do not leave foods between 40 – 140 degrees Fahrenheit for more than 2 hours. The 2 hour rule is important because microorganisms grow well between 40 – 140 degrees Fahrenheit. Now that we’ve covered the pre-packing basics, let’s focus on getting that lunch packed! Clean your hands in hot, soapy water for at least 20 seconds before handling foods to stop the spread of illness-causing bacteria. Check the inside of the lunch box, and clean it thoroughly if you see dirt, moisture, or other residues that don’t look like they should be in a lunchbox. An insulated bag is a good choice to use for school-day or work-day lunches. Insulated bags help keep lunches cold while being carried to school in backpacks, being stored in lockers, or on classroom shelves. Most lunches will head out the door around 7 or 8 am, and won’t be eaten until 10:30 am or 12 p.m. That means food could be sitting out at room temperature for 2.5 to 5 hours. Recall that foods should not be left out for more than 2 hours (except, of course, those foods that are shelf-stable at room

Lunch time is a favorite time of the school day for many students, so be sure to pack a safe lunch if your student will be bringing their lunch from home. If food safety precautions aren’t taken when packing lunch, bacteria can be waiting to greet your child when they start nibbling on their lunch. Start with safe food. When storing, preparing, and serving food at home, remember these four easy steps: clean, separate, cook, and chill. Clean hands, utensils, and work surfaces before working with food. Make sure to separate ready-to-eat foods like fruits and vegetables from potentially hazardous foods like raw meats. Cook and reheat foods to safe minimum internal temperatures as measured with a food thermometer. Chill foods at temperatures at or below 40 degrees Fahrenheit, and

Who owns the rights to our own bodies? Today we’ll look at two different examples that make the answer to that question not nearly as clear-cut as you might think. The Supreme Court is hearing a case involving whether a company can patent the genes in our own bodies. The case involves a company named Myriad Genetics. Myriad found two genes called BRCA1 and BRCA2. These two genes are markers for an increased risk for breast cancer. Although these genes are in your body, Myriad claims you don’t have the right to know that they are in your DNA unless you pay Myriad $3,000. Myriad claims that any test for either of those two genes will violate their patent on those genes. They claim they spent the time

The second example involves our cells or tissue once it is removed from our body. In the past all tissue once it is no longer part of the body was simply considered medical waste and a researcher could do with it what he/she wanted. Now, in order to use the tissue in research, the patient has to give signed consent. Once you sign that consent, you have no rights to that tissue or those cells anymore. Donating cells or tissue to science sounds like a noble thing to do, but the rub comes in those rare cases where researchers, universities and companies are all making millions from cells that came from your body and you have no rights to any of that money. All you have to do is pay off the hospital bill you incurred when you had the surgery. Let me be clear here, we are not talking about cells that were changed in some way by the researchers, we are talking about cells from your body that had mutated in some way in your own body. This is the situation that is explored in Rebecca Skloot’s book “The Immor-

tal Life of Henrietta Lacks.” Henrietta Lacks was a poor black woman who died at Johns Hopkins Hospital in 1951 of cervical cancer. Cells from her cancerous cervix were taken without her permission and were given to a researcher who was trying to find a way to grow human cells outside the body. Most human cells will only divide between 40 to 60 times before cell division just stops. The cancerous cells from Henrietta Lacks continued to divide and still to this day those cells are some of the most common cells to be used in all kinds of research. Companies have made billions from growing and selling Henrietta Lack’s cells without a dime going to her heirs. The book “The Immortal Life of Henrietta Lacks” is an excellent book, and raises some legitimate concerns about who should profit from our DNA. I would highly recommend it. That book and the writings of my daughter before she died are what inspired me to try writing.
