Marcy’s Country Table
If you want a fun dish for a family supper or casual entertaining, this recipe for Mexican lasagna should be in your menu rotation. It’s not hard to make, just takes a little time. It’s delish as is, but if your budget allows, serve with sides of guacamole, sour cream, sliced black olives and salsa. MEXICAN LASAGNA Ingredients 2 pounds lean ground beef or turkey 1 cup onion, diced 2 cloves garlic, minced Dry taco seasoning to taste (optional) 4 oz. can diced green chili peppers 1 can Rotel or plain diced tomatoes 16 oz. jar taco sauce 2 cans refried beans 12 flour tortillas, 8” size 3 cups shredded Mexican or cheddar cheese Instructions Preheat oven to 350. Spray a 9x13 pan. Cook meat, onion, garlic and taco seasoning until meat is cooked. Stir in everything else but tortillas and cheese. Simmer 15 minutes. Spread 1/3 of meat mixture in bottom of pan. Top with 4 tortillas and 1 cup cheese. Repeat tortilla, meat and cheese 2 more times, ending with meat and cheese. Bake about minutes, until bubbly. If cheese browns too quickly, tent with foil. Let sit a few minutes before serving.
Be a hunter educator
Southwest Ohio sportsmen and women who are interested in becoming a hunter education instructor are encouraged to register for a workshop in Butler County, according to the Ohio Department of Natural Resources (ODNR) Division of Wildlife. The workshop will take place on Friday and Saturday, March 20-21. The two-day training will be held at the Hamilton Chapter of the Izaak Walton League of America located at 450 Beissinger Rd., Hamilton, OH 45013. There is no cost to participate. Those who complete the training are certified to teach hunter education in Ohio. Participants are required to attend both days of training, be at least 18 years of age and have successfully completed Ohio’s online hunter education course. Ohio currently has 1,700 volunteer instructors who train thousands of hunters each year to be safe and responsible in the field. the village of Ripley it also tried to wipe the village off the map every few years. No flood came closer to that objective than the flood of 1937. Many floods over the years inundated the village but with a 79.9-foot crest it was the king. Following the discovery of white burley tobacco during the Civil War ‘the weed’ as it was called became Brown County's number one agricultural product. Ripley was the center of the area’s tobacco trade with several large warehouses where auctions were held. The Atlantic & Pacific Highway, now U.S. Route 52, runs through the village and is considered one of America’s Scenic Highways. Ripley too is a scenic village to visit.
