Step into The Rocco Forte Collection’s Brown’s Hotel and you enter a completely different world. It is a world steeped in history but at the same time one which offers the ultimate experience in contemporary luxury. From the bustle of Albemarle Street and nearby Bond Street, Brown’s offers a tranquil haven, whether you are just meeting a friend for a drink in the popular Donovan Bar or have the good fortune to be staying the night. Brown’s has been synonymous with luxury since it first opened its doors in 1837 as London’s first ever hotel. Over the years it has welcomed countless famous guests including Winston Churchill, Alexander Graham Bell (who made the first successful UK telephone call from the hotel), Cecil Rhodes and even Agatha Christie and Rudyard Kipling, both of whom found it an inspirational venue for their writing. Theodore Roosevelt spent his wedding night at Brown’s Hotel, in what is now the Roosevelt private dining room in which guests can be married as it holds a wedding licence. In 2003 Brown’s was acquired by The Rocco Forte Collection and following a £24 million renovation programme, overseen by Olga Polizzi, it reopened to great excitement in December 2005. Today, the hotel personifies the refined sophistication of modern British luxury. Each room and suite is individually decorated and many feature antiques and pieces of art, creating a contemporary elegance and glamorous air. Did you know that Brown’s was the first hotel ever to open a restaurant? Prior to this, guests either dined in their own rooms, or hired one of the 16 licensed suites for entertaining. Today, Brown’s boasts HIX at The Albemarle restaurant, which celebrates not only traditional British cooking, but is also home to an amazing collection of British art, including pieces by Tracey Emin, Bridget Riley and Rankin. Mark Hix and Executive Chef Lee Streeton have created an outstanding menu which features many great British classics, using solely local, seasonal ingredients. Morecambe Bay potted shrimps, Romney Marsh beets with Ragstone goat’s cheese and wild herbs are typical starters to be
featured on the menu. Main courses could include fried haddock in beer batter with chips and mushy peas, or Dover sole, as well as Aberdeenshire 28-day aged beef fillet. At lunchtime the carving trolley serves traditional roasts including hay-baked leg of lamb or roast rib of Hereford beef and Yorkshire pudding. Visitors to London need look no further than The Albemarle to find some of Britain’s finest food. The critics certainly agree: The Albemarle has been awarded three AA Rosettes, for “outstanding restaurants that demand recognition well beyond the local area.” The Albemarle is open for breakfast, lunch, pre-theatre and dinner and offers a full à la carte menu as well as a superb value set menu, which changes daily, of just £25 for two courses and £30 for three. Afternoon tea is a quintessentially English experience, and not surprisingly, it is another area where Brown’s excels. The English Tea Room serves the most famous afternoon tea in London and was given The Tea Guild’s Top Afternoon Tea Award 2009. To the accompaniment of live piano music, guests can indulge in Traditional Afternoon Tea for £37. This comprises a choice of 17 teas, of which a tea sommelier can help you make your selection, along with a selection of succulent finger sandwiches, an assortment of delicate pastries, fruit and plain scones with clotted cream and strawberry preserve, and a choice of freshly baked cakes from the trolley. Guests of The English Tea Room need never leave hungry, as Afternoon Tea is continuously replenished at no additional charge. The Donovan Bar is one of London’s most vibrant and fashionable watering holes. The walls are lined with Terence Donovan’s iconic black and white prints but the backdrop to Bill Amberg’s leather bar is the hotel’s original stained glass window, creating a wonderful blend of old and new. The Donovan Bar even has its very own ‘naughty corner’ – a cosy seating area for up to 12 guests, surrounded by some of the photographer’s more risqué photographs. An exciting range of ‘must-try’ cocktails are served, alongside a wide selection of wines and champagnes, all of which can be enjoyed 27
whilst listening to live jazz on Monday to Saturday evenings. For the ultimate in luxury, I highly suggest spending a night within this chic hotel. Where else in London could you find such decadence? Alfa Romeo, sampling Turin’s finest
Is this the most beautiful car in the world? Victoria Macmillan Bell thinks so having driven several laps of Balocco, Alfa Romeo’s private test facility in this breathtaking machine. The 8C also offers one of the finest soundtracks on earth. 33
The most beautiful car in the world? The 8C Competitzione Coupe has been shown off at various events since its inception 4 years ago and given its jaw-droppingly gorgeous looks its no surprise that the order list was oversubscribed before the first one was built. But for those who missed out there is now a convertible version and if you’re quick, the ink has yet to dry on a small handful of contracts. First part with the £25,000 deposit. Alfa Romeo Centro Style in Turin are building just 500 Spiders using a Maseratideveloped 4.7 litre engine developing 450bhp and to even weight distribution, Alfa have put the gearbox and fuel tank behind the cabin. Built of aluminium and steel with lashings of carbon fibre, the 8C Spider is 90kg heavier than the Coupe at 1590kgs and a large chunk more expensive at £174,000. Yes, that’s pounds not Euros. Along with a 6-speed Cambiocorsa paddle-shift gearbox, the whole experience has to be as good inside as it is outside.

