elcome to the ultimate world of chocolate and pastries!” was the greeting extended to members of the Aventura Marketing Council and Greater North Miami Chamber of Commerce when mad mac / The Chocolate Lounge hosted a “sweet success” grand opening-networking reception at Biscayne Commons shopping plaza. Pascal Cohen, owner of mad mac / The Chocolate Lounge, welcomed business and community leaders to the gala event featuring a ribbon-cutting ceremony with city officials including Aventura Mayor Susan Gottlieb and North Miami Mayor Andre Pierre, applauding the recipe for “sweet success”: high-quality chocolates and truffles, combined with a flavorful line of macarons, homemade pastries, imaginative ice cream creations, premium cakes and desserts – swirled with delicious appetizers and enticing entrees for lunch or dinner. While the record turnout of guests enjoyed socializing and networking to the
tunes of a live cellist, it was “music to everyone’s ears” to hear mad mac’s internationally-recognized chefs Florian Bellanger and Ludovic Augendre create high-quality, exclusive recipes that are not only delicious - but healthy using fresh, pure ingredients. Those who believe eating chocolate can release “fountain of youth” endorphins were especially impressed by the famous fourfoot tall Chocolate Fountain, mouthwatering masterpieces of pastries and chocolates and an amazing Chocolate Museum where families can discover the history of cocoa from the Aztec era to present-day. Around Town in Aventura Aventura City of Excellence School, (ACES) seventh annual Career Day, huge success ACES seventh annual Career Day was a huge success bringing special guest speakers from throughout the Aventura business community to share with students the remarkable and unique recipes that have provided these individuals with success in their professional lives. Throughout the day, ACES students had the good fortune to learn about an array of career opportunities spanning from party planning, public relations, marketing and real estate to medicine, dentistry, law, financial planning, computer technology and business management. Guest speakers familiarized students with a glimpse of the education required to attain their success along with the daily activities involved in their practice combined with the simple message that commitment and determination combined with a good education produces great rewards. “We were so pleasantly surprised to arrive to the school and find the students dressed in their own favorite career garb and acting the part of their chosen career path,” said Jeff Levinson, Sabadell United Bank. “As they say, possession is nine tenths of the law and it’s certainly evident that these students are excited and motivated to own their future careers!”

