Forsgate pro wins third Senior Player of the Year award

F

rank Esposito, a member of the teaching professional staff at Forsgate Country Club, earned his third Senior Player of the Year Award from the New Jersey PGA Section. Esposito, 57, previously won the NJ PGA Senior Player of the Year title in 2017 and 2014. He did not finish outside the top 10 in any of the NJ PGA tournaments in which he competed this season, according to information provided by Forsgate, which is located in Monroe. His year was highlighted with a win at the MET Senior Frank Esposito Open. Esposito also has qualified to play in the 2021 KitchenAid Senior PGA Championship that will be contested in May at Southern Hills Country Club in Tulsa, Oklahoma. He was one of only 35 professionals who earned a spot in the prestigious tournament by virtue of his eighth place finish at the recent Senior PGA Professionals Championship at PGA Golf Club in Port St. Lucie, Florida, according to the statement. “This is a significant achievement for Frank as hundreds of the world’s best

Monroe woman is one of three to win Fresh Cravings Walmart Associate Cookoff

W

hen thinking about a recipe for the inaugural national recipe contest in the Fresh Cravings Walmart Associate Cookoff, Touraine Jones thought a ramen noodle dish made sense as a fall staple comfort food. The contest, which was launched in September, welcomed Walmart associates to enter for a chance for their recipe to be in the Fresh Cravings Walmart Associate

Cookoff e-book, a chance to win premium kitchen gear from Fresh Cravings and a chance for virtual culinary experiences with a panel of prominent chefs including plant-based Chef Chloe Coscarelli, Texasbased restauranteur and “Top Chef” alum Chef Tiffany Derry as well as “The Bacon Bible” co-author and New York City-based restauranteur Chef Peter Sherman and registered dietician Mia Syn.

Jones, of Monroe, who manages the Walmart Supercenter in Teterboro, was one of more than 100 Walmart associates in New Jersey who entered the contest, which was sponsored by Walmart and Fresh Cravings, a part of FoodStory brands offering refrigerated salsas and plant-based dips. Jones’ recipe was one of three recipes selected. More than 2 million Walmart employ-

ees were invited to submit comfort food or holiday-inspired recipes as part of the contest. Jones said she entered the contest after seeing a social media post on a Walmart social media platform in late August and early September. “Normally we encourage our team

East Brunswick’s Lightbridge Academy raises money for local business

During the grand opening and ribbon cutting ceremony for Lightbridge Academy’s new East Brunswick location on Oct. 24, funds were raised to help The Zeppole Guys, whose food truck exploded earlier this year. By VASHTI HARRIS Staff Writer

C

omplete with food, a petting zoo and games, Lightbridge Academy’s newest East Brunswick location held its grand opening event to help raise money for The Zeppole Guys. Established in 1997, Lightbridge Academy provides early education and child care to children ages 6 weeks through Kindergarten, as well as special programming for children up to 10 years old during school holidays, breaks and summer camp, according to information provided by the academy. “Lightbridge Academy was built on a foundation of family values. It is a place where owners, parents, children, staff, as well as the community, come together as a family to create a trusted ‘Circle of Care.’ There really is no better way to show that you are a company that truly cares than to demonstrate it through your actions,” Lightbridge Academy East Brunswick Director Regina Silverii said. Co-owner Joseph Squillante said The Zeppole Guys is a family-owned business known for Italian pastries, zeppole, that are made from a 100-year-old family recipe. The business also sells sausage and pepper sandwiches, fried Oreos, calzones and Italian-style hotdogs. On Sept. 27, Squillante said in the middle of the night the food truck exploded

and the family lost all of their equipment and supplies. The cause of the explosion is inconclusive, and they are still working to determine the exact cause. Squillante said they are very grateful that no one was physically harmed from the explosion. “We had one food truck that we lost during the explosion. We are trying to raise enough money to purchase a new one, and Lightbridge Academy’s partnership and grant along with support from our GoFundMe page have been extremely helpful to jumpstart our efforts,” Squillante said during the open house on Oct. 24. Silverii said when the academy heard that a well-loved member of the community had experienced a tragic fire devastating their home and business, it seemed right for them to step up and use the heightened awareness surrounding the academy’s grand opening to do good and engage other community members to join. The company franchised in 2011 and currently has more than 100 child care centers either open, under construction or in development throughout Florida, Maryland, New Jersey, New York, North Carolina, Ohio, Pennsylvania and Virginia, according to the academy. Lightbridge Academy initially opened on Aug. 17 in East Brunswick; however, its grand opening and ribbon cutting ceremony were postponed until Oct. 24 due to the coronavirus pandemic, and held in

