Our Story Through the Tea Leaves
T
hirty years ago in Salisbury, Connecticut, proprietor of the historic White Hart Inn, John Harney, developed a passion for fine teas. John was introduced to the world of tea by Stanley Mason, who turned to creating his own craft tea blends after years in the corporate world of tea. Over time, Mason taught John both the art and business of the craft. Starting production out of his basement in 1983, John began his own journey in mastering the art of tea blending. Serving his distinctive blends with inn guests, he soon found they were coming back for more. Never did John Harney imagine that his small home-run business in Salisbury, Connecticut would turn into a global operation, now headquartered in Millerton, New York filling 90,000 square feet of warehouse space, and employing over 155 people, making it one of

the largest employers in the Hudson Valley. The company, which sources, blends, and packages their own product from start to finish, has grown from their original 6 teas, to more than 300. Our Teas There are many types of teas— white, green, oolong, and black are among the most common. While not technically teas, herbal infusions made from flowers, spices, etc. are also widely popular. The style of tea produced by each tea estate and garden vary by geography, climate, and farming practices.
Mike’s Tea Ratings Mike rates many of Harney & Sons teas on three attributes. A rating of 0 indicates the tea has none of that particular characteristic and a rating of 5 indicates that it is a primary characteristic.
Briskness refers to a tea’s ability to make your
mouth pucker, also known as astringency.
Body refers to whether or not a tea feels
thick in the mouth, such as Assam, or light such as a white tea.
Aroma refers to whether or not the tea has a pleasant smell, often the most prized part of tea.

Types of Teas
WHITE White teas are among the rarest of teas in the world. They are the least processed. White tea is hand plucked, unopened buds, and often loaded with downy hairs. It brews up a subtle blend of sweetness and vegetal flavors. White teas are grown all over the world, however the best come from Fujian province in China and Sri Lanka in South Asia.
BLACK Black teas range from mellow teas from China to full-bodied teas from Assam, India. Often they are served with milk and sugar. Black teas are withered, rolled, fully oxidized, and fired in an oven. This process creates the warm toasty flavors. In the best teas complex flavors that are reminiscent of honey, malt, and cocoa develop.
GREEN Green teas are the most ancient teas. Originally from China, they were also transplanted to Japan many centuries ago. Green tea production methods vary but the focus is always to fix the green color. Thus, green teas are not oxidized.

OOLONG Oolongs were developed after green and black teas. Originally they were developed in the Chinese coastal province of Fujian and eventually moved down the coast of China and across the waters to Taiwan. Repeated rolling brings the tea to the desired level of oxidation. All this work makes for very fragrant teas that are light in body with flavors reminiscent of peaches or tropical flowers.
FLAVORED This is our version of Chinese scented teas. All types of teas are used as a base. Then flavors, dried fruits, and flowers are added. These blends are a delight to drink. Some of our most popular flavored teas are: Hot Cinnamon Spice, Paris, and Pumpkin Spice.
HERBALS Although not derived from the tea plant, thus not tea, these herbal infusions have an ancient pedigree flowers, seeds, bark, and special flavoring are used to make the best herbal blends. Traditionally, herbals have been used to calm or stimulate or treat minor ailments. Light in body, the colors of herbals vary from pale yellow to brilliant red, with flavors that range from mild to robust.

Tea flavors, like wine, might seem obscure. However, if you think about it, tea’s flavors are similar to foods that are familiar. This chart shows the basic types of teas, and then the break down into schools, and finally another separation. So that makes it easy to understand that Bi Lo Chun is a Tippy Green tea done in the Chinese Traditional method grown in the Spring. And that this tea has Floral, Citrus, and Roasted Vegetal flavors. These were developed by Michael Harney while writing his book.
