COMMITMENT

Our Clonakilty Distillery barley is grown on the family farm at the base of Galley Head lighthouse. This is a perfect environment to nurture and grow the finest of crops. Centuries of sea mist, soft rain and ocean spray provide a complexity to the soil that permeates right through to each individual grain.

A commitment to both heritage and innovation has led us to revive ancient malting barley varieties. Some are over 150 years old and were traditionally used in this part of the island of Ireland. We are privileged to be the guardians of these very scarce and old grains – patiently we will nurture them to create a range of whiskies that honour this unique inheritance.

Our three Copper Pot Stills have been specially commissioned to carefully distil the smoothest of spirits. Using the most modern equipment but born of tradition, we take precise control of each and every step, individually hand crafting our daily small batch distillation.

This special marine environment inspires us to create our distinctive spirit collection.

PURITY

WATER

Under the careful eye of our Master Distiller, our green un-malted barley is combined with malted barley to produce wort. This is slowly fermented for up to 96 hours before being triple distilled in the traditional manner to produce our uniquely Irish Single Pot Still whiskey.

The water we use to cut our spirit is drawn from deep within the untouched rock formations by our ocean
cliffs. It is naturally filtered through multiple layers of Sandstone and Baryte, one of the hardest rocks known to mankind.

It is this commitment to detail and the purest ingredients that allows us to produce the very finest whiskey.

Cold, unadulterated freshness, generously gifted by Mother Nature herself. This pure and special water source directly enhances the quality
and flavour profile of every single bottle we produce.

WOOD

CLIMATE

For our primary casks, we carefully select only the very best American and European oak. Being a bespoke distiller and requiring relatively small quantities of wood, we take extra special care to purchase only through suppliers with whom we have built personal relationships and who understand our exacting requirements.

Our Atlantic Ocean warehouse perched high on
the cliff edge, is a perfect environment to mature
the finest of whiskies. Pure clean air, transported across thousands of miles of the
Atlantic, provides a freshness unspoilt by human intervention. This is a place with a unique and special diversity of climate. It is ever changing - from the wild Atlantic storms to the tranquil sea mist and soft rain - as can only happen on an Irish coast.

In this micro climate a whiskey will only rest for a short while before interacting with the wood and the angels, to develop a unique and distinct maritime character.

DISTILLERY EXPERIENCE

Less than 15 minutes drive from Galley Head Light House and the Scully family farm
sits Clonakilty Distillery. Injecting vibrant new life into a waterfront site in the heart of the town, our distillery is fast becoming a landmark building on the Wild Atlantic Way route from Cork to Kerry. It is here that we create and manufacture premium Single Pot Still Whiskey and innovative Gin collections, using heritage barley grown on the family farm and the wild botanicals harvested from our unspoilt seashores.

Visitors immerse themselves in this unique sensory adventure, experiencing the smell, sound, feel and taste of a distillery creating genuine Irish spirits. A tour of the Distillery is a must see for
the growing numbers of Irish whiskey fans, those with
an interest in the history of distilling or anyone wanting a hands-on experience of a real working distillery in action. Our restaurant showcases the very best in local West Cork artisan food, offering diners the opportunity to match our Whiskey and Gin collections with award winning produce of the region.
