Ingredients Sweet Potato Cake

2 1/2 cups all-purpose flour 2 1/4 tsp baking powder 1 tsp ground cinnamon 1/4 tsp ground nutmeg 3/4 tsp salt 6 Tbsp unsalted butter melted, cooled 6 Tbsp vegetable oil 1 cup granulated sugar 1 cup light-brown sugar packed 1 1/2 cup sweet potato puree 3 large eggs room temperature 1 tsp vanilla
INSTRUCTION:1. Preheat oven to 350 F and grease & flour two 8" cake pans. 2. In a medium bowl, whisk together flour, cinnamon, nutmeg, baking powder, and salt. 3. In a large bowl, whisk together sugars, melted butter, oil, sweet potato, and eggs. 4. Add dry to wet and mix until just combined. 5. Divide batter evenly between prepared pans and bake until a toothpick inserted into the center comes out mostly clean (approx. 35-40 mins). 6. Cool in pans on wire rack for 10 mins, then turn out onto wire racks to cool completely.
