Creamy Cucumber Salad
Yields: serves 6 people Description: Summer isn’t summer without this salad. This is guaranteed to be at every one of my family gatherings this summer. Its a perfect cold light salad on a hot summer day.
Ingredients: 2 cucumbers sliced thin 2 heaping Tbsp vegenaise 2 Tbsp lemon juice 2 tsp Dill 1/2 tsp onion powder salt to taste
Directions: Mix all ingredients together and chill or eat immediately.
Blueberry Lemonade
Yields: 4 cups Description: This drink puts a new and healthy twist on your most common summer drink. Switch it up once in awhile by adding strawberries instead of the blueberries.
Ingredients: 1 1/4 c blueberries or strawberries 3 c water 1 c ice cubes 1/2 c lemon juice 1/4 c agave nectar
Directions: Blend all ingredients until smooth and serve chilled.
Carrot Dogs
Ingredients: Carrots Grape-seed oil Salt Hot Dog Bun Ketchup Mustard Onions Pickle Relish
Yields: Description: It’s easy to buy or make a veggie burger but have you ever tried to make a veggie dog? Normally you have to buy them and they are far from a whole food. Now you have a healthy, home-made, and much cheaper version. Directions: Preheat oven 500 F. Wash carrots and cut off end. Leave smaller carrots whole and cut half way lengthwise larger carrots to roast all the way through. Roll carrot dogs in a little grapeseed oil and salt. Roast in oven for 15-20 min turning often to roast evenly. To tell if it is done poke a knife through the carrot. If it goes through carrot easily and it is roasted nicely on the outside, then it’s done!!
