Sit courtside as a real joust goes down, watch as fairies appear to frolic with the kids, shake hands with The Black Knight, have a sword forged with your family crest on the spot and do your best to duck the scrutiny of roving jesters and fools. PLAYER
ROSTER
Coach Ron Rivera leads a talented and largely healthy Carolina team into the 2013 season. Fans and critics alike are looking for more agressive play calling and explosive plays to win big games. The recent heartbreaker versus the Buffalo Bills has fans talking about what the Panthers organization will do.
ANS IN CAROLINAS have heard the calls before: Beelieve (Hornets), Belong (Panthers), Keep Pounding—this one sticks with us—a reminder of the man, player and leader that Sam Mills was and will always remain in our collective memory. If you don’t get on board with this team, sorry folks, you are not true football fans. This team has history, heart and soul. And they play hard. A last-minute (shocking) loss against the top-ranked Seattle Seahawks is indicative of the competitiveness of your 2013 Carolina Panthers—not their inability to win. They came ready to win and played the game hard. Yet the NFL is, in the end, a business, so let’s look at the business that went on at the regular season opener vs the break-out Russell Wilson and Co.: Speaking business, let’s fly in the face of tradition and start our discussion of team play with our “D”. They mean business. Sixty minutes of pounding, non-stop. Luke, Thomas, Charles, Greg and the list goes on. The D played hard in the pre-season and against Seattle in game one. Ultimately they gave up 70 yards rushing and 320 yards. A 43 yard deep ball
F
touchdown with Wilson connecting to Kearse late in the game could have been overcome. It was a D. Williams offensive turnover in the Red Zone that shut down hopes of a win. It’s
been referred to almost exclusively as a “heartbreaker” each day since. That’s what it was. Yet... What’s most telling is the attitude of the entire Panthers organization since: “We Will Not Be Beaten
Down. This Was Not The End Of Our Season.” On Offense for Carolina Cam Newton had 1 TD, no interceptions, no fumbles and ran for 38, behind DeAngelo Williams 86 rushing yards. We’re all looking forward to re-establishing the Stewart/Williams doublethreat in game when Stewart returns from the PUP list due to ankle injury. And need we say, Steve Smith is firedup—maybe more so than usual. And that’s probably our best gauge for team temperament. Let’s face it, we need some dynamic play calling for these dynamic players—that’s it. The good news is that Tampa and Atlanta opened their season with a loss as well. In other bad news, the Saints looked dominant in a Sean Peyton win over Atlanta. So the road ahead seems difficult for this talented team of passionate players yet to sit atop that highest tier of NFL teams. If you look close you can just see the possibility of it all clicking into place. When a young team gains it’s footing and plays each down, each week, with confidence and passion that is when we watch a great team emerge and overcome.

games, but last year’s defense completely collapsed and finished ranked 31 overall in the league. They could not stop the run, they could not pressure the quarterback and they could not cover down field, so what’s different this season? Well if you think less is more then you might be optimistic, but Osi Umenyiora is gone, Stevie Brown tore his ACL in the preseason. However, they did sign former Panthers middle linebacker Dan Conner and defensive tackles Cullen Jenkins and Mike Patterson.to clog up the middle. The Giants are hoping Justin Tuck and Jason Pierre-Paul will return to 2011 form and will play better.
