Destination Spa throughout the ‘90s. That voting category doesn’t exist anymore, but we became famous as a “spa” as well as a health resort. I can live with that! Whatever you call us, we’re about helping everybody feel fit and vibrant for life. Is there a man alive who doesn’t want that?

To be honest, our original menus provided a Spartan 750 or 800 calories a day, which was the quick weight loss mode of the day. But who can live on that long term? Exercise and nutrition science evolved in the mid-‘80s, and we were glad to change along with new knowledge and research. Our nutritionists and chefs geared up toward 1,500 to 1,800 calories a day for slower weight loss. It’s a healthier, more sustainable approach, and the food is fantastic. We’ve won many culinary awards over the years and have been credited with inventing “spa cuisine.” I'm happy to say that no man goes hungry at Canyon Ranch. Many thousands of people use our cookbooks at home because the recipes are so fabulous. Aside from the food, guys are often surprised by our ever-growing list of sports, outdoor activities and fitness choices. Plus, they discover that tranquility, relaxation, and letting go of everyday stress are pretty terrific, too. Most importantly, in my opinion, they get a chance to focus on their health for a change. That’s a big deal for men who often take better care of their cars and their businesses than of their own bodies! Statistics consistently show that men are negligent about screenings and preventive care. At the Ranch, they can give their health all the attention it deserves, spending plenty of quality time with a team of integrative professionals who will help them eat better, grow fitter and feel better for life. A positive goal for anyone.
NEVER A DULL DAY I actually believe it’s impossible to get bored at Canyon Ranch, because there are endless possibilities to explore every time you visit, every day you’re here. I’m a good example of that. After 35 years of living in an environment that’s all about mind, body and spirit, a recent health incident caused me to look at my own relationship to spirituality in a new way. For many reasons, I was finally ready to embrace it more fully, and it’s brought much more meaning, resiliency and acceptance into my life. Who knows what experience will inspire me in the future? Men who think the Ranch is just another spa vacation for pampering are thrilled by what they find here. We keep that in mind in all our decisions and offerings, so it’s truly a place for everyone. We love being known as “the best spa known to man!”

“If you need inspiration,” Dr. Brewer says, “here it is: Physical activity helps prevent cardiovascular disease, improves strength and resilience, promotes healthy sleep, boosts your self-image, enhances your mood and libido, helps you manage stress, and maintains bone density so you can remain active as you age.” (In other words – if exercise were a pill, you’d probably go to any lengths and pay any price for it.) Beyond his prescription for exercise, Dr. Brewer has these basic points of advice for men: • Eat mostly plant-based foods; avoid sugars and unhealthy fats. • Don’t smoke. • Avoid alcohol. • Learn to manage stress. • Get regular checkups and recommended health screenings.
A MATTER OF LIFESTYLE Lifestyle choices largely determine your chances of escaping most modern chronic diseases, Dr. Brewer says – notably the No. 1 men’s health concern, cardiovascular disease. Even if you don’t have heart disease or cancer (No. 2) in your family, a proactive approach makes sense. The Cleveland Clinic reports, “Even for those already dealing with chronic conditions, adhering to a healthy lifestyle can bring rapid, significant and sustainable improvements to health.” That’s why the Canyon Ranch approach to health care is to address lifestyle issues first, wherever possible – before surgical or drug intervention. Dr. Brewer says men who approach him with a health concern often are relieved to discover it can be resolved with a simple modification of diet or lifestyle. “But they have to take the first step by showing up.” Dr. Brewer observes that men generally wait much longer than women to seek help for a problem. “We tend to put these things off. It’s not at all unusual for a man to say to me, ‘My wife (or girlfriend) made me come here.’” There’s a cultural tendency for men to mask their fears of illness, discomfort or embarrassment, leading to avoidance of what could be life-saving checkups and health screenings. Women often are less hesitant to seek help and feel more comfortable in a health care setting, with their routine ob-gyn medical visits and more commonly designated role as family caregiver. Even when a man does show up for his checkup, it can take some finessing to get to the heart of the matter, Dr. Brewer says. “I may need to ask questions, then eventually it’s ‘well … I have trouble sleeping.’ That gives me a place to start.” Often, symptoms such as poor sleep, depression, fatigue or decreased libido can be resolved easily by treating an underlying medical condition.

Loss of libido is a big fear for many men, leading to strained relationships, loss of self-esteem and depression. Testosterone begins to drop 2 to 3 percent per year starting at age 30. Thirty-four percent of men have low testosterone by age 50. The range of symptoms can include erectile dysfunction, decreased vitality, loss of muscle mass, increased body fat and osteoporosis.

