Serves 16 to 20 Total time: 1 hour 15 minutes, plus marinating
Ingredients 4 cloves of garlic 4cm piece of fresh ginger 5 tablespoons hoisin sauce 4 tablespoons low-salt soy sauce 2 tablespoons Chinese five spice 1 tablespoon sesame oil 4 tablespoons honey
Woolworths Gold Free Range Half Leg Ham
1 x 5kg higher-welfare WW cooked leg of ham 1 bunch of fresh rosemary 1 whole nutmeg 1 fresh red chilli 1 stick of cinnamon 2 star anise 2 oranges
Method 1.
Peel and roughly chop the garlic and ginger, then place in a food processor with the hoisin sauce, soy sauce, five spice, sesame oil and a good pinch of sea salt and black pepper. Blitz until smooth.
6.
Remove the cling wrap, halve and deseed the chilli and place on top of the ham, along with the cinnamon and star anise.
7.
Halve 1 orange and place in the tray with the ham.
2.
Place the ham on a board and trim off the outer layer of skin, leaving a 1cm layer of fat behind. Score the fat all over in a criss-cross pattern, making sure you don’t cut down into the meat itself.
8.
Cover the whole tray with foil and cook in the preheated oven for 45 minutes.
9.
Remove from the oven, take off the foil, drizzle over the honey and carefully squeeze over the juice from the roasted orange halves.
3.
Pick the rosemary leaves, scatter over the ham and finely grate over a little nutmeg.
4.
Place the ham in a roasting tray and pour over the marinade. Rub it all over the meat, getting into all the nooks and crannies, then cover with cling wrap and place in the fridge to marinate for at least 2 hours, but preferably overnight.
5.
When you’re ready to cook, preheat the oven to 180ºC/350ºF/gas 4 and take the ham out of the fridge to come up to room temperature.

10. Finely grate over the zest from the remaining orange and squeeze over the juice. 11.
Scrape up the sticky bits from the pan and mix well with the juice to form a glaze.
12. Brush the glaze all over the ham and return to the oven for 20 to 25 minutes, brushing and spooning over the glaze every 10 minutes or so, until dark, sticky and gnarly. Rest for 30 minutes before carving.

1 vanilla pod or 1 teaspoon vanilla bean paste
1 orange
250g fat-free Greek yoghurt
3 tablespoons honey
50g unsalted pistachios
Method 1.
Preheat the oven to 180ºC/350ºF/gas 4.
2. Halve and destone the apricots then halve, destone and cut the nectarines or peaches into wedges and place in a snug-fitting roasting dish. 3. Finely grate the orange zest onto a plate and set aside. Squeeze the orange juice over the stone fruit, drizzle with the honey, then add the bay leaf and toss together well. 4. Arrange the fruit so it’s sitting cut-side up, then roast in the oven for 20 minutes, or until golden and sticky. Once cooked, remove from the oven and leave to cool completely. 5. When you’re ready to assemble the pavlova, whisk the double cream to soft peaks.
6. Halve the vanilla pod, scrape out the seeds and fold into the cream with the yoghurt. Spoon the mixture onto the pavlova base, using the back of the spoon to make nice peaks. 7.
Spoon the fruit wedges onto the yoghurt mixture and drizzle over any juices left in the tray.
8. Shell and chop the pistachios, so you have a mixture of larger and fine pieces, then scatter over the top of the pavlova with the orange zest. Serve straight away. Nutritional Information Per Serve Energy 960kJ, Protein 4.5g, Fat 8.6g, Sat Fat 4.7g, Carbs 34.1g Sugars 34g, Sodium 40mg