Costco Wholesale North Miami Beach, 14585 Biscayne Blvd., is previewing a new Glatt Kosher Department during a “Roadshow” from 10:30 a.m. to 6 p.m., Feb. 13th-17th. And through March, Costco is giving out $20 gift cards to those who join as Executive Members and $10 cards to those who join as Gold Star Members. RL: With proper planning, there are a lot of things people can do, including gift-giving to children and relatives, charitable contributions, putting money in pension plans, 401K, IRAs and even health savings accounts. I like to say that people don’t plan to fail; they fail to plan. And planning is a year-round process. There’s a lot more to it than paying taxes. RL: In South Florida, we still have this chaos of short sales, loan modifications and so on, and there are a lot of tax effects from these actions. For example, a short sale will not only hurt your credit, but also damage your ability to get another mortgage for anywhere from two to four years, depending on the institutions. There may also be an additional tax bill to pay. This
is something that has to be seriously considered. SC: I think one thing we’re seeing right now is that people want their accountant to be more of a consultant than just a tax preparer. Without a Valentine
Patricia C. Frank FRANKLY SPEAKING A Valentine is someone who loves you or someone you love romantically. A Valentine is someone with whom you share strong feelings of intimacy and passion. Ideally, it is someone who returns your feelings of love and affection. Hopefully, your valentine is also your partner in life. Not everyone has a Valentine. Some people never experience romantic love in all its glory. They never experience the ardor and intensity of a deep, mutual and emotional connection. They seem to attract and choose inappropriate and unavailable romantic partners. If you find yourself in that situation take heart you can change your situation. If you wish to have a romantic love in your life you need to change certain things. What you have been thinking, feeling and doing has not worked. When something isn’t working you need to tweak it and fix it. Take a look at yourself in a full-length mirror both clothed
and unclothed. How is your body? Does your weight project the image of someone who has control over their emotional issues and does not use food to avoid them? What message is your appearance sending? Are you projecting a clean, neat person who has enough self-esteem to care about themselves and how they look? Don’t just change your external appearance listen to your thoughts and words. Are you critical, discouraged, or depressed? Do you feel inadequate or insecure? If you are worried about money you will attract poor or jobless individuals. If you are projecting a strong image you will attract weak or dependent individuals. If you are projecting a caregiver image then you will attract damaged or needy individuals. Think about some changes inside of yourself that you can make to project a different image. Then take action and work on your issues. Consider how you spend your time. It happens to be true that you will never meet someone at home. You need to be out and about. For example, the cost of wasted food in America totals $155 billion a year. That equates to 500 pounds of food per family that’s thrown out in the trash. Consider the fact that consumers throw out 2 billion gallons of milk every year once it goes bad. In fact, the best place to keep milk is in the back of the refrigerator. Why? Because properly stored milk can last up to a week past its sell-by date. When it comes to eggs, you also should keep those in the coldest part of your fridge. Americans throw out more than 2 billion pounds of eggs every year. You always should keep eggs in the carton they came in. Did you know that some veggies don’t mix? Apples give off gas. And broccoli spoils faster near apples. So it’s best to keep them apart. Americans also throw away 280 million tires every year. Studies show that consumers neglect the rubber that hits the road. What’s more, 55 percent of our cars have at least one tire that is underinflated. The solution is to check tire pressure monthly. Want to be a lean mean jeans-wearing machine? It turns out that keeping jeans clean is not the answer. Levis — the company that’s been making jeans for more than 150 years — says you shouldn’t wash
your new jeans for at least six months. After that, only wash them every two weeks and let them dry naturally, upside down to preserve their length, shape and color. Levis also recommends spot-cleaning your jeans if you have to, and using an odor-eliminating spray like Febreze if you’re worried that they may be a little smelly. One last hint: Your razors will last longer if you dry them off after you use them and avoid storing them in the shower. THE FORECAST FOR FORECLOSURE Foreclosure activity increased last year in 149 of the nation’s 206 metropolitan areas with a population of 200,000 or more, which suggests that the foreclosure problem has yet to peak. The year-end report from RealtyTrac, a foreclosure marketing firm, also showed the 10 metro areas with the highest foreclosure rates all posted decreasing foreclosure activity since 2009. Six of the top 10 also posted decreasing foreclosure activity from 2008. Analysts say that suggests stability may be returning to the hardest-hit markets. “Foreclosure floodwaters receded somewhat in 2010 in the nation’s hardest-hit housing markets,” said James J. Saccacio, CEO of RealtyTrac. “Even so, foreclosure levels remained five to 10 times higher than historic norms in most of those hardhit markets, where deep fault lines of risk remain and could potentially trigger more waves of foreclosure activity in 2011 and beyond. Here are a few of my favorite things I hate BY ERNIE SOCHIN
It’s great writing for a newspaper. As well as a huge paycheck ($000.00), I get to vent all my frustrations. I used to do it on the radio and, of course, everybody wanted to chime in. You can do the same thing in print so here goes my list of things that I hate. • Those stupid buttons just above the cuffs on men’s long sleeve shirts. They are almost impossible to button once the shirt is on and what purpose do they serve anyway? I estimate that I have spent a total of 20 days doing this in my lifetime. As I get older those days become even more precious. • The lady in front of me in the checkout line who wants to use up the change in her purse to give the cashier the exact amount. See how long she takes next time she is in front of you. • The driver who rushes to get into the lane in front of you and then drives 10 mph below the speed limit. • My dryer that makes single socks disappear. I did a radio show on this one time and
got continuous calls for five hours from people with the same problem. • Those frozen food packages with the delicious looking photos on the outside. We all know what is actually inside. Blech! • Those things that fall out of the magazine as I am trying to read them. (Don’t mention this to my wife. She works for a company that arranges to insert them.) • Neighbors who somehow don’t hear their own dogs barking. How come I can hear them so clearly? • The tons of junk in my mailbox everyday. Frankly, if they cut delivery to once a week, I will not complain. • The emails that you must send to everyone you know as soon as possible or the earth will end or something worse. Yeah, sure! If you really want stuff to forward, I have a friend in Nigeria with millions of dollars, which he just has to send to the U.S. and needs a bank account number to send it to. • People who attend meetings just for the opportunity to speak on and on. They use words like paradigm. Partnering, weighing in on a subject, etc., they usually have nothing new to contribute but take a long time doing it. I just attended a conference full of people who speak archispeak (architects). I have never seen a bunch of people who can take so long to say so little. • People who are against just about anything
new. In politics they are called CAVE people. Citizens Against Virtually Everything, and a new one — Banana People: Build Absolutely Nothing Anywhere Near Anything. Every town has them. (Please readers, I’m not talking about you!) • Very rich people who tell you that they have had to cut their vacation to Capri this year to two months because of the economy. Boo hoo. • People who build gigantic homes for just the two of them. I think we should pass
a law that a sign be placed in front stating exactly how they got so rich. Some examples: Drug dealer, indicted public official, crooked banker or lawyer, Medicare cheat. You know, just so we have an idea and won’t feel so jealous. I just returned from a beautiful town where no one lives except in the summer months. The homes were beautiful and charming little cottages but empty 10 months of the year. Give me one and I’ll promise to use it all year long. What a waste! You probably can pick one up for under $2 million.

