Grand opening of Green House Organic Restaurant – a natural hit among healthy eaters and fine dining aficionados

ith a live jazz band ushering guests inside and servers presenting champagne at the door, Green House Organic toasted its grand opening as the area’s first upscale organic food restaurant. The evening, held in partnership with the Aventura Marketing Council and Greater North Miami Beach Chamber of Commerce, also served to kick off the 5th annual Sunny Isles Beach Jazz Fest. On a balmy early fall evening, the David & Dow jazz band performed for over 200 attendees who dined on hors d’oeuvres of Green House Organic’s signature dishes, the brainchild of Executive Chef Marcelo Marino. Among the partygoers were members of the Aventura Marketing Council, Greater North Miami Beach Chamber and North Dade Bar Association; as well as city officials. In attendance were Florida State Representative Joe Gibbons; Sunny Isles Beach Mayor Norman S. Edelcup, Vice Mayor Lew Thaler, Comm. Jeanette Gatto and Police Chief Fred Maas; North Miami Beach Mayor George Vallejo, Councilwomen Barbara Kramer and Phyllis Smith; and Aventura Comm. Billy Joel. During the formal ribbon-cutting ceremony, Green House Organic presented a $1,000 check to Joshua’s Heart Foundation, as eleven year-old Joshua Williams accepted the check on behalf of his foundation, which he founded to stomp out hunger worldwide. pair of tickets to the Jazz Fest and dinner for two at Green House Organic, and all of the evening’s guests went home with gourmet truffles. Chef Marcelo Marino, who was an Educator and Ambassador at Le Cordon Bleu Miami, focuses on avant-garde cuisine, offering patrons an elegant dinner alternative, with no compromise on healthful eating. In designing his menu, Chef Marino adheres to a purist philosophy in which he seeks to extract the most natural flavor from ingredients using the least amount of fat. All his produce and dairy is organic and/or sustainable. In fact, Farmer Bill from The Chef’s Garden, an Ohio farm that specializes in growing micro-greens and specialty vegetables expressly for chefs nationwide, was one of the evening’s special guests. Green House Organic recently partnered with The Chef’s Garden. Chef Marino noted, “Green House represents a novel way to introduce the community to a healthy and delicious dining experience that raises the bar on what is already out there in the natural foods arena.” Distinctive dishes are an extension of the quality of ingredients used at Green House Organic. Snapper and tuna are never offered.

Instead, uncommon entrees include rabbit, swordfish and purple truffle pizza baked in a wood-burning oven. Proteins are complemented by ancient grains like saffron rice pillows and exotic greens such as wasabi leaves, lola rosa and callaloo. All breads and cheeses are homemade and in-house cured and brined meats. Sunday

brunch is served all day and designed around champagne, caviar, and quail and ostrich eggs. Finally, wine pairings are recommended for every dish. The menu is not the only unique feature of Green House Organic; every table is equipped with its own iPad, with which guests may peruse the menu and learn about nutritional values and the sourcing of ingredients with the touch of a finger. The digital menus are presented in six languages to accommodate the international demographic of the area. To add to the high-tech ethos, large flat-screen TVs project, in real time, the chefs working in the kitchen. Float through your Life

Patricia C. Frank FRANKLY SPEAKING There is a very basic human response to threatening situations. It is called the Fight or Flight Syndrome. It is a survival instinct to protect yourself either by standing and fighting or fleeing and running away. It requires an instantaneous decision and that decision determines the outcome. As human beings develop and become more sophisticated psychologically, another option is possible. It is the Float Syndrome. It is not like fleeing. You are still in the moment or situation but you are floating through the turbulent waters without creating any waves yourself. This technique is extremely effective in all relationships. It is effective at home with family members. It is effective at work with your boss and with your peers. In fact, it can be used in every situation even with waiters or salespeople. How does it work? Instead of con-

fronting someone or taking issue with their behavior you suspend your fear, anger, disappointment, hurt and annoyance. You are on top of the situation and you are controlling the situation. You are not a victim of the situation. You are acting and not just reacting. You are buoyant. You float above the situation and do not let it pull you down. You do not take anything to heart. It is also a great survival technique during the Holidays when families gather. If you float, you don’t have to address every issue. You don’t have to settle old scores, fight old battles, prove a point or take a stand. It is a resting position. It is good for you and good for them. It creates a calm and peaceful mood for all those involved. Everyone will be grateful and appreciate you for floating. Keep in mind your options. You have more power than you realize. Your actions and reactions will set the tone. You can diffuse the situation. You can make a difference regardless of the situation. You are the one in control. George Washington and Phillis Wheatley

