Welcome to the Summer 2014 edition of the CR Foodservice magazine, where the theme is looking at what our supply partners do in regards to supporting the mission or goodwill of CR Members. This edition provides an insight into how our suppliers are contributing to our cause. The mission of the Church Resources team is to help our Members achieve their business objectives, and our primary objective is to save our Members time and money, which enables them to redirect resources to their core mission.
In 2013/14, we engaged with our Members more closely than ever, through Member events, face-to-face interactions, email and telephone support and social media.Â
With the festive season fast approaching we thank you for your support this year and wish you and all our members, families and friends a wonderful and enjoyable break.
In the financial year 2013/2014, the team handled 15,748 inbound calls, made 15,002 outbound calls and answered 16,548 emails. That’s over 48,000 customer service interactions in a single year.

Nestlé: aboriginal youth development program Renée Enman, Manager – Indigenous Programs, has built the program up from the ground up. “Since 2010, Year 12 enrolments at RMLA academies have increased by 156 per cent. These young women will be the mothers of our next generation,” she said. “Research shows us that the longer a girl is educated, the better the health and socioeconomic outcome will be for both her, and her future family.” Through consultations with Indigenous leaders and communities, Nestlé realised that Aboriginal girls and women play a pivotal role in the community, yet their needs are often overlooked.
An important part of the involvement with RMLA is the Nestlé Mother Daughter Nutrition Program, which teaches Aboriginal girls and their mothers the value of good nutrition and healthy eating.
So with this focus, Nestlé developed a way to engage in early intervention programs to support and educate young people, in partnership with local Indigenous organisations and communities.
This program, developed with the expertise and hands-on involvement of the Nestlé Head Nutritionist and Head Chef, teaches girls and their mothers how to plan and shop for nutritious, balanced meals, and how to prepare simple, healthy meals.
As part of this, Nestlé partnered with Role Models and Leaders Australia (RMLA), a not-for-profit organisation which aims to develop and empower Indigenous girls through leadership, sport and education. The RMLA Girls program, based in high schools, now works with more than 1000 girls and has significantly increased the number of girls completing secondary school.
Renée Enman said the program demonstrated Nestlé’s commitment to make a difference in the communities where we operate and was at the core of the company’s philosophy of Creating Shared Value. “This program demonstrates that we want to make a difference in communities where we exist – we are walking the talk.”
The program also incorporates foods that are part of a traditional diet. Another important aspect of Nestlé AYDP is that it gives employees the opportunity to volunteer in rural communities working with indigenous youth during school holidays.

Bulla: supporting communities Bulla is proud to contribute to the wider community and give back to those who need a helping hand. In 2010, Bulla formed an alignment with the Starlight Children’s Foundation and in 2013, the now CEO Reg Weine, joined the Foundation’s state Advisory Board as the Chairman & President, driving home the fundraising strategies and goals for Victoria. Since aligning five years ago the entire business has contributed to the partnership, raising more than $135,000 through its efforts. Bulla seeks to challenge its own employees to join in the initiatives it has a hand in, bringing the country sensibilities of its staff to the annual Great Adventure Challenge; an exciting, demanding and fun outdoor team event. Each year, Bulla enters two teams in the program to bike, run, kayak and trek through the multi-terrain course and test the boundaries of their brain and bodies.
In addition to participating, the Bulla staff volunteer for the event organisation committee, while educating them on the different ways they can all make a real difference to the lives of seriously ill children in Australia.
While surviving this challenge might seem like a feat in itself, the Great Adventure Challenge is only a snippet into the endurance these children must have to continue fighting their illnesses. Every minute of every day a child is admitted to hospital in Australia and for thousands of those children, it leads to a diagnosis that changes their lives forever. It’s businesses like Bulla that make a commitment to change this outlook that help charities like the Starlight Children’s Foundation continue to help those less fortunate. To help engage the public and raise awareness, Bulla took to their Facebook page and encouraged likes in exchange for $1 donations to the Foundation’s cause.

