Saving Walter H. Dyett High School: More Than a Hunger Strike By Mary L. Datcher Senior Staff Writer
Going back to school can sometimes become a tedious and anxious chore as most parents prepare another readjustment of schedules and routines that they just changed at the start of summer. The typical student’s feelings are mixed between excitement and the fear of starting out fresh with another group of teachers and often making new friends. This is normal. Unfortunately, with the rising worries of budget cuts and layoffs—CPS
students are introduced to a “new normal.” The anticipation of entering a new school year with some internal changes is inevitable with nearly 1,500 layoffs kicking off the Chicago school start, according to Reuters. One school that has not opened its doors this week is Walter H. Dyett High School, named for African-American violinist and music educator Walter Henri Dyett located in the Bronzeville community. The school once had 700 students in attendance has been the latest casualty fallen at the wayside of the Chicago Public School system. Located in the 4th Ward and in the heart of Washington Park, the decline of student attendance has made it a target yet at the same time—potential real estate for the rebirth of a new charter school. There is no one more opposed to this idea than community activist, Jitu Brown who has been an ongoing advocate to keep the doors of Dyett High School open. He leads a group of 12 who consist of parents, grandparents and Chicago Teachers Union members in a hunger strike to open the doors of one of the last Chicago Public High Schools open in the Bronzeville/Kenwood area. As they entered into their second week of not eating, a press conference was called bringing key public officials to the front doorsteps of the high school. The school is located in a predominately African American community, although its lost nearly 14,000 Black residents since 2010 due to rising expenses and housing displacements for low-income families. Brown said, “We don’t care about meeting with them anymore. We want the school. Over 2,000 residents, nearly 3,000 petition signatures 578 letters was mailed to Mayor Emanuel from this neighborhood,” He continues, “Six community-sponsored town hall meetings with the lowest turnout was 170 people. We have done the district’s job for them, and we’ve developed a plan for Walter Dyett Green Technology Development High School.” Standing off to the side in support of the protesters are Illinois State Representative Mary Flowers, Cook County Commissioner Jesus ‘Chuy’ Garcia, Alderman Carlos Rosa, State Representative LaShawn K. Ford. Anne Jones, a petite woman who stands proudly as her voice wavers while she speaks into the mic. “I’m a parent of four children in CPS. I’m tired of seeing my children and other children being sabotaged at the hands of our politicians,” Jones said. See Back to School, Page 8

Black Students Return to School, But Will the Funding? By Maze Jackson
Defender Political Editor According to the Mayor and CPS officials, Chicago Public School students have been making tremendous progress in spite of school closings and budget cuts. But as those students prepare to return to school on Sept. 9, they will feel the impact of the $500 million teacher pension crisis in the classroom. While most would agree schools are built for the children inside them, increasingly those children are losing to factors outside of the school. Combine that $500 million deficit with the gridlock in Springfield, and the trip back to school will be a difficult journey for Black Chicago Public School students and their parents.