There’s controversy over whether testosterone replacement can help, or if it poses unacceptable medical risks. Fortunately, Dr. Brewer says, most men with reduced testosterone levels are usually able to enjoy active sex lives. “Specific lifestyle changes can help boost libido. Taking off excess weight is very important. Certain foods – such as antioxidant-rich fruits and vegetables or foods high in vitamin B – may help boost sexual stamina by increasing blood circulation.”
“I’d never been to a doctor who wasn’t in a rush,” Phil says. “It never occurred to me to look into medical care at the Ranch until my wife suggested it. I didn’t even realize until halfway through the consultation that I needed to pay attention to my recurring digestive issues – I had thought it was something I just had to put up with, part of getting older. The doctor referred me to the nutritionist, who helped me figure out I have a gluten sensitivity. I tell everyone that my visit to Canyon Ranch wasn’t just a great vacation – it was a smart investment in my health.”
Managing stress is a must. “Not only is it mentally distracting, but stress leads to a surge in adrenaline and cortisol, which can disrupt your body’s sex hormone levels.” Stress also causes the arteries to become narrow, restricting blood flow. Try meditation, biofeedback or yoga. Dr. Brewer also recommends keeping communication channels open with your partner. A therapist can help you both communicate about difficult subjects. DAY 1 | Finally! Jeff said I could have whatever I wanted for our 20th
DAY 4 | Jeff did yoga class with me! He decided it’s not as easy as it looks. Then he worked out in the gym and I took a creative arts class. Somehow I couldn’t convince him to make earrings with me.
We got here late afternoon and met with our Program Advisors. We’re starting off tomorrow with an early morning hike. The desert is beautiful and the weather’s great so he couldn’t complain, especially when I said I would go too.
Tonight I'm on my own after dinner. Jeff’s having an overnight sleep evaluation. Maybe I’ll have a facial before bed.
anniversary. I said I wanted him to come to Canyon Ranch with me. This time he couldn’t say no!
Jeff admitted our dinner was fantastic and said there was plenty to eat. He asked me if it was fluke. Ha, ha, he’ll see.
DAY 2 | Wow, quite a hike this morning! Wild West scenery, cactus, exotic creatures and an awesome trail guide. He showed us some pointers for tracking animals by their paw prints and droppings. Jeff was the first to spot a hawk swooping down to grab some furry thing. The other hikers dubbed him Eagle Eye. Was Hawkeye too literal? Doesn’t matter – he loves his new nickname. He believes his newly discovered talent should be very helpful in Chicago. I bet we’ll both be sore tomorrow from this adventure, but it was worth it. Okay, here’s a first – I actually got Jeff to an afternoon dance class with me. Trying new things – yay! I'm better at this than him because I take classes at home, but it’s safe to say we’ll both keep our day jobs. We were smiling nonstop and got a good workout. He called me his Zumba Queen! Fabulous dinner – pizza and Italian “tapas” outdoors. Afterward we had side by side massages. We were walking back to the room later and saw the meteor shower everyone’s been talking about. We lay down on a couple of lounge chairs and just watched it happen. Maybe I did make Jeff come to the Ranch, but he’s finding it hard to dislike.
DAY 3 | Jeff saw a doctor and an exercise physiologist today. That’s
the real reason I wanted him to come to Canyon Ranch. He found out he’s not exactly in “college shape” like he thought he was. He spent an hour with one of my favorite docs, who talked with him about his weight and his sleeping habits, which are terrible. The exercise physiologist did some high tech and low tech tests and strongly recommended more cardio exercise and strength training. I tried to act surprised when Jeff told me about these “expert observations” – as if I hadn’t said the same things a hundred times before! We got caught in a “traffic jam” at dusk. Suddenly there was a herd of hairy beasts crossing our path. Jeff jumped! He said they looked like wild boars. I told him they’re called javelinas and they're partial to Canyon Ranch. We got great pictures. Wildlife meets spa life! Tomorrow we search for pterodactyls.

DAY 5 | Jeff has sleep apnea. The doctor told him that this could be
a factor in his weight, his mood, his immune system – basically everything. Too bad Jeff never mentioned his sleep problem to our doctor at home. He’s going to get a CPAP machine to use back home. People say they're excellent for apnea. I hope it works on his snoring! And the good news: Jeff and I spent a chunk of today on mountain bikes! Neither of us ever tried it before. It rained here a few days ago so the creek was running. We had to ride through some wet places and came out splattered in mud, helmet to toes. If we’d sat in the sun we would have hardened into statues. It was the most fun we’ve had in ages. I guess we’ll be getting new bikes at home. We’re leaving tomorrow so Jeff decided to try one more new thing – a facial! Now he knows why I love them. Plus he was told he has great pores, which he called his “dream come true.” I told him his skin looks a lot better and extra manly too.
DAY 6 | Surprise, we’re not leaving! I had to talk Jeff into this trip, and he’s returning the favor. Three more days!! He wants to try the Ropes Challenge next. If he’s brave, he might try a pedicure.

