renewable energy reliant island could look like. Koornstra: ‘The reality of a renewable energy revolution is well within our reach and we already possess the necessary tools. The hardware is there, we have all means available to create a paradise on earth. But the software in our heads is still a bit buggy. Our greatest fear is change, and that is why it takes so long to create a better world for our children’.

Today’s traditional energy is energy from the past, fossil fuel. We now realize that we don’t have enough of it and that its use is destroying our planet through the pollution it creates that contributes towards climate change. It is becoming harder and harder to discover new sources. And when we do find them, they poison all that surrounds them. These days, the majority of conflicts throughout the world are over territories rich in oil and gas. Global political structures, banks, stock markets, multinationals, everything is oil and gas. I was once part of this traditional system, the ‘old economy’ as I like to call it. Our way of life is based on waste. Manufacturers that produce goods deliberately give them a limited lifespan. Eventually the product breaks, so we have to buy it again, and again. The company makes a profit and the shareholders are happy. It is an essential part of our economy. But in the end the product just adds to our overflowing landfill sites. There are only 7 billion of us, you know. You buy a new car and 5 years

later you have to buy a new one. Why? To keep up with the neighbours? We need a fresh, responsible perspective. Six years ago I considered joining organizations like Green Peace, but then I realized they are not really capable of changing anything. I then thought, ‘I’ll become a politician and work from the top down’. I soon found out governments talk and talk and promise a lot but are closely involved in oil. Since oil influences politics, not a lot changes. It finally dawned on me that the way forward was simply to take action. Why not establish real results? Above all I am an entrepreneur, so the only way forward was to do it myself. I established a number of companies, started developing new ideas and now produce a wide range of products. Sustainable products that do not have to be replaced very quickly, thus minimizing waste, saving the consumer money.

Our greatest fear is ‘change’

One of the most significant products we came up with was the L.E.D. light*. The light bulb was invented 100 years ago, and has not seen any innovation, other than the rather cynical move of making its lifespan deliberately short, in order to sell you another one in just a few years. 98% of a light bulb’s energy is wasted on heat, only 2% on the actual light. Did you know that 19% of the world’s energy is used to light the multitude of human amenities such as homes, offices, factories, roads and greenhouses? Our L.E.D. light saves 90% energy and lasts 25 years! That means that 90% of the 19% of energy used in the world each year is unnecessarily wasted. It will probably come as no surprise to you that the multinationals producing light bulbs were not very happy with our innovation. The manipulative power of the traditional institutions is tremendous. I was in Japan a couple of years ago together with our Dutch prince

Maurits van Oranje, talking to a large motor company that invests heavily in electric cars. When I asked them to invest in the production of electric vehicles in the Netherlands, we were denied. They would not even consider investing in a country that relies entirely on oil and natural gas, and is home to one of the most powerful fuel companies in the world, Shell Oil. And believe me, Shell rules the world; they pollute and when they are finished they sell their mess back to the local government for one guilder. Look what they did to Isla in Curacao, they are criminals! The same thing happens now in Nigeria and they just don’t care. In the Netherlands we only use 4% renewable energy. Germany is on 22% with the goal to reach 50% in ten years time. In the Netherlands oil runs through our veins. Take any group of people in the Western world, and ask ‘Who of you has a higher standard of living than your parents?’ Practically everybody will raise their hand. When the same group is asked: ‘Who of you believes your children will have a higher standard of living than you

have today?’ Hardly any of them will raise their hand. That means we live in a world of fear. We are afraid of the future and this precarious perspective is a relatively new phenomenon. So basically everybody already understands we cannot continue in this superfluous manner, everybody already knows! But by acting on it, we fear we will have to sacrifice many of our luxuries. Meaning our second biggest fear is the fear for change. But if we don’t change, our children will lose everything. So we need a renewable energy revolution. I think it is not far away and it will come through the combination of two major components. In history, big revolutions always came in pairs: communication and energy. Around the time the wheel was invented, people started to write in stone (hieroglyphics). Much later, the steam engine combined with printing presses, which synthesized the industrial revolution. Now we have the internet, a revolutionary, global communication medium, which is deeply woven within our society. This contemporary

phenomenon, paired with our need for sustainable energy will cause the next revolution. I call it ‘power to the people’, people creating their own local off-grid, small networks**. Such as in remote parts of Africa and China, where small communities do not have power stations and high voltage masts connected by power cables. Instead, they source their electricity supply independently via solar panels. In seminars and discussions, we have studied and accumulated over 1500 concepts for ways to share off-grid power. Real power to the people, collaborating together to create local power supplies and using the internet to meet the demand of energy, wherever it may be. ‘I want to run a machine this afternoon and need extra power. Can you supply it to me?’ Similar to an everyday process, such as file sharing, It will be more than just an off-grid network; it will be a Smart Grid network. There is not enough oil left on the earth, so the price will keep on escalating, while free energy is available everywhere. So we simply have


to change our way of thinking.

