Dear friends, What a year it has been!
We had a challenging January with the Snowmageddon and we went into lockdown in March due to COVID-19. Despite the difficult circumstances Chabad was here for the community, helping with PPE, providing support and comfort, spreading messages of positivity and hope while continuing with the staple events everyone is used to. This would not have come about without the support of the entire community and we are ever so appreciative for your help in making this happen. We look forward to welcoming you at our next event! ROSH HASHANA On Rosh Hashanah we say the special Avinu Malkeinu prayer. In it, we are establishing that our unique relationship with G-d is two-fold. He loves us as a father and therefore forgives our transgressions. Yet he is also our King who sets rules and boundaries to enable us to harness our energies for the good. MEZUZAH Every Jewish home can be described as a mini Temple. Because of the holiness that is within, a mezuzah is placed on the doorpost leading to the outside, offering protection to all of the home’s inhabitants. This unique protection lasts even while the inhabitants are away.

Esther was showing us that no matter how dark and grim a situation may seem, we should never lose our faith that G-d will protect us. SPLITTING OF THE SEA Just days after the Jews left Egypt, they found themselves caught between the strong Egyptian army behind them and the vast Sea of Reeds in front of them. Not knowing how to proceed, the Jews watched as Nachshon ben Aminadav heroically walked forward into the raging water, causing it to split. In a situation that we are unsure how to make it work, with no seemingly good options, we need to take hold of our faith and forge ahead, trusting that Hashem will be there for us.

THE KOTEL, WESTERN WALL In the months of Tammuz and Av we observe “The Three Weeks,” the mourning period when we remember how Jerusalem was captured and the Temple was subsequently destroyed. The midrash teaches, that when Moshiach will come, these days will no longer be days of mourning, but rather days of joy, when we there will be a third Temple that will last forever. This teaches us that sometimes we need to break down walls, in our own life, to be able to rebuild something stronger and more long lasting.

THE SHOFAR The blowing of the shofar on rosh hashana is the sound of hope. When we hear it, our soul becomes full of hope for the final shofar blow that will come with the coming of Moshiach. In adition, the shofar blast reminds us to repent and re-kindle our connection to G-d so that we are ready to greet the Moshiach.