It certainly felt that way. But this is not a practical car, the boot is so tiny that a bag has been designed specifically for it. It’s a very nice bag though. But you can forgive it that when it looks as good as this. So here I am, at Balocco circuit, Alfa Romeo’s private test facility between Milan and Turin and Alfa’s ultimate supercar is sitting drumming its fingers on the tarmac. Just two cars here, one in Competitzione Red and the other in a pearlescent white, called Shell White. The first lap was a familiarisation run and driving me was another Domenico, surname Martino whose official title is worthy of its own paragraph but in short, he is the test engineer responsible for 8C. Built on a shortened version of the Maserati GranTurismo’s steel platform, which in S form is a truly brilliant drive, the two cars also share the same gearbox and then of course there’s the engine which started life as a Ferrari unit but was then tuned to be used by Maserati and this 4.7
litre V8 is a tuned version of that. But with 450bhp it’s more powerful than it is with any trident badge on it and all of it harnessed by the rear wheels. Having had track time only and not enough of that, the ride is softer than the Coupe but still firm enough to provide a thoroughly fun time at the wheel. That said, I suspect that it might prove a little too firm on English roads. The Balocco test track is ultra smooth but where there were opposite cambers taken at speed, the Spider uses all of its mighty grip and balance to make light work of it. It’s very easy to oversteer but if you’ve plenty of track to play with, could oversteer be better placed? Steering hasn’t been interfered with by electronics and thus it is heavier than the norm but ultimately, this is a good thing for feedback and good motoring entertainment. With several different settings to choose from including a ‘wet’ button – in 35 degrees of arid heat this was not the button to go for. Instead I
chose ‘Sport’ which speeds up throttle response, alters stability control and lets loose even more exhaust racket. Talking of which, it is glorious, popping and banging on deceleration like machine-gun fire. Find a tunnel of which there are three at Balocco, make sure you’re hitting the rev range between 3,500 and 4,000 and change down. Just fantastic. Imagine gargling cement, that’s what it sounds like, stationary. There’s loads of grip with large Brembo carbon-ceramic ventilated discs hugging the 20” alloys which provide good
braking although not immediately the sharpest feel. Steering is quite heavy without intervention from electronics so linking up tight S-bend brings out muscles you didn’t know you had. Gear changes both up and down are pretty swift and from every change up, power down, it feels like someone has just stuck a boot in your posterior and that’s no bad thing. The 8C Spider has a raw edge to it and that holds massive appeal. There’s a good pair of carbon fibre bucket seats to hold you in place amongst

the sublime interior leatherwork, shared as it is with Ferrari. You can accessorise your Spider with a bag designed specifically to fit the snug boot with matching suit-carriers that hang over the back of the head restraints, all of which can be ordered in the very same upholstery leather as your car. Like the Coupe, the Spider feels and looks well built with the carbon fibre body panels sitting flush and the doors shutting with a decent solid closure to them. Alfa Romeo have come a long way in reliability stakes and also build quality so I would be surprised if this was any different, put together as it is by Maserati and let’s face it, you’re not forking out this kind of money for something of dubious class. It’s small, no denying that. At a push, you could just about get enough clothes and overnight needs together between the boot and by ordering the upholstery matching suit carriers that fit over the head restraints. The seats are adjustable and expensively padded but as for in-cabin storage, you’ll have to use your pockets. As for attention to detail, Alfa Romeo are rightly proud. A dashboard-mounted button operates the two-layer electrically operated roof

which stows flush with the bonnet and becomes its own tonneau cover, saving a little more all-important weight. But it’s not just the cabin that carries a strong whiff of a future classic. I have every confidence the 8C in both Coupe and Spider form will be future collector’s gains. There are no crash test results as yet but this is no run of the mill car to be used to commute from home to work and back so it doesn’t really apply. The only obvious drawback is the fabric roof if some envious charmer was to come along with a knife. There are three major factors to consider here. The parts come from Italy and it will be serviced by Maserati. The second point is that anything with a 4.7 litre engine and 450bhp available is not going to be a frugal machine to run. It’s also got an 80 litre tank. That’ll be your Centurion Amex you’ll be using then. Like most cars of this ilk, resale prices will be at a premium. It costs a lot to start with and only 500 exist, those two points alone ensure high residuals. It would come as no surprise if Alfa Romeo slapped a ban on any owners trying to sell their cars on within the first year of ownership. In a nutshell, expect resale prices to remain high for some time.