‘There is an endless free supply of wind and sun’ On Bonaire, windmills produce 30% of the energy. Although it is morally and environmentally sound, the established utility company, that prefer burning oil in Agreko generators, never really wanted wind energy. Their loss of power, not to be confused with power loss, has risen a great deal since the wind turbine Eco Power Plant became active two years ago. On the other front, the Bonaire electricity company, WEB, does not want you to use solar energy and deliver it back to the grid. So you are punished for installing solar panels on your roof by disconnecting you from their power cable! Now can you see how the process of change, >>

“We must be the change we wish to see in the world”. Forget the oil! it is a difficult one. It takes courage to reconsider, re-think, re-group, re-organize. Ghandi once said: ‘We must be the change we wish to see in the world’. Forget the oil! The Dutch readers will understand the expression ‘olie dom’. There is an endless free supply of wind and sun. For me, Bonaire is the most perfect example of how to implement renewable energy on the planet. By totally focusing on solar and wind generators to produce electricity, we will stop wasting power! It’s so easy, you can do it yourself!

ing that you care for the environment; it is now something to take immense pride in. But also, on this very small island, we need to change the way we think. We do not have a hardware problem, only a software problem. The software problem is in our mind. Re-think, re-organize, re-form, re-design, re-develop. We need to evoke a revolution in our mind. And everyone can join this movement, by starting at home and changing a few simple things. We can have paradise on earth once we make that switch.

Buy an electric car; how many kilometers can you drive per day on Bonaire anyway? And you won’t need fast charging points in the Kaya Grandi powered by fossil fuel. Just put 4 solar panels on the top of your carport and you drive for free. It’s fun! And electric cars certainly do not have to be boring!*** I drive an electric Lotus sport car in the Netherlands, 150 kilometers on a single charge. I also cook on free electricity; I find that induction cooking is easier and certainly safer than gas and you are not left frustrated by Curoil’s slow bottle replacement service. How wonderful it is to be independent! Prices of conventional electricity will rise year after year, making the investment in solar panels and wind turbines not just worthwhile, but out right profitable. Bonaire could be the perfect ‘showroom’. Geographically, it is the perfect model for a 100% renewable energy reliant island. Look at the tourists that are driven around in the electric, non-smelling and totally quiet Thai TukTuks. They have huge smiles on their faces. They love it! If we can switch all things on Bonaire to electric the tourism will grow. It will be a huge statement, a tourist attraction, a place you will feel proud of and part of a cleaner world. When I tell tourists that on Klein Bonaire the waste bins (kliko’s) are emptied every week by a Stinapa boat, they Tweet it to their friends. You are no longer considered a ‘tree-hugger’ or a ‘hippy’ for show-

ho’s got an APPETITE for inventive dining? STORY: OSCAR MARSH

Nestled peacefully on the Kaya Grandi, in the heart of our beautiful capital, lies the acclaimed Appetite Restaurant. With the gentle breeze gracing our skin and the purr of nearby waves soothing our ears, we sat down with Appetite’s owner Marc and restaurant manager Derk to find out a bit more about this innovative eatery and why their fresh approach to dining has made Appetite the name on everybody’s lips.

Q: So how did you get started in the restaurant industry? Marc: I started my career washing dishes after I dropped out of art school; working for a restaurant owner who was rude to his chefs. I grabbed my chance and filled in when I could, making starters and deserts. When I found out that chefs made a lot more money cooking than me washing dishes, it was time to bluff my way into another restaurant, posing as a chef. It worked out and I was finally on a chef’s wage. At first I had to put stickers on the meat, so I knew I was preparing rib eye or sirloin. Derk: During my studies I started working in small restaurants. I was drawn to small-scale restaurants; the close connection to guests, the personal touch really inspired me and influenced my future as a restaurateur.

Q: Why did you decide to leave Europe to set up a business as far afield as Bonaire? Marc: After 15 years in various kitchens throughout Amsterdam, I was ready for a new challenge. I had never heard of Bonaire, but when it came down to a choice between Australia and this beautiful island, I went for the less obvious choice. Three restaurants later, I finally got the opportunity to start my very own place and create my own vision of what I thought a restaurant should be.

Q: Clearly you take pleasure from your work, but is there ever a downside to what you do? Derk: What I like least about the business are the quiet times. It is a touristic island with typically busy and quiet months. I cannot stand it when we go from being fully booked to almost empty. It bugs me.

