hough it’s no secret most local residents “come for the winter and stay for the summer,” the fact remains that winter is the Vail Valley’s raison d’être. BUNK IT More than just solutions to large family gatherings, bunk-bed rooms tap into nostalgia by KIMBERLY NICOLETTI

invite intergenerational gatherings, but within their open floor plans, bunk-bed rooms become kids’ refuges. “There’s a place in a lot of people’s hearts when they think about going on a ski vacation — you remember the bunk beds,” says Forrest Watson, project manager of Beck Building Company in Vail. “It’s just a fun environment, and I think it really builds a lot of childhood memories.” More than half of the clients Doug DeChant, president of Shepherd Resources, Inc. AIA Architects, works with, request bunk bed rooms; the trend has been around for a while, and it’s becoming more popular. “For adults, and even children, they just speak to something from our past,” DeChant says. He recently completed a high-density bunkroom, with trundle bunks that stack three kids high, in three different locations. In addition to neatly accommodating a lot of kids, the steps of the bunk beds work double-duty as drawers, with each riser containing a hand pull. Whether the beds are made of dark stained alder or walnut, whitewashed oak, or pinebeetle kill, they emphasize “true wood craftsmanship,” Watson says. “A lot of bunks tend to be rustic in nature; however, there’s an opportunity to have rustic and refined, with well-sanded, furniture-grade material and unique metalwork with custom pulls and grips. “These bunk beds become elaborate jewelry boxes,” he says.

S For these boy and girl rooms, Karsh included creative layouts of open shelves so that storage could double as fun, focal points. The pieces in these rooms were custom designed to fit the spaces perfectly, she explains, and thus maximize storage. “As a parent of two small children — one infant and a two-and-a-half year old, I am now realizing how important storage is,” she says. “Children have so many things, not just toys — diapers, changing areas, play mats, et cetera.” And then there’s the extra et cetera, like fans and humidifiers, which may be both cumbersome and necessary. “It is so helpful to have a place for each item to keep organized,” Karsh says. A lot of kids’ furniture vendors design with this in mind, creating hidden compartments in pieces, storage ottomans that double as tables, art tables with storage and bunk beds for space efficiency. “For me, I have taken inventory of my children’s needs — adding shelves and drawers in closets and baskets on shelves to keep things organized,” Karsh says. “I have also purchased some fun storage ottomans and large colorful buckets for last-minute storage.” Make sure large furniture pieces such as chests and bookshelves can be fastened to the wall so they can’t tip over when weight is added. “Also, if the storage is easy and safe for the child to access that is helpful,” she adds. “That way they can participate in ‘clean up.’”

Creek’s SaddleRidge community was looking for a mountain modern facelift, so it was out with the old and in with the new — with every room. “We gutted everything at the same time,” explains project designer Patti Dixon of Patti Dixon Design. “They wanted a mountain feel, with less clutter and clean lines. Everyone was happy with how it all came together.”

The only thing left in this room from the original is an Edward Curtis lithograph on the right side wall. Everything else was replaced, starting with the floor, which became an elm from Arrigoni Woods, adorned with a rug from the Scarab in Minturn. The cabinets are white oak from Wm Ohs out of Denver, and the handles and hinges are from Rocky Mountain Hardware, in bronze. Resting atop the cabinetry is a Koehler sink with boucle tweed design, topped with a bronze Santec facet. The space is illuminated by the “arts and crafts” style sconces, softening the clearcut lines of the bathroom like puffs of powder on shiny skin.

“This was transformational,” shares Dixon. “The original kitchen was an enclosed room with lots of wood. First, we opened the kitchen to the dining and family room creating a much more open room for entertaining.” The cabinets are Wm Ohs greygreen simple door style, with a touch of glazing. They are complete with bronze cabinet hardware. Dixon says the granite top and fullheight backsplash are the pieces of art in this room, and the pendant lighting is from Holy Hunt. “The counter stools are just funky enough to not get serious,” she adds. 30

This room started with inspiration from her client’s art collection, Patti says, and was created to be edgy yet simple, sophisticated yet comfortable, as an office, a lounge and a conversation area. “It’s a room of many ‘hats’ with its alpine green influences and earthy texture,” she says. The Barbera Barry rug is wool and silk, and the two matching sofas are Dessin Fournir with Glant fabric and “green olive” chenille. The large anchoring table is Mimi London. Lastly, Dixon says the Indian with attitude painting adds “just a touch of fun from Carrie Fell.”

are dying, Nicole Magistro hasn’t noticed. That, or she’s figured out how to help them thrive. As longtime owner of The Bookworm of Edwards, Magistro oversees one of the coziest and friendliest gathering spots in the Vail area. For the past 12 years, the bookstore and attached cafe have played host to countless study groups, work meetings and brainstorming sessions, along with a slew of formal readings and author signings. Like booksellers of old, The Bookworm feels more like a hip urban lounge than a sales floor, with wooden shelves and brick pillars holding up shelf upon shelf of bona fide paperbacks. (Let’s see Amazon bring that interface to a Kindle.)

