ontinuing to educate East Brunswick Public School District students during the coronavirus outbreak, Superintendent Victor Valeski discussed how virtual school days are operating. “The East Brunswick Public Schools team has rallied together during this unprecedented event and I’m so proud of the entire East Brunswick schools community,” Valeski said. “The central office team, principals, supervisors and depart-

ment chairs have conducted virtual staff meetings daily and throughout the week with their faculty to maintain consistent and open communication as we refine this new model of learning.” Valeski said he keeps in touch with the entire team multiple times during the day, especially as new information is released from either the New Jersey Department of Education or Gov. Phil Murphy’s office. In order to continue educating students in kindergarten through seventh grade, Valeski said parents receive daily learning plan emails from their child’s teacher each

morning. “We’re listening closely to parent feedback and work as a district to begin ways to adjust this process as we continue to expand our experience, knowledge and delivering high-quality distance learning,” Valeski said. “You can expect that our current model may be adjusted as distance learning continues to evolve.” As the district work toward meeting the needs of all learners, Valeski said, “Our district distributed [more than] 1,050 (Continued on page 12)

n the midst of the ongoing coronavirus crisis, the South River Public Schools District gave out non-perishable food items to students who receive free/reduced lunch. “We realize that many of our families count on the breakfast and lunch their children depend on at school,” Superintendent Sylvia Zircher said. “We want to make sure that these children continue to have access to good food while our schools are closed. Good nutrition is key to maintaining good health, and we want to give our students the best opportunity to remain healthy.” Families whose children receive free or reduced lunch were able to pick up nonperishable food items on March 18 at the Middle School Cafetorium on Montgomery Street. During different food pickup times, no more than 25 people were allowed in the cafeteria at once and custodians were present to disinfect in between pickup times, according to a prepared statement from Zircher. Zircher said almost 50% of the schools district students qualify to receive free or reduced lunch. “We are currently exploring the opportunity to continue to provide another food distribution, but are conscientious about maintaining the wellbeing of the staff who works so hard to put these meals together and organize the distribution process,” Zircher said. “We are going to continue to update the public of additional distribution dates if this is possible.” For more information, visit www.srivernj.org/

Food grown at MCC is making its way to the table By KATHY CHANG Staff Writer

V

egetables and fruit cultivated in a hydroponics lab on the Middlesex County College (MCC) campus is making its way to the table, from department luncheons to the campus cafeteria. The Department of Natural Sciences and the Department of Hospitality, Culinary Arts and Dietetics (HCD) have teamed up to serve food grown on campus as part of the meals they serve. To find any leafy green – kale, arugula and sweet peas – or herbs – basil, rosemary and parsley – culinary students don’t have to venture far – just to the South Hall Science Building – and they can pick up the ingredient the same day they need it. Parag Muley, professor of Natural Sciences in biology and sustainability, said to compare timeframes, by the time a vegetable bought at a grocery store makes its way to ones kitchen table, eight to 10 days could have lapsed. A discussion about a partnership between departments began last fall and launched in the spring. Muley said setting up a room and figuring out a huge list of materials took time. The partnership received a $5,000 grant from the college, which went toward a small greenhouse with solar panels and a grid. Why hydroponics? Hydroponics is growing plants in water and part of sustainable living. Muley said when he came back to teaching full time, he was looking at some of the hands-on modules that could be very relevant to sustainability and current challenges when it comes to the environment. “One of the biggest challenges we had is sustainable agriculture,” he said. “The simple perspective is we already have 7.6 billion people [in the world]. We will pretty soon be about 9 billion by 2050 and be hitting 12 billion people by the end of the century. We are already using optimal land for agriculture and every year our agricultural production is going down.” Muley said the question is how are 9-12 billion people going to be fed. “Water is an emitting resource, agriculture currently uses 70% of fresh water extracted either underground, from lakes or whatever source,” he said, noting this is an inefficient way of using water. Muley said he naturally gravitated toward the technique of hydroponics, which uses 90% less water. “It’s actually nothing new, it’s sort of a 3,000-year-old technique,” he said. “The