GAME OVERVIEW
Head Coach: Tom Coughlin Career Record: 163-128, 17 years and Won 2 Super Bowls Game Location: Bank of America Stadium Game Time: 1:00 PM TV: FOX Game Preview: Not many Carolina Panthers fans would of thought last year after the Giants came to Bank of America Stadium and completely destroyed the Panthers 36-7 on a prime time Thursday night game, that these same Giants would not even make the playoffs. Eli Manning returns as the Giants quarterback along with running back David Wilson, wide receivers Hakeem Nicks( UNC and Independence High school star), Victor Cruz and rookie Rebuen Randle, and the Giants feel they have a very talented offensive cast. However, Nicks is very injury prone, Cruz injured his heal in the preseason and back up running back, former NC State star Andre Brown broke his leg again in the preseason so the offense has some hurdles early on. The entire offensive line returns but they are getting old and injury prone and
Manning is just hoping they can get through the season without any major injuries. The offensive line is going to be key to the Giants success this season, if teams can put pressure on Manning he is not the
What to Watch For: For the first time this season, the Panthers will be facing a quarterback who had rather stay in the pocket and throw the ball all over the field than ever take a step out of the pocket and run. However, Eli can scrambled if needed. This is important: the Panthers need to get consistent pressure on Manning throughout the game, if they can he is very susceptible to making bad throws and opportunities for interceptions. The defense also needs to stop the Giants from rushing the ball early in 1st and 2nd down and put them in to 3rd and long situations where Hardy and Johnson can come off the edge and get to Manning and make him uncomfortable. The one thing the Panthers do not want to do is let Nicks and Cruz make plays deep down the field, because the Giants really struggle in the red zone when the field shrinks. The Panthers really need this game going into the bye week where they will play the next 3 out of 4 games on the road. The Giants are banged up to start the season and the Panthers should be looking for some revenge after last season’s blow out. Prediction: Panthers 23 - Giants 20
most elusive quarterback in the league and his known for forcing throws into traffic when the pocket is collapsing. On defense, the Giants always held their hat on the defense would step up and win
NOTE: Week 4 is a BYE week for the Carolina Panthers.

THE CHARLOTTE 49ERS SUFFERED their first loss of the season, 40-13, to North Carolina Central, Saturday, September 14th at Jerry Richardson Stadium. The loss snaps the 49ers seasonopening two-game win streak and came in the final game of a threegame homestand in front of a standing room only crowd of 16,630. In a turnabout from the first two games, it was NCCU that scored in each of the quarters, NCCU that scored on offense, defense and special teams and NCCU that won the turnover battle. Charlotte (2-1) accumulated over 500 yards of offense, but committed a season-high seven turnovers, while the Eagles (2-1) started the second half with a 100-yard kickoff return and added a 48-yard interception return seven minutes later to break open a 13-0 halftime lead. NCCU converted two field goals in the first quarter and added the games' first touchdown following an interception, late in the second quarter to take a 13-0 lead into the half. Charlotte had chances to score in the first half, but had a 37-yard field goal blocked and twice turned the ball over in Eagles' territory -- including once on second and goal.
"We just made too many mistakes," said 49ers head coach Brad Lambert. "We had too many turnovers and the kicking game wasn't as good as it needed to be. Those plays are hard to overcome. There's going to be some things in there when we watch the film that makes them see it's really a low margin of error to flip a script in a game like that because our guys were flying around and playing real hard." The 49ers, who had outscored opponents 41-0 in the first quarter of their first two games, had a 37-yard field goal attempt blocked in the first frame and despite getting the ball back on a fumble on the very next play, turned it back over with a fumble inside Eagles territory, leading to NCCU's first TD. Matt Johnson threw two interceptions in the second quarter. The first, by Tim Thaniel with 10:55 to play in the half, came on second and goal on a pass into the Eagles endzone as the 49ers seemed poised to put points on the board and possibly take the lead. The second led to to Deyonta Wright's four-yard touchdown run with 2:24 left in the half that put the Eagles ahead, 13-0. “The defense was outstanding," said NCCU interim head coach Dwayne Foster. "That effort was unbelievable today—getting turnovers and putting us in really good field position as well. They played strong and hard, and we hope that continues for the rest of the season.” In the third quarter NCCU took control. Adrian Wilkins 100-yard kickoff return to open the second half pushed the lead to 20-0. Johnson's third interception of the game was returned 48 yards for a touchdown by Tony Williams to give the Eagles a 26-0 lead after the extra point was blocked with 7:22 left in the quarter. The Eagles extended the lead to 33-0 late in the third quarter before Charlotte scored a pair of fourth quarter touchdowns on runs from Alan Barnwell and Lee McNeill to close the final margin. Johnson finished the day with a season-high 335 yards passing on 35of-52 completions, but threw five interceptions. Kalif Phillips rushed for 89 yards and the 49ers gained 191 yards on the ground. Slot receiver Austin Duke added 97 receiving yards on seven catches. "He got to rushing a little bit today," Lambert said of his red-shirt freshman QB. "But another thing is that Central is pretty good. With the level of competition, you've got to give him credit for good plays. He made some bad decisions, no question, but he's a young guy playing in his third game. I just think the game sped up for him a little bit." Charlotte's defense did well to limit the Eagles to two field goals in the first quarter despite NCCU's advantage in field position. One Eagles scoring drive started on their own 42 while the other started on the 49ers' 22 following a Charlotte fumble. The second quarter touchdown drive, likewise, started on the 49ers' 19 yard line. Central finished with 385 yards of total offense and the 49ers forced three fumbles.