To understand the impacts of a $500 million shortfall, it is important to understand how we got here. Currently, Chicago is the only school district in the state of Illinois that must fund its own teachers’ pensions. “This budget reflects the reality of where we are today: facing a squeeze from both ends, in which CPS is receiving less state funding to pay our bills even as our pension obligations swell to nearly $700 million this year,” new CPS Chief Forrest Claypool stated. Claypool has asked the Illinois General Assembly to resolve that by having the state of Illinois cover Chicago teacher pension costs as well. “We look forward to continuing to work with our leaders in Springfield to prioritize education funding reform and finally end the inequity that requires Chicago alone to take scarce dollars from the classroom to pay for teacher pensions,” Claypool said in a press release. Democrats have indicated that they are willing to assist CPS, but Republican Governor Bruce Rauner has made clear he will not support without passing his “Turnaround Agenda.” “For Chicago to get what it wants, Illinois must get what it needs,” Rauner told a skeptical city council in a July address to the City’s governing body. With little to no progress in Springfield, and little expectation of any movement in the Rauner-Madigan faceoff for the near future, it appears that CPS students will return to school with far fewer resources than last year—$68 million fewer to be exact. But what does that mean exactly for students? It means 1500 layoffs district wide. Those layoffs will include 479 schoolteachers, 866 in-school support staff, and 146 citywide employees. According to CPS, those cuts will impact less than two percent of teachers citywide, including 204 high school teachers and 275 elementary school teachers. While that number may seem nominal, it means direct impact to the lives of students, particularly on the south and west sides of Chicago. Not only does it mean more students per classroom, it also means less support for those teachers who will be operating with increased class sizes, which are predicted to grow to nearly 40 students per classroom. The impact of increased classroom size is compounded when special needs are factored in. According to a Catalyst Chicago report, specialty schools for high-needs students lost on average 16.8 percent of their staffing since the start of last school year — significantly higher than the average 1.6-percent staffing reduction that other district-run schools saw. Upon further analysis, Catalyst Chicago concludes, schools with high concentrations of African-American
students and students in poverty made up a large number of the schools hardest hit by staffing loses, again reflecting enrollment trends. Among those same 75 schools, more than half were schools where 95 percent or more of the student population were black or low-income. Essentially, as the city continues to grow, cuts to the budget are coming disproportionately out of Black schools that arguably need the most resources. In addition to the fact that cuts to services are disproportionately affecting Black and special needs students, the school day will shift anywhere from 45 minutes to an hour. In the case of elementary schools, students may begin as early as 7:45am, and in the case of some high schools, start times will begin as late as 9:00am. According to CPS, the change in start times will save approximately $13.5 million annually. While the savings will be significant for CPS, they may be passing the cost to parents who will have to make childcare arrangements to accommodate the changes. Elementary schools students will also take a blow as the 2015–2016 CPS budget removes funding for all elementary school sports programs. Unlike the cuts to special services, the removal of elementary school sports is not disproportionate to schools that are predominately Black, because they were removed from all elementary school programs. CPS maintains that they are equitable and fair across the board, which appears to be the case with elementary school sports. It is important to note that CPS did not ban elementary sports totally, but required the schools to raise their own funds to support their teams. Critics point to the fact that the more affluent CPS schools on the North and southwest sides have greater fundraising ability to support their athletic programs, while predominately Black schools struggle to find the additional resources like basic supplies and school books. Additionally, with cuts to music and arts programs as well, many are Blacks are concerned that Black children will be left without the necessary programs to keep students engaged and well rounded. The 2015–2016 school year for CPS is shaping up to be one of the most challenging years ever. With a $1.1 billion structural deficit and no relief from Springfield anticipated in the near future, the back-to-school season is going to be a costly issue for parents and students alike. For parents it will be everything from adjusting work schedules, paying for afterschool activities, and the massive property tax hike which appears inevitable. For kids it will be adjusting to larger classrooms with fewer teachers, resources, and extracurricular activities. Next week will definitely be back to school week, but with all of the cuts, there will be fewer familiar faces and activities for Black students. www.chicagodefender.com
ARTS & CULTURE No Passport Needed to Travel the African Arts Festival Kai EL’ Zabar Executive Editor Twenty-six years ago West African American Patrick Woodtor, entrepreneur who hailed from Liberia and had attended Northwestern University was the owner of Window to Africa a store located in the heartbeat of Hyde Park’s Harper Square. Upon accepting his lease for the store, included was a requirement that he do something to help promote the courtyard. Though he though it strange he agreed. As co-founder along with others who have moved on Patrick speaks to the phenomena saying, “The first festival evolved out of an obligation and at that time I did not envision what it has become and can become until after the overwhelming response to what we were doing.’” Since then the African Arts Festival has continued to grow attracting hundreds of thousands including visitors, talent, and vendors who come from all over at its annual gathering of arts and culture.
