New York Angus Association Mission The object of this association will be to promote in all ways the interests of the Angus cattle producers of New York State, to increase the number of breeders, to advertise and promote New York as an Angus breeding center as an inducement of buyers to visit New York breeders, to assist in furnishing outlets by promoting public sales and otherwise for the sales of surplus breeding and feeder stock of members, to seek to improve the general merit and extend the favorable reputation of New York Angus, and to do any and all proper things necessary to advance the prosperity of the breed and its breeders herein.

Setting An Example New York Angus Members

In 2013, we hosted the National Angus Conference & Tour in New York. Producers from all over the nation and beyond came to partake. They were “wowed by all of the farmland and amount of cattle across our great state. Understanding our passion for agriculture, these visitors left educated on what we do and how we are similar to their operations; not to mention the many differences herd size, land size, etc. Our membership set a great example for our guests, which many people commented on. So congratulations and keep up the good work, because there are many of our youth to reach out to, and keep this example moving forward. Our marketing efforts and our proven genetics have made a major impact in recent years, and now we are in some of the best cattle markets of all time. Not only are breeders more involved, but we are educating the rest of our fellow producers better, as well as our consumers. This is a tough job, but our membership is strong and our foundation is solid. Keep setting the pace. If at any time, the NYAA Board of Directors can help you or steer you in the right direction, feel free to contact any of us. Thanks, Mike Shanahan Editor www.NY-Angus.com 6

Dear New York Angus Breeders, As your new regional manager for the American Angus Association, I want to take a moment to express our organization’s gratitude for your commitment to the Angus breed. The Association is fortunate to serve more than 25,000 members, an ever-growing community of commercial partners, and the highest performing cattle in the beef business. Thank you for making that possible. New York has a rich Angus history and I look forward to working for you. I will be traveling across the Eastern Chris Jeffcoat territory, including New York, to ensure we meet the needs of your operation. As you see me at various events and sales, please feel free to introduce yourself. I am here to answer questions you may have, make on-farm visits, help with cattle procurement, assist with marketing opportunities, and offer assistance in any way I can. I look forward to helping you better utilize the Association’s programs and services, as well as take advantage of the many marketing opportunities offered through our organization. Whether you are looking to promote your herd or have a sale, the Association has many marketing opportunities through the Angus Journal, Angus Beef Bulletin, print mailings, website building and hosting, radio, television, and social media. I’m a Pennsylvania native who grew up on a beef cattle operation near Littlestown, Pa. My family has a commercial and registered Angus cow herd, feedlot, and meat processing facility. I’ve served as the Pennsylvania Beef Council’s beef quality assurance director, and in recent years I lived away from home, serving as an extension agent for North Carolina State University and the University of Kentucky. I recently relocated back to Littlestown, Pa., and look forward to working with producers like you every day. Whether large or small, your operation matters to me and I look forward to working with you. If you have questions or need assistance in any way, please do not hesitate to contact me. Sincerely, Chris Jeffcoat Regional Manager American Angus Association 717-476-1496 cjeffcoat@angus.org 16

Understanding Flight Zone and Point of Balance for Low Stress Handling of Cattle, Sheep, and Pigs (Revised August 2014)

by Temple Grandin Dept. of Animal Science Colorado State University

This picture illustrates the flight zone of a large flock of sheep. Herds of cattle behave much the same way. Notice that the sheep are circling around the handlers while maintaining a safe distance and keeping the people in sight. Note that the sheep tend to move in the opposite direction of handler movement. Walking in the opposite direction of the direction of desired movement can be used to move groups of animals. Walking in the opposite direction tends to speed up movement and walking in the same direction tends to slow down movements. These principles work with all herding animals. When animals are completely tame they will have no flight zone. Leading is usually the most effective way to move very tame animals. Handlers on farms and ranches can reduce the size of the flight zone by spending time walking through the herd or flock. This diagram illustrates the general flight zone of an animal. The actual flight zone of an individual animal will vary depending on how “tame” the animal is. An animal’s flight zone will vary depending on how calm it is. The flight zone gets bigger when an animal 64

New York Angus Association

becomes excited. The flight zone is also bigger when you approach “head on. Calm cattle are easier to move. If cattle become excited, it takes 20 to 30 minutes for them to calm back down. People should be quiet when moving animals. Yelling and loud noise is very stressful. High pitched noises are especially stressful. When moving livestock from a large open area, understanding flight zone behavior and utilizing a few basic principles, moving animals in a calm and orderly fashion at a walk becomes very easy. To keep the animals moving in an orderly manner the handler alternates between penetrating the collective flight zone and withdrawing from the collective flight zone. Alternating pressure on the flight zone is more effective than continuous pressure. Continuous pressure on the flight zone may make the herd run. The handler should back out of the flight zone when the herd is moving in the right direction. This rewards the herd for doing what you want. When the herd slows down or stops, pressure should be applied again. When the handler moves in the zig zag pattern he/she penetrates the flight zone when walking in the opposite direction of desired movement and retreats from the flight zone when walking in the same direction of desired movement. The Beef Checkoff

Complying with the $1 Beef Checkoff

The Beef Checkoff law goes into effect every time cattle are sold. This includes purebred sales and private treaty sales on the farm. The law requires that a dollar per head is withheld and remitted to the New York Beef Industry Council.

