CLASSIC FINE FOODS GROUP: OUR STORY 2000-2001: THE EARLY STAGE

FROM 2002: EXPANSION ACROSS ASIA ince then, Classic Fine Foods has continued its expansion S across Asia with the opening of different subsidiaries.

The Classic Fine Foods Company was registered in 2000 and began its commercial activity in 2001 buying the companies that formed the Olivier group. Operating in Hong Kong, Singapore and Malaysia, Olivier was the first company to develop an Asian network of fine food import and distribution companies, answering the needs of foreign restaurants expanding into Asia and the needs of local chefs looking for high quality ingredients from Europe.

2002: Opening of a subsidiary in Philippines

FROM 2004: EXPANSION INTO EUROPE xpansion into Europe shows the vision of Classic Fine Foods E to develop such a network of subsidiaries across the globe that it would become the only Fine Foods company able to support and supply chefs with the products they needed as their careers took them from country to country throughout the world. 2004: Opening of a subsidiary in United Kingdom 2005: Opening of a subsidiary in Vietnam

Classic Fine Foods was bought by Metro in 2015, the leading international specialist in wholesale. Metro operates in 35 countries and employs more than 150,000 people worldwide.

Classic Fine Foods opened its first TheTasteLab by Classic Fine Foods in London in 2016, followed by the opening of another in Singapore in 2018. TheTasteLab by Classic Fine Foods is a place for chefs to meet, share their experiences and learn in a relaxed, yet highly professional environment.

The Double Fermentation is an innovative process, paving the way for a new generation of natural, aromatic profiles.

• Fermentation is the natural process, which instigates the development of aromas and flavours in the cocoa bean. The beans are placed in wooden or rattan boxes, covered and stirred regularly throughout the 4-6 day fermentation period. • After this period, a new ingredient is introduced into the boxes to initiate a second stage of fermentation. Fruit pulp is added, naturally high in sugars which triggers a second fermentation, imparting new, distinctive aromas and flavours to the final product. • The beans are then sun-dried reducing the moisture content of the beans, ready to be sent to the factory.

Made with the same blend of fine cocoa as Guanaja, it is a technical solution intended to boost the chocolate intensity of your recipes. Indeed, in some recipes, the cocoa butter contained in chocolate couvertures limits the amount of chocolate use (the chocolate flavour is then quite mild and the colour is light) or requires the use of cocoa powder (the flavour and colour are naturally less chocolatey). Coeur de Guanaja offers a smoother texture and intense chocolate flavour and colour. It will bring lightness and creaminess to many of your creations as well as reinforcing the chocolate intensity of a wide range of applications.

It took four years of research and exploration to find the ingredient which gives Blond Orelys its rich flavour: Mauritian muscovado sugar. To obtain this natural sugar, sugar cane is crushed then pressed to extract the juice. This juice is heated, dried and finally ground down. This chocolate’s sweet gourmet freshness is clear from the very first bite thanks to its classic liquorice aromatic notes which are later complemented by hints of biscuit.

Two different processes create two different flavour profiles

Nutty Notes

Intense Caramelised Flavour

At the start of the cooking process the dried fruits and sugar are added to the pan so that they cook together. Cooking is stopped when the edges begin to caramelise. This process called “sablage”, enhances the natural flavour of the fruit.

First a caramel is made by pouring sugar into a cauldron and heating it. Once the caramel is the proper colour, nuts are added and briefly stirred into the caramel. Only roasted nuts are used. This process has been the signature of Valrhona’s pralines for 90 years and produces an intensely caramelised praline flavour.

In 1946 André Ponthier and his wife founded their fresh fruit company. They expanded, buying more land and planting apple trees, blackberry bushes and raspberry canes. The family owned 80 hectares and it was here that their son Yves Ponthier began learning the ropes before taking on the responsibility of overseeing production, then in 1989, the leadership of the family business

PONTHIER’S PIONEERING APPROACH • 1986: Frozen fruits and purees. André Ponthier developed a range of frozen summer berries grown in Corrèze (strawberries, raspberries, blackberries, blueberries and redcurrants)

SINGLE ORIGIN & NATURAL TASTE • Each fruit is from a single origin and variety, sourced carefully from their producer partners. The fruit is only harvested once per year to guarantee the quality, ripeness and consistency • Ponthier does not use any additives (colouring, preservatives or flavours) so the product is as close to the original taste, colour and smell of the original fruit •

Minimal sugar is added, and only where needed. Ponthier only uses natural pure cane sugar

The Pure Emotion Range

Welcome to the universe of Pure Emotion, a revolution in the world of decoration. It consists of neutral and printed decorations (finished and to be finished) with only 100& natural ingredients: No colourings, no preservatives, no added aromas. The composition of Pure Emotion products is deliberately very restrictive with only three types of ingredients: chocolates, sugars and other plant-derived natural products (fruits, herbs, flowers, cocoas, starches…) For this amazing range, PCB uses the freeze-drying process which consists of two main steps: quick freezing of the product and sublimation in water. Compared to other food-drying preservation processes such as dehydrating, freeze-drying allows the fresh colour and taste of products to be preserved. It also enables around 95% of the nutritional qualities from the fresh product to be preserved (notably elements sensitive to heat and oxidation), whereas dehydrating only preserves around 50%. These products, which have lost 95% of their water content, can be kept for at least 12 months.

HOW TO PLACE YOUR ORDER All orders can be placed via email or over the phone. Voicemail orders may be left on our answer phone after office hours. These orders will be processed on the next working day and delivered at the next available opportunity. We require you at the time that you are placing your order to state company name, account number, name of person placing the order and item codes. The Company will not accept any liability for errors resulting from orders placed over the telephone.

CREDIT TERMS Credit terms are offered only to applicants which meet our criteria, and terms must be adhered to. TheTasteLab by Classic Fine Foods opened back in 2016 as a place for chefs to meet, share their experiences and learn in a relaxed, yet highly professional environment. We offer a programme of Pastry and Cuisine classes and a variety of events including training courses, workshops and demonstrations. These are run either by our resident pastry chef, Denis Dramé MCA or by some of the world’s greatest chefs, who are willing to come and share their knowledge and experiences. These chefs are often eager to return to give further classes in view of the facilities at their disposal. We are proud of the opportunity we give chefs to hone their skills, learn new techniques and stimulate their creativity. Come and join us for a voyage of discovery and find out more about how TheTasteLab is just getting better and better!

Denis joined Classic Fine Foods to run TheTasteLab. He began his career at the City Bakery in New York. He has worked alongside Raymond Blanc and Benoit Blin at the iconic 2-star Michelin restaurant Le Manoir aux Quat’Saisons and after a spell at Dainesfield House, Denis took on the role of Head Pastry Chef at Pennyhill Park.