No longer the storeowner of Window to Africa but rather the CEO of Africa International House USA, Inc., Patrick continues to be the visionary and managing director of the African Arts Festival. As he puts it, “It began with a small group of art and community enthusiasts with interests in marketing and promoting African based cultures as well as to create marketplace for African and Afro Centric products and services.” “Today we are looking to expand our reach into areas beyond the arts and have begun to do so with the entry of a South African wine, this and other such examples are just the tip of the iceberg,” said Woodtor. In the face of the now defunct The African Marketplace of Los Angeles after 25 years and the Black Arts Festival of Atlanta /NBAF now 27 years old the African Arts Festival now boasts more visitors than both. The four day festival held over the Labor Day attracts over 200,000 people
who come to Washington Park on the south side of Chicago to engage artists and other preservers of culture from all over the African Diaspora, including local, national and international performing artists, fine artists, fashion designers, galleries and art dealers, food sellers and many other cultural programs under specialized pavilions. With rumors of Woodtor retiring questions regarding its future scream through the community, but the tried and true visionary assures us that there is much work to be done that requires his gentle hand of guidance. He envisions creating greater relationships with African countries and the opportunity to collaborate in an
effort to create open communication and exchange of information between the African Diaspora from the United States, Africa, the Caribbean, Europe, Asia, and Latin America. “This will change the way in which we do business across the board, and enrich our cultures and our sense of self and independence,” says Woodtor. The annual African Festival of the Arts is a multi-cultural unique presentation of national and international culture performing artists, and many other cultural programs under specialized pavilions in the world if for no other reason than that its location is Chicago, the home of numerous successful Black entrepreneurs, businessmen, artists, which is the home of Robert Abbott Sengstacke founder of the Chicago Defender who instigated the Great Migration, which in turn fostered Black entrepreneurial enterprise and self determination. Through interactive engagements, vibrant drumming, museum quality and collectible artifacts, colorful and rich handwoven fabric and textile, and other program spaces and Interactive spaces over 200,000 people come to
Washington Park on the south side of Chicago to engage artists and other preservers of culture from all over the African Diaspora, including local, national and international performing artists, fine artists, fashion designers, galleries and art dealers, food sellers and many other cultural programs under specialized pavilions. Medical Marijuana Dispensaries: Good or Bad?
In 2014 when the medical marijuana law passed in the state of Illinois under Governor Pat Quinn, it was presented as a four-year pilot and touted as having the most stringent of regulations in the country. Patients that suffer with acute pain and other ailments helped by marijuana were elated and expressed their support very publicly. In the first attempt to sort out the complicated logistics of launching a medical cannabis program, the Illinois Department of Public Health posted 48 pages of draft regulations online, which in and of itself narrowed down the would-be medical marijuana dispensary owners. Some of the regulations such as requiring patients to be fingerprinted, undergo a background check and pay $150 a year to get a special photo ID under proposed regulations immediately raised the eyebrows of those in need. The annual fee is steep for many and their health at risk until they are able to obtain a legal card. The regulations also challenge businessmen and women who would be medical marijuana store owners. They too are scrutinized as to they’re character and financial ability to run and manage a store of its type. And for Black patients seeking medical marijuana, they won’t find it in their own backyard, despite its legalization. Chicago’s Black communities were shunned by groups applying for dispensaries. Mattie Hunter, who has cancer, is allowed to buy marijuana legally from a dispensary
