Baked Snapper with Coriander, Lime and Lemongrass in a Paper Bag Matched with James Squire The Chancer Golden Ale
Ingredients / Serves 4.
4 ....................... Snapper fillets, 200g each 100ml .............. olive oil 1 bunch ........... green shallots, cut into thin slices 2 ....................... limes, juice and zest julienned 2 stalks ............. lemongrass, thinly sliced 40g ................... garlic, minced 2 cloves ............ ginger, peeled and julienned 1 bunch ........... coriander, leaves picked from stem 2 ....................... egg whites Sea salt & freshly ground black pepper
Method.
1. In a bowl mix the oil, shallots, lime juice and zest, lemongrass, ginger and garlic together with a pinch of salt and a twist of pepper. 2. Take 4 squares of baking paper (approx. 30cm x 30cm). 3. Place an 1/8 of the mix into the middle of each. 4. Season the snapper fillets both sides and place skin side down on top of the vegetable mixture. 5. Top the fish fillets with remaining mixture and the picked coriander leaves. 6. Brush the edges of the paper with a little egg white, fold over the paper and pleat the edges to resemble a Cornish pastie and the packages are now ready for the oven. 7. Pre-heat oven to 180 degrees Celsius. 8. Place the packages onto a baking tray. Sprinkle with a little water and place in the centre of the oven for 8-10 minutes until packages are golden brown. 9. Remove the package from the oven, place on serving plates and take a pair of scissors to the table. 10. Cut at the table so that all can enjoy the wonderful aroma that will be released from these packages of joy.