But it was time for a change. In the lull between summer and winter, Magistro spearheaded the store’s first remodel since an expansion in 2010. Over a single weekend, she and her dedicated staff shuffled shelves and desks to give the interior an entirely new look and feel — all without breaking the bank. Vail Valley Home caught up with Magistro to get her thoughts on the new look, the elusive bookstore aesthetic and, of course, what she’s reading this winter. vail valley home : The Bookworm just wrapped up a relatively minor remodel, but simply moving the register managed to change the interior flow. Why was now a good time to shake things up? nicole magistro : We wanted to be ready for the holidays, obviously. We expect to be as busy as always through December and the ski season. We’re coming up on the seventh anniversary of The

Bookworm moving to the Riverwalk, so it was also a good time to think about our overall flow. It’s not the first time. When we expended in 2010, we learned that two checkout desks wasn’t the best thing for our customers. They couldn’t get all the services at both desks, like gift-wrapping, and we cut back. We made those changes in the middle of the recession, so we weren’t sure what the economy would do, but we wanted to be responsible about our growth so we could be ready when things picked back up. Who oversaw the décor and design? nm : You know, we’ve always done our construction internally, but we do hire subcontractors for the vvh :

electrical work and all that. We’ve built and designed our space over time with my husband, Zach Locke, who carried out all the construction for this little remodel. It’s really not an expansion — we already had the two desks, so we just took those apart and put them together in a new way. It’s what we’re about: We’re really conscious of waste, so when we did the project, we used existing cabinets and countertops and computers and all those things. We didn’t buy much of anything new — it was more like moving furniture around. As a local business owner and just book lover in general, is it important for a bookstore to look and feel a certain way? nm : Environment is extremely important. I think our customers vvh :


want to come to a place where they feel welcome and comfortable, where the entire family feels that way. It’s not an adult-only environment. That speaks to our mission — to be a community-minded gathering place — and our look is very much a part of that. It’s a mountain bookstore, a resort bookstore, and the quality of our products, from the book side to the café side, all fits into that. I can hear the kids in the background right now — we have two little girls dressed as princesses playing behind me. We want this to be a place where that can happen in one area and a business meeting can happen in another. Do you think customers expect their favorite stores to tackle the occasional remodel? And that goes for any business: booksellers, ski shops, restaurants... nm : It’s super important for vvh :

retailers in general to grow, to stay fresh and relevant. There needs to be a reason for people to come buy books in our store. We really want to provide that warm, welcoming environment, so we’ve gone for more of a loft feel, just because of how our building has the tall, open ceilings, with the exposed ductwork and everything. We wanted to enhance that with natural materials like wood and leather, but we also wanted chalkboards and colorful signage to create, again, that transition space between what can be trendy and what can be family friendly. Again, it’s making sure we’re aligned with what people expect of a community bookstore. Discovery is such a big part of the book world — discovering new characters, new ways of thinking, new parts of history. It all goes together well. Did you model The Bookworm after anything — maybe a café or bookstore

ENVIRONMENT IS EXTREMELY IMPORTANT. I THINK OUR CUSTOMERS WANT TO COME TO A PLACE WHERE THEY FEEL WELCOME AND COMFORTABLE.” from your childhood? I wish I could say that’s the case. I grew up in the Midwest surrounded by chain bookstores, but when we would go on vacation, we always went to independent bookstores. For me, those were places like The Bookworm is today. I always felt connected with the space. When we came to develop this store, we wanted a place to have a meeting or hang with friends that wasn’t a bar. We built a place that we felt could do that for us, and the hope was it could do

the same for the community. And, of course, what are you reading right now? nm : I’m reading a really exciting young adult novel written by a woman from Eagle County. It’s called “The View from Who I Was,” and the author is Heather Sappenfield. I have known Heather for years and years through her writing and publishing process. It’s not released yet — I have an advance copy — but it takes place in a fictional Vail, so it’s very close to home. vvh :