Bulla: supporting communities A plethora of people got on board, resulting in an additional $15,000 on top of the money raised for 2011 in the Great Adventure Challenge.
An industry leader in its field, Bulla is committed to giving back to the communities and charities that share likeminded goals.
Bulla found another way to donate in 2012, with a generous $5,000 sponsorship to the Starlight Children’s Foundation Chef’s Charity Cup.
By raising this money and donating product for ongoing events, they have shown other companies that by dedicating time and resources to deserving charities like the Starlight Children’s Foundation, they can activate their team – fulfilling business and personal goals, giving what you can with the resources around you.
Some of the country’s best culinary talents faced off against rival restaurants in a round robin style event, bringing a bit of feel good to the Good Food and Wine Show at Melbourne’s Convention and Exhibition Centre.
In future, Bulla will continue its partnership with the Starlight Children’s Foundation, as well as Foodbank Victoria, whom Bulla has donated more than 57,000 kilograms of food to in the last year. By coupling these commitments with the community programs Bulla supports in regional Victoria, they are ensuring that the family feeling is spread as far and wide as it can be.

Case Study: Peter Canisius House
For many of our Members, managing Foodservice is a business critical activity. CR Member, Peter Canisius House is a facility for adult retreats, youth ministry, staff professional development, conferences, in-service training and workshops. The CR Foodservice solution is a consultancy process that reviews and delivers results addressing key supplier agreements, compliance, supply agreements, waste reduction strategies, operations and delivery. Peter Canisius House had previously outsourced their Foodservice solutions to a contractor.
They approached CR earlier this year about transitioning across to a different model to ensure the different needs of their venue were being facilitated in the most efficient way
Their Executive General Manager, Michele Naughton, declared herself “very happy� with the process and the provision of a trustworthy, expert resource to manage it all.
CR analysed their existing Foodservice agreements and identified a number of cost savings and process improvements that would allow Peter Canisius House to maximise service delivery and ensure the quality of their operation. Heinz: food safety in your facility In the area of food provision a number of existing challenges will continue to need management by operators of kitchens servicing the aged care industry. Primary among these is the issue of hygiene. Lapses in hygiene management can result in bacterial and viral outbreaks, to which the elderly are particularly vulnerable to. This represents one of the single biggest operational risks to any aged care provider and applies equally to both in-house kitchens servicing a single facility as well off site kitchens servicing numerous facilities or individual customers. Managing hygiene requires eternal vigilance on the part of staff, supported by clear and well thought out procedures and risk processes.
Kitchen staff should be managing this risk this on a daily basis reviewing raw material ingredients and avoiding any risk of cross contamination of food preparation surfaces or cooking implements as even trace elements of certain foods can pose significant risks. Simplot: sustainability

Simplot has a responsibility to Australia and ensures there is a sustainable food supply system that is reliable, resilient, and producing food within the environmental limits of the land and oceans. This supply system begins with the primary producer and flows through to the delivery of products to the supermarket shelf and then to the consumer. Each step along the way forms part of a chain of custody which is taken very seriously. As Simplot is involved in agriculture, food processing and seafood, sustainability has been a core focus for some time across all areas. Continuing to respect natural resources, working with partners in the production of good food, and care for the communities and regions where Simplot operates and the people that work for them. Being one of the few frozen vegetable manufacturers in Australia, local manufacturing jobs are created, with vegetable and food processing factories in Devonport and Ulverstone (Tasmania), Kelso and Bathurst (NSW) and Pakenham and Echuca (Victoria). Key to ensuring the approach to sustainable supply of seafood, is the commitment to Dolphin Friendly, the International Sustainability Foundation and the Marine Stewardship Council initiatives. By reducing the amount of packaging, Simplot is also committed to reduce indirect waste streams.

The long term aim of Simplot is to ensure that seafood is sourced sustainably through developing a robust seafood strategy. Energy saving programs are aiming to reduce carbon emissions; this commitment to lower emissions comes from more efficient use of energy, cogeneration plant installs, as well as improvements in refrigeration and efficient lighting. In conjunction with service providers, a variety of changes have been implemented to reduce indirect carbon emissions;
The Simplot potato program was started 10 years ago with a search for a plant with a smaller environmental footprint and lower CO2 emissions. Two new varieties are being trialled; Bondi and Moonlight. Bondi is named thanks to being able to thrive in sandy soil. Over the last three years of testing, Bondi was able to produce crops without a need for fungicide sprays. Moonlight shares Bondi’s reduced need for fertilisers and chemical sprays with the added bonus of requiring 1.5 megalitres less water per hectare.