Cocktail Trends As mixing cocktails evolves into an art form, bartenders more than ever have to keep up with the latest trends. Our council of mixologists helped us identify several emerging trends.
Hand-Crafted Cocktails and Boutique Liquors Nikki Poliakoff at Prohibition notes, “A trend that has taken a forefront as of late are the craft cocktails made with fresh local produce and boutique liquors.” Stefan Huebner at Heist agrees that local and hand crafted spirits are the wave of the future. “Small independent distillers are following the craft beer guys’ ethos,” he says. “We’ll also see more fresh garnishes and hand squeezed juices. We are moving away from sugary juice-base cocktails into more spirit-forward (aka Booozy) cocktails.” Lucas Johns at Tilt on Trade predicts that cocktail mixology will become even more creative. “I see a day when each bar will have its own list of unique house drinks,” he says. Flavored Whiskies and Moonshines Flavored vodkas have dominated the cocktail scene for the last several years. Now whiskey distillers are getting in on the act with a variety of flavored products. Fireball Cinnamon, Yukon Jack Apple, Bird Dog Peach, and Dock 57 Blackberry are among the favorites of our bartender informants. Flavored moonshines, mostly from Carolina-based distillers, are popular in cocktails as well. Firefly, for instance, makes moonshine in peach, apple pie, cherry, caramel, and strawberry flavors, as well as
the traditional White Lightning. This distillery, located just outside Charleston, South Carolina, also makes Firefly Vodka, and several popular flavored vodkas, including Sweet Tea and Peach. Natural Ingredients any bartenders are turning to more natural ingredients to create healthier versions of favorite cocktails. Stefan Huebner, for instance, makes his own fresh sour mix , squeezes all lemon and lime juices in house, and makes Bloody Mary mix from scratch. “I also make my own bitters,” he says. Lucas Johns, over at Tilt, mixes many of his cocktails with Jones Pure Cane sodas, moving away from the high-fructose corn syrup found in most sodas. Johns also reaches out to the chefs at the Wooden Vine nearby to make simple syrups infused with natural mint and other flavors.
M
Beer Cocktails One of the main trends we noted in cocktails at bars around the city was the number of drinks combining beer with other liquors. At Tilt on Trade, Lucas Johns has created an entire drink menu of beer-based drinks, often featuring brews from local craft breweries. “We call them Hoptails,” he says. “And they are very popular.” At Heist, Stefan Huebner says, “I run a cocktail bar in a brewery, so I’m a big fan [of beer-based cocktails]. You can’t always hit every flavor profile in every beer. So a 1/4 ounce of liquor here, a 1/2 ounce there, and you’ve got an amazing cocktail.” There’s nothing hotter to shoot, mix or stir than Fireball Cinnamon Whisky. It’s a favorite for mixologists and a modern day Jager alternative.