instead of on the street. “It’s risky if you purchase marijuana illegally, because you don’t know what you’re getting,” she says, adding that too many people add unknown crap to the MJ and that could be very dangerous to your disease or illness. “So I’m happy about being able to go to a trusted source.” But Hunter and scores of Blacks suffering from ailments that are allotted medical cannabis treatment had not been able to buy it in their neighborhoods, because early on no one had applied to open a dispensary in Chicago’s predominantly Black South and West side communities. In fact, potential vendors didn’t even try. Kathie Kane Willis, a drug policy researcher at Roosevelt University, explained that it concerned her numerous locations were approved in the city, mostly North Side communities such as Wicker Park, West Town and Andersonville. “The fact that African Americans have to travel distances that white folks don’t have to travel to get their medicine is to me unfair and unjust,” Willis says. There are factors that may have made Black communities less attractive to dispensary applicants. They include the difficulty of finding a location away from schools, day care centers and parks — and patients who can afford to pay. That’s not the half of it. Knowing that medical marijuana is not covered by insurance is another consideration that could have deterred potential dispensary owners. Unfortunately “It’s the same philosophy that leads to the food deserts, that lead to lack of quality education, lack of health care,” according to state Sen. Kwame Raoul, D-Chicago. “It is disturbing.” Advocates for medical marijuana dispensaries in Black communities have urged the state to figure out how to get them in underserved communities. Well recently one Black man, Les Hollis was finally approved as a medical cannabis dispensary CEO and has plans to set up shop in Chatham. However, the 8th Ward Accountability Coalition formed during the 2015 elections met in July because it opposes Harborside Illinois Grown Medicine, of California-based Harborside Health Center and Illinois Grown Medicine. The medical marijuana dispensary would be located 1111 E. 87th St. The coalition says its primary

concern is the quality of life for those in its community and the quality of the ownership. Apparently research uncovered the not so clean background of Harborside founder Steven DeAngelo. However he is not allowed to participate in the business operations. In his stead DeAngelo’s brother will facilitate the operation. The coalition describes the small neighborhoods of Marynook, Avalon Park, Chatham as predominately Black residents of either middle class or upper-middle class status who take care of their property and believe in keeping up the quality of life and maintaining a good value system. They believe that the medical dispensary will seriously affect that and that the increase foot traffic won’t be good for the quiet community. What isn’t mentioned this the decline in Chatham, which is far from being the well-to-do thriving community it used to be because of the booming Black-owned businesses that once dominated the community, Ultra Sheen, Soft Sheen, Seaway Bank, Travis Reality, Shabazz Restaurant, Our Super Market, Kham and Nates etc. It seems that medical marijuana is the new ground -breaking prohibition that can help lives awhile helping to turn around the economic conditions by creating so many job opportunities. The medical dispensary is just the product dispensary, but there’s so much more behind it. Though the coalition presents a case based upon its concern for the community, it seems contradictory to have researched one side of the proposal. Would the
coalition research a pharmacy that planned to move into the same space? Pharmaceutical drugs are some of the most deadly, having an even greater devastating impact on our communities causing more deaths and suffering than reported. And mind you they, employ very few Blacks, and hire even less as Pharmaceutical sales reps to reap economic gains. It also claims that the address of the proposed medical marijuana site violates a law; “the state law is clear that minimum distances from parks, schools and residential areas be maintained, and the proposed location violates this statute.” Black people, don’t miss the big picture here. Marijuana is sold in the alleys, across the street and next door to you. Allowing legalized medical marijuana to be sold in our community will put an end to the illegally sold pot and change the game by helping to clean up and prop up our neighborhoods. It will have the opposite affect and impact. It could help our communities flourish. Schools and colleges can begin a klnew curriculum around the biology, chemistry and agricultural aspect of marijuana. For instance, hemp, a cannabis plant, and its products, including fiber, oil and seed, are refined into products such as hemp seed foods, hemp oil, wax, resin, rope, cloth, pulp, paper, and fuel. All of this is where the world is going why would we block the immediate medical impact that the dispensaries affect and all those economic-based opportunities that come with it?

Black Teachers Hit Harder By CPS Layoffs Amid the current budget crisis, Chicago Public Schools is laying off a disproportionate number of African Americans. Pending lawsuits allege discrimination in past job cuts.

