The holiday season, starting with Thanksgiving and continuing through the New Year, is a wonderful time to count our blessings and to communicate to our family, friends, neighbors and co-workers how much we appreciate them. It is also a time when we reach out to those in need as we give to charities, participate in toy drives and try to bring cheer to those who would benefit. As mayor of a municipality that has resources beyond the monetary, I have been focused on tapping into our emotional, intellectual and creative capital to build on the resources we already have and build a stronger sense of community spirit. I want to thank the many residents who have come forward to participate in our advisory groups, focus groups or volunteered to support a community event, such as the Pinecrest Pioneers luncheon where we recently celebrated 10 residents in their 90s. With each meeting, event or program, connections and friendships are built and our community, and each of us in it, is the better for it as a result. I have many ambitious goals for the coming year and below are four that I would like to share: First, we must focus on our public schools and our children’s education. Our schools are recognized as among the best in the county, yet due to the age of our schools, we are missing the technological edge. Pinecrest has, for many years, provided a $10,000 grant to each of the five public schools that educate our children. The principals typically use those dollars to upgrade technology. The state of art intelligent board is one important technology that very few of our classrooms have.

LOUIS LOPEZ-BLAZQUEZ Palmer Trinity senior Louis LopezBlazquez is president of the school’s Best Buddies chapter. Best Buddies is a program started by Anthony Shriver to create friendships between those with intellectual disabilities and students. The chapter at Palmer is quite active. Already this year they went on an outing to Watson Island for an International Best Buddies-sponsored concert called “End the R Word” and another outing to Homestead’s Bayfront Park. Lopez says the organization’s current mission is to end the use of the word retarded with the “End the R Word” campaign. “It’s so sad that these kids are treated so poorly over something they have no control over,” he says. “It takes time to get that kind of word out of your vocabulary. I think the problem is that it doesn’t stop unless you see first hand what affect that word has on people. I have seen it first hand. I see the pain when someone is called that. It’s horrible, just horrible.” In conjunction with the Best Buddies crusade to spread the word about the damage the R word does, Lopez-Blazquez spearheaded a campaign at Palmer Trinity to get pledges from fellow students that they will no longer use the R word. The Palmer Trinity chapter also sponsored “Shed Your Threads” day for Best Buddies. On that day, the students paid a

dollar to be able wear clothing other than uniforms to school. Lopez-Blazquez says Palmer is paired up with the special education program at Homestead Senior High. “It has a special ed program with a wide range of intellectual disabilities,” he says. “I work closely with the special ed advisor for the kids. The point is to establish oneto-one friendships with the kids.” The idea is to establish a friendship that probably wouldn’t happen otherwise. “The benefits of the one-to-one is that you focus on one kid,” Lopez-Blazquez says. “You can do so much for one kid. The idea is having that one to one makes such a difference. There are about nine of us in the club who have been matched.” When Lopez-Blazquez became president, he went to a Best Buddies conference for training. “All incoming chapter presidents are required to go to Indiana to attend a leadership conference,” he says. “About 800 people attended from all over the world. Anthony Shriver was there. It was very moving, very inspirational.” While Best Buddies is his main extracurricular activity, he’s also involved in the Gay Straight Alliance and La Liga Against Cancer. “They provide health care for patients who can’t afford it,” he says. “For the last four years I’ve been involved in that. I’ve always participated in any fundraising events.” Along with believing in their cause, Lopez-Blazquez has been involved in La Liga because his mother is on the board of directors. He’s also done some work with Hands On Miami. Next year, he hopes to be attending college. He applied for early decision at George Washington University in St. Louis. His back-up schools are the University of Miami, the University of Florida, Georgia Tech, Carnegie Mellon, the University of California at Berkley, Lehigh and the University of Pennsylvania. He wants to major in mechanical engineering and minor in aeronautical engineering. “I have a passion for airplanes and aviation,” he says. “My dream is to work for Boeing. At Washington U they have a good relationship with that company.” By Linda Rodriguez Bernfeld