More than just a hobby to fill odd moments, a passion is a deeply fulfilling pastime that creates a sustaining thread through your life. Whether it’s playing guitar, creating lovely things out of clay, training for progressively challenging athletic events or pursuing a favorite sport, it’s something that you can always turn to for mental and physical refreshment. The more stressful your life, the greater the benefits can be. Jacob Shani, MD, an interventional cardiologist and Chairman of the Heart Institute at Maimonides Medical Center, New York, didn’t have a passion, other than his demanding profession, until the mid1990s. Vacations were relaxing – lying on the beach or exploring exciting destinations like Paris or Rome – but they were isolated breaks from the pressures of the real world, rather than an integral part of his life. His wife, Gilda, liked to vacation with friends at Canyon Ranch in Lenox. She persuaded him to give it a try, but he was deeply skeptical. “What will I do there? Lie down, get massages – it’s not for me. “What I discovered was the active vacation. There isn’t much of an outdoors in New York, but Canyon Ranch has a wonderful, magnificent outdoors.” At home, he works out, goes to a gym and works with a personal trainer once or twice a week. “But you get lazy. Going to Canyon Ranch remotivates me. It’s a perfect kind of vacation. I work out hard, go hiking, exercise and I also get to relax. It rejuvenates and recharges you.”
A PATH TO DISCOVERY When they first arrived at the Ranch, he followed Gilda on her favorite activities – including a scenic hike. That initial taste of the outdoors lit a spark that grew into a consuming passion. “I fell in love with hiking.”

He’s hiked on the Appalachian Trail in the Berkshires, and in Tucson his favorite is the level 6 Linda Vista hike. “In Lenox, I like the Five Summits hike that starts and ends on Mount Greylock. Now we go on hiking trips every summer, to Europe or Latin America. This year we’re going to Iceland. We did the Dolomites in Italy – that’s pretty steep mountain hiking.” Hiking has become an inseparable part of Jacob’s life, but he enjoys mixing it up a little. He and his wife have Canyon Ranch memberships, and in the course of around 50 visits to the Lenox resort and five or six to Tucson, he’s tried a wide variety of classes and sports – with emphasis on outdoor activities, like canoeing, paddle boarding, biking and snowshoeing. “I’ve done the High Ropes Course, but I look on it as a fun thing, like going to Disney World.”
AN ENDURING AHA! Mostly, he goes for the hiking. “That’s pretty much all I do.” One visit coincided with hiking week: Since then, he’s attended the event seven times, including once in Tucson. “The hikes are more advanced; they’re not only great hikes, but the people who come for that week are hikers – that’s what they do.”
And, he says, “the staff are wonderful. I’d give them an A-plus. A good guide makes or breaks a hike. He or she sets the right pace for the group, and isn’t selfish, but realizes the hike is for everybody. A good guide engages the guest and points out interesting things along the way.” Camaraderie, mountain and desert scenery and seeing nature are intertwined in the intense pleasure he finds in hiking. “I’ve seen bears, coyotes, a roadrunner, deer… and in Tucson I even saw a bobcat.” Most of all, summiting a mountain is an inspiring experience that’s made hiking into his enduring passion. “It feels great when you get all the way to the top. It’s not a moment that changes your life, but it’s one that enriches your life. One time builds on the next. It’s a continuum – not one Aha! moment; but doing it again and again, it kind of changes your life slowly – because you realize how important it is, and how great it is.”

Skin care needn’t be complex or time-consuming.
Hassle-Free Skin Care for Men Your face is the first thing others see – but every time you leave the house, your skin is on the front line, exposed to sunlight, wind and pollutants. Just like women, men want to look their best; however, they may be their own worst enemies when it comes to protecting their skin, says Kim Nixon, Canyon Ranch in Tucson Skin Care trainer. Dryness, flakiness, fine lines and sun-damaged skin can be remedied or avoided, she says. “You need to feed your skin just like you feed your body. What we take as normal aging is actually a deficiency of vitamins and other vital nutrients. It’s never too late to take care of your skin.” Skin care needn’t be complex or time-consuming. Your skin’s basic needs are few – cleanse, nourish and protect – and meeting them may be as simple as using more effective products.