Greek - Olive Bread with Sun-Dried Tomatoes
TRY THIS RECIPE AS ROLLS OR A LOAF FOR YOUR “GREEK STYLE” SHABBAT TABLE 2.2 lb. whole wheat flour ½ teaspoon ground garlic 1 oz active dry yeast 1 Tablespoon oregano 5.5 oz finely chopped Kalamata olives 6 finely chopped sun-dried tomatoes 1 ½ cup lukewarm water 3 tablespoons olive oil 1 teaspoon sugar Salt Mix the flour with the garlic, oregano, sugar and salt. Dissolve the yeast in 3-4 tablespoons of lukewarm water. Leave the mixture to rest until it activates. Then put the flour in a large mixing bowl, add the yeast mixture, the water and the olive oil, and knead thoroughly by hand. When all the ingredients in the dough are mixed properly, add the olives and the sun-dried tomatoes. Knead thoroughly again and form two loaves from the dough. Place them on a baking tray covered with baking paper. Cover the dough and let it rise. When the dough has doubled its volume, score across the top with a sharp knife, brush the top with a little water, sprinkle a little sesame (your choice) and bake in a 350° F oven for approximately 15-20 minutes. If making loaves, baking times will vary.
Moroccan - Kefta in Fresh Tomato Sauce Kefta is Lamb meatballs GREAT FOR SUKKOT DINNER UNDER THE STARS ½ bunch coriander, chopped ½ bunch flat-leaf parsley, chopped, plus extra, to serve 1.5 Lbs minced lamb 2 tsp ground cumin 2 tsp sweet paprika 80 ml(⅓ cup) olive oil 1 onion, finely chopped 2 1/4 lb. tomatoes, peeled, seeded, chopped (see Note) 2 garlic cloves, chopped
Combine coriander, parsley, minced lamb and 1 tsp each cumin and paprika in a bowl. Season with salt and pepper. Roll into 24 x 4 cm meatballs and place on a tray lined with baking paper. Cover with plastic wrap and refrigerate for 1 hour. Preheat oven to 375°F. Heat olive oil in a large ovenproof frying pan over medium heat. Working in batches, cook meatballs, turning, for 8 minutes or until browned all over. Remove from pan and set aside. Reduce heat to medium-low and add onion to pan. Cook, stirring occasionally, for 8 minutes or until very soft and golden. Add tomatoes, remaining cumin, paprika and garlic. Season and cook, stirring occasionally, for 10 minutes until thickened. Return meatballs to the sauce. Transfer to the oven and bake for 15 minutes. Scatter with extra chopped parsley, to serve.
Israeli Shakshuka
THE PERFECT BREAKFAST OR MOTZAI SHABBOS DELICACY 1 onion 1 yellow bell pepper 1 tomato 1 red chili pepper 2 cloves garlic 4-5 sprigs fresh parsley 3 tbsp. oil 1 cup chopped (canned) tomatoes 1 tsp. sweet paprika ½ tsp. cumin ½ tsp. turmeric ½ tsp. salt 4 eggs Dice all the vegetables. Sauté the onion in the oil until translucent. Add the yellow pepper, chili pepper, garlic, tomato and chopped tomatoes. Add the paprika, cumin, turmeric, and salt, and simmer until vegetables are cooked through. Drop the eggs into the tomato mixture and cook until eggs are just set. Garnish with fresh parsley. Serve with pita or flatbread.
Italian - Carciofi Fritti
(Fried Artichokes) PUT A SPIN ON YOUR CHANUKAH FRIED FOOD MENU 12 medium artichokes 2 lemons, juice and rinds 3/4 cup matzo meal 1/2 teaspoon salt
A pinch of freshly ground black pepper 1/2 cup cold water 1 egg 2 egg yolks 2 tablespoons olive oil olive oil or safflower oil for frying 1 lemon, cut into wedges Clean artichokes (for instructions, visit tinyurl.com/ycar5c27). Cut in half lengthwise and remove the chokes. Cut each in half lengthwise again. Drop each into a bowl filled with cold water and squeezed lemons. Combine matzo meal, salt, and pepper with cold water. Add egg, yolks, and 2 tablespoons olive oil, and beat until smooth. Drain the artichoke pieces and leave to dry for a few minutes. Heat 1 cup oil in a small frying pan. Dip the artichokes in small batches into the batter. Fry a few pieces at a time in the hot oil (for a few minutes) until golden keeping the recently fried ones on a paper towel on a baking sheet or plate. Serve very hot, straight from the oil, with wedges of lemon.

