Pupusas INGREDIENTS
Masa harina- 2 cups Warm water-1 cup Filling (see variations) (see it next page)
DIRECTIONS
Recommended for people without experience: take a tablespoon of dough and crushed with any flat object so it is a circular about 5 mm thick fabric. It is covered with dough filling, taking care not to fill the banks; then gets another lid made of the same shape and the edge is sealed carefully. Special care should be taken so that the shape is circular , that the filling is well distributed, the layer of dough is not too thick and there are no holes through which can be poured the filling. Cooking can be on a clay griddle heated with wood, iron sheet, Teflon or aluminum heated with propane gas flame or electric cookers. The surface should be about 80째C, it can be lubricated with cooking and eventually be cleaned to prevent the dough from sticking. Pupusa must be placed flat on the surface, remain there for approximately ten minutes; then it should be given back to the other cover cooks, which will be ready in about five minutes.

Variation of pupusas Pupusas de Queso: Fill the pupusa with grated cheese. Use grated quesillo, queso fresco, farmer’s cheese, mozzarella, Swiss cheese or a combination of two or more. Add some minced green chile for a bit of a kick. Pupusas de Chicharrones: These pupusas are filled with chopped chicharrones, or ground, cooked pork, and mixed with a a little tomato sauce. A reasonable facsimile can be made by pulsing 1 cup of cooked bacon with a little bit of tomato sauce in a food processor. Pupusas de Frijoles Refritos: Use either black or red refried beans. Pupusas Revueltas: A tasty mix of chicharrones, cheese and refried beans. Revueltas means roughly “mixed up” in Spanish. Pupusas de Queso y Loroco: A filling of cheese and a tropical vine flower, called loroco. Loroco can be found in jars at many Latin markets
