ServSafe® Food Safety Classes Now Available in Adams, Brown, and Highland Counties Food safety in any establishment— whether it be a restaurant, convenience store, school cafeteria, or other venue—is important! Individuals dining in those places want to know they are eating safely prepared food that isn’t going to leave them feeling ill later. It is vital to have foodservice employees that are properly trained in handling, preparing, and storing food so that food in their establishment is safe to eat. To help train foodservice employees in food safety, the Ohio State University Extension Offices in Adams, Brown, and Highland Counties will start offering ServSafe® Food Safety classes. ServSafe has become the industry standard in food-safety training and is accepted in almost all United States jurisdictions that require employee certification. The ServSafe Program provides accurate, up-to-date information for all levels of employees on the handling of food—from receiving and storing to preparing and serving. ServSafe has two levels of training for foodservice staff: ServSafe Employee and ServSafe Manager. The ServSafe Employee Training meets Ohio Department of Health (ODH) Level 1 Certification in Food Protection Training requirements, and the ServSafe Manager Training meets ODH Level 2 Training requirements. Ohio State University Extension Adams/Brown/Highland Counties is an approved provider of Level 1 and Level 2 Trainings through ODH. Amy Habig, Family and Consumer Sciences Extension Educator, will be the instructor for the ServSafe classes.

Habig is a Certified ServSafe Instructor and Registered ServSafe Examination Proctor. The following individuals should consider attending ServSafe Food Safety Training: foodservice workers and food handlers at restaurants, food handlers at convenience stores, school foodservice workers, members of civic groups who prepare food for sale or consumption, and food managers. The 1-day Employee (Level 1) training covers basic food safety, personal hygiene, cross-contamination/allergens, time and temperature, and cleaning and sanitizing. The 2day Manager (Level 2) training covers all the concepts covered in Level 1 training plus safe food preparation, receiving and storing food, Hazard Analysis and Critical Control Points, food safety regulations, and methods of thawing, cooking, cooling, and reheating food. Upon successful completion of the class, participants will receive a certificate of completion. Employee (Level 1) training will be held on Tuesday, December 18, 2012 from 8:30 am to 12:30 pm at the Adams County Regional Medical Center, 2nd floor conference room (230 Medical Center Dr., Seaman, OH 45679). The fee for the Employee (Level 1) training is $30 per person. Registration deadline is Monday, December 3, 2012. Veterans Corner - November Reflections Another year is speeding to a close. Each Veterans Day is a reminder of all those veterans who have gone from our midst. Speaking from my own experience, I remember many of the veterans that were members of the local VFW and American Legion posts here in West Union when I became a member in the 1970’s. Among those names are Clarence Harmon, Charles Hook, Robert Satterfield, Jack Crackel, Charlie Goodman, Robert Hawkins, Pete Call, Kenneth Spires, Harlan Beam, Shorty Knauff, Nathan Branson, Eugene Roebuck, Hugh Leach, and G e o r g e Rhonemus. These men were very active in their respective posts, on the Honor Guard, and in their communities. They never stopped serving. Most of them were veterans of WWII. I’m sure our remaining WWII and Korean members can remember all these men and many others that I cannot. Recently, I was looking through a very old copy of the War Service Book for Adams County, published by VFW Post 3400 and the Adams County Business Men. I came across a name that I had never heard but I feel is worth noting -- Edmund Wittenmyer, a West Point graduate from Peebles, Ohio. Wittenmyer was one of the 64 graduates of West Point Class of 1887. The speaker at his graduation was General William T. Sherman. Wittenmyer served for fifty years in the U. S. Army. He was involved in the Boxer Uprising-China; Philippine Islands; Governor Province of Mtanzas Cuba; Military Attache Cuban Government; Commandant Camp, Upton, New York; Brigade Commander 77 Division, Division Commander 7th Division. His awards included the Boxer Uprising Medal, Croix de Guerre with palms,

