About The Marshmallows A marshmallow is a sugar-based confectionery that in its modern form typically consists of sugar, water and gelatin whipped to a squishy consistency, molded into small cylindrical pieces, and coated with corn starch. Some marshmallow recipes call for eggs. This is the modern version of a medicinal confection made from Althaea officinalis, the marshmallow plant.

Method: 1. Soak the gelatine in water and melt it on a double boiler. Add cornflower & mix. 2. Boil sugar, water and glucose together till sugar attains the soft ball consistency(118 degree Celsius) 3. Add sugar syrup into gelatine mixture and beat continuously till the mixture begins to thicken. 4. Put the mixture into a piping bag and pipe it out on a cling film dusted with corn flour 5. Once dry cut it into pieces and dust it further with corn flour to remove stickiness.