Q: Appetite has been described to us as ‘pure ingenuity’, ‘contemporary’ and even ‘ground-breaking’. What is it that makes the Appetite experience unique? Marc: What sets us apart from our competitors is we don’t sell a ‘mass product’. Instead, our menu is constantly changing, providing fresh ideas for diners all the time and not relying on the same old dishes. The restaurant is different too. It is designed so, even when we are fully booked, the place doesn’t feel crowded. Also, our approach to cooking is completely unique and encompasses a vast range of flavors, cultures and techniques, owing to our hallmark ‘appetizer surprise’ menu. >>

Q: In all your time at Appetite, what is the funniest moment you can recall? Derk: The funniest thing I have ever witnessed was when I served a guy peanut butter sauce as a condiment but he ate it as a soup. He loved it and said it was the best black bean soup he had ever had in his life!

Q: Marc, you obviously get to experiment with many ingredients due to the way you work. What would you consider to be your favorite ingredients? Marc: I don’t really have favorite ingredients. I prefer the thrill of making something out of what I have. Give me an onion and a carrot and I will prepare you something. I do not do ridged things. My idol is Johnny Boer from the Dutch restaurant de Librije for his honest and creative approach to food.

Q: Derk, could you describe yourself with five points? Derk: Service-minded, happy, slightly arrogant, focused on the ‘now’ rather than the ‘later’, slightly crazy, which you have to be if you want to last in this business. I’m sure not everyone is pleased with the way I serve them. But hey, you can’t please everybody.

Q: Marc, how did you realize the concept for the restaurant? Marc: Fundamentally, I am a self-taught chef, although I cannot deny the influences I have had over the years via the chefs I have worked with. These experiences have undoubtedly helped me evolve. I could not have done it without them. It’s a bit like playing an instrument, first you have to know how to play the keynotes and then you can carefully start making music. And, in the same way as some musicians aren’t happy just to play old songs, I prefer to ‘jam’ and make up my own menus; my menus are hardly ever the same. That is the key concept of our restaurant, what we cook is never the same. We have the surprise menu that changes daily. In fact if 5 people ask for the surprise menu on the same night, they will find that they are all eating a different meal, which is how I work. Every surprise meal is an improvisation and I trust in my experience to make sure the meal is a success.

Q: Your food menu is constantly changing. What is your wine list like? Derk: We try to do a lot of wine pairing when the guests let us. We find our wine from suppliers on Bonaire, so the selection constantly changes. It is a challenge to find wines that compliment with the food. Since the food is never the same, we have to really be creative with the wine pairing as well. We like to change things basically. We don’t like to be stuck in set routines; it gets boring.

Q: Physically, how hard was it to transform the restaurant into what it is today? Marc: When I bought this restaurant it was far too dark and closed-in to my liking. However, today our kitchen is completely open, clean and bright for everyone to see. The building is a historical one, meaning I could not take walls out. Still, with the integrated back yard here, we have created a totally open concept. >>

Q: In a working environment such as Appetite, what would you consider to be the ‘ideal’ employee? Derk: The ideal employee in Marc’s eyes is one that does not ask for payment at the end of the month! No seriously though, we like to work with creative people that have a natural passion for what they are doing, while we are also fully aware that nobody is perfect. It’s certainly true that Appetite is doing something exciting and new; eating there is like no other dining experience, as the versatility and mystery that comes with this bold concept adds extra layers of emotion to your meal. The huge range of cooking influences Marc has gathered over his years as a chef are clearly felt in the caringly created and constantly changing dishes. T

he day after a great concert at Plaza Resort Bonaire, initated by the Classical Music Board Bonaire, Henk van Twillert and Tjako van Schie graced Caribbean Homes & Yachts on Sunday May 27 with a vibrant private concert in front of almost 100 invitees. The two have been friends and music partners for over 25 years and have forged careers in music without an emphasis on material success or monetary gains, but preferring to work with a ‘give and receive’ ethos, often skipping lucrative opportunities in favour of lesser paid work, where the incentive lies with enriching the soul.

Q: How would you describe your music for people who

have never heard you before?

Henk van Twillert: Our music was once described as a beautiful adagio; it can start with an aria from a Goldberg variation, followed by a melodious Argentinean Tango and after that a brief flirt with Brazil. For a short moment back to our roots, being either Amsterdam and its canals (‘Aan de Amsterdamse Grachten’) or Portugal, which has become a second home for my wife and I. So a Fado slowly fades in. However, our sound is always changing, we are always thinking of our bag of music, and what will be the next surprise we will pull out of it. For instance, next time we may play Petite Fleur or a small collection of jazz. An eclectic choice of music that goes beyond borders and emotions.

Q: What do you think distinguishes ‘an artist’ from ‘just a

musician’?

Tjako van Schie: Every musician is an artist if they try to communicate with an audience through music. Our passion is to share music, play from the heart without using too many words.

Q: When are you successful in music?

Tjako van Schie: When you can look at each other on stage and think ‘this is exactly what we want to do’. People recognize that vibration. That is our definition of musical success.