DANNY McCAIN Palmer Trinity sophomore Danny McCain is an unusual young man. In these modern times, most young athletes concentrate on one sport and, in some instances, two. But not McCain. “I’m a four-sport athlete,” he says. “Golf, basketball, baseball and track. Whatever season it is, that’s what I’m focused on. I love them all.” This year McCain has already played on the golf team, which went 12-1. “Some of our players went to states to compete,” he says. “Not me as an individual.” McCain learned how to play golf the summer before his freshman year while he was in Canada. “I just fell in love with the game,” he says. “I was talking about it every day. I even started watching the golf channel. Every swing of the club put a smile on my face.” In the fall of his freshman year, McCain joined the golf team instead of going out for football, which he had played in middle school. As a freshman, he also joined the track team at the request of the athletic

director. He was an immediate success, breaking the school discus record and going to districts in discus and shot put. “I got to the district finals in both of my events,” he says. “I was a foot short of hitting the regionals as a freshman,” That accomplishment is even more impressive when you consider that the track and baseball seasons run concurrently. On the baseball team, McCain plays first base and also pitches. He was on the varsity team as a freshman. He’s currently on the junior varsity basketball team. He was on the varsity in golf, baseball and track. At the same time, he carries a 3.6 grade point average in honors and regular classes and is on the honor roll. McCain says he keeps up with his studies by starting his homework during study hall. “I don’t lollygag and I try not to watch so much TV,” he says. If he has trouble in class, he asks the teacher for help immediately. That focus on studies earned him the Biology Certificate at the Freshman Award ceremony. “Out of the core classes, I’d say my strong point would be in the sciences,” he says. Despite his heavy sports schedule, McCain is still active in extracurricular activities. He’s a member of the Palmer Cuban club and the Students Offering Support (SOS). SOS has provided him with the opportunity to participate in the junior naturalist program at the Deering Estate as a volunteer. “You get CPR training, canoe training and study biology or marine biology,” he says. “At the end it will be 36 hours of service for this program.” While McCain is terrific in sports, he’s also excellent in music. He plays first chair clarinet and is the concertmaster of the Palmer Trinity Band. “I performed in Carnegie Hall in the seventh grade and in Germany in my freshman year,” he says. “We have a big trip every other year. We haven’t been informed where it will be for 2011, but 2010 will be in Orlando.” By Linda Rodriguez Bernfeld

ELIZABETH MASSON Elizabeth Masson, a senior at Carrolton School of the Sacred Heart in Coconut Grove, is a robotics aficionado. She builds robots for the annual Battle Bots competition. “We build task-oriented robots; either

15-pound Battle Bots or 120-pound Battle Bots,” Masson says. Carrolton has the only all-girl robotics team in the nation and it is the largest robotics team in the USA. “We usually take awards,” Masson says. “My teammate and I took two document awards. We were runners up for the 15pound and the 120-pound documentation. That’s a separate competition in itself.” Last year, the 120-pound robot that Masson and her teammate built did very well, finishing strong in the winner’s bracket, but not quite high enough to place. “It was our first time in the 120-pound robots (competition),” she says. “You’re competing with teams that have handled robots for years; but we made it pretty far. We made a name for ourselves. They didn’t expect two girls to build a robot.” Masson and her teammate will re-engineer their robot because of rule changes. The 120-pound robots are now required to have an active weapon. “We had planned on remaining as a defensive robot,” she says. “Now we’re being forced to create an additional

weapon. We have to come up with some design changes to meet the requirement for this year’s competition.” While they have to add to the robot, she says they won’t build a completely new one because the bigger ones are expensive. The excitement of last year’s event didn’t end when they left California. CBS College sports will air scenes from the college contest and Masson says there will be scenes where viewers can see Carrolton students or Carrolton teams. While the Carrolton team didn’t win any of the competitions this year (although they have in the past), Masson says that’s not important. “It’s not always about winning, it’s about the experience and what you learn,” she says. “We talk to veteran robot builders. I met a robot builder that I had been reading about since my freshman year. It was kind of like meeting a celebrity.” While the Battle Bots competition isn’t open to the public or to college recruiters, the fact that the girls are entered is a boost to their college dreams. Masson says not only does it look good on a college application, the best part is that the girls obtain

knowledge that a lot of engineering students don’t have. As for her college hopes, Masson is waiting for an answer from Southern Methodist University in December and the University of Florida in February. She has also applied to Dartmouth, Duke and the University of Virginia because of their excellent engineering schools. “I want to go into mechanical engineering because that’s what I’m the most familiar with,” she says. Even with so much of her time absorbed by robots, Masson makes it a point to do community service during the summer months. She volunteers as a teacher’s aide at the Children’s Resources First Steps Pre-School in Kendall. She has worked there for the past three summers and hopes to get in one more summer before going away to college. “It was one of the most rewarding experiences I was able to have in my high school career,” she says. “The love you feel from the children is like the ultimate gift they can give you.”