Babylonians had hanging gardens. We have known it except it has never concentrated in a commercial, educational setting to really produce edible plants.” Advantages of hydroponics, which can grow every leafy green and microgreen, is almost 80-90% more efficient when it comes to water compared to soil agriculture, he said. “Hydroponics is generally done indoors so you control the environment and the further advantage is there are no herbicides, pesticides for pest issues, so we are using less chemicals,” Muley said, adding the produce is healthier and safer, and because the nutrients are in water in a measured amount, the food has the same – if not better – quality as grown in soil. Other advantages include the use of less space and energy and with hydroponics most plants grow 30-40% faster than it would in soil. Traditional farming is a horizontal enterprise. Plants need soil so farmland covers massive acreage. Hydroponics is more vertical. “It’s like going from a ranch-style house to a skyscraper,” Chef Brian McInerney of

the HCD Department said. Muley said from a seedling to harvest stage, the growth time is less than five weeks for lettuce, kale and any leafy greens. “In soil, we can’t do anything outside until it warms up and even if it was summer, it takes six to seven weeks for it to harvest,” he said. Partnership Professor Claire Condie of the Natural Sciences Department said it has been a dream of hers to work with the culinary program to get a farm-to-table system developed at MCC. “For years, I have been trying to have an outside community garden,” she said. “Just between timeframes [of semesters] and what produced when the culinary department is ready, insects, drought whatever the case may be, it was never a successful adventure.” Condie said with hydroponics they can control all the elements and get everything into a time table when it is needed and start to do a farm to table exercise with the help of students in the Earth Science Club and

students in the sustainability science degree program. “The students see where everything starts from all the way to finish, it’s an excellent science project,” she said. “The club does hands on work and it is also part of the curriculum as well. In my classes we added a service learning part to it.” Muley said they have been testing and growing different produce – finding success with microgreens, the new superfood. “It is very fast with a very high turnaround and the product is very nutritious,” he said. “The next question was what do we do with the produce we are going to grow.” That is when discussions began with Mary-Pat Maciolek, chair of the Department of Hospitality, Culinary Arts and Dietetics. She said the program will allow culinary students to more fully understand the food supply chain, as well as learning to be flexible and adaptable. “Whatever they harvest will be put to use,” she said. All four MCC staff members emphasized the collaboration was a terrific

Lose weight at home: Be safe, feel great B By Ken Freedman, DC ith orders to remain home and practice social distancing, many people are feeling stressed, and feeling the pull. What’s pulling them? Their nearby refrigerator, the drive through at one of the many fast food chains, or local restaurants offering home food delivery. This type of eating can be bad for your health, and worse for your waistline, especially if you have already gained some extra pounds over the winter months. Since 2010, we have helped hundreds of people lose weight fast and safely with the Doctor Supervised ChiroTHIN Weight Loss Program. Many people choose to come for their follow-up visits with me personally. For those who wish to remain home, we can arrange to support you through unlimited telephone consulta-

tions. While individual results vary, in only 6 weeks our patients typically lose 20-35 pounds and 14 to 20 inches. This program is safe and effective for children over 10, and nearly all adults, including diabetics, people with high blood pressure, and people on medication(s). What happens after you reach your desired weight? The program includes easy-to-follow strategies for long-term weight management at no extra charge. Why is the ChiroTHIN Weight Loss Program better than other programs? Quality, accountability, freedom, results, safety and affordability. You have the freedom to select real food you buy at the supermarket, prepared within their portion-controlled dietary guidelines. When followed as directed, ChiroTHIN Weight Loss Program patients achieve

better results in a fraction of the time – and at a fraction of the cost – of other nationally advertised weight loss programs. There are no exercises, drugs, hormones, prepackaged foods, shakes or bars. The products included in the program are the finest money can buy. Weekly private visits with me, either in person or over the phone, check your progress, with personalized recommendations and coaching. The Doctor Supervised ChiroTHIN Weight Loss Program is designed by doctors. The meals you make in the ChiroTHIN Program are delicious, easy to prepare, and can also be enjoyed by the patient’s entire family. Once the dining out restrictions are lifted, it will be easy for you to eat out within the ChiroTHIN Program’s guidelines. Many patients who suffered with longstanding conditions such as high blood

Battle the coronavirus bug with chiropractic care stay well: • Eat a nutrient-dense diet • Exercise • Get proper rest • Maintain a positive attitude • Wash your hands for 20 seconds after being out in public • Have regular chiropractic care Of course, getting chiropractic care is one of the most crucial things you can do.

By Ken Freedman, DC

W

ith the coronavirus pandemic impacting our globe, we’re social distancing, washing our hands scrupulously and wiping down surfaces with antiviral products. Those are all good habits to help protect yourself against COVID-19. However, there’s another important step you can take: get a chiropractic adjustment. Chiropractic does much more than relieve back and neck pain; it helps you stave off serious illnesses.

Enhancing Your Body’s Ability to Heal Through regular chiropractic checks, you can improve your immune system and its response and strength. If you do get infected, you’ll have a greater ability to heal and respond faster and more completely.

