Falling Sky Brewing is a Brewery, Home Fermentation Shop, Brewing House & Pub, Delicatessen Pour House, & Pizzeria & Public House. Inspired by beer halls in Munich, and neighborhood pubs in London, Falling Sky Brewing offers lowkey, casual, cozy, and convivial places. The spaces and menu are simple, affordable and innovative with a heavy emphasis on the homegrown and handcrafted. Falling Sky is a true collaboration of makers. They brew, make, bake, cure, and create everything in-house with the best ingredients. Falling Sky produces over 100 new beers each year with up to 20 different beers on tap at any time. The Eugene Weekly summed it up best - “hard to tell which is better, the beer or the food.”
why Drink Falling Sky? Old world Processes Most modern American breweries have large, single process brew houses; we have the ability to do multi-step mashes (i.e. produce lots of other flavors and senses within a beer) as well as decoctions (see below) for all of our lagers. We feel that by holding true to these Old World Processes, we produce more true-tostyle beers than a brewery that is tied to a single modern process.
Old world ingredients Most modern American breweries limit the different number of ingredients they have inhouse. At Falling Sky, if we are producing a German beer, we use German ingredients, etc. We also buy ingredients for their quality, not their price point. If we can make a better beer with a more expensive ingredients, we will do it. Dedication to Diversity Most modern American breweries use 1 to 3 yeasts and produce 4 to 8 “flagship” beers, and then produce smaller quantities of “specialty” beers. At Falling Sky, we use 3-6 yeasts and almost exclusively produce “specialty” beers. This produces a special experience for customers; every time they come in, there is likely to be a new beer to try. This allows us to produce beers with many different flavor profiles, adding to the diversity of beer that we can produce.

American Hero Adventures is an Oregon-based 501(c)(3) non-profit organization run by Heroes, for Heroes, dedicated to providing our nation’s finest and their loved ones with adventures of a lifetime. We service five major groups of Heroes in this country: veterans, police, fire, EMS, and federal agents. Our goal is to incorporate family into the recreational rehabilitation of their Hero so that they may enjoy these adventures together and create lasting bonds and memories for the ages. Our President/Founder, CPT(Ret) Troy R. Givens was gravely wounded in combat while deployed in Afghanistan. During his many years of rehabilitation in hospitals and clinics throughout the country, Troy recognized that he would not have been able to accomplish his grueling tasks or rehabilitation and therapy if it weren’t for his family’s unwavering support and drive. It is because of this that CPT(Ret) Givens has the passion and determination to see to it that our Heroes get to experience adventure in their lives once more. The mission of American Hero Adventures is simple; “Providing Our Nation’s Finest and Their Loved Ones with Adventures of a Lifetime”. It is all too common for Heroes that have been injured in the line of duty to fall prey to their injuries. This is not acceptable to our organization. Life is an adventure and should be lived as such. We aim to show our Heroes and their Loved Ones different adventures that will help them bond and create memories. And just as important, they will be able to pass down these memories to the next generation and show their kids and grandkids that quitting is not an option. Life is an adventure that we want our Heroes and their families to experience despite what they may have gone through.

central oregon Bend is a city with unparalleled beauty. Barley Beef is hauling away the “beer water” to fertilize and water their pastures and “spent mash” to feed the cattle, which they sell back in the form of beef to some of the breweries in town. Apparently, breweries have always sold their spent grain to farmers, but it’s rare to have such a cyclical, local product from all ends of production — the brewers, the hauler, the hay fields, and the cows. That’s what makes the Barley Beef story so unique.
If beer isn’t your preference for a satisfying beverage, don’t panic. Bend hosts some great distillers, wineries, kombucha brewers, and coffee roasters. Celebrating the 20th Year of the Florence Events Center! To celebrate the Florence Events Center’s 20th anniversary this year, 20 white sea lion sculptures have been designed and painted by artists and placed at select locations throughout Florence, Newport, and even Reedsport. The public art project, Dancing with Sea Lions, is designed to be a metaphor for the ripple effect that the arts have on our community. “Outside the four walls of the Florence Events Center, the visual and performing arts have had an effect on our community in many positive ways,” said Jennifer Connor, Marketing Specialist at the Florence Events Center (FEC).
Many sea lion sculptures depict them in the sitting position, as they might appear on land. But in order to follow in line with the theme, Dancing with Sea Lions, the FEC wanted the sculptures to evoke a sense of movement.
The fiberglass, life-size sea lions were ordered from Chicago’s Cow Painters, a company that makes iconic animal sculptures. The project took some time, however. According to Connor, the company had never done a sea lion before, so they had to work closely with them to get exactly what they wanted, and they are very excited about the results. 27