SOAP VERSUS CLEANSING GEL
“Because men shave, they’re exfoliating every day,” says Kim. In other words, you constantly scrape off the top layer of your facial skin. Use a shaving lotion, cream or oil, then use a toner. Avoid alcohol-based products, which cause dryness. If razor rash is a problem, a toner containing tea tree oil, a natural antiseptic, is beneficial, as well as lactic acid and niacinamide.
“Most guys use soap on their faces,” says Kim, “but many soaps contain detergents, which dry the skin and make it feel tight. If your soap foams a lot, chances are it has a lot of detergent.” The active ingredient making those harmful suds is sodium lauryl sulfate. Switching to a cleansing gel or cream protects the skin and keeps it from drying. Look for a product that’s pH-balanced. Positive ingredients and words to look for on the label: cleansing cream, gentle, sensitive skin, almond milk, coconut milk.
READY FOR THE OUTDOORS After washing and shaving, use a moisturizer containing a broad-spectrum sunblock with at least 30 SPF, or sun protection factor. The key ingredient should be vitamin A, along with vitamin C and antioxidants to protect your skin from aging and keep it healthy. A good moisturizer may also offer resveratrol, green tea, lycopene, lutein and vitamin E. “Guys like a lighter weight moisturizer,” Kim says. “Moisturizing gel is ideal.” If your moisturizer doesn’t include sunscreen, smooth some on before heading outside. After moisturizing, men can go one step further and apply eye cream to combat fine lines and wrinkles, she adds. “At night, always wash your face, and, ideally, apply multivitamin cream again.”
KEEP IT SIMPLE Skin care should be hassle-free, says Kim – or, let’s face it, who’s going to bother? “All you need is a cleansing gel you can use in the shower, followed by a vitamin-rich moisturizer and sunscreen, and you’re good to enjoy the outdoors. If sunscreen sounds like an unnecessary extra, think of the sun not as that smiley, cartoon face on cereal packages, but as a giant ball of radiation that presents real danger. If you’re playing golf or tennis or going skiing, put on sunscreen or wear a hat.”

Hank Bjorklund Former Princeton Tigers record-breaking running back and 1970s New York Jets player Hank Bjorklund discovered Canyon Ranch in Lenox by chance, soon after it opened. He and his wife, Victoria, “stumbled on” the Ranch when looking for a place to stay after a hiking trip in 1989. “It was a revelation to me,” says Hank. “I’m a gym rat. We have a gym in the house and a gym membership. We work out, do resistance training, stairs or cycling six days a week. Canyon Ranch is just a workout paradise that offers so many other things. It’s become a tradition for us to go during Presidents’ week, to celebrate our anniversary and my wife’s birthday. I always find it restful – and the food is spectacular.”
CHECKING IN ON HEALTH Hank and Victoria, who are both retired lawyers, recently completed their 22nd visit to the Lenox property. “It’s a wonderful place,” says Hank. “And several things are not well known – like the fact that Canyon Ranch offers state-of-the-art medical treatment. It’s not an exaggeration to say that Dr. Cindy Geyer saved my life. She discovered I have hemochromatosis, a genetic blood disorder that can lead to liver cancer, heart disease or diabetes. It becomes a real issue in the mid-40s. We were there for an annual physical and I told her I’d been feeling tired. She discovered it right at the time when it could be treated before any organs were damaged. Without her having taken the initiative, I would be in very serious difficulties. “I go back for a physical and consult every year. FITNESS, HIKING & MORE Despite his background as a professional athlete and certified personal trainer, Hank regularly touches base with exercise physiologist Richard Butler for workout ideas. “This year, he suggested I reduce my number of sets and reps, but increase weight. Canyon Ranch in Tucson Manager on Duty Jude McCarthy is best known to guests as a sports and fitness animal – from organizing intense basketball games during his 15 years at the Lenox property to the Keeping Up With Jude athletic events he’s hosted over the years at the Ranch in Tucson.
When Corporate Medical Director Mark Liponis isn’t working with guests at the Ranch in Lenox, he and his wife travel to third world countries to help people with no access to medical care. It doesn’t leave much time for play. The ideal opportunity came last year, though, after a working trip to Canyon Ranch in Tucson.
Working at Canyon Ranch has presented a ton of fascinating opportunities, he says. “I was once a guinea pig for a full body wax – ouch! When it grew back, I’d take off my backpack after a hike and rub my back against a tree like a bear, to relieve the itch! “I’ve had my hair colored blond in the Salon, done a Shamanic Journey and Watsu – but I really enjoy getting a facial.” He keeps a bottle of moisturizer and a lip balm handy next to his computer. His wife, Beauty Services Corporate Director Laura Hittleman, has taught him a lot, he says, but after his first facial he was independently hooked. “Facials put me in a trance. They’re really relaxing, and your skin feels good when it’s exfoliated and moisturized. Who doesn’t want to look better? Even inside, I use moisturizer and sunscreen. When you’re going outside in the cold, wouldn’t you put a winter coat on? It’s just an extension of getting ready for your day.” “I think the culture’s changing,” he says. “A lot of guys get facials. Here at the Ranch you can try lots of things you never tried before, including skin care and beauty.”