There’s considerable research out there about chiropractic’s positive impact on the immune system. Help fortify your body against coronavirus. To schedule a private consultation at no charge or obligation, call 732-2546011. How Does Chiropractic Help? Chiropractic care removes interferences to the body’s capacity to resist illness and infection. “The purpose of chiropractic care is to remove the interferences in the flow of energy that would shackle the nervous system’s ability to carry energy to all parts of the body that control how well the body functions,” said Dr. Ken Freedman of Freedman Chiropractic in East Brunswick. When the body has interference in energy flow, it doesn’t perform as well. Since the immune system is one of the most critical functions of the body, the immune system is hindered in its ability to operate as well as it can. When that happens, the body is much more susceptible to illness. It becomes immunecompromised. All experts agree that when it comes to coronavirus, people who are most at risk are those who are immunecompromised. Add Chiropractic to Your Wellness Repertoire Here are things you should be doing to

Telerehab physical therapy during COVID-19 pandemic

T

he world is going through a crisis that threatens to claim lives and is pushing healthcare systems to the brink of collapse across the globe. Your friends and family are doing what they should do, and they are isolating themselves to limit the risk of transmission of the virus. Our frontline providers are fighting everyday to combat this virus and they are in our thoughts and prayers. We are all dealing with a laundry list of concerns during this crisis. The psychological and physical stressors of this crisis for us as individuals cannot be underestimated. If you are like many of our current patients, discontinuing or postponing necessary rehabilitation could have dire consequences. Perhaps

your doctor wrote you a script for physical therapy prior to this crisis because you were in pain or just had surgery. Maybe you’ve been in pain for quite some time and planned to start therapy, but now you are not comfortable leaving your home. Fortunately, the access that patients have to the telerehab we offer in combination with Gov. Phil Murphy’s recent order will enable patients to receive much needed physical therapy from the comfort of their own home during this crisis. Telerehab is physical therapy treatment that is provided via a remote connection that is similar to FaceTime or Skype. This connection allows you to consult with your doctor of physical therapy and receive guided exercise instruction to

achieve your goals of getting rid of pain or improving function. ProFysio has been piloting and delivering this service since 2018. ProFysio Physical Therapy uses a superior system that has an extensive catalog of exercises that provides a professionally recorded multi-angle video feed to give you an optimal demonstration of the exercise while simultaneously being connected with your therapist. Your therapist can modify the exercise as needed based on how you are feeling. In addition, it allows your therapist to capture your range of motion measurements throughout your session so that we can measure and show you progress from session to session. This unique feature makes initial evaluation and assessment possible and more ac-

curate than comparable systems. Conditions like back pain, neck pain, tendinitis, post operative pain, and chronic pain and many more can be treated with this form of telehealth. Recently, Murphy signed legislation (A3860), which authorizes any health care practitioners to provide telemedicine and telehealth services for the duration of the public health emergency declared by the governor. Under this legislation, the Department of Banking and Insurance is directing insurance carriers to review their telemedicine and telehealth networks to ensure adequacy, given the apparent increased demand, including, but not limited to, mental health and behavioral health providers, physical therapists, occupational therapists and speech therapists, and any other health providers capable and authorized to provide telehealth or telemedicine services pursuant to state law or other state-issued guidance. We applaud this legislation and urge you to use this service during this challenging time. At ProFysio you can easily book your session online at profysionj.com or by calling 732-970-7882. Same day appointments are available and you do not need a physician’s prescription to begin therapy. Also, for individuals who do not have insurance, we have made it available at minimal cost during this crisis. Please make good choices and stay healthy during this difficult time. We will all get through this challenging time together. The Antonia Maria Foundation and Day One Sober Living will hold their 2020 spring gala, Celebrate a New Day, from 7-11 p.m. on Sept. 17 at the South Gate Manor, 260 South St., Freehold. The second annual gala will launch the partnership with Day One to help revolutionize sober living care for women in New Jersey. The gala was rescheduled from April. Anyone with pre-purchased tickets who is unable to attend will have their money refunded. For information on tickets or sponsorship, call 732-823-8350.