the academy’s parking lot at 168 Milltown Road, East Brunswick. More than 50 attendees participated in different activities that included games, decorating pumpkins at a pumpkin patch, petting farm animals at a petting zoo, getting family photos taken and taking a tour of the new facility. For every dollar spent at the event, Lightbridge will match up to $1,000 for The Zeppole Guys. The academy also donated a $2,000 grant to The Zeppole Guys to help the business stay afloat, according to the academy. Silverii said the academy raised an additional $976 for The Zeppole Guys at its grand opening event. “We are overwhelmed with joy by the support and financial assistance we received from Lightbridge Academy. We were totally shocked when we got the call that Lightbridge Academy was stepping up to help out,” Squillante said. “After reading up on Lightbridge’s co-founder, Guy Falzarano, it’s clear that Lightbridge is committed to helping the local community due to previous efforts and contributions they have made, and my family is grateful that Guy has been generous enough to help us out after this devastating explosion.” “Lightbridge and our community of friends, customers and family members have really come together to show their support towards The Zeppole Guys. realize how much they love us,” Squillante said. Due to the ongoing COVID-19 crisis, the academy had several safety protocols in place so attendees could feel safe attending. “We put a lot of thought into how to create a safe yet fun grand opening event. First, we had everything outside so we could take full advantage of the beautiful fall weather,” Silverii said. “All games and crafts were all individualized so there was no communal sharing of items and hand sanitizer was provided at all stations. Each area was a socially distanced line and we did our best to keep families together.” Silverii said all adults were required to wear a mask and masks were recommended for children over age 2. To encourage this, the academy gave out branded masks for the first 50 children in attendance. “Anyone entering the building on a private tour was screened and also had their temperature checked,” Silverii said. “We stayed in the hallways and looked into the classrooms through vision panels. Adding properties along Edgeboro Road for redevelopment will increase revenue By VASHTI HARRIS Staff Writer

EAST BRUNSWICK – In one of the municipality’s latest restoration moves, the Township Council approved a resolution declaring additional properties located on Edgeboro Road as a non-condemnation redevelopment area. “A resolution determining [and] identifying the properties in this area are in need of redevelopment on Edgeboro Road. These are properties that are Middlesex County Utility Authority (MCUA) proper-

ties that are currently not on the tax rolls, which the developer of 39 Edgeboro Road is going to be leasing from the MCUA. Through much hard work from the redevelopment agency [and] Township Attorney Michael Baker, we put together a plan with this developer. The developer just needs additional parking,” Councilman James Wendell said. Wendell said the properties on Edgeboro Road are the perfect place for truck and car parking for the redeveloper’s warehouse, next door.

“This is going to create more revenue from the town revenue that was never even coming in because these were properties that were not even on the tax rolls,” Wendell said. The Local Redevelopment and Housing Law authorizes municipalities to determine whether certain parcels of land constitute areas in need of redevelopment, according to the council agenda. On Sept. 21, the council adopted a resolution authorizing and directing the Planning Board to determine whether certain

properties on Edgeboro Road meet the criteria set forth in the redevelopment law and should be designated as a non-condemnation redevelopment area as that term is defined by the redevelopment law, according to the council. The board conducted a preliminary investigation of the study area to determine whether it should be designated as a noncondemnation redevelopment area in relation to the criteria and procedures in state law, according to the council. After completing its investigation and public hearing on this matter, the board concluded that there was sufficient credible evidence to support findings that satisfy the criteria set forth on the redevelopment law for designating the study area as a noncondemnation redevelopment area. The designation is necessary for the effective redevelopment of the area comprising the study area, according to the council. With an unanimous vote, the council approved the resolution accepting the recommendation of the board on Oct. 26 during the council meeting via video conference. Before the resolution was adopted, resident Justin Bodner asked how classifying it as a non-condemnation redevelopment area fits the course of its development moving forward. Baker said as a result of classifying the properties as non-condemnation redevelopment, it means the town can negotiate a PILOT agreement with the redeveloper, adding additional revenue to the tab. “Normally, the property has been taxexempt, done by the MCUA. So the town gets no money for it; [however], by putting it into the redevelopment area we get not 20% or 25% of the tax revenue from it, the town will get 95% tax revenue from it. For the contest, Jones found all the ingredients at the Walmart store – canned corn, canned carrots, canned green peas, canned Vienna sausage, two hard boiled eggs and a package of ramen noodles – which was all below $5. She also made the meal at the store, which is an example for a quick easy lunch to make. Jones emigrated from Kingston, Jamaica, in 2002 with her husband and toddler son at the time, who is now 20 years old. The concept in Sam Walton’s book “Made in America” from normal to extraordinary inspired her to work at Walmart, she said. Beginning as an unloader, Jones said she put her all into every role at the company, working her way up to co-manager of one of the few Walmart Supercenters in the Tri-State Area. Jones was hand-picked to attend Walmart’s prestigious Leadership Academy at its headquarters in Arkansas. The hundreds of employees she manages – ranging from 490 to 505 – look to her like a mother and mentor and when the pandemic hit, she shared that her team’s number one priority remained caring about the wellbeing of their teammates and customers.

Jones’ recipe is a unique culmination of her various inspirations. She was taught traditional cooking techniques by her mother and grandmother in Jamaica. They would boil the water over an open flame and cook noodles in many of her favorite dishes. When she moved to America, the Asian and Korean restaurants in New Jersey and New York excited her palate the most. “When I learned I won, I was excited,” she said. “I usually make different variations of ramen once a week with full vegetables and eggs.” Jones said she never had an experience like the one she had with the celebrity chefs, which occurred Oct. 22-23. “I learned a lot,” she said. “I usually like to stick to things I know when cooking, but have learned to try new things.” Jones said she recently tried a rice dish with the Fresh Cravings salsa, which her husband and son loved. The three winning recipes were unveiled in October. Jay Whitney, FoodStory Brands president, said the goal with the partnership with Walmart is to honor grocery associates who worked and are working through the pandemic as essential workers. “As a brand sold in the produce department, we believe highlighting accessibility of Walmart’s healthy and fresh ingredients is a welcome message to many, many consumers at this time as they turn to home cooking solutions,” he said.