Q: You are well known and highly acclaimed performers.

Do you still need recognition?

Henk van Twillert: We all have a little ego that needs to be massaged. If you do not doubt yourself anymore, an awkward self-assuredness could take over. That is not what people want to see on a stage. I am still nervous before every session.

Q: What is the most bizarre thing that ever happened on

stage? Something you will always remember.

Tjako van Schie: Almost every night something peculiar happens. One night we were performing at the Royal Concert Hall in Amsterdam. We

were 15 minutes ahead of schedule so to fill the time we started to improvise by doing crazy things with our instruments. This was risky, as it wasn’t considered proper practice in the extremely formal venue we were at. I toggled the strings of the grand piano while Henk played his sax upside down; it was madness. Luckily the audience loved it. When we left the stage the Facilities Director rushed towards us, telling us off. ‘If I had known you were to give the grand piano such a beating I would have provided a less delicate instrument’. We felt like scolded schoolchildren. That was a moment we will never forget.

Q: If you had 5 minutes on earth to perform one song that could leave a great impact on mankind, what song would you perform and why?

Henk van Twillert: ‘What A Wonderful World’. Definitely. When I was living in New York, the former house of Louis Armstrong was being opened as a museum, in honor of his memory. It was a dreary rainy day and after traveling on the train, it appeared I was a week early. Decorators were still busy moving furniture in and out. Then suddenly a kind lady appeared who instantly noticed I needed mental support. We started talking and she showed me the bathroom where he passed away, the bedroom, his study. I touched the silver pen he wrote his music with. In the sixties, a civil war in the Congo was in full swing. Armstrong was doing an African concert tour at that time. It is said that he was able to stop the civil war that day as the two warring factions called a temporary truce in order to both enjoy the concert. Enemies sat side by side and Armstrong sang for one of the very first times ‘What a Wonderful World’. He was able, through music, to make them put down their arms and be brothers, even if it was only for one day.

Q:

Your last triple CD is called “A bag of music”, why the bag?

Tjako van Schie: It contains a selection of our musical experiences during the past 25 years. From Bach’s cello suites, Ramses Shaffy, Astor Piazzola, Chopin, George Gershwin, Mozart, Rachmanivov and of course our own compositions. While traveling the world, we realized that people appreciate it if some of the repertoire is from their part of the >>


world, from their composers. At the same time, performing this music elsewhere means you can ‘infect’ others with it. That means we play music from Bonaire and Curaçao in Portugal and vice versa. So on stage we open up our ‘bag’ of music, take something out and put something else in. This way we spread a musical virus and introduce people to new sounds and cultures.

Q: Have you lost touch with the typical classical scene?

Henk van Twillert: Not at all, we still do purely classical concerts. To us music is a little bit like an illness. Some musicians stick to a very strict repertoire. They are specialists and within that can peak tremendously in their chosen field. I would not like to be categorized as a specialist, I like to do everything. The only thing I want to specialize in is evoking emotions.

In July 2006, I was asked to take some aerial photos from ocean front property on Bonaire. Richard, the pilot which I have been flying with for many years, called me in the morning to let me know the weather forecast was perfect. Upon arriving at the airport it struck me how incredible clear the sky was. There was not a single cloud in the sky, the air was crystal clear. When you take off from Flamingo Airport with normal wind conditions you can instantly see the Bonaire salt works on your right side. Not even being in flight for 30 seconds, Richard looked at me and signaled thumbs up indicating he would go higher than planned. What we saw was just stunning. The colors reflecting from the salt works were spectacular and incredibly bright. This was perhaps a once in life time opportunity, photographing real estate was pushed to the back of my mind. I asked Richard to keep climbing to 8000 feet. It was rapidly getting colder because we were flying without the airplane’s right door to enable me to take pictures. Visibility was so good, I could see Bonaire for the first time as a whole. In the north, I could see Rincon and the Washington Slagbaai park and at the same time the salt works with all its evaporable water areas in the south. Bonaire’s shape off a boomerang, as we know it from the map, emerged. While ascending, a bizarre display off colors and shapes presented itself in the south. Different salt concentrations in the water due to evaporation cause algae and bacteria growth in various stages which results into different water colors. The deeply saturated turquoise, green, brown and pink at the heart of the salt works were beautiful. At first I was just looking around being baffled about the view before I started taking pictures. When I looked at the white slave hut area I saw what looks like the outlines of the older part of the salt works. This must have been the first area where sea water was evaporated for salt in the 1800’s. Also the seemingly random shapes of each brine more made the whole area look like an artistic mosaic. I was enjoying the view, taking more pictures and wished I could stay up there for a much longer time. We were freezing. The cold and fierce wind from the propeller had been blowing into the cockpit for over 30 minutes and we descended to warmer heights. After all I still had a job to do.
