Beef & Mushroom Pot Pies

Serves: 4 Ingredients

Cooking time: Under 30 minutes Method

400g beef steak, cut into 3cm cubes 1 medium brown onion, chopped 2 garlic cloves, crushed 2 medium carrots, cut into 2cm chunk 2 cups cup mushrooms, halved 2 cups all natural real stock beef 1 sheet frozen puff pastry 1 tbsp Dijon mustard 1 tbsp thyme 1 egg beaten 2 tbsp plain flour 2 tbsp olive oil 2 tbsp cold water Salt & pepper

1. Preheat oven to 200째C conventional/180째C fan forced. 2. Meanwhile, heat 1 tablespoon of the oil in a large frying pan over high heat. Season steak with salt & pepper and cook until browned on all sides, about 4-5 min. Remove to a plate. 3. Return pan to medium heat, add remaining tablespoon of oil and cook onion for 2 min, stirring constantly. Add garlic and carrots and cook for 2 min. Add mushrooms and cook for another 2 min. Then add the 2 tbp of flour to pan and cook while stirring for 1 min. 4. Add beef, beef stock, mustard and thyme and bring to a simmer for 15 min, or until liquid has reduced slightly and thickened. Divide between 4 small greased baking dishes. Cut defrosted pastry into 4 smaller squares. Gently lay pastry over each baking dish, being careful to seal edges. With a small knife make two small slits in pastry and brush with egg wash. Bake for 25 min, or until pastry is golden brown. Remove from the oven and stand at room temperature for 10 minutes before serving.

Tempura Zucchini Flowers Ingredients

Method

150g creamy goat cheese (or use a selection of your favourite soft cheeses) 4 zucchini flowers, still attached to baby zucchini 1 Tbsp fresh thyme, chopped, or basil leaves, shredded

1. Remove the stamen from inside each flower and check for insects. Mix the soft cheese with the herbs, and roll into four balls. They should be of a size that fits neatly inside the flowers. Place (one ball a flower) inside the flowers, and gently close its petals. 2. Whisk the first five ingredients with enough icecold soda or sparkling mineral water to make a thin batter. 3. In a deep pan, heat 2.5cm of grapeseed or vegetable oil until hot, or use a deep- fryer set at 180deg. Gently dip the stuffed zucchini flowers into the batter, then fry both sides until crisp and golden. Drain on kitchen paper, season with flaky sea salt and freshly ground pepper.