“While I worked, my wife went to the Spa and tried every single thing. One evening at dinner, she had this big grin on her face. She told me she’d been out in the desert and made fire rubbing two sticks together. She was so happy and proud of herself. I was pretty impressed – I’ve never made a fire without a lighter or matches. I felt a bit jealous that she was doing all these fun things and I had to work.” The idea of making fire stayed with him. Then, five weeks later, he took part in a media event in New York City to introduce people to the Ranch. Among the presenters was Randy Kinkade, Canyon Ranch in Tucson Outdoor Sports Manager. “I said to him, ‘You taught my wife how to make fire. Can I learn?’ We went up on the roof of this New York building; it was about the 30th floor. He picked some twigs and made some kindling, and I made fire by myself, right there on the roof! I felt the same satisfaction you do as a doctor when you get a splinter out. It’s immediate gratification. There’s nothing wishy-washy about it; you did it. I didn’t just make some smoke – it was real fire!”

Until a year ago Canyon Ranch Hotel & Spa exercise physiologist Jeff Dolgan tended to shy away from areas like Healing Energy. In his 12 years working at the Lenox property and then Miami Beach, he’s tried many services, but always stayed within his comfort zone. “I used to be pretty hardheaded; I couldn’t connect with things I couldn’t explain – but last year I was going through some difficulties and my stress levels were high. Typically, I would have relied on exercise, but a colleague who’s a Healing Touch practitioner recognized I was stressed. She practically demanded I have a session with her.” At first, the idea was intimidating. “I was nervous, but I made a conscious effort not to have any expectations or try to control the experience. That’s how you let these things happen.” Healing Energy focuses on unblocking energy, he explains. “I had a block in my third chakra – I was holding onto something so energy couldn’t flow through properly. I learned how to let go of some of the emotional baggage I was holding onto – and how to breathe more deeply, and connect with my breath whenever I’m feeling stressed. I walked away with a greater sense of self and forgiveness of myself. I was able to walk out feeling my soul was cleansed. I did this a year ago, and to this day I remember things she taught me and ways of controlling my anxiety. “It opened my mind to a lot of other possibilities. Since then, I’ve done more Healing Energy sessions, as well as acupuncture. I’m just more in touch with my own wellness.”

Michael F., age 48, arrived at Canyon Ranch in Lenox for the first time in an impressive state of exhaustion. He’d been plucked suddenly from his routine, which included global travel at least half the time, more business meetings than seemed possible, the responsibility of running a major corporation, and a long-term 24/7 relationship with his BlackBerry. The serenity of the Ranch environment, a lack of urgency, and the notion that life could exist at a slower pace were a shock at first. Soon, though, he realized something was happening that made him feel pretty great. He decided there was a lot he’d like to learn during his stay. Jeff Rossman, PhD, says that Michael’s initial reaction is not uncommon among highly successful, Type A men who visit the Ranch. Often they take home much more than they expected from a “simple” vacation.
emotions can contribute to a weakened immune system, pain and other health consequences.”
“Someone who is successful, smart and educated is usually open to learning new things,” says Jeff, the Director of Life Management at Canyon Ranch in Lenox. “Even men who have been ‘dragged’ here by somebody find that the environment affects them. They're goal-oriented people, so they want to make the best use of their time here. They're ready to learn something that can make their lives better.”
“Education is the big factor for these guys,” he says. “Many of them come to my talks and are surprised by what they learn about managing stress and relaxation techniques. They want to use their energy in positive ways and are looking for strategies that are proven to work.”
Jeff explains that the prototypical Type A personality is “driven, competitive and doesn’t stop to smell the roses.” Most of these attributes are not harmful to their health, but some can be damaging.
THE A LIST The term “Type A” was coined in 1959 by two cardiologists, Ray H. Rosenman and Meyer Friedman, who discovered that their heart patients wore out the waiting room chairs in a different way from other people; the fronts of the seats showed wear instead of the flat part or the back. The doctors studied this and pinpointed a personality type that, literally, lives on the edge of the seat. Research has since pointed to the specific aspects of a Type A profile that correlate with heart disease.