Mayor declares Emma Jane Decker Day in honor of longtime Spotswood resident By VASHTI HARRIS Staff Writer

SPOTSWOOD – Recognizing decades of educational and community service, resident and former Kindergarten teacher Emma Jane Decker received a proclamation of celebration from Mayor Edward Seely. Council President Larry Kraemer read the proclamation on March 2 during the Spotswood Borough Council meeting. “Emma Jane Decker has been a Spotswood resident for nearly 60 years, having raised her family in the home she still owns on Burlington Avenue and whereas this longtime resident has an equally long history of service to our community,” Kraemer said. Kraemer said Decker was a Kindergarten teacher at both E. Raymond Appleby Elementary School and G. Austin Schoenly School for three decades and is still remembered and greeted by name by former students when she shops in town. “It’s nice to be recognized as far as that goes and when people do come up to [me], immediately I can’t remember everyone’s name,” Decker said. “So I ask to see a picture and sure enough, they pull out their phone and they will show me pictures of what their children are doing now, how

work with families to ensure they have access to the internet. “We are grateful that the internet providers in our area are offering free access for eligible families. [Parents can] contact local providers for information on services that each have the internet providers are offering,” Valeski said. “Students in grades 8-12 are logging on to the Canvas Learning Management system for their daily assignments.” Valeski said the district is confident that its adoption of a learning management system this school year, eased the transition to distance learning for both Churchill Junior High School and East Brunswick High

many children they have, because I have been around for a long time but that’s a great way to keeping touch with people.” Decker said she went back to work when her children went back to school and started off as a homeroom mother, a substitute teacher, and then as a part-time teacher’s aide. “It just kind of grew from that, once one of the kindergarten teachers were leaving for good [they] came to her and said ‘just apply for the job’ and it was kind of mine because I had been there for a few years before,” Decker said. “. … It’s wonderful your right in the same town as [my children] were and if anything ever happened you were there…” Kraemer said Decker has volunteered for a number of community organizations over the years including having served as Girl Scout leader, a library volunteer and in 2002 a member of the library’s board of Trustees, a position she still holds. “In the larger community has served as a volunteer at Hackensack Meridian Health, Raritan Bay Medical Center and whereas continuing the tradition of her various contributions to our community, today Decker runs the thrift shop at Saint Peter’s Episcopal Church, an iconic institution in our borough,” Kraemer said. Saint Peter’s Episcopal Church Rector

Rev. Marchall Shelly said Decker is always giving so much to help other people. “I always look to folks who carry wisdom and carry experience and [Decker] is one of those,” Shelly said. “If I have a question or if I have a concern I know I can turn to her because she is always going to be honest with me, she’s always going to put me in my place, and she is also going to do everything she can to make sure that everybody looks better.” Always thinking about the good of the community, Shelly said, “The piece that [Decker] is always deflecting is how much she just pours out and offers herself to people.” To commemorate Decker’s 85th birthday, Kraemer said Seely declared March 14 Emma Jane Decker Day. “It’s nice to be recognized. I say the same thing when I’m in a store or even people who come [into the church] and as soon as they say, ‘Ms. Decker’ I know it’s someone I had in school – otherwise it’s Emma or Emma Jane. … So it’s nice people still remember and it’s a good feeling,” Decker said. “Decker is a shining example of the best of the Borough of Spotswood living long in our town for the last six decades,” Kraemer said.

School students. The district’s secondary schools are following a block schedule format where students virtually attend four classes a day. Despite the schools’ closures, its guidance counselors, child study teams and nurses continue to actively support students, according to Valeski. With the last day of the third marking period being April 3, Valeski said, “At this time, I’m trying to maintain the consistency of our board-approved school calendar. I’ve been told by the New Jersey Department of Education that we will get credit for the days we conduct distance learning. Each distance learning day will be counted as a regular school day.” Valeski said the Child Nutrition Department has set up a grab-and-go pickup system at select locations throughout the district, and the district is using parking lots at its 11 schools along with eight other strategic locations. “Grab-and-go meals contain breakfast and lunch items that are available for eligible students. This week, East Brunswick Public Schools has provided [more than] 1000 meals,” Valeski said. “I want to give a huge thank you to our child nutrition staff,

bus drivers, transportation department, school security officers, and our Aramark foodservice partners for quickly getting the system up and running.” For families with changes to their financial situation, Valeski said they should log on to the school district’s website under the parent access tab and then under the forms tab to complete a free and reduced meal application. During this stressful time, Valeski said resources are available on the district’s website to support parents in talking to their children about coronavirus, as well as additional educational resources. “I want to say an absolute unbelievable thank you and I don’t even think the words are invented for [Valeski’s] staff, admin this week. I have five kids in this game and the support they receive [with] virtual learning just been incredible. How did it happen so quickly is beyond me, how it happened so quickly and perfectly executed. … Thank you, everybody, who put this together,” Board Member Jeff Winston said. ON THE ROAD PETER PERROTTA