A Shore Thing Sharon Kilby meets South Sands consultant chef Mitch Tonks hailed as the UK’s most inspiring seafood restaurateur, foodwriter, chef and ambassador of the nation’s fishing industry. 38
Following your dream may seem somewhat idealistic to many of us but for seafood entrepreneur Mitch Tonks the lure to do something he really loved was just too strong. Whilst working as an accountant in Bath Mitch decided to take the plunge and choose a whole dramatically new direction in life. In a risky and exciting move he decided to open a fishmongers shop leaving behind the monotony of accountancy and a stable nine to five job. “It may sound crazy moving from accountancy into selling fish but one of the things I had always loved was food and in particular seafood. I grew up in Weston Super Mare and the seaside culture was an integral part of my life, it had a real impact on me. I was lucky to have a Grandmother who was a great cook, and was patient enough to let me help her, she made basic but great meals using lots of fresh seafood. Although we lived frugally, we ate well, simple meals such as grilled fish and vegetables and the food was always so fresh and full of flavour. We enjoyed a variety of fish even the traditional seafood fare of jellied eels, which were wonderful and spent the summers of my childhood on the beaches and I learnt very early on how to prepare fish, cook it and most of all enjoy it.” His love for cooking progressed over time “I think a love of food is something you just have in you, I remember being at my happiest sitting around a table with friends enjoying good food and drink, I like the ceremony of preparing and eating food. As a child I started reading cookery books and just couldn’t get enough of them, then when I was in my teens and early twenties I would cook food for friends, when I wasn’t cooking I would enjoy meals out whenever I could. Weston Super Mare has a wonderful variety of places to eat with many Greek and Italian family owned restaurants, where I enjoyed simple but fantastic dishes such as Mediterranean grilled lamb. My love for good food never diminished and I knew one day I would earn a living working with food.” The career change may have been a drastic one but it gave Mitch the ideal opportunity to introduce quality fresh fish to the Bath region as there was no real supplier of good seafood nearby at that time. His
passion and determination to provide the very best fish to his customers swiftly earned Mitch the reputation of being a bit of a seafood guru and local celebrity. Through his fishmongers Mitch was able to share his in depth knowledge and infectious enthusiasm for seafood, from selecting a fish to preparing it and cooking delicious seafood recipes. His straightforward, no nonsense and unfussy way of cooking quickly caught on and before long Mitch had established a string of celebrated cookery schools ‘FishWorks’ where he was able to further encourage and educate those interested in cooking with fish. Inspired by food enjoyed whilst travelling Mitch’s style is that of simple European cuisine, real food created from the freshest ingredients. “I love the fish markets in Greece and Majorca, you just need to keep things simple, don’t over complicate food. A good piece of fish grilled and served with a chunk of lemon and a seasonal salad, wonderful. As with all good cooking quality and freshness of the ingredients is the most crucial element, you don’t need complex recipes or lots of hard to find spices because you want the fresh flavour of the fish to shine through.” His uncomplicated approach proved to be exactly what the public needed and after the cookery schools he launched the award winning FishWorks chain of restaurants and a whole string of awards and accolades rolled in. Putting all his knowledge and advice down on paper was another shrewd move and his best selling cookery books have proved incredibly popular and have hugely increased the nation’s interest in enjoying seafood at home. The FishWorks Seafood Café Cookbook was short-listed for the prestigious André Simon award whilst Mitch’s latest book, Fish has been described as “undoubtedly one of the most important books of the year” (Woman & Home) and covers everything you need to know about buying, cooking and eating the best seafood, about how fish is caught, sustainability, how the fish markets work and of course how to prepare and eat fantastic food. When it comes to restaurants his winning combination of simple yet stunning recipes 39

