Chickpea Cookies

INGREDIENTS 1 tin of canned chickpeas, rinsed 2 tsp vanilla extract 1/2 cup crunchy natural peanut butter (regular peanut butter comes out too oily) 1 tbsp honey 1 tsp baking powder 1/2 cup dark chocolate chips
30 METHOD 1. Mix all the ingredients together and mash until nice and smooth. 2. Add in chocolate chips. 3. Form into little balls and press down into a flat shape. 4. Use parchment paper to avoid sticking. 5. Bake for about 10 minutes at 180C The cookies are super soft when they come out of the oven. Enjoy!