After some time, they came up with a winning concept—a sea lion swimming, with its hind flippers high above its head. “The height of the sculpture is positioned so that a small child can come nose-to-nose with the sea lion’s face,” says Connor. “We hope to see many selfies and smiling faces on social media with our sea lions.” The sea lions are being painted with designs that run the gamut from whimsical, marine, nautical, wildlife, and seascape-themed. Contributing artists include Ruth Bass, Brian Bloss, Benjamin Cahoon, Isabella Castle, Rosy Clark, Jane Connelley, Christine Davis, Colleen GoodwinChronister, Matt Hawk, Eileen Hearne, Ron Hildenbrand, Marsha Horner, Ellen Huntingdon, Karylynn Keppol, Kassy Keppol, Julie Larson, Katie Miller, Judy Murphy, Kim Pickell, Frances Rogers, and Terry Woodall. The website, DancingWithSeaLions.com, details the public art project and depicts a map where the painted 28

sea lions may be found. Specific locations include Sea Lion Caves, Three Rivers Casino, the Florence Events Center, Florence Chamber, several in Old Town Florence, and one at the Umpqua Discovery Center. Major underwriters for the project are the Friends of the Florence Events Center, Three Rivers Casino & Hotel, Sea Lion Caves, and Florence Urban Renewal Agency. Back in 1997, Soup Nation started off as the Carte Blanche Soup Carte, a trapezoidal food cart that to this day serves up our unique soup selections in front of the PLC building on the UO Campus.

Todd Schuetz learned every type of job in the restaurant business, but he hadn’t been an owner until he opened Café 440 in Eugene. “I hadn’t realized how many nonprofit groups would just come through the door and ask for help,” Todd recalls. “It was a bit overwhelming because I didn’t really have that in my budget. So I started helping people and realized I could turn this into a causemarketing program.” “Five years later, me and my crew have helped 142 organizations and every school in town, every band program, like 12 different times,” Todd says. “It’s first-come, firstserve, and we have so much to give away. A couple of the things are very personal to me, but the majority of them are people that have come through the door.” Café 440 has taken special interest in supporting Drive for the Cure, a fund and awareness raiser for the American Cancer Society. “I was approached by a group of ladies 38 OregonResourceGuide.com
that were all survivors,” Todd shares. “They wanted to throw a golf tournament to help raise money for their own chapter. It really touched home because my father-in-law was in the process of dying of cancer. My wife was pretty distraught, and we were not in a very happy place in our life. So I got involved, sponsored a hole, brought a bunch of gift cards, and helped them out in planning.” “Five years later, we just threw our fifth one, and it has helped my wife tremendously,” Todd says. “It really helped us place the energy that we lost and displaced fear and anger into something very positive. When it was all said and done, we raised $11,800 and gave it away in Papa Don’s name. That’s something that if I wasn’t an owner and hadn’t built a platform, I wouldn’t be able to accomplish.” Causes aren’t always so personal, but Todd continues to listen to those in need. “Some of these groups I didn’t even know were
Todd learned the value of community service in the nation’s heartland, growing up in Hiawatha, Kansas. “For me, it started with Meals on Wheels with my grandma,” he recollects. “I was the five-year-old boy that would be taking hot plates out of the kitchen
up to the folks that couldn’t really get out of their home. So at a very young age, I saw people who were so thankful for just a little bit of attention and that someone made them a meal.” He didn’t realize the life-long influence it would have on him, a desire to serve that he would pass along to so many others.

Really what it’s done, is it had brought to our restaurant a lot of giving, caring, educated people that are involved in so many different things that they have common themes in their lives – they’re giving back. These people gather in my restaurant, and it brings fabulous energy. I get to introduce like-minded people doing similar things for different organizations.”
“I’m helping teach a whole other generation that you can really affect change if you are consistent and dedicated and have integrity,” Todd says. “This program has really brought my group together. They get people they don’t know coming up and telling them, ‘Thank you for a fundraiser’ that we got involved with a month ago. It makes them feel proud.”

Inspired by beer halls in Munich, and neighborhood pubs in London, Falling Sky Brewing offers lowkey, casual, cozy, and convivial places. why Drink Falling Sky? Old world Processes Most modern American breweries have large, single process brew houses; we have the ability to do multi-step mashes (i.e. produce lots of other flavors and senses within a beer) as well as decoctions (see below) for all of our lagers. We feel that by holding true to these Old World Processes, we produce more true-tostyle beers than a brewery that is tied to a single modern process.

