Hello Readers, December is an important month for us. It is the month for Christmas but more importantly the month for family! We all dream of a Caribbean Christmas….the warm sunshine hugging our bodies, the faint chuntey/soca/dancehall always buzzing in the background, the exotic dishes calling our names and perhaps what we secretly enjoy the most is the endless flavors of rum and cocktails to soothe our taste buds while relaxing on the sandy beaches and swimming in the Caribbean Sea. It is no secret we fantasize about spending Christmas in the Caribbean, especially if we have our roots there as we are often plagued by nostalgia. While most of the Caribbean countries share similarities in the way they celebrate Christmas, there are some differences as well. The
month of December kick starts with cleaning, shopping and decorating of course. And most persons choose to make their delectable rum laden black cake and have it sit for a few weeks to allow the flavors to bond adequately. The holidays generally begin with decorating the homes and businesses with tinsels, streamers, and balloons and of course the Christmas tree! There are tons of staff parties and social gatherings which require we wear our best smile and outfit as we engage in small talk and innocuous laughter followed by some exotic dance moves incited by our enviable Caribbean cocktails. On the eve of Christmas, the day buzzes with last minute preparations such as making the mouthwatering pepper pot, garlic pork, ginger beer and fruit cakes. Later families engage in melodious caroling, followed by mass at church. Others however, choose to attend
parties and nightclubs to gyrate to the irresistible Caribbean music until the wee hours of Christmas morning. On the day of Christmas, we awake to the comfort of carols in the home and the excitement of gifts under the tree. After the much anticipated gift exchanges and hearty breakfast, most families spend the day bonding and making cherished memories while others choose to go to church, yet others enjoy watching the masqueraders dance and perform on the streets.

Guyanese Pepper Pot Ingredients
4 lbs of meat- (beef/mutton/venison/pork/chicken) 1 cup cassareep 2 cinnamon sticks 2 inch piece orange peel 4 cloves garlic 4 wiri wiri peppers 1/2 cup brown sugar 1 1/2 tsp salt 8-12 cups water 4 springs thyme 6 cloves (optional) 2 small onions *tablespoon veg oil
Preparation and Method
Preparation Time: Approx. 15 Mins Cooking Time: Approx. 3 hours 1. In a large/deep pot, heat the oil and add the pieces of meats (wash and drain first) and try to

brown a little. Then add all the other ingredients (except the water) and give it a good stir. Next up add the water (make sure everything is covered) and bring to a boil. 2. As it comes to a boil you’ll need to skim (and discard) the sort of scum at the top of the pot and during the 3 hr braising process, you’ll want to do the same for any oily fats you see on the surface. Now that it’s boiling, reduce to a very gentle simmer, cover the pot and let it go for 3 hrs. Yes, you can use a pressure cooker to help with the lengthy cooking time, but to be quite honest... you’ll lose some of that lovely flavor you ONLY get with slow cooking 3. After 3 hours the liquid would have reduced by about 3/4, so it will be intense in both color and flavor. Serve with any type of bread you prefer. For more intensity, allow to sit for a few days and reheat before you eat.

Ingredients 2 tablespoons dried parsley 2 tablespoons ground dried rosemary 2 tablespoons rubbed dried sage 2 tablespoons dried thyme leaves 1 tablespoon lemon pepper 1 tablespoon salt 1 (15 pound) whole turkey, neck and giblets removed 2 stalks celery chopped 1 orange cut into wedges 1 onion chopped 1 carrot chopped 1 (14.5 ounce) can chicken broth 1 (750 milliliter) bottle champagne

Preparation and Method Total Time: 3 ½ Hours 1. Preheat an oven to 350 degrees F (175 degrees C). Line a turkey roaster with long sheets of aluminum foil that will be long enough to wrap over the turkey. 2. Stir together the parsley, rosemary, sage, thyme, lemon pepper, and salt in a small bowl. Rub the herb mixture into the cavity of the turkey, then stuff with the celery, orange, onion, and carrot. Truss if desired, and place the turkey into the roasting pan. Pour the chicken broth and champagne over the turkey, making sure to get some champagne in the cavity. Bring the aluminum foil over the top of the turkey, and seal. Try to keep the foil from touching the skin of the turkey breast or legs. 3. Bake the turkey in the preheated oven for 2 1/2 to 3 hours until no longer pink at the bone and the juices run clear. Uncover the turkey, and continue baking until the skin turns golden brown, 30 minutes to 1 hour longer. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Remove the turkey from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area 10 to 15 minutes before slicing.

1 oz piece fresh ginger root, peeled and crushed Peel of a medium lime 1/3 cup fresh strained lime juice ½ cup sugar 3¾ cups boiling water 1 teaspoon active dry yeast ¼ cup lukewarm water (110°F to 115°F)
Preparation and Method
1. Starting one week ahead, combine the ginger, lime peel, lime juice and sugar in a large bowl, and pour a boiling water over. Stir until the sugar dissolves completely, and let the mixture cool to room temperature. 2. In a small bowl or cup, sprinkle the yeast over the lukewarm water. Let stand for 2 - 3 minutes, then stir to dissolve the yeast completely. Set this small bowl in a warm, draft-free place for about 5 minutes, or until the mixture begins to bubble and almost double in volume. (If no bubbles develop, discard the mixture and repeat the process with fresh yeast). 3. Add the yeast to the ginger mixture and stir thoroughly. 4. Cover the bowl tightly with foil or plastic wrap, and place it in a warm, draft-free place. Let the mixture ferment for a week, stirring every other day. After a week it will be mildly carbonated. 5. Strain the ginger beer through a fine sieve and, using a funnel, pour the liquid into a 1-quart glass or ceramic bottle and cork it tightly. 6. Let the beer ferment at room temperature for an additional 3 or 4 days, then refrigerate until thoroughly chilled. 7. Serve the ginger beer in chilled tumblers, with or without ice cubes.