PLANT LIFE Hassle-free care for holiday plants and trees by MARTY JONES

holidays with live trees and plants can create a special atmosphere that artificial substitutes simply can’t deliver. The smell of a freshly cut Christmas tree or of a blooming paperwhite narcissus bulb adds to a home’s holiday ambience just as much as the smell of freshly baked cookies or the sight of colorful wrapped gifts gathering under the tree. But decorating with live elements also requires some foresight and ongoing maintenance, so unless you want to haul out a brittle, brown tree just days before your big celebration, then follow these tips to make decorating with plants and trees a hassle-free endeavor this holiday season.

Holiday Tree Care While you’ll have many options when it comes time to purchase a holiday tree, Fraser Firs are often considered the most desirable from a decoration and maintenance perspective. Their sturdy branches hold ornaments well, and they have the potential for extended water uptake. But even if you’ve purchased what’s considered an easy-care tree, make sure that you treat it well from the moment you bring it home. Cut approximately one inch off of the tree’s trunk, and then put it in water right away. Don’t drill holes in the trunk of a tree or shave away bark to make it fit within a stand; instead, purchase a stand that fits the tree trunk or use shims to secure it since cutting or shaving the sides of a tree’s trunk can inhibit its ability to uptake water. A cool location that’s not in direct sunlight and away from a heat source is the best location for a tree. Some trees take up more 34

water than others, but be in the habit of checking your tree daily. Do not let the water level fall below the base of the trunk, as it can seal, which impedes future water uptake. Avoid signs of distress, such as a yellowish-brown color and excessively dry needles, by placing your tree in an ideal location and watering as needed. Balance decorations around the entire tree to prevent it from falling over, which can occur if a tree is weighted unequally. Use LED lights to reduce heat and energy consumption, and turn off lights when you’re not at home. Finally, wait until a tree has thawed out before decorating it, and avoid wrapping lights too tightly around the branches, especially in areas where the branches diverge. Holiday Plant Care Poinsettias and blooming bulbs such as paperwhite narcissus and amaryllis are holiday staples that can add festive colors to any room. Poinsettias grow best in warm, sunny locations, such as near a window where it can receive filtered light. If too close to a window, poinsettias might get too cold, so make sure that the plant isn’t touching the glass, and rotate the plant every few days to ensure optimal light conditions. Poinsettias need to be monitored and watered when they get dry, which could be every other day, depending on light conditions and room temperature. Ensure that the pot has drainage holes, and place poinsettias on a saucer to catch any water that drains off; however, dump off any excess water so that the plant does not sit in it. Poinsettia topiaries, which can be up to four feet tall, are an impressive

live decoration, and they need to be cared for in the same way as other poinsettia plants in pots. Amaryllis bulbs are large and grow best if planted in soil in pots. They produce blooms in a variety of colors, from red--the holiday classic--to burgundy, white, pink, and a striped red and white. Keep plants in a warm location to encourage blooms, and then move to a cooler location to preserve blooms or to slow down the blooming process. Amaryllis blooms may need stakes for support, as they can get quite large. Paperwhite bulbs can be planted in soil in decorative pots, or they can be planted in clear class

containers full of rocks, for an interesting visual appeal. If planted in rocks, bury the bulb halfway in the rocks, and keep the water level just below the bottom of the bulb to promote root growth. When planted in soil, both amaryllis and paperwhite bulbs grow well in a moist, not soggy, environment. As with poinsettias, make sure that pots have adequate drainage. The holidays are a lively time of the year, so it makes beautiful sense to add live plants and trees to a home. The New Year’s Eve annual Torchlight Ski-Down the mountain is always a special event as the ski school and ski patrol serpentine their way to the base of Beaver Creek. The finale includes an explosion of fireworks lighting up the skies. But families can participate in a similar descent down the mountain in the crisp night air. Every Thursday evening skiers are organized where they, too, can ski down the mountain, just like the pros, carrying glow sticks, weav-

ing across the snow, complete with a background of music. For those who are competitive to the core, enter the 12th annual Talons Challenge. Ski more than 26,000 vertical feet of black and double-black diamond runs on the mountain and when all 14 are conquered you have earned a spot on the Talon Wall of Fame. If you prefer claws to sticks and boards, try the Snowshoe Adventure Series, a season-long race that includes activities for kids, too. Enjoy “Cocoa and Corduroy,” a daily ritual at 9:30 a.m. where people gather to start