Of the 22,000 teachers in the Chicago Public Schools system, roughly 50 percent are white, 24 percent are black and 19 percent are Latino. Yet in the ongoing round of teacher layoffs, a larger share of black educators is losing their jobs: About 29 percent, or 137, of the 479 job cuts involve African-American educators, according to CPS records obtained by the Better Government Association. Meanwhile, 49 percent, or 237, of those getting pink slips are white and 13 percent, or 61, of those laid off are Latino, the records show. The rest are Asian or multi-racial, or their race is not listed on records. The Chicago Teachers Union is pointing to these numbers to bolster claims in two pending federal lawsuits that black teachers were discriminated against in past years when they were laid off for budgetary, enrollment or other reasons. “This is exactly why we need a monitor,” an outside person appointed to review the impact of any layoffs, “why we need the Board of Ed to go back and examine how it does layoffs,” said Robin Potter, an attorney representing Black teachers and the CTU in both lawsuits. Just recently, judges granted class-action status to black teachers in those lawsuits, meaning they can sue as a group and demand systemic relief. For the past two and a half years, CPS has fought against the class certification. Among the things CTU lawyers want are the creation of a court-appointed monitor to guard against discrimination in personnel decisions and an end to “turnarounds,” a practice in which the entire staff is replaced by CPS to spur improvements in student achievement after a school performs poorly. If the teachers ultimately win their court fight, some or all could be reinstated or receive back pay. In the 2011 layoffs, 40 percent of the educators laid off were Black. That number was 51 percent in 2012. The lawsuits do not mention the race of other laid-off staff. Potter said her side simply has to prove the 2011 and 2012 layoffs had a disparate impact on Black
teachers, whether it was intentional or not. CPS officials will have a chance to argue that, even if past layoffs are found to be discriminatory, they had a business justification for the moves. Then, CTU lawyers can counter by showing that CPS could have pursued alternatives. When asked about the recent federal court rulings, CPS spokesman Bill McCaffrey said “due to pending litigation, we cannot comment.” However, McCaffrey said Black teachers were only slightly disproportionately hit with layoffs in this
current round. Because layoffs this year were focused at schools losing enrollment, south side schools – hit hard by neighborhood population declines and an increase in school options – were most affected, according to a BGA analysis of budget data. These schools have above-average numbers of black teachers, according to Illinois State Board of Education records. McCaffrey said principals at these schools followed the procedures set out in the teacher union contract when making decisions about who was laid off. Among the first to go, according to the contract, are teachers with lower performance ratings. McCaffrey emphasized that CPS officials want a diverse teaching staff. Studies have shown black students in particular benefit from black teachers. Nearly 40 percent of CPS’ roughly 400,000 students— or 156,000 kids in all—are Black. About 46 percent, or 181,000 students, are Hispanic. Nine percent, or 37,000 students, are white, while 4 percent are Asian. Last year CPS began partnering with historically Black colleges to recruit teachers. Still, over the past decade and a
half, the number of Black teachers in CPS has dropped precipitously, from 40 percent in 2000 to less than a quarter now. Nationally, more African Americans are becoming teachers, but they leave the profession faster than others often because they are not satisfied, said Richard Ingersoll, education policy professor at the
University of Pennsylvania. Minority teachers tend to teach in schools with high percentages of poor children, little autonomy in terms of what they teach and a lot of standardized testing. This creates a high-stress environment, Ingersoll said. Layoffs also play a role in this turnover, he said. The current CPS layoffs are part of $200 million in cuts that the school system is undertaking to address its budget deficit. CPS board members approved a spending plan that includes massive borrowing and a $480 million hole. CPS CEO Forrest Claypool has said that, if state government doesn’t provide more relief, the district will have to make more job cuts mid-way through the school year. Classes begin after Labor Day. We’re not against any other proposal but we need a strong academic structure for our children.” As the speakers told their stories of disappointment and frustration at the lack of response from both Mayor Emanuel and Alderman Will Burns— State Representative Mary Flowers added fuel to the fire following Jones. “If her child was murdered maybe the Mayor would show up and maybe he’d put his arms around her because her child was murdered. But no, her child is not murdered. Her child is alive and well, her children are capable of doing numerous things. But no one is here to embrace them, no one is here to respect them,” Flowers said. ‘“We’re sick and tired of being sick and tired. This is our community. This community belongs to us.”’ “Can you imagine someone telling you one day that your school will be closed?” Flowers continued in her address to the absent Mayor Emanuel. Your synagogue will be closed, your church will be closed and your kids will not be able to participate? What is it about African-American communities that you think you can just come in and walk all over us, kill our kids, bring drugs and guns into our community and we’re suppose to act like it’s okay?” Joining Flowers was State Rep. Robert Martwick (19th District) State Rep. Jaime Andreade (40th District) and State Rep. Elizabeth Hernandez (24th District) in solidarity of a special bill to support an elected school board. The bill was introduced by State Rep. Martwick and as of Friday has 50 co-sponsors, only 10 short of passing the Illinois House of Representatives. Martwick said, “This is not a crazy concept, this is a concept that our entire system of government was founded on – it’s called ‘democracy’. When the people say they want control and they want accountability and they want a say in the future of the education of the City of Chicago. A say, in the direction of what the schools are going to take in order to educate their children. It’s time for us to give that to them.” The underlying question from the crowd of supporters from Rainbow PUSH, SEIU, Alliance to Reclaim Our Schools, The Hope Center, Pilsen Alliance, Teachers for Social Justice and others is where is the Mayor? Where is Alderman Will Burns? Where are any of the Black alderman from Alderman Pat Dowell, Alderman Will Cochran or even the Black Aldermanic Caucus Chair—Alderman Roderick Sawyer? The faces in attendance were from all cultures and walks of life fighting for a common cause of saving a community that is steadily losing preservation of a history that is slowly being erased. Boundaries of re-mapping and territorial lines should not separate the responsibility that we should hold for our children. As the various unions fight for member’s jobs, and displacement, their representation is real. Time is running out from a standstill of state budget cuts affecting childcare, home care assistance, anti-violence and youth programs to CEDA. Many of the cuts that will take place in CPS classrooms, affect Special Education teachers—resulting in a 500 personnel lay-off. The Chicago Teachers Union Vice President, Jesse Sharkey stresses his disappointment with City of Chicago leaders. “I want to say this on a personal note, the people in power in the city have to listen to justice--they have to listen to our pleas.” They are in full support of the proposal to keep Dyett High School open as a global leadership green technology school and give CTU members backing to push forward. President of the American Federation of Teachers, Randy Weingarten had a strong message to those who dismiss the serious nature of the lives at risk. “These hunger strikers are pursuing justice, not for themselves but for our children. They are not simply saying to the Mayor or to the school board ‘do something’. They have a plan that they have worked on; it is a fantastic plan-it is a plan based on what Mrs. Jones said is based on instruction, social and emotional learning. It is a plan that understands our children and it’s a plan for this school, that this community wants to keep and hold in its hearts.” The biggest fear is wondering ‘what if’ we had fought harder to keep the 50 schools ( that were not replaced) open in our communities nearly four years ago. What if we fought to keep half of those schools open that had a chance stabilize our community? How many of us are willing to put our lives on the line to save our children, to save our community? Ms. Weingarten makes a valid point in saving one of the last heartbeats in the Bronzeville community—our community. Where there’s no heart, there’s no pulse— without a home, there is no heart. SEA Blue Chicago Raises Funds for Prostate Cancer Tatiana Walk-Morris Defender Interim Managing/Web Editor
Ten years ago, three volunteers gathered together to fight a disease that annually claims the lives of thousands of men. The 11th annual SEA Blue Chicago Prostate Cancer Walk & Run kicks off Sept. 13 from 8 a.m. to noon in Lincoln Park. Participants will gather at LaSalle and Stockton along the lakefront to raise money for prostate cancer education and support provided by Us TOO International, a nonprofit which helps those affected by prostate cancer. “This event was founded 10 years ago by three volunteers who wanted to raise awareness for prostate cancer and recognize it as a serious disease—the second leading cancer killer of men following lung cancer,” said Us TOO President & CEO Thomas Kirk. “We extend our thanks to all of the event sponsors, participants, donors and volunteers who make this event possible, in addition to event co-presenter UroPartners. Working together we can continue to provide Us TOO educational resources and support services free of charge.”