Commander of Legion of Honor, and the Distinguished Service Medal. He died July 3, 1937, at Walter Reid Hospital, with the rank of Major General. I would also, like to point out that last Saturday, November 10, the Marine Corps celebrated its 237th birthday. We hear a lot about the Marine Corps but little about the Marine Corps Hymn. The Marines’ Hymn is the oldest military song in the United States, predating the song of the Air Force, “Into the Wild Blue Yonder,” and the song of the U.S. Army, “The Army Goes Rolling Along.” The tune to the hymn Guest Column c o m e s Veterans Corner from an opera by Tony A. Blevins, J a c q u e s Offenbach. CVSO The lyricist of the song i s unknown. Some people think that it comes from an old Mexican folk song. Anyway, the hymn existed during the 1800’s, and in 1929 it became the official song of the Marine Corps. Some minor changes were made in 1942 to reflect the changing warfare technology (aircraft). The first verse of the hymn refers to “the Halls of Montezuma” and “the shores of Tripoli.” The “Halls of Montezuma” refers to the Battle of Chapultepec during the Mexican-American War, where the Marines were instrumental in the victory of the battle. The “shores of Tripoli” refers to the First Barbary War in which the Marines fought in the first battle in a foreign land on behalf of the United States. Since the Song stands for all the heroism and professionalism that the Marine Corps represents, Marines, out of respect, are usually at attention when the song is sung. New Portable Seismic Stations Expand Coverage.. Improves Ohio Seismic Network

Pictured: Diagram of a portable seismometer station currently deployed by the Ohio Geological Survey.

The Ohio Geological Survey during the past year has taken steps to update its earthquake and seismic monitoring capabilities for the state. These improvements include partnering with the U.S. Geological Survey (USGS) and Lamont-Doherty Earth Observatory (LDEO) at Columbia University, New York; adding permanent stations to the Ohio Seismic Network (OhioSeis); and purchasing and deploying portable seismometers. Such steps will allow the Survey to gather and provide to the public information to help mitigate seismic risk in Ohio. Though not tectonically active, Ohio has historically experienced persistent earthquake activity, and in 1999 the Ohio Seismic Network was established to better understand and assess the risks associated with these earthquakes and to educate the public and policy makers about these issues. Headquartered at the Survey’s H. R. Collins Laboratory in Delaware, Ohio, the network consists of 29 broadband seismic stations located primarily at colleges and universities throughout the state and operated by volunteers. Last year, the Survey began making improvements to the network, including upgraded software and digital helicorders, which allow users to log on to the OhioSeis Web site and see seismic activity recorded at any OhioSeis station, and purchase of new highly sensitive, portable seismometers and data recorders. A number of earthquakes in Youngstown and Marietta during 2011–12 highlighted the need to better find, locate, and characterize some seismic events. Beginning in 2011, the Survey partnered with LDEO to deploy four high-precision, mobile seismometers in the Youngstown area. The USGS also deployed one NetQuake seismometer in the Youngstown area as well as two NetQuake seismometers and one high-end Trillium seismometer in the Marietta area. The NetQuake sensors are connected via the Internet to the USGS in Menlo Park, California, which sends data to Ohio when a shake is detected, allowing OhioSeis to quickly determine if an earthquake has occurred. These instruments and the new OhioSeis seismometers are placed close to areas of interest to precisely determine the location and depth of an event and to find “microseismic” events that are too small to be felt but which

still yield valuable information on any fault(s) that may be present. In addition to instrumentation, these partnerships have lent much expertise that has enabled the Survey to greatly expand the capabilities of OhioSeis. As part of the expansion of OhioSeis, the Survey earlier this year added three new permanent stations and purchased and deployed very sensitive portable seismometers. The new stations were added at Marietta College (Washington County), Kent State University – Tuscarawas (Tuscarawas County), and Belmont College (Belmont County). These new stations not only will generate muchneeded seismic data for these areas but also will provide educational opportunities for students. Diagram of a portable seismometer station currently deployed by the Ohio Geological Survey. Click to enlarge. The Survey thus far has procured four portable seismometers of its own and is purchasing several more in the near future. Two of the new seismometers have been deployed to the Marietta area and two to Youngstown. At least three stations are needed to adequately characterize a seismic event. Combined with portable seismometers on loan from the U.S. Geological Survey and with the permanent OhioSeis stations at Marietta College and Youngstown State University, the Survey has enough instruments to closely monitor and analyze events in these regions. Small, portable, highly-sensitive seismic stations, such as those used in Youngstown last December, can be used to help characterize buried faults. Although the central and eastern United States are not located on a plate boundary, Ohio and other eastern areas of the country have some ancient and deeply buried structures and faults that still can be the focus of earthquakes. Portable devices, when located close to an event, provide high-resolution information in three components (N-S, E-W, and vertical) that is needed to determine precisely the locations, hypocenter depths and focal mechanisms. Determining an earthquake’s depth and focal mechanism generally is not possible using seismic stations that are often a great distance from the epicenter. However, such information is critical to accurately map geologic faults that lie deep beneath the Ohio

