PROTECTED CHEESE CERTIFICATIONS* At Classic Fine Foods we offer several products distinguished by a "Protected Designation of Origin" label (PDO: UE-UK AOC: FR), a testimony to the diversity of the terroirs and traditional know-how. The PDO is the oldest of the quality labels and 45 French cheeses proudly display it, including Comté, Rocamadour and Cantal. Originally created to combat fake cheesemakers, the French State implemented the concept of "Contrôlée" in 1411 to prevent malicious people from misleading consumers with a Roquefort not made according to the traditional method. Each PDO has its own specificities and there is a list of criteria for each of them to be strictly adhered to in order to obtain the protection such as region of origin, animal milk, manufacturing method etc. To ensure that these cheeses are processed properly, PDO producers are checked at least once a year. The PGI has several similarities with the PDO. The PGI (Protected Geographical Indication) is a European label that marks the territorial anchoring of a cheese. It has a certain notoriety being associated with a particular know-how and draws its specificities from its geographical origin. However, its award criteria differ from those of the PDO. The PDO requires that production, processing and preparation of the product take place within the territory defined in the specifications. In the case of the PGI, at least one of these steps must take place in the reference area, but not necessarily all three. *AOP (Appellation d’Origine Protégée)/ AOC (Appellation d’Origine Controlée) = PDO (Protected Designation of Origin). IGP (Indication Géographique Protégée) = PGI (Protected Geographical Indication)

The king of cheeses, is made exclusively from raw milk. Its creamy taste is full and generous. The longer the maturation period, the more flavourful the Brie. History tells us that it was so greatly appreciated by King Louis XVI, and that he was guillotined for this reason: stopping in Varennes to taste some, his pursuers are said to have finally caught him.

Pont-l’Évêque is one of the oldest cheeses from Normandy, formerly called “Angelot” then “Augelot” named after its production area, the Pays d’Auge. It later took the name we know today. Designed by Cistercian monks, its shape has also evolved, and has become square in order to be differentiated from other cheeses in Normandy.

Valençay is one of the classic French cheeses made in the province of Berry in central France. It is named after the town of Valençay in the Indre department, France. Valençay is an unpasteurised goats milk cheese. Its rind has a rustic blue-grey colour which is made of the natural moulds. The rind is then darkened by dusting charcoal powder.

Livarot is wrapped in 5 rings of dried reed mace (an aquatic plant produced only for this use) to hold the cheese, which tends to sag due to its low fat content. For this reason, it has been referred to as “The Colonel” as the rings resemble the stripes on a colonel’s uniform. Langres is a washed rind cheese, hailing from the Langres plateau which lies on the cusp of two great wine producing regions - Champagne and Burgundy. The cheese’s distinctive orange rind is gained through a series of washes, first in annatto (a natural colourant used to develop the cheese’s ruddy hue) and then in Marc de Bourgogne, an eau de vie made from Champagne grape skins.

The oldest cheese is Roquefort. Charlemagne was a regular consumer. It is a 100% raw lacaune sheep’s milk cheese. It is not made all year round and must be matured in the natural caves of the commune of Roquefort-sur-Soulzon in Aveyron. The draughts flowing through the faults in the rock create a favourable atmosphere for the development of Penicillium Roqueforti.
