LOCH FYNE OYSTERS
Loch Fyne
®
Loch Fyne are the only Oyster farmers in the UK to have their own hatchery and nursery, where they nurture and grow their Oysters. Each year they retain enough seed Oysters for on-growing on their beach sites, with the remainder supplied commercially to their partner growers throughout the islands and west coast of Scotland. Once harvested, every oyster is transferred to their depuration facility at Cairndow. Here, each oyster is size graded and purified in filtered natural seawater. TERROIR - Cairndow - Loch Fyne - Scotland - UK. FLAVOUR - The taste of an individual oyster very much reflects the environment in which it is grown - from open sea sites and bays to sea lochs with lower salt levels. The flavour can range from salty on the exposed Atlantic coast to almost sweet where there are high volumes of fresh water run off due to rainfall.

PRAT-AR-COUM SPECIALES OYSTERS For Oysters to become “Speciale” (very flesh), they are reared on farms edged with sheltered deciduous forest in the background of Abers. The water is rich in plankton made contributions in organic matter generated by decomposition and the infusion of the leaves of the nearby forest in the water of Aber. Oysters are directly spread on the floor and worked with a big boat. TERROIR - The Land of Abers - Finistère/Brittany - France. An aber is an estuary , an ancient river valley invaded by the sea. The “land of the Abers” owes its name to two of them, the aber Wrac’h and the aber Benoît . It is located in a triangle whose summits are SaintPabu , Plouguerneau and Kersaint-Plabennec, 25km north of Brest. FLAVOUR - A round oyster, plump , thick, creamy colour of caramel. In the crunch, we discover any thickness, chews, opulent material. The special Prat-Ar-Coum is rich in contrasts. Both sweet with the sweet roundness and toned with his iodine final point.