2020 Ford Expedition Platinum

S

ometimes thoughts come easy. Other times, it’s like pulling teeth to find just the right phrase or combination of words that seem to make sense. In preparation for this week’s review, I was trying to find a clever lead in. But, nothing seemed to fit. Maybe, it’s because I am not thoroughly fond of big, huge trucks. However, I must admit, the week I spent test driving the 2020 Ford Expedition Platinum was more fun than I Peter Perrotta originally thought it would be – there is a lot to like about this truck. All I could think about, though, when it came time to write about the Expedition, were the explorers Lewis and Clark. They were the first to traverse the Great Continental Divide in the early 1800s on their “expedition” from Pittsburgh to discovering the Pacific West Coast. “I think the Lewis and Clark Expedition was the greatest undertaking in American history. I think landing a man on the moon pales next to it,” says author Kathryn Lasky. Well, I won’t argue if Lasky is wrong or right, but I will say this: if Lewis and Clark had had a Ford Expedition – with its enormous cargo space and three rows of seats – their excursion would have been quite simpler. Of course, that hypothesis is almost absurd, but you get the point. The first thing one notices about the 2020 Ford Expedition Platinum is the enormity of this vehicle. “This thing is like a house on wheels,” was my wife’s initial reaction. My 21-year-old Gen Z son – who drives a Ford Edge – said he wanted to ride in it immediately. Afterward, he proclaimed that of all the vehicles I had road tested this

down to how this bear of a truck drives that proves if it can earn its stripes or not. So how does it drive? It drives like the typical American-made Ford. What do I mean by that? Well, there are certain traits of each car maker that seem to carry over from year-to-year and model to model. For Ford, those traits – for their trucks – are big, beefy and comfortable. And, that’s exactly what you get when you get behind the wheel of this 2020 Ford Expedition Platinum. This Expedition is comfortable – its captain chair first and second rows are more than ample to fit even the huskiest – and at first, the sheer size of the vehicle can be a bit overwhelming. However, after some behind the wheel road time, I eased into driving it. When I relaxed with it, I found it to be thoroughly enjoyable. Now, don’t get me wrong. You aren’t going to win any Grand Prix road races with the way this vehicle maneuvers through turns, because it simply doesn’t perform like that. But, in all honesty, this truck wasn’t designed for that. The 2020 Ford Expedition is offered up in four models: the XLT; Limited; King

Ranch and the top-of-the line Platinum. The base price, of each model, is $54,205 for the XLT; $64,740 for the Limited; $74,290 for the King Ranch and $77,085 for the Platinum I tested. In fact, my tester, had a total MSRP sticker price of a whopping $79,075 when you added in the $1,395 for destination and delivery and $595 for an upgrade package that includes 22-inch wheels and 2nd row bucket seats. My tester came standard with a 3.5 liter V6 ecoboost engine and a 10 speed automatic transmission with select shift so you could manually shift it from the “plus, minus” selector buttons on the center console. This power plant puts out 375 horsepower at 5,000 rpm and 470 pound-feet of torque at 2,250 rpm. For the most part, I felt that this Expedition was amply powered. However, there were times when it felt like, in order to do an aggressive pass, I would have liked it to have a bit more juice. The government crash test for this vehicle was impressive: an overall 5 out of 5 rating; and, all 5 star ratings for the frontal crash and side crash tests. On the rollover test, it got a 4 of 5 rating. The EPA fuel economy rating for this vehicle is 19 miles per gallon overall average – 17 mpg in city driving and 22 on the highway. The annual estimated fuel cost is $2,150 as it uses about 5.3 gallons of gas per every 100 miles driven. The list of standard features that come with the Platinum edition is impressive. It includes: heated and cooled first row seats; heated second row seats; heated steering wheel; impressive upgraded leather seats; tri-zone climate control; panoramic power moonroof; a superb infotainment system with navigation and a whole lot more. Overall, if you are considering purchasing or leasing a vehicle in the extra large SUV category, you should give heavy consideration to this 2020 Ford Expedition Platinum. year, this was his favorite. First, let’s address the size of this Platinum edition Expedition. This 2020 model has a wheelbase of 122.5 inches and the following other dimensions: length, 210 inches; width, including mirrors, 93.4 inches; height, 76.4 inches; rear track, 67.6 inches and front track, 67.2 inches. “If you’re transporting a large family and towing a heavy trailer at the same time, there are few options outside of an Expedition that are as capable,” Car and Driver wrote about the 2020 Expedition. I agree. You can’t beat this truck for its cargo carrying capabilities and towing capacity. The total passenger volume of this three row monstrosity is 171.9 cubic feet. Moreover, it has an enormous curb weight of 5,623 pounds with the ability of towing 6,500 pounds. If you add the heavy duty tow package as an option, the towing capacity increases to an impressive 9,200 pounds. There aren’t too many other vehicles in the large SUV category that afford you with this much room and power. However, while the size and power are impressive, at the end of the day, it comes
