FITUR congrega en Madrid el gran foro de negocio e innovación de la industria turística mundial

FITUR, organizada por IFEMA los días 20 al 24 de enero, en Feria de Madrid, cerró su 36ª edición con los mejores datos de su historia, y con una alta valoración por la calidad y cualificación de los contactos. Así FITUR vuelve a registrar un nuevo récord de participación, que coincide con los mejores datos de la industria turística en España y a nivel mundial. Así, a lo largo de sus cinco jornadas la Feria se estima habrá recibido la cifra total de 231.872 visitantes (profesionales y público) lo que supone un crecimiento del 6%. Destaca la participación profesional, con 124.659 visitantes y un crecimiento del 2%, consolidando la alta representación internacional, que ya en sus dos anteriores ediciones acumulaba crecimientos del 7% y 12%, respectivamente. 56 Class & VILLAS

¿Que son los vinos de Pago? La broma recurrente suele ser: “¿Vinos de Pago? Es que hay vinos gratis?”. Pero aquí el termino pago tiene el sentido que conserva en Latinoamérica, el de un territorio acotado y diferenciado, una finca, una estancia. Dentro de una Denominación de Origen, de un término municipal e incluso entre el viñedo de una bodega hay rodales privilegiados, bien porque, por su orientación, el sol los acaricia en las épocas adecuadas, o porque al estar en un cerrillo el viento refresca las cepas mientras, abajo, sus vecinas se cuecen en verano, o quizá porque el suelo se ha formado por erosión o por aluvión. El caso es que esa tierra produce cepas, uvas y en definitiva vinos que tradicionalmente se han venido distinguiendo de los del entorno y que, incluso antes de que se impusiera el embotellado, los vecinos valoraban con admiración, y con nombre propio, el nombre del pago. Algunos han conservado y encumbrado hasta hoy ese prestigio. Al año siguiente, la Ley de la Viña y el Vino convirtió en nacional esa iniciativa manchega y legisló las normas para 62 Class & VILLAS

calificar un vino de pago; principalmente, que la bodega los elabore con sus propias uvas y que estas procedan de un terreno especial. El resultado es una Indicación Geográfica Protegida que el elaborador puede lucir exclusivamente en la etiqueta de ese vino, no en todos los de su bodega. Pero ya antes, muchas algunas bodegas venían bautizando su vino estrella cosechado en una viña muy selecta como Pago de… y, a la vez, un grupo de 25 prestigiosas bodegas habían constituido la asociación Grandes Vinos de Pago para presentarse conjuntamente con un marketing que resaltara la calidad común. Entre ellas, algunas son también, oficialmente, Vinos de Pago. Esas tres utilizaciones han convertido el término Pago en un verdadero lío para quien compra o quien bebe el vino. La denominación oficial viene copiada de Francia, donde hace siglos se clasificó la tierra vitivinícola, otorgando a ciertos parajes, ideales para el cultivo de la viña, la calificación de Cru, Grand Cru, etc. Los vinos más famosos del mundo nacen en esas viñas calificadas.


Con esos mimbres, la D.O. Vino de Pago equivale a una Denominación de Origen Individual que presupone que han de ser vinos de gran calidad, puesto que han de superar muchas exigencias. Y, además, esta D.O. ampara exclusivamente al vino, no a la bodega y toda su producción. En España actualmente hay 15 Vinos de Pago y en nuestra tienda en Teulada tenemos 6: Calzadilla, Dehesa del Carrizal, Florentino, El Terrerazo, Los Balagueses y Otazu. Verdaderamente, todos son territorios especiales, pero cualquier cata o degustación aficionada de estos 15 vinos revela escandalosas diferencias de calidad. En definitiva, se pretendió normalizar una calificación de grandes vinos de España, por encima de su Denominación de Origen. Los grandes vinos como Pago de Florentino, tienen de primer compañero a RIEDEL, potenciador de los vinos…Riedel se amiga con los vinos, haciendo

que el que bebe deguste, que el que degusta se deleite, que el que se deleite goze,,,y así un paso más. ¿EXISTE UNA COPA PARA TODOS LOS VINOS?
