Kaviari produces ethical farmed caviar, as good as any wild caviar . It has close relations with carefully selected fish farms worldwide and choose the best fish and best roes. These partnerships with the farms ensure water quality and high levels of welfare. Kaviari has an unrivalled experience of the extraction, cleaning, salting and packaging processes. It chooses a long maturation period of 4-6 months for the caviar to reach perfection. Every tin is individually labelled with the origin, species and batch number to guarantee complete traceability.

It has continued to perpetuate its expertise and passion for poultry, following the same original farming methods. The birds are living in the surrounding nature of the vast Landes forest in total freedom, without barriers or fences, in quiet peace, away from the hubbub of industrial poultry houses. This allow the chickens to develop their muscles: the fat enters the muscles, for a tender and marbled meat. Bird feed primarily on local corn, produced on the farm, along with all the delicacies of the undergrowth (herbs, seeds, etc.) which give it a distinctive, unique flavour.

It is the only company to work with ‘Lampiño’, the purest 100% Iberico breed. The pigs require more acorns than other breeds, providing an intensive flavour and aromas. Juan Pedro Domecq has a limited artisanal production of 3,000 pigs a year, guaranteeing homogeneous quality and has obtained reiterated international recognition, winning several times the 3 gold stars in the ‘Great Taste Awards’.

Targe follows artisanal and ancestral methods to craft unique products. Only farmed French origin pigs are raised, fed on cereals with added vegetables, vitamins and mineral salts. Targe uses only the most delicious parts of the pig and natural spices & flavourings. Targe saucissons are aged for 4-6 weeks without using any industrial methods to accelerate the maturation process. Don Bocarte anchovy fillets come from the heart of Bay of Biscay in Spain. They are made using young anchovies caught only from March to June (fish is at its best in terms of fat content and flavour). Only fresh tuna is used - without freezing - to guarantee full flavour and perfect texture. Don Bocarte developed its own production method in order to achieve great culinary products. Its technique ensures that the fish caught do not suffer. This improves flavour and texture of the final product.

Jean-Yves Bordier’s motto is “give time to time”. He selects only the best raw materials. The yoghurts come from a Breton farmer and made from whole milk. For his butter, he sources only excellent milk from Brittany/ South Normandy, supporting local farmers who work organically or within reasonable practices. Jean-Yves Bordier is the last artisan butter maker still kneading his churned butter in a wooden cylinder. He chooses traditional methods over industrial processes: it takes 3 days to produce butter by hand, 6 hours for industrial butter. Kneading develops complex flavours with a smooth and silky texture.

The mill Cornille is located in the heart of the Vallee des Baux in Provence since the seventeenth century. Their speciality is the ‘Fruity Black’ olive oil, that is only produced in France. It is made from four varieties of olives: Salonenque, Beruguette, Grossane and Verdale. The olives are stored for 48 hours, without air before crushing. This causes variation and greater complexity of the aromas. After the olives are crushed, the paste is pressed to obtain a very sweet oil without bitterness.

H OW T O P L A C E Y O U R O R D E R All orders can be placed via email, fax, over the phone. Voicemail orders may be left on our answer phone after office hours. These orders will be processed on the next working day, and delivered at the next available opportunity. We require you at the time that you are placing your order to state company name, account number, name of person placing the order and item codes. The Company will NOT accept any liability for errors resulting from orders placed over the telephone.

DELI V ER IE S All goods are dispatched and delivered by our own BRC approved refrigerated transport. Deliveries are made Monday to Friday 6am to 2pm. We reserve the right to

use a third party logistic company as an alternative. The customer is responsible for providing a safe delivery area as Classic Fine Foods will NOT accept responsibility for any goods stolen or damaged after delivery. We prefer a signature at the time of delivery however if this is not available and if no contact was made within 24 hours of delivery then Classic Fine Foods may see it as proof of delivery.

CR EDIT T ER MS Credit terms are offered only to applicants which meet our criteria, and negotiated terms must be adhered to. Please ask your Sales Executive for a copy of our Credit Application. New customers will be supplied on Cash on Delivery basis only. All requests for monthly credit facilities must be made by completing an ‘Application for Credit Form’ which can be obtained on request. Deliveries are available to non-account customers, provided payment is made prior to the goods leaving our warehouse (formerly known as COD).