South Sands Scallops Buy scallops that are still in the shell and get your fishmonger to clean them for you, reserving the cut half of the shell. Leave the rose on, these are delicious. Do not buy scallops that look milky or are sitting in a puddle of water as these will undoubtedly have been soaked and their flavour and their texture will be poor. Scallops should be slightly off white and dry, your fishmonger will know. Serves 2 6 scallops 2 cloves garlic 100 g butter Handful of parsley leaves 2 salted anchovy fillets Splash of Tabasco 1 tsp tarragon, finely chopped 6 tbsp white wine 6 tbsp olive oil 6 tbsp fine breadcrumbs Sea salt To Make Pre heat your oven to maximum. First make the garlic butter by placing the garlic, parsley and anchovy fillets in a food processor with a splash of Tabasco. Blitz until you have a smooth green butter. Place a scallop in each shell, keeping the rose on. Sprinkle each one with a little tarragon, then add a tablespoon of wine to each scallop and a tablespoon of olive oil. Season with a little salt. Then place a teaspoon of garlic butter on the top of each scallop, sprinkle breadcrumbs over each one. Place your scallops on a roasting dish and cook in a hot oven for 5 minutes. The breadcrumbs should be nicely browned, the scallops firmed up and the olive oil, butter, garlic and wine all bubbling together. Serve 3 scallops to a plate or one plate of 6 to share and get stuck in. 44

Gareth Davies travels to the Apes Hill Polo Club in Barbados to meet with Sir Charles Williams. By Gareth A Davies
T
here was something quite inspirational about the one million US dollar patronage of an all-English team in both the Queen’s Cup and the Gold Cup three years ago. It took the high-goal polo scene in England by complete surprise. That sponsorship continues on into 2010.
At that time, it was the largest commercial sponsorship ever in British polo – from an ex-patriot who lives 5000 miles away. Out there, someone, somewhere cares about the plight of the modern English professional polo player. At present, those who do succeed, do so in spite of, not because of, the system. The man behind it was Sir Charles Williams, who hopes his investment will “start a revolution in English polo”. The Apes Hill Club Barbados team – Mark and Luke Tomlinson, James Beim and Ed Hitchman – is the brainchild of Sir Charles, a highly-regarded, highly-active fellow in his Seventies who is known as ‘COW’ both in Bajan society and in polo circles. His life has been sport, business and farming. He was made a knight of the realm in 2000, for exactly those things. The family have been in Barbados since 1652, expelled from the times of Oliver Cromwell, as punishment for being protestants who fought on the side of the Royalists. “We were purely agricultural and animal people, then land owners, fighters, warrior
people, descended from the Welsh, and the family has lost everything and earned things back again. I was one of 9 children. We were very poor people. I knew a time when my father worked for 9 pounds a month, but my parents set us the best example- a wonderful work ethic. I knew what it meant to go to sleep in my school clothes, and mummy ironed them in the morning for me to go back to school. My mother baked bread for wealthy people, starting every morning at 3am, and my father worked like a slave.” Admitting that he has had some luck in business, COW construction is a huge company in Barbados. He started farming in the Sixties “Farming could not hold me - it was too slow. I got into agricultural cultivation and building.” And polo. Sir Charles is in good form at the Apes Hill estate on the Caribbean island. The Apes Hill polo grounds looked resplendent, while work is ongoing to complete a new state of the art golf course there. Aspects of the course are mesmerizing, with some of the jungle areas looking like the set of ‘Raiders of the Lost Ark’,

while the holes at the top of Apes Hill overlook both the Atlantic Ocean and Caribbean Sea. Sir Charles has loved polo for almost 40 years. “I played high goal polo between 1972 and 1991 against and with the likes of Paul Withers, John Horsewell, Alan Kent, and the Hipwood brothers, Howard and Julian,” he explained. I was particularly friendly with Ed Moore. We played good polo. I played off 4 at my highest, and my time in English polo was when quite a few American teams would come across to England. Polo was very enjoyable, and was played completely differently to today’s game.” Sir Charles concurred wholeheartedly with the views of Howard Hipwood who lamented the 55
decline of the system for English players to develop at the very highest level. “Howard was spot on when he talked about British players being used as “hired thugs” by patrons in high goal tournaments. What Howard puts his finger on is a fact. Where is the sense in hiring the Tomlinsons, a Borwick or a Beim, a Johnny Goode, or a Henry Brett, and just telling them to go out there and clear the road for Fecundo or Cambiaso? Polo is not, nor should ever be, a sport where you hire three to keep a highway free for one player. This last year it was a lot better, but we need to see changes. Polo is a passing game.” In 1991, Sir Charles stopped going to England to play. “I must say I did admire Kerry Packer, for what he did for the game, and the level he brought to England. And Gonzalo Pieres and Carlos Gracida were close friends of mine. I’ve known them for thirty years.” But it was a visit two summers ago which saw Sir Charles affected by what he saw “Polo 56