Recently I volunteered to be principal for a day at Pinecrest Elementary school. Ms. Diaz, the exceptional principal at that school, took me on a tour of several classes in session and I experienced how much more engaged and interactive a science lesson (or any other lesson) could be with the use of a smart board. They open the world to our children and there should be one in every classroom. Basically anything you can see and do on a computer you can see on a smart board. My goal, and I hope you will join me, is to have a smart board in every classroom in every school in Pinecrest. To do so, I am mounting a major campaign to raise the funds that will enable us to do so. This will be privately raised funds. We are developing a formal drive for sponsors through the annual Taste of Pinecrest event to be held on March 7. If you want to be among the major sponsors ($10,000 and up) who will receive permanent recognition for making this a reality, contact me at <mayorlerner@gmail.com>. WATER CONNECTIONS Water connections will be made shortly for those residents in the Phase 1 installation who choose to connect to county water. Phase 2 will be complete in the spring. We still have approximately 1,000 homes on wells that do not have the installation of water pipes available to them. My goal is to access the additional $12 million necessary funds through federal or state grants to complete the project for the remaining homes who do not have access. We have hired a federal lobbying firm to do just that, bring home the water dollars. PINECREST GARDENS We refer to this as the crown jewel of

the village. It will soon have a new executive director and a business plan developed by an arts and entertainment consultant hired to analyze the banyan bowl and advise of how to create a venue for musical and theatrical performances. We will need some infrastructure improvements to make it happen, such as lighting, sound and stage for the banyan bowl. We will be seeking grant opportunities to fund these capital improvements. Just imagine Sunday jazz brunch and other musical and theatrical performances we can enjoy at the banyan bowl. DOG PARK Residents have indicated an overwhelming desire to have a dog park in the Village. We have budget approved what it will cost to provide fencing and improvements necessary; we just need to identify the most appropriate park property where to locate it. We will make the decision in coming months. I am in favor of having the dog park at the Veterans Wayside Park on SW 112th street and South Dixie Highway. Palmetto Bay has located its dog park on South Dixie Highway at the wayside park and it has been a success. There is no other park in Pinecrest that doesn’t already have significant portions dedicated to sports, which would be incompatible with a dog park co-located there. The other council members will have to be convinced that Veteran’s Wayside is the best place for our dog park. It takes three votes to pass such a resolution; I am one of them. If you agree, tell your council member that it is a priority for you. I wish everyone a safe and relaxing holiday season full of happiness and cheer. May all your New Year goals be reached.

Two stories of courage in Siam Palace anniversary BY PAT FULTON

When Marc Buoniconti hosted a 20th anniversary celebration in early November for the Siam Palace restaurant on Sunset Drive, it’s possible that many of the guests who poured into the Thai restaurant were unaware of two important stories behind that event. Buoniconti, well known for his work with the Miami Project that conducts research on spinal cord injuries and other neurological injuries and diseases, is close friends with the owner, Cynthia Halelamien, who has a worthy story of her own. Coming alone from Thailand, she arrived in the U.S. over 20 years ago to pursue a master’s degree in communications from the University of Miami. When presented with the opportunity to take over a Thai restaurant that was failing, she took the challenge and transformed the business singlehandedly into a retail success. When Buoniconti visited Siam Palace in 1995 at someone else’s recommendation, the result was, as he puts it, “I came and I never left.” For the 20th anniversary, he encouraged Halelamien to add a sushi bar, which she did, to unanimous acceptance from her clientele. “My customers like to try something of everything,” the owner explains. “Although the main menu is all authentic Thai food, the Japanese sushi has been a success.” The Siam Palace chef is Thai, giving an authentic stamp to the menu, but the rest of the staff is truly international: Japanese, Korean, Thai, American and Latin American. One of the differences between Thai food and other ethnic cuisines, says Halelamien, is that all the ingredients are fresh, rather than canned or frozen. “In Thailand, we don’t know what a can of peas looks like,” she says. “We just go out in the garden and pick the peas for cooking.” One of the best-sellers on her menu is the Pad Thai (stir-fried noodles) and shrimp soup, made with lemon grass and lime juice. ORTHODONTIST’S CORNER