SHAVUOS TREAT - FARMER CHEESE PANCAKES 2 eggs 3 tablespoons sugar 2½ teaspoons vanilla sugar (or 1 teaspoon vanilla extract) ½ teaspoon sea salt 2 cups farmers cheese 4 tablespoons flour ¼ teaspoon baking powder Oil, for frying Sour cream, honey, for serving Combine eggs, sugar, vanilla sugar and salt in a bowl, and beat using a mixer or whisk. Add farmers cheese, flour, baking powder and mix until well combined and it comes together as a dough. On a floured surface, divide the dough into 15 uniform balls and flatten each into a disk, about
½-inch thick. Heat oil in a large nonstick pan over medium-low heat. Once the oil is hot, Fry pancakes until golden (3 to 4 minutes on each side). Serve immediately with sour cream, honey or other sweet toppings.
Holiday Recipes & Tips ROSH HASHANA
Classic Honey Cake
3 Eggs 1 1/3 cups honey 1 1/2 cups sugar 1 cup strong black coffee 2 t. Baking powder 3 T. Margarine, softened 1 t. Baking soda 4 cups flour 1 t cinnamon Preheat oven to 325. Grease and flour (TIP: I like to use the "baking spray with flour") a 9 by 13-inch cake pan. In a large mixer bowl, beat eggs and honey together. Add sugar and mix again. Mix coffee with baking powder, and then add with margarine to the egg mixture. Add baking soda, flour, and cinnamon and beat together well. Pour into greased cake pan. Bake for an hour. SUKKOT- SIMCHAT TORAH
Un-stuffed Cabbage
2 cans of tomato sauce 1 large can tomato juice 1 cup water 1 large onions 2 tablespoons lemon juice 2 lb. ground meat 1½ t. salt ž tsp. pepper 1 potato, grated 2 eggs or 3 egg whites 2 bags of shredded cabbage Pour the tomato sauce and juice into a large pot, Add lemon juice and water. Bring to a boil. Then add the cabbage and let it continue cooking.
In the meantime prepare the meatballs: In a large bowl, mix together the meat, spices, potato, eggs, and onion, diced small. Roll a Tablespoon of the mixture at a time into meatballs, add it to the sauce in the pot. Simmer for 45 minute - 1 hour (Mixing occasionally). CHANUKAH
Sweet Potato Latkes
2 medium potatoes, shredded 1 small sweet potato, shredded 1 small onion, grated 2 eggs, beaten 1 1/4 tsp. salt 4 tablespoons flour 3 tablespoons olive oil TIP: For more moist Latkes add 1 small zucchini, shredded and drained Mix all the ingredients (except the oil) in a large bowl. Heat 3 tablespoons olive oil in a frying pan at medium-high heat. Place spoonfuls of mixture into pan and flatten each with spatula. Fry latkes until golden brown on both sides. PURIM
Savory Hamantashen
1 sheet of puff pastry 2 tomatoes diced 1/2 onion diced 1/2 cup of crumbled fetta cheese 1/4 cup of fresh basil diced Cut out triangle shape pieces of puff pastry dough using a knife or cookie cutter. Saute the onions until tender. Add the tomatoes and cook for several minutes. Place 1 teaspoon in the center of each triangle. Top with some feta cheese and basil. Bake in oven on 375 for 15 to 20 minutes until golden and crispy. TIP: Replace the tomatoes and onions with olives and capers for another option.

Matza Balls
2 eggs slightly beaten 2 tablespoons oil or Shmaltz (chicken fat) 2 tablespoons soup stock or water 1/2 cup matzah meal 1 teaspoon salt Beat eggs slightly with fork. Add other ingredients, except matzah meal, and mix. Add matzah meal gradually until thick. Stir. Refrigerate for 20 minutes in covered bowl. Wet hands and form into balls. Boil 1 Quart of water with 1 T salt. Drop the balls into bubbling water. Cook for 30 minutes. (8 balls per each 1/2 cup of matzah meal). Note: Many communities have the custom of not eating wetted matzah on the first seven days of Passover. In these communities, matzah balls and other recipes that use matzah are used only on the eighth day of Passover. SHAVUOS
Creamy Cheesecake
1 8 inch graham cracker crust 8 oz. cream cheese 8 oz. Cottage cheese 2 eggs 3/4 cups sugar 1 tsp, vanilla extract Pre heat oven to 350. Place the cream cheese, cottage cheese, eggs, sugar, and vanilla in a bowl. Using an electric mixer, blend at low speed. Eventually, as the ingredients blend, increase speed to high. Blend until smooth. Pour filling into graham cracker pan. TIP: For Marble cheese cake drizzle with chocolate syrup and gently swirl batter with a knife. Place the pan in the preheated oven and bake for 30 minutes. TIP: When the cheesecake is ready, turn off the oven and leave the cheesecake inside for an additional half hour - this will avoid cracking the top.