landscape. The portable seismometers can be quickly deployed after a significant earthquake in order to monitor small aftershocks. To illustrate the improvement, a single-component seismogram from our new OhioSeis station at Marietta College (MACO) can be compared to one from a new portable seismometer. In addition to the vertical component of ground movement captured by permanent OhioSeis stations, the portable instruments provide the horizontal accelerations and produce highly detailed seismograms for even very small earthquakes that are not felt. Whereas OhioSeis stations are usually set to record data at ten counts per second (cps), the portable sensors can be set all the way to 1000 cps. The sensitivity of the three-component data loggers allow for hypocentral locations and focal mechanism solutions. A catalogue of these small events, when combined with well logs, core observations from deep wells, and magnetic and gravity observations, offer a much clearer picture of the nature of a seismic event. The Survey’s activities also dovetail nicely with the EarthScope/USArray program that will provide unprecedented seismic coverage for Ohio beginning this year. The EarthScope scientific community conducts multidisciplinary research across the Earth sciences utilizing freely available data from instruments that measure motions of Earth’s surface, record seismic waves, and recover rock samples from depths at which earthquakes originate. The USArray deployment coincides with the 200th anniversary of the devastating New Madrid earthquakes of 1811–1812, which also was marked last year by the Ohio Emergency Management Agency earthquake simulation drill called “The Great Central U.S. Shakeout.” The USArray is now leapfrogging across the nation and is scheduled to deploy 24 high-end seismometers in Ohio in 2012 whose data will become freely available. Representing a variety of stakeholder organizations with regional diversification, OhioSeis coordinator Mike Hansen and geologist Tim Leftwich have been part of a working group of earth science professionals that prioritize selection of EarthScope USArray stations for longterm operations. The group’s efforts seek to improve earthquake monitoring and reporting, seismic hazard assessments, and solid earth research in the central and eastern United States. With these tremendous new partnerships, equipment, and capabilities, Survey geologists can gather data from around the state, perform complex modeling of the subsurface, and provide the new knowledge gained to the public so that Ohioans may be better prepared for earthquakes. For more information about the Survey's portable seismometers, contact geologist Tim Leftwich at (614) 2656459 or tim.leftwich@ dnr.state.oh.us.

Cuffs and Collars Field reports from Ohio Division of Wildlife Officers Southeast Ohio In July, an employee of the Wayne National Forest witnessed two possible ginseng diggers entering the area. The employee contacted the Wildlife District Four Office. Wildlife Officer Supervisor Jay Abele responded and notified Wayne National Forest Officer Luke Johnson. Officer Johnson was standing by while Officer Abele waited for the suspects by their vehicle. Officer Abele waited for about an hour before one individual returned to the vehicle, and the second suspect came out of the woods about an hour later. They were both found to be in possession of several freshly dug ginseng roots. Upon further investigation, both men were digging ginseng before the legal season and had more ginseng roots at their residence. One also was digging yellow root on the National Forest. Officer Abele contacted Wildlife Officer Eric Bear and advised him of the situation. Officer Bear waited at the subject’s residence until the subjects and the other officers arrived. Upon further investigation, numerous ginseng roots were found in a small shed. The suspects claimed that some of the roots were held over from last year and the rest were harvested earlier this year. The officers seized approximately 669 ginseng roots and two digging tools as evidence. The subjects were issued several summonses in Marietta Municipal Court, and one was also cited by the Wayne National Forest Officer for digging yellow root on the National Forest without a permit.