Bob Diamond HISTORICALLY YOURS George Washington, as military leader of Colonial America, received numerous accolades from the adoring public during the Revolutionary War, but, according to historian Ron Chernow, nothing could match the tribute from a Boston woman named Phillis Wheatley, who sent him a flattering poem in October 1775. In polished poetry she wrote: “Proceed, great chief, with virtue on thy side, / Thy ev’ry action let the goddess guide. / A crown, a mansion, and a throne that shine, / With gold unfading, Washington! Be thine.” The young poetess praised America as “the land of freedom’s heaven-defended race!” It was remarkable because Phyllis, a twenty-twoyear-old slave, had been seized in Africa as a child and sold to Bostonian tailor John Wheatley, “as a personal slave for his wife.” The Wheatley’s soon recognized the girl’s gifts, “schooled her in Scriptures and classics and allowed her to live with the family.” In 1773, she published a collection

of verse, “Poems on Various Subjects, Religion and Moral.” “The volume made her the most celebrated black person in America.” Washington, a large slave owner, replied cordially to Phillis, despite his recent reviling of Virginia’s Royal Governor “as diabolical for promising freedom to deflecting slaves to the British side.” Washington wrote to Phillis, thanking her for the elegant lines she sent him, “As undeserving I may be …of your great poetical talents.” Washington invited Phillis to visit with him, writing, “I shall be happy to see a person whom nature has been so liberal and beneficent in her dispensations. I am with great respect your obed(ient) humble servant.” (Coming from a slave owner) Washington received Phillis warmly at his headquarters, observing “that he had never met any black person on such terms of social equality.” Together with the powerful Revolutionary ideals, Washington began a transformation, “even though he still had a distance to travel on the slave issue.” Contrary to many of his peers (including Jefferson), upon his death, Washington provided for freedom and financial support for all his slaves, to take effect upon Martha’s death. No waiting for her death, Martha freed all of George’s slaves.

How to Bust a Hole Through the Insurance Company Stonewall BY RUSSEL LAZEGA, Attorney and Author

So I was reading one of those consumer-help columns in the newspaper the other day and the columnist was trying to guide a reader through an insurance dispute over a water leak. The columnist was witty and helpful and suggested the following vigorous plan of action: call the insurer to discuss the problem, then call some more, then write a letter, if that fails appeal the decision, and if all hope seems lost, write a strongly worded letter to the insurance commissioner, the newspaper, the Vatican and anyone else who will listen to your prayers. But shockingly he never mentioned perhaps the most powerful option for a frustrated consumer who has hit the insurance company stonewall: call a lawyer. All right, I know what you’re thinking. Lawyers? Who wants to deal with them? They’ll charge an arm, a leg and 1/3 of your first-born if they can get away with it. But what most people don't' realize is that (in Florida at least) insurance companies that wrongly deny a customer’s insurance claim will often be responsible for paying the cus-

tomer's attorney's fees in addition to the claim. What this means for the consumer is that a good, experienced insurance attorney will take their case at NO CHARGE or on a contingency if the case has merit. So why not have a lawyer look at it for free? As you can imagine, a recalcitrant insurer may quickly change its hardline position when faced with the prospect of paying the consumer's legal fees on top of the claim. I know that when I trained insurance companies on how to process claims we didn’t fear the angry letter. We didn’t fear the angrier letter. We didn’t even fear the appeal. We feared paying penalties and fees. So remember, maybe you can chisel through a stone wall. But I like a sledgehammer -- works better every time. A world with Diabetes JuliaYarbough SEASON OF CHANGE Did you know November 14th is World Diabetes Day? It marks the birthday of Frederick Banting, who along with Charles Best made the discovery of insulin (a life-saving treatment for diabetics) back in 1922. According to the American Diabetes Association, almost 26 million people in the United States live with diabetes. Another 79 million are living with pre-diabetes. It’s a disease that can lead to heart attack, stroke, blindness, loss of limbs, and in many casesdeath. My mother lives with and manages diabetes, so the issue hits close to home. So what do we as a society do to tackle diabetes? That was the question asked and answered during an educational forum I had the pleasure of moderating on World Diabetes Day (and learned a great deal from) “COMMUNITY HEALTH CENTERS: MIAMI’S SECRET WEAPON IN THE FIGHT AGAINST DIABETES.” As a journalist, I make a point to find, capture and share stories and events that have a positive impact on our community. So as I listened to the doctors, American Di-