Whatever the motivation, the Vail Valley community seems to thrive on challenge and, more importantly, seize opportunity whenever presented. And, a stable real estate market combined with the continued low interest rates presents enough foundation for our community to recognize favorable circumstances and run with it. In addition to our stabilizing real estate market, there are many other noticeable improvements throughout the valley representing a recognizable momentum. From new construction to property upgrades to landscaping and infrastructure improvements to bigger names in entertainment, across the valley, energy is building. Stability in the numbers Although we have seen a dramatic rise in median sales pricing in Vail Village and Beaver Creek Resort, neighborhoods that have essentially skewed the market report, the rest of the valley is normalizing at a more realistic pace. 2014, in general, has shown us consistent signs of ongoing strength and the October numbers represent this. The median sales price was up 0.5 percent for single family/ duplex homes and up 4.4 percent for multi-unit properties. New listings continued to be a challenge in October for single family/duplex homes; however, they did increase approximately 25 percent for townhouse-condo

properties. Another highlight, pending sales increased 43.2 percent for single family/duplex properties and 24.4 percent in the townhouse-condo market. Again, the communities in closer proximity to the resorts drive many of these numbers. But, this also shows us that lifestyle is important and, in particular, the Vail Valley lifestyle is in demand.

Bolduc substantiates this by adding, “The market foundation remains solid. Despite a decrease in October Months Supply, there is continued strong demand for all property types. The National Association of REALTORSŽ considers a stable market to have six months of supply while our valley has 10.5 in the category of single family/duplex and 7.6 in townhouse-condo properties. Of course, our valley is so diverse between refined local markets and geographical locations, potential buyers and sellers should contact their preferred REALTORŽ for a market recap specific to their selling area or buying area of interest.� More than meets the eye When considering real estate, it’s always a good idea to observe what’s going on in a community in addition to analyzing the numbers. $7 million home, characterized by multiple gables and an oversized cottage feel, in need of “rescuing,” but gutting the interior and redesigning the roof is exactly what Vail Architect Douglas M DeChant, AIA of Shepherd Resources, Inc/ AIA envisioned when he looked at a recently purchased Vail Village property. Small and poorly arranged windows barely revealed the extensive river bend the house sat beside, and views of the ridgeline were nonexistent. The buyer knew he wanted to remove the stucco and repair roof leaks. What he didn’t realize is how a team could transform his purchase into what many consider to be one of the best properties in Vail. R E N O VAT I O N S R E V U P As the economy strengthens, more and more homeowners are choosing to renovate, and in the real estate market, “buyers put a huge discount on properties that are sold unrenovated — if they will even buy it,” says Diana Meehan, a Coldwell Banker Realtor. “For the most part, people want and expect it to be staged, or at least have new paint and carpet; the ones that are selling are the ones that are renovated.” Even multi-million-dollar homebuyers, and current owners, are willing to put tens of thousands of dollars into ski-area properties to create more contemporary homes.

“There’s only one Vail Mountain and one Beaver Creek Mountain, and there’s a lot of interesting homes that were built in the ’70s and ’80s, so the properties are glorious, but the homes are dated, so there’s motivation (to renovate),” says David Hyde, president of Shaeffer Hyde Construction in Vail. And because remaining lots are very limited, “a lot of remodel projects are the wave of the future,” says Forrest Watson, project manager of Beck Building Company in Vail. In addition, more energy efficient materials fuel the desire to upgrade homes, through such products as: higher insulation value (and often larger) windows, better wall insulation, solar panels, and more efficient boiler systems and appliances. W H E R E TO B E G I N Hyde prefers his clients to live in their homes for at least a season and notice how they use it, and what they want. Then he looks for missed opportunities in layouts. “We walk through all the spaces and kind of develop a shopping list of exactly what we want to accomplish,” he says, “and as you go through that process, it evolves into a bigger, grander vision of what it could be.” Ryan Wolffe, senior associate at Shepherd Resources Inc., usually begins with sketches of “things (homeowners) haven’t even thought about to explore all different kinds of opportunities,” because as he says, “if you’re going to do this, now’s the time to make the biggest impact on the property.” Of course, that doesn’t mean everything must be done in one fell swoop. In fact, more and more homeowners opt to renovate in phases, often while they are away from their properties, in the off-season, Hyde says. “It’s taking smaller bites out of the apple,” he says, “(and asking) what’s most important?” However, major remodels, especially those requiring roof redesigns or complete gutting like the home in Vail Village, are best done at once.