Old world ingredients Most modern American breweries limit the different number of ingredients they have inhouse. At Falling Sky, if we are producing a German beer, we use German ingredients, etc. We also buy ingredients for their quality, not their price point. If we can make a better beer with a more expensive ingredient, we will do it. Dedication to Diversity Most modern American breweries use 1 to 3 yeasts and produce 4 to 8 “flagship” beers, and then produce smaller quantities of “specialty” beers. At Falling Sky, we use 3-6 yeasts and almost exclusively produce “specialty” beers. This produces a special experience for customers; every time they come in, there is likely to be a new beer to try. This allows us to produce beers with many different flavor profiles, adding to the diversity of beer that we can produce.

FERMENTATION When McKenzie Brewing Company opened its brewpub in 1991 as Steelhead Brewing Company, it was among the early micro-breweries in the Pacific Northwest. Managing partner, Cordy Jensen, who owns the business with Anthony Killough, was no newcomer to the restaurant business. Jensen, 73, started working at his parents’ restaurant when he was just 12 years old at the original Bev’s Drive-in, which was the first in the area opening its doors in 1939. Over the years, Jensen worked at and owned another family business, Bev’s Steak House, as well as Oregon

Electric Station, Branding Iron and Steelhead Brewing Company in Burlingame, California. Now nearly 25 years later McKenzie Brewing Company is expanding its brewpub to beer production with a new facility on West Sixth. The production brewery will be able to produce more kegs, bottles and cans for sale to grocery stores, bars and other venues. Steelhead, in addition to brewing beer, serving food and full bar, has a party room, which is separate from the restaurant for bigger groups and functions.

Vinn Distillery Founded Vinn Distillery was founded in 2009. We are family owned and our spirits are from an old family recipe dating back over seven generations.
What’s in the Name? Vinn is the shared middle name of the five siblings. The word Vinn means infinite. Our dad (Phan Ly) wanted a name that represented all of his children.
About the Family We are the Ly (pronounced “Lee”) family. We emigrated from Hong Kong to the U.S. in late 1979. Originally, we were from North Vietnam, about 80 kilometers south of China. We lived in a small village of primarily Chinese. In November of 1978, we were forced out of Vietnam because we were Chinese; we learned later that it was due to the Sino-Vietnamese war. We were allowed to take only what we could carry on our backs and on our one precious bicycle. There are five children in our family. At the time of our departure from Vietnam, we were all under the age of nine – the youngest was one year old. Our parents had the difficult task of keeping us together – each holding a child or two and carrying bags of our belongings. Vietnamese soldiers lined the dirt roads to keep us all moving forward. At one point, our family was separated and our dad had to pay a soldier, with the little Vietnamese money he had left, to reunite us. After days of traveling, we finally made our way to another small farming village in Southern China. Shortly after we first arrived, someone asked our dad why his complexion was so dark. He explained that he was always out at sea sailing a ship. To meet someone with the skills to navigate the sea was very rare in those small villages. So the village folks invited our dad to dinner, got him drunk on their home brewed Baijiu, and convinced him to sneak them out of communist China to Hong Kong. It took 6 month for the folks that wanted to escape to pool enough money to buy a fishing boat. Once the boat was ready, we were out in the wide open sea for 57 days. The 57-day journey was treacherous. But miraculously, we made it to Hong Kong safely. We lived in the refugee camp for six months before we were sponsored by a small church that we know fondly as Frog Pond Church in Wilsonville, Ore. We were distillers in Vietnam, China, and continued the tradition after we arrived in the U.S. Baijiu is very important to our family because we 58
Vinn Distillery | 222 SE 8th Avenue | Portland, Oregon use Baijiu for religious ceremonies, celebration, medicine, and as a cooking ingredient. Without it, we wouldn’t be able to welcome in the New Year or honor our ancestors.
Why Rice Our dad has tried distilling everything that could be distilled. He said rice was the only ingredient that didn’t give him a headache or hangover the next day. So, that is the reason we use rice in all of our products.
How We Make Our Spirits All of our spirits are completely handcrafted from grain to bottle. Every step is hand-touched and crafted in very small batches with three simple ingredients – water, rice, and “qu” (qu is a starter culture that combines two steps into one: converts starch to sugar and sugar into alcohol at the same time). The process: start with raw rice -> cook it -> add qu” -> let it ferment -> distill it -> filter it -> then bottle, label, and box it. 59

Vinn (Rice Baijiu) Vinn Baijiu has been in our family for over seven generations. For as long as we can remember, all the children participated in making baijiu whenever our parents were making it. We didn’t know we were making alcohol – surprisingly, none of us were ever curious enough to “test” the liquid that was flowing from the still. Our dad passed the recipe on to our oldest sister, Lien. Mom and Lien are the master distillers and continue to make the generations-old recipe.