Why does it seem kids are wearing braces at a younger age? The optimal time to start orthodontic treatment is usually in the age range of 11-13 years old, either when the final baby teeth are lost or all of the permanent teeth (excluding wisdom teeth) are present. So why does it seem like many kids younger than this have braces? An increased awareness on the part of parents and family dentists may be a factor. The American Association of Orthodontics (AAO) recommends that children see an Orthodontist by age 7. This is not meant to imply that this is the best age to start orthodontic treatment. In fact, most patients at this age are best served being reevaluated annually or semiannually to monitor growth and development until a more appropriate time to start treatment. The AAO recommendation does, however, reflect the fact that certain dental issues are best addressed earlier (before all of the permanent teeth are in) rather than later. Cases that might otherwise develop into more complicated, lengthy or even surgical treatments can be caught or “intercepted” early. In some cases early treatment can achieve results that would not be possible if treatment is delayed until jaw and facial growth has ceased. An early approach is also referred to as “two phase” treatment because a second phase of treatment with full braces is often needed once all of the permanent teeth are present. As previously stated, most patients are best served to have a single phase of orthodontic treatment in their early teen years. However, when applied appropriately, early treatment may prevent more serious problems from developing and make the second phase of treatment shorter and less complicated.

Eye exams are a preventive tool BY DR. ADAM CLARIN

The eyes are said to be the windows into the soul, but they are actually windows into the entire body. Just as the eyes allow us to see what’s happening in the world around us, they also allow doctors to see what’s happening inside of our bodies. A comprehensive eye exam performed by an optometrist will not only assess the condition of your vision, but the exam can also detect the onset of eye disease and other serious systemic health issues. Research has shown that 3.4 million Americans over 40 years old suffer from visual impairments including cloudy or blurred vision, near or far sightedness and even blindness. As the population continues to age, the occurrence of vision disorders will only increase since adults are more prone to developing various agerelated eye diseases such as glaucoma and macular degeneration. Glaucoma is the most common cause of vision loss and typically does not cause noticeable symptoms or changes in your vision. By the time your vision is affected, Optometrists can only prevent further vision loss. Regular comprehensive eye exams by your Optometrist can detect early signs of glaucoma and allow for early intervention and prevent vision loss. Eye exams serve as a preventative tool not only for identifying eye impairments but also symptoms of serious systemic diseases. For example, examining the cornea and blood flow through the retina can help your eye doctor detect signs of diabetes, high cholesterol, high blood pressure and heart disease. Ultimately, early detection can not only save a patient’s eyesight but also alert them to the presence of another disease before it causes serious damage. Also, beginning in your early to mid-40s you will experience changes in your vision, especially the ability to see clearly at close distances. This normal aging change in the eye’s focusing ability will continue during your 40s and 50s. In addition, as we get older we are more susceptible to certain eye diseases such as cataracts, glaucoma and macular degeneration. Getting your eyes regularly examined enables your eye care doctor to detect the first signs of disease and prescribe the appropriate treatments to prevent vision loss. The increased visual demands of our

technological society also add to the need for regular optometric care. From iPhones to Blackberrys to computers, everyday devices cause more eyestrain than ever before. These new visual demands lead to new visual discomforts, such as computer vision syndrome, and to maintain visual efficiency, productivity, and optimum eye health, routine examinations are needed. It is unwise to determine the need for an eye exam based solely on whether or not you are seeing well. Even though your vision may be clear, undetected changes can occur from high blood pressure, diabetes, eye tumors and retinal disorders. Unlike the rest of your body, the eyes usually don’t hurt when something is wrong, so don’t just rely on changes in your vision to determine your need for an exam. As a rule, you should not go beyond two years to have your eyes examined, and the recommended care is to have a routine eye exam every year. If you have a family history of eye diseases, diabetes, or poor general health you may need to have your eyes examined more often. You and your doctor should determine the eye exam schedule that best meets your eye care needs. Proper eye care isn’t limited to adults. The American Optometric Association suggests that children should have their first regular eye exam between 6 months and one year. Follow up exams should be done around age three because this is the age when a child’s visual system undergoes its most rapid development, and when vision correction is most effective. As with adults, children’s eyes should be examined every year. School-age children use their eyes more frequently than adults to read and perform other school activities, so it’s extremely critical for them to have regular eye exams. It is also important to remember that an eye screening typically offered at school only tests distance vision and will not detect many vision problems. Your child can have problems with near vision, eye coordination and focusing and still have very good distance vision. If left untreated, these problems can cause learning disabilities, headaches and other visual discomfort. Whether child or adult, proper vision care is essential to maintaining a healthy lifestyle and should be a top priority. Gulliver Prep student raises money to help needy Nicaraguan students BY LINDA RODRIGUEZ BERNFELD

Gulliver Prep junior Alejandro Perez is not your typical self-centered teen. Perez’s family has made sure of that. Perez and his sister Andrea work hard each year to raise money to help teens in Nicaragua go to school through a project they named “Feed and Educate A Child.”