Builders removed the roof from the riverfront home, knocked down walls to create an open floor plan, and constructed a wall of glass doors, which runs parallel to the river, allowing the home to come into harmonious relationship with the river, rather than blocking it. “(When planning renovations), we need to listen to the client, and we need to listen to land,” DeChant says. “What are these two essential elements saying to us?” The Vail Village home “didn’t function well in terms of light and the view of the creek,” Wolffe says. “The rooms were cut up, and there was no alternative energy, so we added solar PVs and additional sunlight.” They also replaced the stucco exterior with maintenance-free reclaimed wood, copper and stone. BIGGEST BANG While many people don’t launch into the extensive kind of remodel like the Vail Village gabled cottage, which transformed into a contemporary, sleek home, they do go for the two “biggies” of renovation: kitchens and baths. Kitchens are usually the place dollars pay off the most, but many homeowners like to renovate bathrooms as well, since these are two rooms people spend a majority of time in. “You can’t do much for under $20,000, (but) absolutely, you will get it back, because the amount of money a purchaser will take off is more in their mind than it is to fix it,” Meehan says, adding that, of course, homeowners must be wise in how they spend their dollars renovating. For example, cabinets don’t always need to be replaced; sometimes, tasteful painting can change the entire look. Kim Toms, project manager for Slifer Designs,

is transforming a Beaver Creek kitchen by adding a white finish with a glaze that complements the rustic timber and log home. She suggests changing out faucets with more water saving, stainless steel faucets and upgrading countertops to more custom granites — like the geode pattern she chose for the Vail Village home — or upscale composite stones like Neolith. “Granite today, versus 20 years ago, is more interesting,” she says. “It’s more like a piece of art.” And, energy-efficient stainless steel appliances are something “everybody wants to see,” Meehan says. Bathroom remodels range from painting cabinets and walls, replacing brass faucets with brushed nickel, and perhaps adding thin veneer porcelain tiles to shower enclosures, to replacing toilets with higher, water-saving products, removing bathtubs (down to one master bath, as the new trend prescribes,

or local chef Allana Smith, the holidays mean good food, incredible company and pink applesauce. And no, the pink applesauce isn’t some gourmet preparation Smith dreamt up in the Larkspur kitchen, her culinary home for the past 15 years. It’s more a testament to her grandmother’s root cellar: Come Christmastime, Smith remembers bringing out everything the family canned that fall — peaches, apples,

all manner of veggies — to make sides for a traditional turkey. The pink tint came from the apple skins — nothing more, nothing less. These days, Smith spends the holiday season prepping meals for her new private chef service, Foodsmith. The pink applesauce is gone, replaced by organic mushroom stuffing, cranberryclementine sauce, sweet potatoes gratin and roast duck from Sonoma County Poultry, the same supplier for The French

Laundry in Napa Valley. But the holidays are more than gourmet grub, and Smith knows it. Even though she has spent nearly two decades cooking for others on Christmas — she and her husband usually ring in New Year’s Eve at 2 a.m. with champagne and oysters — she still has a soft spot for pink applesauce. It’s a family tradition on par with leaving cookies for Santa Claus, and during the holiday season, even small traditions form the

backbone of an unforgettable celebration — particularly when you’re far from home. “So many people come here to visit their second home and just want to enjoy it while they’re here,” says Smith, who began taking holiday meal orders in October and will likely be fully booked by early December. “It’s a vacation place — they don’t want to leave it every second for the grocery store or the wine or anything, but they want it to feel like home.”


Chef Christian Apetz, 8100 Mountainside Bar & Grill

A family affair Like Smith, chef Christian Apetz of 8100 Mountainside Bar and Grill thinks of family at the holidays. His mother was Finnish and his father married into a Sicilian clan, so Christmas meant a bustling kitchen with aunts, uncles, cousins and his four brothers. “I was the chunky little fat kid who had my fingers and hands in everything,” laughs Apetz, whose family also canned everything from peaches to asparagus. “I loved food, and I loved trying to learn the simplicity of grinding and pickling.” That simplicity translated into a traditional dinner at Christmas: Sicilian-style tomato sauce, or gravy, made with plum tomatoes crushed and canned at home. Prepping the meal was a daylong affair, but family recipes demand little more than a few simple ingredients and plenty of love. “Christmas was when all the hard work we did during summer and fall would come out,” Apetz says. “I appreciate the most simple, straightforward foods, because I really know how much hard work and labor goes into them.” For his wife and two children, Apetz spices up a traditional holiday meal with outstanding side dishes, like his gourmet twist on down-home grits.