abetes Association members, patients and health center staff discuss the public health challenges presented by diabetes, and how business, medical and community partnerships are helping people, I was more than impressed. We gathered at the Jefferson Reaves Sr. Health Center in Overtown which serves more than 6,000 people a year in the community and is disproportionately affected by diabetes. Why this center? The United Health Foundation has given $1 million to the center for medical care, the University of Miami Miller School of Medicine’s Department of Family Medicine and Community Health provides education and health services, and community members and patients receive excellent care and life saving health information. That’s what it’s all about- teamwork for a common good. So on those days when I question my sanity in having stepped away from the airwaves, I think about causes and events such as this, and am reminded to “trust the process,” because I am now able to share this type of positive information with the world! Over 180 members and friends of the JCS Alliance, Jewish Community Services’ young professionals group, recently sipped wines from around the world while exploring the unique exhibits of the Dezer Automobile Collection, Miami’s newest attraction of one-of-a-kind vehicles such as miniature and Hollywood-themed cars. Guests at this kosher wine-tasting event had their photos taken in the original Batmobile and participated in raffles for prizes such as a ride in a Hollywood vehicle, half cases of wine and gift certificates from local establishments. Proceeds from the evening went to JCS’ Kosher Meals on Wheels Program, which annually serves 150,000 nutritionally balanced meals to nearly 650 elderly home-

Jeanette Fine wins Positive Living Award from The Alliance for Aging Jeanette Fine, who was instrumental in leading the fundraising efforts to build the Humane Society of Greater Miami’s stateof-the-art Soffer and Fine Adoption Center, is one of the winners of the Positive Living Award. Jeanette, who is a North Miami resident, won this award, given to deserving individuals by the Alliance for Aging, in the category of Animal/Wildlife. The award is given to an individual who has given outstanding assistance to, or involvement with, efforts to improve the lives of animals or wild life. Donna Tallon, Executive Director of the Humane Society of Greater Miami, says, “We are so proud of Jeanette. She certainly deserves this award. Jeanette has always had a soft spot in her heart for the homeless and abandoned dogs and cats in our community.” Jeanette devotes most of her time serving as a member of the Board of Directors at the Humane Society of Greater Miami. Her “pet” project is the Second Chance Fund, which provides resources for medical care; such as complex surgeries, specialized lab work and analysis and much needed medication for shelter pets in need. Miami Dade College unveils Missoni Dressed David Sculpture by Spanish Artist dEmo Miami Dade College’s (MDC) North Campus renaissance of the arts peaks this Fall season with the unveiling of Classic Movement, a sculpture in the likeness of Michelangelo’s emblematic David. Created by renowned Spanish artist Eladio de Mora (known as dEmo) and dressed by the famous fashion house Missoni. Unveiled in November, it will remain at the Campus until April 30, 2013. The David’s visit to Miami will mark the first time ever being exhibited on a college campus, having graced a prominent New York street this Summer, and it will travel to the cities of Chicago and Paris thereafter. The approximately 17foot-tall sculpture has the same dimensions as Michelangelo’s original and is made of fiberglass, steel, polyester and

resins. The project came to life in 2010, when the piece was created for Vogue Fashion Night Out (VFNO) in Madrid. Recent installations at Miami International Sculpture Park include Niños, a sculpture by dEmo and Libertad, a large scale painting by Venezuela painter Jorge Dager. Libertad and Ninos are symbolic works, representing Articles 1 and 2, respectively, of the Universal Declaration of Human Rights. Miami International Sculpture Park was inaugurated with world-renowned art donations. Open to the community, it is one of the largest parks of its kind in the state of Florida.
