THE MAN BEHIND THE MEALS Meet Jason Triail, Cofounder and Chief Culinary Officer at Chef’d. Jason has left his mark as an executive chef, manager, and most importantly, a leader in the kitchens restaurants and food companies around the country. Whether you find him creating a one-of-a-kind menu at a mom and pop eatery or calling the shots at the headquarters of a major chain restaurant, Jason always puts the same passion into everything he creates. This passion led him to the Chef'd kitchen, where he creates, cooks, and puts his stamp of approval on every meal that leaves our building. We sat down with the man behind the meals to get a clear view of what it takes to transform a delicious idea into the kit you receive at your door.

Q. You’ve been at Chef’d since day one. What products we are not stocking yet at Chef’d and get their feedback on what they see is trending. That all then gets drew you to this company? After my first interview with Kyle (CEO of Chef’d), I was blown away by the concept. The experience to receive portioned ingredients with recipes to my front door felt like Christmas morning. It’s all about figuring out how to elevate the experience and innovate what others have done to separate us from the rest which in the end—it’s all about the food!

Q. What’s a day in the life of the Chief Culinary Officer?

Every day is a culinary journey—our partners bring us recipes from around the world that we research, test, and taste, to create an easy-to-make meal kit for our customers. Our amazing and talented culinary team tests and tests to get it just right, then it’s presented to me to review taste profiles, recipe execution, product development, and costs. It’s a fun job to say the least!

Q. How do you find inspiration for new meal kits?

Q. What’s the process like of taking an idea and transforming it into a purchasable meal kit on chefd.com?

For some recipes, it’s a straight path and comes together quickly. For others, the path gets askew if I feel we are not hitting the WOW factor. Our Vietnamese Bún Chá recipe (a street food recipe taken from the streets of Hanoi) is a great example. I was so frustrated with this recipe when we started to play with it. The recipe originally called for black caramel, which I felt would be an extreme challenge for a home cook to make. So after a few test runs, we finally tested swapping out the black caramel for honey as a simple solution and it worked out great! This recipe took me 8 times to play with it to get the flavors down to create a WOW factor. Once I figured that out, I fell in love with the dish and it is still one of my top picks of our recipes in our catalog!

Everyday, I continue to search for new, inspiring ingredients to create exciting recipes—whether that’s at work or with my family. My wife and I are extreme foodies so going on family culinary adventures with our daughter has become a normal day in our life. We love to go to just walk the aisles with no thought of what to make and let the ingredients speak to us. I also work closely with my suppliers for

Light and fresh, Basil is one of the most commonly used herbs throughout all types of cuisines. Their light green, silky leaves are filled with a sweet, clovelike aroma that can emanate and infuse itself into whatever is cooking with it. Basil is not just delicious, it’s filled with high nutritional value—vitamin A, B6, and K. This leafy herb pairs nicely with a wide variety of seasonal veggies and is commonly used to garnish salads, soups, and more.

Pasta Done Differently

MEET LOS ANGELES’ PREMIERE FRESH PASTA PROVIDER: DOMENICO'S FOODS

Domenicos Foods is more than just a pasta company. Their full service approach to creating one-of-a-kind pastas for restaurants, businesses, and consumers makes them one of the most relied upon pasta makers in the Los Angeles area. Founder and owner, Dominick DiBartolomeo, started from humble beginnings. As a child, he grew up making stuffed peppers and sundried tomatoes with his Italian grandfather. In fact, there was never a time when his family gathered where food wasn’t the centerpiece. Being of Italian descent, Dominick says,

“We always got together and we always made something. It was always a family affair.” Moving away from his family in New York to start school at USC left him missing that familial food connection. Near campus was an Italian style cheese store that Dominick took an immediate liking to. He began working part-time at the store and fell in love with the atmosphere. It was natural that his part-time plan started to spiral into daydreams of a fulltime career in food. He began plotting and planning what it would take to create his own line of inspired food products and ran with it. He started recreating his grandfather’s sundried tomatoes and placed them on the shelves just to see what would happen. The tomatoes became an instant hit with customers.

“For years, I was known as the ‘The Tomato Guy’ of Los Angeles. Everyone wanted to know my recipe, but, of course, I couldn’t give it away.” Because these tomatoes became such a hit, Dominick began wondering what more he could produce to expand his product line. He began creating his family’s signature pestos, salami, and stuffed peppers—but it wasn’t enough. People wanted more. That’s when Dominick began toying with the idea of making fresh pastas. After years of being in the food business, he became friends with renowned chefs in the area, one of whom

let him practice the art of pasta making in the kitchen of his restaurant after hours. It was in these kitchens where Dominick began creating some of the best pastas in his collection. His fresh pastas are made from a simple family dough recipe that is kneaded, pressed through a machine, and cut into different styled noodles. Because they are never dried, they take mere minutes to prep and cook.

“You can go to the store and see a wide variety of dried pastas, but when you see fresh, there’s more of an artform behind it. I love creating unique shapes. Festonati, strozzapreti—you never see people making fresh bucatini. These pastas have amazing shape that is truly unique.” Dominick would spend hours honing in on his craft once the restaurant closed. After months of tinkering in some of Beverly Hills’ most popular kitchens, he finally created a line of fresh pastas (p.18), infused with spinach, squid ink, basil, and other herbs and flavors that you can't find anywhere else in the Los Angeles area. Dominick got the idea of selling his entire line of homemade Italian products at local farmer’s markets, and began building a strong following. Customers from all over Los Angeles flocked to his stand, buying his whole line of fresh pastas, sauces, tomatoes, and more. After a few trips to the farmers market, he was able to save up, buy his own machine, and the rest is history. “Chefs come to me with an idea and I like to tee it up for them. A lot of these chefs give me so much feedback and direction, I set the table for them. I present the best base possible so they can be creative with it.” Major restaurants and companies come to him with an idea. He takes it and runs with it, creating something amazing every time.

“A pretty famous restaurant came to me looking to create a dish using Santa Barbara prawns, sea urchin, and amazing colors to pop on the plate. The dish had an immediate everything-from-the-sea theme to it. So I said, you’ve got to go with a shell pasta. And what better way to make the flavors and colors pop than using squid ink pasta. It gives a black and orange contrast, but you also get the flavors of the sea.” We’ve experienced the same great service with Domenico’s Foods. INGREDIENTS Salt, for Rim (Optional) 2 Ounces of Tequila Squeeze of Lime Juice Grapefruit Soda to Top 1 Lime Cut into Wedges, for Garnish Pour salt on a plate, wet the rim of a class with lime juice, and cover in salt. Fill the glass with ice, pour in tequila, and top with grapefruit soda. Garnish with a lime wedge and enjoy!

mango peach sangria Welcome summer with this fruity, tropical-inspired take on white sangria, soaked with sweet chunks of mango, peaches, mint, and a splash of Grand Marnier. INGREDIENTS 1 Bottle of Pinot Grigio 1 1/2 Cups of Grand Marnier 3 Peaches, Sliced Thinly 2 Mangoes, Diced 1/3 Cup of Granulated Sugar 1/4 Cup of Fresh Mint In a small saucepan, add sugar and water. Turn the heat to medium and stir until the sugar dissolves. In a large pitcher, add mango, peaches, mint, sugar, Grand Marnier, and Pinot Grigio. Chill for a least 30 minutes. Pour sangria into glasses filled with ice. Garnish with fresh mint and scoop fruit from the pitcher.

Chef Crenn created Petit Crenn to be more than just a restaurant, but to be an extension of her home. The farro is an ancient grain with a chewy texture. There’s a lot going on in this dish flavor wise and it’s everything a salad should be!
