About Us... Willow and Bloom cakes, formerly known as The Brighton Cake Company was established by cake designer Donna Ayto in 2011. Donna has a background in art and design and in 2001 graduated from the National design academy. Donna also studied interior design at The Regent Academy of fine art in London. Donna has won two awards for her cake design and has recently been asked to teach in Portugal. Donna lives on the south coast and works from her purpose built kitchen/studio. The company earned the highest food hygiene award of 5 stars in 2012 and reinvests regularly in the most up to date and cutting edge equipment to ensure that compliance and standards never drop. During the last three years we have supplied cakes to prestigious companies such as Domestic & General and Veolia and have appeared in respected magazines including Sussex life, vogue and Brides Magazine to name but a few.
Our ingredients are, wherever possible sourced locally, where this is not possible we only use the best and most trusted suppliers such as Green and Blacks etc. as we believe that not only should our cakes be visually stunning they should also taste heavenly. Willow &Bloom | Page 5

Introduction... At Willow and Bloom we pride ourselves on attention to detail, not only with the stunning finishing touches but also the taste. We offer a bespoke design service and complementary consultation. At your consultation we will discuss all of the design requirements, flavour and taste to name but a few. We work closely with our clients and offer a friendly, professional service from design to delivery. All of our cakes are individually handcrafted to the highest standard. We use only the finest and freshest locally sourced products. We have supplied cakes to many corporate companies in Sussex, from 1 year anniversaries to 100 year anniversaries, a cake can make a celebration extra special no matter what the occasion, Our aim is to deliver a show stopping centre piece that will wow your guest’s at your special occasion, the sky is the limit. Classes and Tuition... Willow and Bloom cakes offer a wide range of classes at our studio in the picturesque village of Ditchling. Classes are suitable for all levels and are taught in a relaxed friendly atmosphere. Whether you’re a complete beginner or just wanting to brush up your skills, why not come and learn how to create beautiful sugar flowers or even a three tiered wedding cake! Private tuition is also available with award winning Donna Ayto, private lessons are tailored to suit the individual needs of each student.....you tell us what you would like to learn!

The Menu... Chocolate A rich chocolate sponge made with 70% coco solids and filled with a luxurious dark chocolate ganache or chocolate ganache buttercream. Lemon This is a super moist zesty lemon sponge made with fresh lemons and filled with a smooth light lemon buttercream. Vanilla Our vanilla sponge is light and moist and made using Madagascan vanilla beans. This is filled with a light fluffy vanilla bean buttercream and a preserve of your choice. Carrot This moist carrot cake is made with fresh carrots and chopped walnuts, filled with a light cream cheese frosting. Coconut A coconut sponge filled with either rich dark chocolate ganache or a light zesty lime buttercream. Rich Fruit A rich boozy fruit cake made with seven different fruits, nuts, spices and brandy. Cured for a minimum of 6 weeks for a fuller flavour and covered in a layer of marzipan.

Deposits... We ask for a 50% non-refundable & non-transferable deposit and the balance three weeks prior to delivery of your cake. Please note- your date is not secure until your 50% deposit has cleared Holding deposits If your wedding or celebration is more than one year away you may pay a ÂŁ50 non-refundable & non-transferable holding deposit, this will secure your date. 50% of your balance must be paid 6 months before your date.