1½ lb mixed dried fruit 2 oz mixed peel 1 tsp mixed spice 4 oz chopped peanuts 8 oz soft brown sugar 8 oz margarine 6 eggs ¼ tsp baking powder 8 oz flour ½ bottle red wine and/or rum 1 lb sugar for making caramel 2 tbsp red wine for making caramel
Preparation and Method
1. Wash and dry the fruits, then grind or chop the fruits, nuts and fruit peel together. 2. Caramel: Heat the sugar and when melted, add the wine. Simmer until dark color is obtained. 3. Mix the wine and the rum and pour over the
fruits. Leave to soak for a day or more (up to three months). 4. Grease and doubly line an 8 inch cake pan. 5. Cream the sugar and margarine. Add eggs one at a time (beaten or unbeaten). 6. Add fruits and stir well. Add enough caramel to make it as dark as desired. 7. Sift the flour, baking powder and powdered spice together. Add a little at a time and fold in. Mix to a soft dropping consistency using wine or rum. 8. Pour the mixture into the prepared pan and bake in a slow oven, 300°F for 2 hours (on middle shelf). 9. Pour wine and rum over immediately after cake is baked. Repeat 3 or 4 times. Note: Store-bought caramel may also be used.

Preparation and Method 1. Sift together the flour, baking powder, ginger, nutmeg, cloves, and cinnamon; set aside. 2. In a medium bowl, mix together the shortening, molasses, brown sugar, water, egg, and vanilla until smooth. Gradually stir in the dry ingredients, until they are completely absorbed. Divide dough into 3 pieces, pat down to 1 1/2 inch thickness, wrap in plastic wrap, and refrigerate for at least 3 hours. 3. Preheat oven to 350 degrees F (175 degrees C). On a lightly floured surface, roll the dough out to 1/4 inch thickness. Cut into desired shapes with cookie cutters. Place cookies 1 inch apart onto an ungreased cookie sheet. 4. Bake for 10 to 12 minutes in the preheated oven. When the cookies are done, they will look dry, but still be soft to the touch. Remove from the baking sheet to cool on wire racks. When cool, the cookies can be frosted with the icing of your choice.

Preparation and Method
1. Beat cream cheese, 2/3 cup sugar, 3 eggs, and 1/2 teaspoon vanilla with mixer until smooth. Pour into well-greased 9 inch pie plate. 2. Bake 22 to 25 minutes at 350 degrees F. Turn oven off. Remove cheesecake and cool for 5 minutes. 3. Combine 3 Tablespoons sugar, sour cream, and 1 teaspoon vanilla. Spread over warm cheesecake and return to oven for 5 minutes. 4. Cool and refrigerate.

It should be simple yet meaningful. For instance if your goal was to lose 20 pounds and you accomplished that in the time frame you defined, you can reward yourself by getting a new outfit. Remember it doesn’t have cost you an arm and a leg. It’s basically a motivation to keep going.
While you are responsible for making your own resolutions, there is no fixed rule that says you have to do it alone. You can partner with someone or even a group that has the same interest and work towards it. For instance, you can get a work out buddy, a travel companion or form a book club. It all depends on what your goals are and finding someone who has a mutual interest. Livingston Larned Listen, son: I am saying this as you lie asleep, one little paw crumpled under your cheek and the blond curls stickily wet on your damp forehead. I have stolen into your room alone. Just a few minutes ago, as I sat reading my paper in the library, a stifling wave of remorse swept over me. Guiltily I came to your bedside. There are the things I was thinking, son: I had been cross to you. I scolded you as you were dressing for school because you gave your face merely a dab with a towel. I took you to task for not cleaning your shoes. I called out angrily when you threw some of your things on the floor. At breakfast I found fault, too. You spilled things. You gulped down your food. You put your elbows on the table. You spread butter too thick on your bread. And as you started off to play and I made for my train, “Hold your shoulders back!” Then it began all over again in the late afternoon. As I came up the road I spied you, down on your knees, playing marbles. There were holes in your stockings. I humiliated you before your boyfriends by marching you ahead of me to the house. Stockings were expensive‐ and if you had to buy them you would be more careful! Imagine that, son, from a father! Do you remember, later, when I was reading in the library, how you came in timidly, with a sort of hurt look in your eyes? When I glanced up over my paper, impatient at the interruption, you hesitated at the door. “What is it you want?” I snapped. You said nothing, but ran across in one tempestuous plunge, and threw your arms around my neck and kissed me, and your small arms tightened with an affection that God had set blooming in your heart and which even neglect could not wither. And then you were gone, pattering up the stairs. Well, son, it was shortly afterwards that my paper slipped from my hands and a terrible sickening fear came over me. What has habit been doing to me? The habit of finding fault, of reprimanding‐this was my reward to you for being a boy. It was not that I did not love you; it was that I expected too much of youth. I was measuring you by the yardstick of my own years. And there was so much that was good and fine and true in your character. The little heart of you was as big as the dawn itself over the wide hills. This was shown by your spontaneous impulse to rush in and kiss me good night. Nothing else matters tonight, son. I have come to your bedside in the darkness, and I have knelt there, ashamed! It is feeble atonement; I know you would not understand these things if I told them to you during your waking hours. But tomorrow I will be a real daddy! I will chum with you, and suffer when you suffer, and laugh when you laugh. I will bite my tongue when impatient words come. I will keep saying as if it were a ritual: “He is nothing but a boy‐a little boy!”