Bacon and bleu cheese bring a touch of savory flavor to the recipe, and it can easily be tweaked for large groups. For brunch, Apetz suggests eggs benedict and a homemade Bloody Mary. His mother’s family occasionally gave the dish a Finnish twist with smoked salmon or cod, but it was always paired with pickled asparagus. “I can remember it vividly: My dad was stirring asparagus into his Bloody Mary and we were putting it into the eggs benedict,” Apetz says. “Asparagus and the holidays always go together.”

The kids’ table As parents, Apetz and Smith both know any holiday meal should be made with children in mind. A gourmet dinner is well and good, but sometimes even the finest ingredients don’t earn the youngster seal of approval. When Smith cooks privately for families, she always makes dishes that can easily be tweaked. Take something simple like chili: She makes a mild batch — spicy food doesn’t always sit well with young tummies — and includes hot sauce with grilled jalapeños on the side. And almost anything can be made with the whole family in mind. Try separate “kid” and “adult” batches of stuffing or sweet potatoes, and put out

Recipes BACON BLEU CHEESE GRITS From chef Christian Apetz, 8100 Mountainside Bar and Grill in Beaver Creek ingredients

• 4 strips high-quality bacon, roughly chopped • 2 shallots, finely diced • 1 quart half and half • 1 cup stone-ground white grits • 2 tablespoons butter • ½ cup water • ½ cup bleu cheese crumbles, preferably Gorgonzola • 1 cup scallions, chopped • Salt and black pepper to taste method

1. In a medium saucepan over medium-low heat, render chopped bacon by stirring constantly with a wooden spoon until the bacon just begins to turn crispy (about five minutes). Remove the bacon and reserve the fat. 2. In the same saucepan, warm 2 tablespoons bacon fat over medium heat. Add shallots, stirring constantly until shallots turn translucent. 3. Add half and half. Bring to a boil. 4. Add grits and turn heat to low. Stir constantly until grits thicken to an oatmeal consistency (about 7 minutes). 5. Add butter and water to grits. Bring back to a simmer over medium-low heat. 6. Stir in bleu cheese, bacon and scallions. Allow mixture to thicken for another 2 minutes, stirring constantly. Season with salt and black pepper to taste.

• 14 ounces TCHO SeriousMilk Cacao chocolate bar (53 percent cacao), or a combination of your favorite highquality milk and dark chocolates • 1 ½ cups light cream • 1 teaspoon vanilla extract method

1. Break the chocolate squares into small pieces and drop into fondue pot. If you don’t have a fondue pot, place on the stove a metal bowl over a large pot filled with water. Heat the water gently over medium heat to melt the chocolate. This mixture may need to be returned to the stove occasionally to gently reheat during service. 2. Heat cream in a separate pot until simmering. Add cream to chocolate, which prevents chocolate from going lumpy, and stir gently but constantly until the chocolate is melted and smooth. 3. Add vanilla extract to mix. Stir. 4. Try dipping crisped rice squares, graham crackers, mini gingerbread men, marshmallows, cubed pound cake, pretzels and just about any fruit.

The shellfish are tough to come by in the mountains, but private chefs like Smith can work with suppliers to bring them into local 66

Steak is much easier to come by, and it’s a simple way to please kids who’d rather munch on burgers and fries. “I’ve found that a lot of kids who live in this valley are welltraveled and they’re open to new dishes,” Smith says. “As long as the sides stay fairly simple, a kid will try steak. He’ll even like steak — maybe he doesn’t want the veal demi-glace served with it, but that’s for the adults anyway.” For Smith and her husband, fondue at Christmastime is a must. They invite family friends to bring kids and a batch of fondue, turning their kitchen into a holiday buffet. Kids have a blast dipping different breads and meats, while parents have just as much fun doing the same with a glass of champagne on the side. No one is forced to sit at a table, and over the years, the low-key atmosphere has become part of the Smith family tradition. “You can make fondue as an appetizer, something to throw pieces of bread in, or you can make it the whole meal,” Smith says. “That can be a lot of fun for the kids because it’s interactive, and for our family it’s become a tradition.”
