“EL ESPETO” LA TERRAZA DEL CANAL · JÁVEA
El espeto es una de las especialidades culinarias por excelencia de Málaga y del resto de Andalucía que La Terraza del Canal ofrece en su oferta gastronómica para que puedas disfrutar en Jávea de toda su esencia y sabor. El espeto consiste en espetar, es decir ensartar, tradicionalmente sardinas atravesando su lomo con una caña cuidando que todas estén colocadas en la caña por igual, por encima o por debajo de esta. La razón es que una vez ensartadas al colocarlo sobre las brasas será necesario que la espina de la sardina quede siempre por debajo de la caña ya que, si no fuera así, al darle la vuelta la carne del lomo de la sardina se habrá reblandecido y caerían al romperse. Si todas las sardinas se han colocado correctamente con su espina por debajo de la caña, al darle la vuelta, es la espina la que sujetará a la sardina para que no se caiga sobre la brasa. El espeto más conocido es el de sardinas, aunque hay mucho otros pescados que se pueden espetar como el rodaballo, la dorada o la lubina entre muchos otros, obteniendo así ese sabor especial a brasas que los hace únicos. 52 CLASS & VILLAS

No se sabe la fecha exacta del nacimiento del espeto de sardinas, pero hay constancias históricas de su existencia a finales del siglo XIX. El cuadro La Moraga (1879), del pintor malagueño Horacio Lengo, refleja esta manera de cocinar las sardinas en las playas malagueñas. Una crónica de la visita del rey Alfonso XII a la Axarquía en enero de 1885, recoge que degustó sus famosos espetos. En 1882 ya existía en El Palo el primer establecimiento que ofrecía de forma comercial el espeto de sardinas.
The exact date of the sardine spice is not known, but there are historical records of its existence at the end of the 19th century. The painting La Moraga (1879), by the Malaga-born painter Horacio Lengo, reflects this way of cooking sardines on the beaches of Malaga. A chronicle of the visit of King Alfonso XII to the Axarquia in January 1885, shows that he tasted his famous espetos. In 1882 there was already the first establishment in El Palo that commercially offered sardines.
Los historiadores locales coinciden en apuntar que fueron los pescadores los que iniciaron esta forma peculiar de cocinar el pescado. Que aprovechaban el pescado sobrante y los cañaverales cercanos a la playa para cocinar al espeto.