in England today, as I saw it recently, is all wrong. When I went to see the high goal polo being played two years ago, there was not a British player among them. I was selling some of the land we have in Barbados, so I went to Claire Tomlinson, and I told Luke Tomlinson what I thought of the situation and I immediately appointed Luke as captain of the Apes Hill team and asked him to get the best team together to win the Gold Cup. We are spending a lot of money, and I’m not ashamed to say I hope the process will also help to sell my land [for building plots on the new golf course].” He added: “Polo has changed so much in two ways. Cowdray Park was hallowed ground, and any one man was allowed to open his people carrier and sell gear. When I saw the stands and trade fairs, I couldn’t believe it. Have you found your dream home? What should you do next to be sure your dream doesn’t turn into a nightmare? Here are five tips to ease the house buying process. • Aside from instructing your solicitor who will help you through the legal process, you should, as a priority, consider funding, and check that you can afford the property. This may involve obtaining a mortgage or bridging finance and a delay in sorting this out may result in your purchase being delayed (or even lost). You will receive an estimate of fees and expenses from your solicitor at the beginning of the transaction. Do your maths. Remember to factor in the cost of stamp duty land tax payable on the transaction which can be significant. • We always advise our clients to obtain a survey early on even if they are buying a flat. The burden of discovering any physical defects in the property, whether the defects are readily apparent or not, fall on the buyer. For this reason alone, a survey is always advisable. If you are having a mortgage you could rely on the lender’s valuation but this may not reveal enough information about the condition of the property to assist you in making a reasoned judgment whether to
proceed. At the other end of the scale, a full survey is expensive but its cost is preferable to discovering after you have completed your purchase that you need to spend tens of thousands of pounds on structural repairs you have not anticipated and cannot afford. A compromise is the Home Buyer’s Valuation and Survey Report. Remember this is restricted in scope, although more comprehensive than the mortgage valuation. You may be able to combine your survey with the mortgage valuation and save some cost. • Visit the property location at various times of the day and at weekends. You may find the property is close to a school and there are traffic jams every weekday morning or cars parked across your drive. Alternatively, in the countryside have a good look round to see if there are public footpaths which may interfere with your privacy and check that the apparently quiet lane which leads to the house is not a ‘rat run’. This could be dangerous when emerging from your drive, or if you have young children. • Be especially careful, if you are buying a listed property, that any works which have been carried out have the approval of the local authority conservation officer, to avoid any
nasty (and expensive) surprises after you move in. • Finally, if you are worried about future development near the property give the local authority planning office a call. They should be able to answer your enquiry. With your Solicitor’s advice and help through the buying process you should be able to pull all the threads together and move into your new home, knowing it is exactly what you dreamed it would be. More and more private individuals are looking to purchase or sell property and other overseas assets. Many who already own an overseas property will be paying monthly payments on a foreign mortgage. Others who have decided to live overseas have their pensions transferred into the local currency. Foreign exchange plays a large part in many people’s financial planning. Many people who are purchasing or selling an overseas property or asset are at the mercy of the currency markets and so never know from one day to the next what they are either paying or receiving in monetary terms. The currency markets are driven by speculation, geo political events, economic fundamentals and outlook, interest rate yield differentials and sentiment to name a few drivers. As an example of market volatility the UK Pound
fell from 1.4500 in the summer of 2007 to 1.0350 at the end of 2008. That is a movement of 28.5% or in monetary terms, for every 100,000 Euros which needed to be purchased the cost had risen from ÂŁ68,965.51 to ÂŁ96,618.35. Of course, that is an extreme movement over a 16 month period but anyone who had planned to purchase a property in Europe over that period had to seriously adjust their budgets & expectations. Better news for euro buyers so far this year in that Sterling has appreciated from around 1.1000 in March to the current levels of 1.20++ an upward movement of around 10% but where there is a winner there is a loser....in this case those looking to sell their European properties and convert the sale proceeds back from Euros to Sterling are now looking at less Pounds for their money than in the spring.
So what can be done to help
mitigate such market volatility & financial risks?