Following a long and exciting career in the global construction industry, we left our home in San Diego, California to begin our encore careers in beautiful Cheshire, Oregon. What we lacked in vineyard and winemaking experience we have more than made up for with enthusiasm, research, advice from our wine expert neighbors, and a lot of hard work. We were drawn to the beauty and fragility of the Pinot Noir grape, and our 85-acre farm in the South Willamette Valley has proven ideal for growing Pinot. Our beautiful estate features a pond and Bear Creek, which runs diagonally through the property. We have partnered with local conservation groups to work on creek restoration. After years of carefully nurturing each vine, enduring long days of planting, staking, weeding, pruning, tending vines, and tackling predators, we are quite literally enjoying the fruits of our labor. We decided to stick with Pinot Noir exclusively to start, wanting to focus on making exceptional red wines styled after Franceâ&#x20AC;&#x2122;s great Burgundy wines. Local research led us to plant three useful Pinot Noir varieties (clones) â&#x20AC;&#x201C; Pommard, 115 and 777. These clones can be used individually or blended to create a classic Pinot Noir. We have now added Pinot Gris to the vineyard. Our focus is on creating artisanal Pinot Noirs. All of our Pinot Noirs are made exclusively with Estate-grown grapes. Our wines are custom crushed, made in limited quantities, and presented only at our tasting room. 94 OregonResourceGuide.com

From grapes to bottle, our wines are lovingly crafted. Fruit is hand-picked so berries are not bruised, often crushed the same day, aged in carefully selected French oak barrels, and bottled at just the right moment. The Bennett family is pleased to have added to the South Willamette wine community with our distinctively styled White Pinot Noir. Our Tasting Room is a casual country setting nestled in a lovely corner of the valley, perfect for afternoon picnics or for hosting local community or private events. Plenty of Summer RV parking available. Our 2012 Pinot Noirs are still available and they are definitely better with age! We are down to the last cases of our popular Bear Creek, and getting low on the full-bodied Pommard. The complex Lucky 7’s has come into its own. We have released our 2013 Pinot Noirs as well, most recently the Reserve. Our 2014 Pommard Select Pinot Noir was released at the end of June. We look forward to sharing our wine with you. 95

Capitello Wines, located in downtown Eugene, offers a tasting experience of handcrafted and artisan wines from two hemispheres. Owner-Winemaker Ray Walsh is focused first and foremost on producing award winning wines by sourcing fruit from some of the southern Willamette Valley’s most unique vineyards. He draws on his extensive winemaking background (he was Winemaker for ten years at one of Oregon’s most wellknown wineries, King Estate) to express the valley’s terroir into the finished wines, resulting in exceptional Brut Sparkling, Pinot Gris, Sauvignon Blanc, Pinot Noir and Dessert wines. Every spring, Walsh heads home to his family-owned vineyard in New Zealand to produce wines in the Marlborough Valley. These wines offer the sense of place to the region, with intensity and complexity like no other. The Capitello’s downtown Tasting Room features Walsh’s Oregon and New Zealand wines, giving the the opportunity to compare the same wine varietals the same winemaker, but see the difference that hemisphere expresses.

Eugene Wine Cellars Eugene Wine Cellars was founded by Bruce Biehl in 1999 as Eugene’s first “Urban Winery”, located in the Whitaker neighborhood near downtown Eugene. The first vintages were bottled and labeled in the fall of 2001 using grapes from Bruce’s vineyard management company, AREA Inc. Bruce has been developing and managing vineyards with AREA for over 30 years and in that time has developed over 200 vineyards in Oregon. Once the grapes are grown and harvested, we turn to our winemakers, Greg Sothras and Bill Kremer, to process the grapes into the delicious wine that has become associated with Eugene Wine Cellars. With over 45 years of

combined experience, they help set the standard for Willamette Valley winemaking. Our b2 Pinot Noir and Pinot Gris are the pillars of our winery and the first varietals we offered in 2001. We also produce a Viognier and Chardonnay under our b2 label, with releases of our 2014 Syrah and 2015 Rosé coming soon. We offer a delicious Riesling under our Moonwink label, a Sangiovese under our Fractal label, as well as a red and white blend under our Recess label. J. Scott Cellars J. Scott Cellars is an urban warehouse winery located in Eugene’s Westside Warehouse District at 520 Commercial St., Suite G. Winemaker and owner, Jonathan Oberlander, is wellknown for making extraordinary tasting and out-of-the-ordinary wines. Although you will find some delicious Pinot Noir and Pinot Gris at the winery, Jonathan also makes Petite Sirah, Grenache, Cabernet Sauvignon, Roussanne, Tempranillo, and (currently) 15 other wines.