He’s a ten-year veteran behind the bar, working his magic at many Charlotte venues including Bar Charlotte, Alive After 5, Whisky River, and Suite. Todd currently practices his extreme bartending skills at Label in the NC Music Factory. Todd says: “I love my job as a bartender! It is one of my passions in life. I love getting paid to have fun, the night goes by fast, and you get to meet a bunch of interesting people.” Favorite cocktail right now: Firefly Vodka, on rocks with a splash of water and a wedge of lemon, or mixed with lemonade. Nikki Poliakoff PROHIBITION (Uptown)
Nikki Poliakoff, the expert behind the bar at Prohibition, began her bartending career at Dixie’s Tavern and Buckhead Atlanta. She enjoys her job because of its fast paced environment and the interaction with her patrons. Nikki says: “The energy behind a bar always keeps you on your toes. You’re never bored. As a bartender you wear many hats aside from the person serving drinks. You can be, and a lot of times are, the customer’s best friend, therapist, match maker, or someone who simply turns a bad day into a good one.” Favorite Cocktail Right Now: “I’m a simple girl. I love my vodka as most females do. If I’m out ordering a drink it will typically be a Tito’s Handmade Vodka and water with a splash of cranberry and a lemon wedge. Light, simple, refreshing, and low cal. If I’m switching it up a bit I’ll stick with vodka but go with a classic, the Moscow Mule (vodka, muddled limes, and ginger beer served over ice.)”

A N E W F E AT U R E I N P R O W L E R M AG A Z I N E FOR CIGAR CONNOISSEURS
GROGAN GOES ON LOCATION AT SOUTHPARK MALL VISITING
THE TINDER BOX
I’ve been enjoying cigars for over 10 years. They’ve always been a
source of quality time with friends and business associates. I joke that many a worlds’ crisis have been solved while conversing over a premium cigar and drink at a comfy lounge.
So it’s always a treasure to find a place of solace to go, enjoy a cigar, and either be left alone with my thoughts or engage in conversation with fellow connoisseurs. One such place is the Tinder Box. I spoke with Area Manager Darrell Boyette at their flagship store in the “underbelly” of Mall. The store is below the shopping area in the underground parking deck. This is helpful for male cigar smokers that just want to unleash their wives or girlfriends to shop at their hearts content while they relax with a cigar in the lounge. The store has been there since 1987. Other locations include Arboretum Mall and Overstreet Mall. There is no membership to join. The lounge area is open to any adult that pur-
chases a cigar the same day from Tinder Box’s well stocked humidor. Tinderbox carries lines such as Davidoff (an extremely difficult account to acquire), My Father, LFD, Drew Estates, Oliva, Padron, Avo, and a few exclusive blends that you simply cannot get anywhere else. But cigars aren’t the only thing you can find at Tinder Box. Amongst the humidors, cutters, lighters, ashtrays, and sporting items, they also have an impressive collection of quality pipes and tobacco. The store’s resident pipe expert is Byron Transou. Byron made his mark in the industry having designed a custom pipe for the Italian company Ascorti. “It’s quite interesting,” says Byron, “as you have a French name engraved on a pipe
made in Italy.” In addition to Ascorti, you can find pipe manufacturers such as Caminetto, Nording, 4th Generation Eric Stokkebye, and Carolina Briar. Tinder Box is by no means an island unto itself. They help support numerous other cigar establishments. Every month, Tinder Box hosts an event at Cutters Cigar Bar in uptown Marriott. Darrell says, “In order for them to be considered a ‘cigar bar,’ at least 25% of their revenue must be from tobacco related sales.” Also, Charlotte based Puros Club is a separate entity that Tinder Box sponsors and provides a place for events and advanced tastings. Once a month, the store opens an hour early to club members for meetings and socials with cigar reps. Members also get such perks as free cigars, cookouts, dinner parties, and private socials with industry leaders. They also have “Cigars For Troops,” a bi-annual event where they collect and ship cigars to our men and women serving in the military. The Tinder Box matches whatever Club Puros collects, dollar for dollar. Last but certainly not least, Tinder Box president Craig Cass is heavily involved in cigar rights advocacy with IPCPR (International Premium Cigar & Pipe
Retailers Association). Craig is the First Vice President on the Executive Committee and Chairman of the Federal Legislative Affairs committee. Craig is almost constantly on a conference call or traveling to Raleigh NC or Washington DC speaking with government representatives fighting against the FDA and standing up for the rights of cigar consumers. “If the FDA had their way,”