\ Black men are 60% more likely than white men to be diagnosed with prostate cancer during their lifetime, and are more than twice as likely to die from the disease. Black men are also diagnosed at a younger age (about 3 years younger on average) and are more likely to have “high grade” tumors — the kind of tumors that grow rapidly, spread to other parts of the body, and often cause death, according to a 2013 article by the American Cancer Society. Genetics, socioeconomic factors and the lack of race specific data could account for the disease disproportionately affecting Blacks, according to the American Cancer Society’s article.Because of their higher risk and the fact that the disease hits black men earlier, the American Cancer Society and other organizations recommend that a discussion about prostate cancer screening begin at age 45 for black men (and at age 50 for men at average risk). According to the National Cancer Institute, prostate cancer is the second largest cancer killer of men following lung cancer. Prostate cancer claims the lives of approximately 30,000 men annually, and more than 220,000 men are diagnosed every year. The SEA Blue name emphasizes the importance of the blue ribbon as the official symbol of prostate cancer awareness, Kirk said, adding that the SEA is an acronym for the event’s goal to raise funds to Support, Educate and Advocate for those families whose lives have been impacted by prostate cancer. Activities throughout the day include the 5K CARA-certified race, celebration walk featuring a blue confetti start, educational sessions with physician presentations, free PSA testing, and free lunch, drinks and snacks.There will also be a performance by the Jesse White Tumblers, a DJ and live music. New for this year is the “Family Fun Zone” for kids with face painting, “dress-up in blue” photo area, temporary tattoos, special t-shirts, balloons, a bounce house and more. “Summer produce and winter produce are like third cousins. They’re distant relatives,” my grandmother always began whenever she explained why she never cooked from the Fannie Farmer cookbook she had received as a gift. In the “Boston Cooking School Cook Book,” Farmer’s self-described “scientific” approach based on unchanging precise measurements may have offered a welcome dose of consistency to family cooks rushing to prepare quick meals or kitchen rookies lacking confidence in their ingredient appraisals, but Granny said she kept it only as an instructional piece about how year-round measurements produced standardized “boring” food. Thumbing through my 1918 edition recently, I understood why Granny considered the book, first published in 1908, as a “setback for delicious home cooking.” Farmer’s advice about lettuce describes it as valuable “during the winter and spring when other green vegetables in the market command a high price.” She quotes some cooks as shunning onions as “objectionable on account of the strong odor they impart to the breath.” Granny, who loved mushrooms, paid tribute to seasonal lettuce, tomatoes and onions with this late-summer wedge salad she adapted from a recipe shared by her Greek neighbors in the Mobile, Alabama neighborhood known as “Down the Bay.” Donna Pierce is a 2015 recipient of a Harvard Nieman Foundation Visiting Fellowship who is currently working on a cookbook about historic Black recipes and cooks, She is the former Assistant Food Editor and Test Kitchen Director for the Chicago Tribune and Contributing Editor for Upscale Magazine. Summer Bay Salad 1/2 head garden Iceberg lettuce 4 cups grape tomatoes, halved 1p int sliced button mushroom, broken into bite-size pieces 12 or more pitted kalamata olives, halved, use pimento-stuffed green olives, if desired 1/4 to 1/2 cup Caramelized Onions and Garlic, recipe follows 1 to 2 tablespoons balsamic vinegar 1/4 cup olive oil Coarse salt and pepper to taste Slice about 1 inch of ribbon-thin lettuce strips from the cut iceberg half, separating to measure about 1 1/2 to cups of thin strips. Cut remaining chunk into three equal wedges. Set aside. Place the lettuce strips, tomato halves, mushroom pieces and olives in a medium bowl. Top with 3 to 4 tablespoons caramelized onions and garlic. Set aside. Whisk together the vinegar and olive oil. Add to the vegetables; toss. Season to taste with salt and freshly ground pepper. To serve, place lettuce wedge on a plate. Equally divide the salad among the wedges. Drizzle with more balsamic vinegar and garnish with fresh herb sprigs, if desired. Makes three servings. To make Caramelized Onions and Garlic: Heat oven to 400 degrees. Chop four medium onions and into small pieces or slivers. Separate 1 head of garlic into peeled cloves. Place onions and garlic in an oiled cast iron skillet. Add 1 tablespoon olive oil. Toss with your hands to coat onions and garlic cloves with oil. Cover skillet with foil. Roast 12 minutes; remove foil, and stir with a wooden spoon. Cover; return to oven. Cook 25 minutes; stir. Repeat, stirring every 15 minutes, until onions and garlic mixture is a medium golden brown, about 1 hour total. Remove from oven; stir. Uncover. Roast 8 to 10 more minutes until mixture is a deep golden brown. Stir; set aside to cool completely before adding to salad. Refrigerate leftover caramelized onions and garlic in a food storage bag up to a week.