Many Ranch guests choose private sessions using biofeedback, a technology that directly shows how physical and emotional factors are connected. Jeff says evidence-driven men resonate to the visual biofeedback display that shows exactly what’s happening in their bodies at each moment. “Guests tell me that they’ve heard about the benefits of meditation but didn’t appreciate it until they saw the effect on their heart rate and muscle tension. Then they want to practice it and take it home. They don’t see making lifestyle changes as restrictions – they see them as ways to gain greater flexibility and freedom.”

“Being goal-oriented and wanting to excel are attributes that are not harmful to your health and can help you reach your goals,” Jeff says.
Type A personalities are usually motivated to modify their behavior because of either health concerns or a desire to improve relationships with a spouse, children, friends or colleagues. A heart attack will obviously get anyone’s attention. The workaholic may eventually find that his family is suffering because of his crushing schedule and inability to relax. Jeff offers practical strategies that can help even the most high-velocity guy to slow down a step.
“You might channel that into sports or music, for instance. A Type A person might also have chronic anger and aggression, however, which can cause tightened blood vessels, sticky platelets and elevated heart rate – a perfect storm for coronary disease.
Mindful awareness. Nonjudgmentally paying attention to this moment (instead of dwelling on the past or obsessing about the future) can build acceptance and appreciation. “This helps people to worry less and be less self-critical,” Jeff says. “It’s a great way to reduce stress and feel happier.”

RONDA ZUNIGA and daughter MONET are on a healthier track for life.
Who says there’s no good news in the papers these days? Ronda Zuniga of Tucson, Arizona, would disagree. She’s a single mother who read an article about the Canyon Ranch Institute® Life Enhancement Program® (CRI LEP) for Families, a health-focused program offered through Tucson Medical Center. Ronda felt it would be just right for her and her 5-year-old daughter, Monet. “I liked the different approach to health, not so clinical,” says Ronda, who had gained 100 pounds since her daughter’s birth. “There was no special diet, just a healthier lifestyle.”
rhythmic breathing as a quick way to calm down. “Paying close attention to your breath can get you unstuck when your emotions are getting hijacked. It takes the steam out of a stressful reaction and calms you physically.” Change of perspective. Jeff often helps people to simply look at things in a different way. “If you’re upset about something, a fresh point of view can help you find a more constructive way to handle the situation. It’s about thinking more flexibly.” If somebody sets a goal for making change, Jeff suggests writing down strategies on 3-by-5 cards to carry around for frequent reminders. On one side the person might say Keep my heart healthy, then he writes his own strategy on the back of the card. “I ask questions to encourage clarity,” Jeff says, “but the individual comes up with his own strategy.”
A NEW MAN Jeff is happy to report that Michael F. – who arrived at the Ranch worn out, overweight, hyper and drinking too much – made a remarkable turnaround. While at the Ranch, he turned off his BlackBerry and used his highachieving drive to push himself on challenging hikes that brought him back to nature. He realized his pedal-to-the-metal lifestyle wasn’t working for him and went home with a plan to travel less, sleep better, lose weight, meditate and live healthier. “Michael returned to the Ranch a few months later, “Jeff says, “and I hardly recognized him. He seemed like a different person from when he arrived the first time. Still successful but making changes and definitely more in balance.”
The three-month group experience is based on the seven-night Life Enhancement Program® at Canyon Ranch in Tucson. It’s tailored for low-income families and provided at no charge to them by Canyon Ranch Institute’s partners. Similar CRI programs are already successful in the South Bronx, central Missouri, Cleveland, Georgia, Massachusetts, and several other U.S. sites. This new version was adapted to include children ages 5 to 9 with their parents or guardians. Canyon Ranch Institute Executive Director Jennifer Cabe says, “I’m very proud of our Canyon Ranch Institute team for developing this innovative program.” Ronda would be the first to say it’s working. “Every Tuesday night we go to the Boys & Girls Club,” Ronda says. “Monet goes off with the kids, group, and the adults talk about topics like portion control, grocery labels and stress management. Then we’re back together for group exercise and a healthy dinner. We’re learning healthier ways to eat. On Saturdays we have outings to a park or Sabino Canyon for outdoor exercise. Monet loves that.” The mission of Canyon Ranch Institute is to expand health awareness and opportunities to underserved populations. Tucson Medical Center (TMC) – a nonprofit hospital that’s served the community for 65 years – is the
sole sponsor of the CRI LEP for Families in Tucson. It is committing funding along with the efforts of physicians and wellness professionals, such as nutritionists and physical activity experts. The goal is prevention today instead of filling hospital beds later. Mary Atkinson, TMC Director of Wellness, says, “This program is a perfect marriage between Tucson Medical Center and Canyon Ranch Institute. We’re both striving to improve the health and well-being of the families we serve.” Ronda readily took to the food and lifestyle changes, eager to improve the blood test results she received from her Life Enhancement Program assessment. “At the start of the program, we get a membership to the TMC gym, so I work out there or walk in the canyon almost every day. I made a new friend in the program – we support each other exercising.” Classes about nutrition have been extremely helpful, Ronda says. She’s started shopping and cooking differently. “I serve vegetables twice a day, and Monet is trying new foods.” Ronda especially values the private consultations with specialists. “I can ask the personal questions I need answered.” Every week, Ronda says, she gets a consistent message and encouragement from the CRI LEP professionals at TMC. “They keep telling me to take it slow, that managing my weight is not about a race but a lifestyle. Even when I'm in the grocery store, I hear them in my mind: ‘Haven’t had enough fiber today? Pick a more nutritious snack.’ I didn’t expect that!”