Nissan LEAF: The future is now for automobiles Ron Beasley AUTOMOTIVE EDITOR
LET’S TALK CARS The Nissan LEAF is the future for automobiles, and the future is now. I recently finished three days behind the wheel of the amazing little four-door hatchback and I am even more impressed with this car now than when I first drove it at the press preview in Tennessee last fall. It simply is astounding how good the technology is in Nissan’s initial effort at building an all-electric powered automobile. The LEAF is an amazing car to drive. Push a button on the dash and the motor starts without a sound. Only the dash lights flashing on tells you that the car is operational. An oversize toggle switch shifter on the center console allows you to put the car in drive or reverse. Once on the road, the car moves in soundless wonder. There’s no engine noise or exhaust rumble and no whine from the transmission because the LEAF doesn’t have an engine or transmis-
sion. The silence is almost eerie. At a starting price of $33,630, the LEAF is the least expensive battery-electric production car on the market today. With its 24 kilowatt-hour battery, it qualifies for a $7,500 federal tax credit, bringing the price down to $26,130. However, the initial 2011 model production run of 20,000 vehicles already has been sold (though delivery is still pending on most of them). Nissan promises a larger production in 2012. The LEAF essentially is a commuter vehicle. It will take you to work and back and allow you to run all of your errands, all on a single battery charge. With a fully charged battery, it has a range of 100 miles (we got 117 miles in a recent test). You can plug the LEAF into a standard 110-volt household circuit to recharge the batteries, though you have to use the charger and heavy-duty cable that comes with the car, neatly stashed in zippered canvas bag in the trunk and it’ll take about eight hours for a full recharge. Meantime, Nissan is leading the way in developing a public charging infrastructure in cities around the country and at rest stops along the interstate highway system, the lack of places to re-charge being the biggest problem for electric car owners. Obviously,

if trips are within 100 miles or if you can re-charge at your destination, then the absence of public charging stations is not a problem. Nissan says a network of fastcharging stations will be in place within the next year. LEAF owners can buy a Quick Charge Port for $700, which will enable the use of a direct current fast-charger to bring the LEAF batteries back to 80 percent of
capacity within 30 minutes. Nissan also offers a 220-volt home charging unit ($2,200 installed) that recharges the batteries in four hours. MSMC ‘Celebrates’ Heart Month and National Wear Red Day Employees star in music video encouraging community heart health

Set to the music of Kool & The Gang’s “Celebrate”, but with heart-healthy lyrics, the employees of Mount Sinai Medical Center produced and appear in their very own music video to promote heart health during February, American Heart Month. Donning heart-shaped glasses, antennas and fans, employees from all departments within the hospital including nursing, pharmacy, engineering, food/nutrition services, resident fellow doctors, human resources, environmental, IT, rehabilitation, radiology, laboratory as well as the hospital’s top administrators and chief of cardiology all make an appearance in the video. Mount Sinai’s “Celebrate” video can be viewed on Youtube by searching for Mount Sinai Medical Center Florida or on the Mount Sinai website (www.msmc.com/press-promotion). Employees sing, dance and form a giant, beating heart to end the video. “Heart disease continues to be the number one killer of all Americans which is why we felt we had to find a way to communicate a serious message” said Mount Sinai President and CEO, Steve Sonenreich. “We had a wonderful time making this video but we hope the message of taking care of your heart will resonate with our community.” In 1963, Congress proclaimed February “American Heart Month” in an effort to urge Americans to join the battle against heart disease. In addition, the first Friday of every February was proclaimed “National Wear Red Day”. By wearing red, Americans show their support for the fight against heart disease and honor loved ones who have been claimed by the disease. Employees of
Mount Sinai wore red on Friday, February 4th to show their support in the fight against heart disease. “ W e hope that by creating this music video our community will heed the message in the clever lyrics both today, on National Wear Red Day, as well as every day of the year,” said Dr. Gervasio Lamas, Chief of the Columbia University Division of Cardiology at Mount Sinai Medical Center. “There’s some caring going on right here, an intervention to give you quality years, So get your lab work, and your stress test, too And we’re gonna take good care of you, come on now! Celebration! Let’s celebrate, it’s all right Celebration! Let’s celebrate, at Mount Sinai, Celebrate good health, come on!”

