Galician Blond Beef & Basque Cider House Steak Classic Fine Foods bring a new partner on board, Txuleta, to offer you two new breeds: • Galician Blond (Rubia Gallega) is a breed of cattle native to Galicia, a region in the North West of Spain. The cows and oxen are reared for beef only and at the top level can reach a grand age of 17. Selection and grading is based on marbling, colour of the beef and type of fat which all contribute to a unique rich flavour. The distinctive character of the beef is a deep rich flavour, which is provided by the age of the cow at slaughter, when they are at least eight years old. Beef is aged for a minimum of one month but can be aged longer to customer specification. • Basque Cider House Steak is produced from retired dairy cows. Following a four year dairy cycle, cows retire and naturally grow fat. Simmental or Holstein Friesian cattle are most commonly sourced from Germany, Austria, Poland and the Netherlands. This type of beef originated in the Basque Country and is often referred to as the “Basque Cider House Steak” after a tradition of Basque farmers exchanging beef for cider at the Cider Houses. They are selected for their marbling and then dry aged for a minimum of 40-50 days.
British Rosé Veal Alternative Meats has been involved in the promotion, marketing and selling of Rosé Veal since 2004, believing very strongly that it is possible to create a commercially viable product by utilising the dairy bull calf which was traditionally slaughtered at birth because it is seen as a waste and cost to the farmer. Their calves are carefully tended in animal friendly, welfare sensitive environments by partnership farms and are fed on a natural diet. They are housed in straw bedded barns within pleasant housing, with good ventilation and ample room to roam in social groups. After having several different farms supplying their calves, Alternative Meats decided to enter into a very close relationship with Buitelaar Trading Ltd, whose calves are processed exclusively at Woodheads in Lincolnshire. The calves come from only three collections centres in the UK, one of which is in Wrexham which is very close to Alternative Meat’s Cutting Plant and the other two are in Yorkshire and Somerset. The Buitelaar veal has been developed and specified to yield an extremely tender, succulent texture which leaves a clean light taste and a lovely pale pink colour.

Pedigree Mangalitza Pork The first piglets from Otterburn Mangalitza (breed originated from Hungary) were born in May 2012 on their farm and they had to be very patient as they had another 2 years to wait to have their first meat. Otterburn Mangalitza strive to produce the best meat and fat and have achieved the highest levels of marbling in the UK. They have some of the rarest bloodlines of Mangalitza in the UK and are dedicated to keep these lines going. Classic Fine Foods is pleased to offer you a range of different Mangalitza pork cuts but also 2 exclusive products: • Mangalitza black pudding: A fabulously rich black pudding, not only for breakfast but also to accompany scallops, pigeon and other game. • Mangalitza lard: Mangalitza pork, when reared to true maturity and fed correctly, produce 2 types of fats which are often referred to as ‘white gold’. They are high in mono unsaturated fat, full of omega 3, 9 and 12 and have a much better balance of omega 6. They are very light, clean fats and do not leave a greasy feeling in the mouth.
British Bronze Turkey Kelly Turkey offers Bronze turkey, the original turkey coming from Mexico. The white feathered bird, so common nowadays, is a genetic variation.
Milk Fed Baby Lamb Don’t miss the exquisite taste and texture of Axuria lamb. Lambs are exclusively raised on the pastures of the Basque valley of Soule and are carefully bred from three ancient breeds: redheaded Manech, blackheaded Manech, and Béarnaise. Animals are bred on the farms where they are born, following thousand-year-old traditions. Label Rouge accreditation guarantees quality and animal welfare. Lambs roam free all summer at high altitudes and fed exclusively on their mother’s milk. They are not given any extra food nor any antibiotic or hormonal treatment and are raised for a maximum of 45 days, ensuring a consistently sized carcass.

In the 1950`s & 60`s the bronze bird was “phased out” by the larger retailers - they thought that the black feather stubs, left in the skin after plucking, were deemed unsightly by the consumer. Breeding of bronze birds declined and the white feather variety increased dramatically. So, purely for aesthetic reasons, the bronze turkey disappeared from our shelves. In the early 1980`s, the Kelly family took a gamble and gathered together the last remaining bronze breeding stock in the UK – some 300 birds. Don’t miss the perfect turkey this Christmas. Kelly Turkey birds are free range and are a slow growing breed, grown to maturity. They have a corn diet (no growth promoters) and are dry plucked. They offer an exceptional taste and texture.

• Label rouge quality guarantees animal welfare with free-range birds raised in the open air and allowed to roam free all day long. Label Rouge poultry tastes better than standard poultry. It implies a specific breed (slow growing hardy breeds), a slaughtering age (around twice longer than standard poultry), a breeding method (free range) and a specific diet (a percentage of cereals, depending on the animal). • ‘Excellence’ range has been created by Mieral after France decided that only chicken, capon and turkey will have the Bresse AOP label. Cheese with ‘Denominación de Origen Idiazabal’ Produced in the Basque Country and Navarre in northern Spain. It is an artisanal product made by shepherds (like the very wellknown and awarded Mr. Ricardo Remiro) using pure unpasteurised milk from their own breeds of Latxa sheep. All Artzai Gazta Idiazabal cheese is matured for at least three months. The cheese has a homogeneous pale yellow colour with a hard rind. It has an intense and characteristic aroma of matured sheep´s milk. The taste is clean and consistent with hints of natural rennet.

Cheese From Valdeón Valley Deep tectonic trough hidden on the southern spur of Picos de Europa mountain range, in the province of León. The rich aromatic milk produced in these fertile green pastures makes the Valdeón cheese one of the best Spanish blue cheeses. Its main secret lies in the quality of the milk produced in this region. It is made with 90% pasteurised cow’s milk and 10% goat’s. The percentage of goats milk varies depending on the season. Valdeón Cheese has achieved the Protected Geographical Indication status. It is a bold and salty cheese with a soft texture and a very strong and spicy taste.