This case is still pending in court. Southwest Ohio During the spring, Clark County Wildlife Officer Byron Rice and several other officers conducted a trout fishing enforcement project designed to prevent over-bagging of stocked trout in Clark Lake, and also ensure that

anglers were complying with fishing regulations. After several hours of observing and contacting approximately 40 individual anglers, no violations were observed. This is likely due to enforcement efforts in the past. It was good to see widespread compliance with Ohio’s fishing regulations. Central Ohio While working sportfishing and litter enforcement at Rock Mill Lake Wildlife Area, Fairfield County Wildlife Officer Tony Zerkle observed two individuals leave several cans along the bank. After contacting the men, Officer Zerkle discovered that the passenger had an arrest warrant issued from the Lancaster Police Department. He also noticed that the driver of the vehicle had a strong alcohol odor. When Officer Zerkle asked the driver to exit the vehicle the driver appeared intoxicated. With assistance from the Fairfield County Sheriff’s Office, the driver was arrested for

Operating a Vehicle Impaired (OVI) and both men were taken into custody. The driver was found guilty of OVI, ordered to pay $400 in fines and court costs and received two years’ probation. Charges are pending on the passenger. Northwest Ohio – Wildlife District Two One evening this summer, state wildlife officers Brian Bury and Cody Klima worked Lake Erie and attempted to make contact with walleye fishermen. While checking one of the reefs, the two officers noticed a lone boat trolling with a single fisherman on board. When the officers contacted the fisherman he immediately stated that the perch fishing was "all right." Realizing he was not trolling for perch, the officers inquired about walleye. The man stated he had caught his limit of walleye and proceeded to show the officers six walleye and 20 yellow perch in his cooler. As the officers inspected the boat for additional fish, the man began stowing gear on top of one particular compartment. At the end of their search the officers asked to look inside the covered compartment. The fisherman stated that the lid was stuck. After removing the gear, the officers were easily able to open the compartment and discovered 14 additional walleye. The man was charged with possessing 14 walleye over his legal limit in Ottawa County Municipal Court. The man paid $308 in fines and court cost, as well as $700 in restitution ($50 per walleye). The man also lost his fishing privileges for two years.

JUST A THOUGHT: The bathtub was invented in 1850, and the telephone in 1875. Had you lived in 1850, you could have sat in the bathtub for 25 years without having the phone ring once!

This week the quilt block is called tulip. It is a variation of the nine patch and can be set together on point or on side. It can be made with a variety of colors and settings. This can be added to your civil war quilt but it is not from the Civil War era.

Dear Miss Needles Dear Miss Needles: I have a pattern to make a hat out of yarn. The pattern is for a child but I want to make one for myself. I have a large head. What should I do? Signed Big Head Dear BH: You didn't say if your pattern was knit or crochet so I will address both. There are a number of ways to increase the size,

using bigger hooks and needles and also adding extra stitches evenly around the hat and adding extra rows to make it longer. If the pattern has cable or other designs, make sure you add so the design still fits and if there are sections, they each are increased by the same number of stitches. In knitting, add a stictch to each

section and check/measure your work and your noggin to make sure it will fit comfortably. Send us in a picture and we just might feature you in an upcoming article. Dear Miss Needles: Recently I have been watching a lot of craft and sewing shows on television and keep hearing the advice to change my sewing machine needle with each new project. They are made of metal and look pretty sturdy, should I really change that ofthen? Some say after so many hours, I'm confused. (And Broke!) Dear Confused: I always tell people to refer to their book that came with their sewing machine. If you are like me, you have no idea where it went. You can check on-line with the namufacturer to see if the book is available on line. The reason it is recommented is needles can get bent, the sharpness of the needle wears down and as it does, the holes in your work can become pretty big. When I notice the holes looking larger than need be, I change my needle. I worked in a cut and sew factory in Maysville, KY and we had someone use a needle until it was worn almost to the eye it had been in the machine so long. Like you, I hate changing them and hate spending money for maintenance, but propert maintenace really does prolong the life of your machine and makes for better stitches and better projects. Do you have a question you would like Miss Needles to answer? If you, e-mail her at dearmissneedles@yahoo.com or write to her in care of The Informer.