Gearing Up for Great Guacamole

EAT THIS... DRINK THAT Guacamole is one of my favorite things to eat. I like it chunky, smooth, spicy, bland…you name it. As long as it’s green and it contains avocado, it’s on my “to eat” list. I’ve been thinking about all of the different preparations and what’s my least to most favorite ways to eat it, and where you can get the best guac when dining out. Here’s what I came up with: Let’s begin at Gulfstream Park, with Cantina Laredo. You get a lovely tableside presentation, and there are more ingredients then I personally think are necessary. However, when all is said and done, the sum of the parts is successful. There is a lovely stone mortar filled with creamy, mouth-watering guacamole, a bit of spiciness, bursts of lemon, and lots of flavor. It’s approximately $14 for a bowl that feeds two to three. Chili’s (yes, I am actually writing about a chain) recently started offering a fire grilled corn guacamole that packs a lot of heat (the chef is heavy handed on the jalapeños). I like this offering. The avocados are creamy, the texture is a mixture of smooth and chunks, and there is never a lack of flavor. Little niblets of corn explode and are a welcomed respite from the heat. (I prefer my guac to be bland so I can taste the avocado). There is no presentation, but the servings are generous. And with Chili’s $20 dinner for two, it’s a “best buy” you just can’t beat. Rosa Mexicana, down on Brickell is another “tableside guacamole” eatery.
Taken from the original in NYC, this restaurant is known for its Guacamole en Molcajete. They too, mix Haas avocados with lemon juice, cilantro, garlic, onion, tomato, jalapeños, and more into a lovely mortar of decadence. They ask guests what they do and do not want in their mash up and take it from there. Again, approximately $14. I still think theirs is one of the best. Naturally, as a foodie, I love to eat out but sometimes, when you want exactly what you want the way you want it, it’s best to do it yourself. I always prefer my guac on the “plain” side, so I can taste the true flavor of the avocado. It’s great to accent the deliciousness, but let’s face it – overkill is overkill. Too much is not always just enough. Sometimes it’s just too much. So, when I can’t find the place that will give it to me straight up, that’s when I break out the mortar and pestle and whip up my favorite guacamole from scratch. Here’s my recipe: Shari’s Guacamole 1 Large Florida Avocado (Skinny-Cado for calorie conscious) 1 Haas Avocado (For depth of Flavor) 1 Roma tomato (diced small) 1/2 lime Cilantro to taste salt & pepper Peel & Pit both avocados. The Florida avocado is bigger and will make more; the Haas will add depth of flavor and creaminess. Add diced tomato. Squeeze the lime juice in. Add salt and pepper and “smash” with the pestle. It is pure, simple and delicious. For variety, throw in a bit of cilantro, onion, or garlic powder. Serve with chips. Healthy P&J: Spread a tablespoon of organic almond butter and Smucker’s sugar free strawberry or blackberry jam on a slice of whole grain bread
Strawberry sundae: In a tall glass, alternate layers of Greek yogurt, sugar-free strawberry jam or fresh strawberries and crunchy highfiber cereal flakes
Chocolate-Dipped Delights: Cut up pieces of your favorite fruits and dip in Hershey’s sugar-free chocolate syrup
Pizza omelet: Top an egg white omelet with Pomi chopped tomatoes (available in a convenient pourable carton in the canned vegetable aisle); add your choice of vegetables and sprinkle with shredded low-fat mozzarella cheese

Layer a pie pan with phyllo-dough and bake in the oven at 350 degrees for about 20 minutes Craving-Killing Cookies: Pre-heat oven to 350 degrees; in a large bowl, lightly beat one egg 1 1/2 cup natural peanut butter, 1 1/2 scoop chocolate or vanilla protein powder, 1/3 cup Sucanat sweetner, 1/2 cup almond meal, 1 tsp baking soda and 1/2 tsp vanilla extract; form little balls with a spoon and place on parchment lined baking sheet. The simplest answer that I can give you is hormonal, just as boys are interested in having relations with you. Whether you are heterosexual or homosexual, by the time you reach high school you start feeling the need to connect with the person of the same sex or another sex. That’s normal; how you react to the situation is what’s important and that would take me an hour. Many colleges use the CARILLON to announce upcoming events, to announce remembrance events, etc. The University of Florida CARILLON is able to play complex arrangements because it has dozens of bells. A CARILLON must have at least 23 bells and at UF there are hourly chimes. In the afternoon at UF there are two 15-minute mini concerts. Students belong to a 10member team who earn two college credits for being part of the Carillon Studio. One of the students said in the Miami Herald article recently: “It’s not like learning any
other instrument because you can’t take it home and practice.” Students tell me that the sounds of the bells are very calming.
My friend just had a baby and claims she didn’t know that she was pregnant. Is this possible? It is possible, but I don’t think very probable. We all have signs when we are pregnant, tender breasts, loss of period, perhaps craving foods, clothes don’t fit, etc. I saw a show on television that focuses about all of these women that have had babies and didn’t even know that they were pregnant. I personally find that hard to believe. I haven’t told my parents my SAT scores because I am utterly devastated and ashamed. My best advice would be to go to a Junior College whether it is here or elsewhere. For starters, go to Miami Dade College, which once was a junior college, and find out if you are eligible to attend school at Miami Dade. They probably will have you taking remedial courses in Math and English. You will be paying for these courses, but getting no credit. This is what is so frustrating with some of these students because they have to pay for the courses, but it is the penalty you pay for not getting a higher score.