Whether you’re a man or a woman, the basics apply when it comes to choosing the best diet for health and longevity: mostly plant-based foods with some lean protein, and limited fats, sugar, caffeine and alcohol. But a man – especially if you’re at or approaching middle age – has specific nutritional needs when it comes to retaining strength, energy and vitality in the face of lifestyle challenges and even genetic predisposition to diseases. So listen up, guys! “In my consultations with many of our male guests, I find two main types,” says Chrissy Wellington Garner, MS, CNS, LDN, CPT, nutritionist at Canyon Ranch in Lenox. “Either they are totally on board with a healthy diet – maybe they’re very athletic and into cycling, running, or cross-training, or – this is very common – they’re hyperfocused on work. They tell me they are ‘too busy’ to pay attention to what they eat. Maybe they travel a lot. Chances are, their wives or girlfriends signed them up to see me.” Are you in the time-crunched, workobsessed group? If so, it’s likely your daily diet is way off-kilter. You probably don’t eat a balanced breakfast, pack a lunch, or even carry your own snacks. You’ll grab a bite in airports and hotel restaurants. In fact, the only time you get a healthy meal may be when you’re at home and someone cooks for you.
RISKS & CHALLENGES Chrissy says that, by far, her biggest challenge in counseling men is “getting them to eat their fruits and vegetables.” She starts by explaining the importance of a healthy, balanced diet – especially as they approach age 50 and are increasingly subject to specific health concerns – notably cardiovascular disease, cancer, diabetes, prostate issues, decreased testosterone production and depression.

Depression often can mask a hidden physical problem, but isn’t always easy to spot because it can manifest differently in men. “A depressed woman may be sad, may cry or feel fatigued,” Chrissy explains. “In our society that’s unacceptable for men. A depressed man may become more aggressive, lose himself in work or step up his alcohol intake.” Chrissy shares a great take-away about men’s nutritional needs: The same advice applies whether the issue is weight control, disease prevention, depression, premature aging or low libido. Of special importance: • Protein – serves as building blocks for bones, muscles, skin and blood, supporting enzymes, hormone balance and vitamin absorption. Sources: lean meats, fish, beans, soy. • Antioxidants, B vitamins and omega-3s – reduce cancer risk, support cardiovascular health, nervous system and energy function. Sources: salmon, nuts, fruit, vegetables, healthy fats such as olive oil. • Vitamin D – supports cellular and bone health. Some foods contain this essential nutrient (milk, salmon, tuna), and our bodies produce it, but deficiencies are surprisingly common. This is why nutritionists will often recommend a vitamin D3 supplement. Chrissy advises consulting your doctor and getting a simple blood test to determine your vitamin D levels. • Potassium, zinc, magnesium – support fluid balance, bone and muscle health, nervous system function. Sources: meats, milk, greens, nuts and seeds. • Fiber – important to regulate bowel function and provide bulk to avoid overeating. Sources: plant-based, minimally processed foods.
TIPS & TRICKS “I often urge men to try smoothies as a great way to get their fruits and veggies in a concentrated form,” Chrissy says. For guys on the go, she also recommends soups and salads – “excellent ways to combine your vegetables into a single meal.” Super-active guys have special nutritional needs, depending on the preferred form of exercise. Weight training requires plenty of protein for repairing the “microtrauma” of damaged muscle tissue. Endurance athletes who burn through mega-calories need to take in extra carbohydrates. Chrissy cautions everyone to watch their consumption of alcoholic beverages, both because of health risks and caloric load. “It’s OK for men to have up to two drinks per day – a drink being 12 ounces of beer, a shot of liquor or 5 ounces of wine. But beware of some of the craft beers or ‘winter beers,’ which can be very high in calories. That extra weight around the middle tends to accumulate a lot faster as you get older!”