Private Treaty Sales Q & A What is Private Treaty? Sales that involve one producer selling cattle to another producer or direct to consumers. Who pays the $1/head? The $1 deducted from the selling price of the animal. The seller deducts and remits the $1 on private treaty sales. Is the $1 due on cattle sold for freezer trade? Yes. If you market cattle in the form of beef or beef products to consumers, restaurants, etc. you are required to remit the $1/head assessment. Cattle and calves for personal consumption by the producer and his family are not assessed. Is there a form to use when remitting the checkoff? The Private Treaty form should be completed and sent with your remittance. Forms are available by calling the NYBIC at 1-800-292-6922 or online at www.nybeef.org. Where do I send the money? In NYS the checkoff assessment should be sent to the New York Beef Industry Council. Collections are sent directly to a lockbox and the address is on the Private Treaty Form. What is meant by the “state of origin on the Private Treaty Form? The state the cattle were raised in. Use the form on page 71 of the New York Angus Association directory to remit the $1 Checkoff on your cattle sold through private treaty sales.

If you have any questions about the Checkoff, contact New York Beef Industry Council cgillis@nybeef.org or 1-800-292-6922 www.NY-ANGUS.com

What is BQA? Beef Quality Assurance (BQA) is a national program that provides guidelines for beef cattle production. It is a combination of technology, common sense, a concern for animal well-being, and a consumer oriented production system. It focuses producers’ attention on management practices that influence the safety, wholesomeness and quality of beef. The program is producer initiated, voluntary and locally led. In NYS it is coordinated through a combined effort of the New York Beef Industry and Cornell University. Who should be certified? All individuals who have the opportunity to influence the quality of cattle including owners, farm workers, junior producers, animal science students and allied industry partners. Steps for BQA Certification 3 Attend a BQA classroom training & complete the BQA test. 3 Participate in a chute-side training. 3 Establish a Veterinary/Client/Patient Relationship (VCPR). 3 Sign the BQA Contract. To enroll in the NY BQA program contact: Carol Gillis, NY Beef Industry Council cgillis@nybeef.org or call 800.292.6922 or Mike Baker, Cornell Beef Specialist mbj28@cornell.edu or call 607-255-5923

FRAME SCORE

Frame score is a convenient way of describing the skeletal size of cattle. With appropriate height growth curves, most animals should maintain the same frame score throughout their life, while their actual height increases with age. This allows one frame score value to be used regardless of when the animal was evaluated. However, the frame score will change for animals that mature earlier or later compared with average animals. The hip height measurement should be taken at a point directly over the hip bones (hooks) with the animal standing on a level surface.

Setting the Standard

So, what make the CAB brand stand above the rest? Since there are dozens of “Angus” programs out there, including 40 other USDA-certified, we’d like to clarify that.

Live Animal Identification Step 1

Consistent Sizing

4 10- to 16-square-inch ribeye area Phenotypic: Predominantly (51%) solid black hair coat OR Genotypic: AngusSource® program enroll- 5 Less than 1,000-pound hot carcass ment weight AngusSource®, USDA-approved as a process Verified Program (PVP) since fall 6 2005, documents source and group age Less than 1-inch fat thickness while ensuring cattle have a minimum of 50% Angus genetics. Eligible cattle must be sired by a registered Angus bull Quality Appearance and and enrolled by the ranch of origin with month, day and year of birth for the oldest Tenderness calf in the group. For more information, 7 visit www.angussource.com. Superior muscling (restricts dairy influence) Carcass Specifications This screens out the influence of dairyStep 2 type cattle to maintain consistent yields and plate presentation. Marbling 1 Modest or higher marbling That qualifies a carcass for average Choice and ensures superior flavor and juiciness. Few other branded programs have this level of marbling, and it is the single largest barrier to CAB acceptance. 2 Medium or fine marbling texture Many small flecks of fat, as opposed to fewer, larger and coarser characteristics. Smaller flecks ensure consistent flavor and juiciness in each bite.

Maturity 3 “A” maturity for each, lean and skeletal characteristics All CAB carcasses are of “A” maturity, which is typically less than 30 months of age. Beef from younger animals is more tender than that from older animals. 74

8 Practically free of capillary rupture Limiting internal hemorrhaging in beef provides a more attractive meat case display. 9 No dark cutters Usually only a problem in animals that are stressed prior to harvest and caused by a drop in muscle glycogen levels, the beef appears dark brown to purplish and is not appealing to consumers. 10 No neck hump exceeding 2 inches This limits the influence of bos indicus (Brahman-type) cattle to address tenderness concerns.

The view this month is from my pickup truck. It has been so wet in western New York this spring most farmers have not spent the amount of time on their tractors that they would have liked and most farmers won’t get the amount of crops planted that they would have liked. Well anyway what I wanted to tell you about and warn you of, is the evil of having too much time on rainy days. Most rainy days are spent in the shop. But one rainy day I thought I would run into town get a few parts and stop by the hardware store and get one of those thingamajegs that keeps the toilet from running and maybe we wouldn’t have to jiggle the handle each time it was used. It had stopped raining when I got to town and my old pickup was just covered with mud and “organic fertilizer” so I figured I would quickly run it through the new car wash. I pulled up and read the sign: $5.00 for cars and $6.00 for trucks. Well I guess my truck was worth the extra dollar so I pulled in. It was brand new - it had all kinds of brushes. As I was riding through in my truck I saw this big whirling brush come up the hood of my truck cleaning the hood, then the windshield, then it went over the cab and came down in the bed. Before I knew it the big brush had grabbed two weeks worth of baling twine, 10 feet of old barb wire and a broken fence post I had been saving. What a racket; I must have thrown a breaker or something because everything stopped and I did the only thing I could think of. I drove out of there never to wash my truck off the farm again. Thanks for reading, Paul P.S. As long as 97% of the American people still eat meat there will always be farmers and pickup, but we should clean the beds before we try those new whirling brush ones. 78