3 medium potatoes, washed, peeled and grated, about 1 pound 1 tablespoon fresh lemon juice Four 4-ounce salmon fillets
Instructions
1. In a medium saucepan, sauté shallots in butter over medium-low heat until translucent, about 1 minute. Add flour and mix to form a roux. Cook 1 to 2 minutes, stirring constantly, or until mixture turns light brown. 2. Slowly pour in milk and whisk with a wire whip until mixture comes to a boil and thickens. Add bay leaf and wine. Reduce heat to low and simmer 5 minutes. Remove from heat and add mustard. 3. Place shredded potatoes in colander and rinse several times in cold water until water is clear and starch is removed. Transfer to a large bowl and add lemon juice.

High in inflammation-fighting omega-3s, salmon is a delicious and healthy alternative to steak, and sure to please man-size appetites. Look for wild red or sockeye salmon, a sustainable choice. For a quick lunch, substitute canned salmon for canned solid tuna, which can be high in mercury.
4. Preheat oven to 350˚F. Lightly coat an ovenproof sauté pan with canola oil. 5. Pack ½ cup potato on each salmon fillet and sear, potato side down, in sauté pan until golden brown. Transfer to oven and bake for 8 to 10 minutes, or until salmon flakes easily. 6. Serve each fillet with 1 tablespoon of sauce.

Stretching,
the Truth
Run, sweat, grunt … It seems men are often inclined toward
active exercise and training to build visible muscles rather than the quieter practice of stretching. If you’re that kind of guy, you may have been nudged at times by a woman in your life who asks you to please remember to do your stretching. While that advice is well-intentioned and certainly not bad for you, it may not be an urgent matter, according to Richard Butler, MS, exercise physiologist at Canyon Ranch in Lenox. He says it depends on personal needs. “Some people, such as golfers and tennis players, may require a greater range of motion,” Richard says, “and they usually achieve that through their regular sports activities. If they need to increase their range of motion, we can work on that. “On the other hand, someone who uses a stationary bike or takes power walks doesn’t use that same range of motion and doesn’t need it. The last decade of research shows no sustainable evidence of flexibility preventing injuries.” Richard points out that most men are congenitally less flexible than women, and it’s important to respect that. If you don’t need it, you can work at it but you don’t have to, he says. “However, stretching can be effective for treating certain conditions.” If you have arthritis, tennis elbow or other joint-related injuries, physical therapists recommend stretching exercises as one way to optimize the lubricating synovial fluid in the joints. Also, the aging process may decrease your range of motion. Richard says this is associated mainly with life habits. “Stretching alone can help, although I recommend something like swimming. It’s great to get your stretches along with something that gives you a cardio or strength workout.” In fact, Richard advocates exercises that yield multiple benefits. Yoga, for example, is an excellent way to get the most out of limited exercise time, he says. “It produces heat, strength and increased range of motion.” He doesn’t promote stretching instead of cardio or strength training – which he believes require higher priority – but appreciates the value of stretching in combination with other activities or on its own when time allows. “Stretching feels good and can be your reward after a workout,” he says. “It can help relieve muscle tension, too.” Richard also likes stretching for anyone who sits most of the day. When you’re feeling stiff, he suggests these for relief: KNEE HUGS: Lying on your back or sitting at your desk, hug each knee for a couple of seconds and repeat a few times. Get up and walk around before you face your desk again. TORSO TWISTS: Lie down with knees up, then drop them to one side and turn your head in the other direction. Do the other side. Enjoy the release.

The Promise of Neuroplasticity
As scientists, doctors used to hold as a universal truth that we were each born with all the brain cells we were ever going to have or need. While other parts of the body were able to regenerate with age, the cells of the brain would progressively die off as we age. And once they died, they would be gone forever. In this model, the brain was perceived as stagnant, unable to grow, and a decline in brain function with age was inevitable. Luckily for us, scientists and researchers did not take this “truth” for granted. The latest advances in brain imaging have shown that the brain can grow new cells, just like every other organ in the body. You see new cell growth on your skin every time you get a cut and it heals. The same may hold true for some cells of the brain. The ability of the brain to change and grow is known as neuroplasticity. Plasticity does not refer to being synthetic, or fake. Instead, it refers to being moldable, pliable and repairable. In this sense, it means the brain has the capacity to repair itself – to change and grow – through the creation of new neurons and neuronal connections. Neuroplasticity occurs through a process we call neurogenesis: the creation of new neurons. As these brain cells increase and make new connections, you can continue to learn, improve your thinking and your mood, create new memories and retain cognition well into your old age. In short, we are not predestined to have dementia. You can even train your brain and enhance its abilities, including getting smarter, as you get older. Lastly, neurogenesis has a positive effect on your overall health, because what is good for the brain is good for the body.