To raise money, Perez began a computer consulting business and repairs computers,

then uses the money he’s paid for his charity. The funds are matched dollar for dollar by his parents, grandparents and family friends. “Just this past year, we got close to $20,000 from matching donations from my family and the work I did,” he says. “We used that money to buy a truck to take kids from their middle school to the high school. We set it so the kids can take a bus of sorts.” In the past, they have given the graduating middle school students in the town of Santo Domingo bicycles from donations, but he realized that the bikes were not an appropriate mode of transportation during inclement weather, which is why they bought the truck. Perez is familiar with the town because his great grandmother owned a sugar plantation there and he would visit when he was younger. “I would see the poverty,” he says. “They would go to sixth grade and then they would be pulled onto the farm. I wanted to give them a way to further develop their education.” His dream is that some of the students will not only graduate from high school, but go on to college. “At this point, we haven’t had a class that has graduated yet (from high school),” he

says. “For the college, if they were to pursue college, we would try to help them. There is one student who was valedictorian who may try to go to college. We’re going to try and help them out.” Perez has tried to get Gulliver involved in his efforts. He spoke with the administration and they offered old uniforms that can be given to the Nicaraguan students. He also collects clothing from friends and family to give to the needy students. “I’m going to work with the administration this year to see if we can get some boxes. I think the best way is to actively go out and ask,” he says. “Another important thing I found out was that a lot of the kids would show up at school every morning barely having had any breakfast. Therefore

some of the funds were invested in buying powdered milk, which is distributed to the kids at school every morning.” From the program, he’s learned to appreciate all that he has here in the United States. “It’s really an eye opener to go out there and see the conditions these people live in and then come back to Pinecrest and go, ‘Wow, it’s a completely different world!’” he says. When he’s not repairing computers or gathering clothing donations, Perez works hard at school in the International Baccalaureate program. Until this year, he was on the cross country and track teams, competing in distance events like the 800meter, one-mile and two-mile runs.

New pastor at Christ the King Lutheran Church BY JODY GACHE

Worshipers at Christ the King Lutheran Church, at 11295 SW 57 Ave., were excited and happy when their new pastor was recently installed. Pastor Kent Lee is an innovative, energetic, spiritual and dedicated leader. He often thinks “outside the box”, as evidenced during his sermons when he leaves the pulpit to move among the pews and share stories with the congregation. Lee grew up in the small town of Pleasantville, a suburb of New York City. With a degree in electronics, he initially worked in the audio industry. He also worked with foster care children and other youth ministries, and there developed his passion for serving. Lee felt a call to the ordained ministry and completed work on his Master of Divinity in 1999 from the Lutheran Theological Seminary in Philadelphia. He went on to serve in a variety of ministry settings in New

York, Sarasota and Ft. Myers. As a family man with a wife, Susan, and two daughters, Charlotte and Amelia, Lee supports a vibrant Sunday school program for children that teaches God’s love and Christian values. Adult education is active with continuing Bible study and other subjects. Parenting Teenagers and Women in Christianity are two popular series now enjoyed by church members. A talented, well-directed choir adds to the beauty and spirituality of the services. Because of the many activities offered at the church, fellowship between members is strong. They are kept busy throughout the year celebrating Christian and other holidays resulting in a congregation that has the feel of community and family. Lee has initiated canoe and kayak cruises and cycling tours for members and friends. Underlying all these activities, Lee is a devout man who wants to provide

Thunderstorms terrify some dogs BY CAROL CARIDAD Vice President, Paws4You Rescue

For many dogs, a thunderstorm is terrifying, even if those dogs are safe and dry indoors. Your dog becomes anxious, clingy and agitated when her high sensitivity to barometric pressure warns her of a coming storm. When the storm hits, she paces, drools, barks at cracks of thunder, hides under things or cowers and shakes. After the storm, she may have trouble settling down; some dogs can be restless for hours, even days afterward. Thunderstorm rumbles can make dogs panic and engage in behaviors ranging from excessive panting to eating through drywall. Desensitization training can calm some of these dogs – but such training takes a while to work. For storm-phobic pooches who need a quicker relief, the following measures can help: See if a dog will eat high-value foods during storms. High-value foods are treats your dog likes so much she will do just about anything to score one. For some dogs it’s a tasty piece of chicken, for others a warm hot dog bite will do the trick. Local dog behavior expert Dee Hoult suggests complimentary therapies such as sprays or diffusers that contain dogappeasing pheromones – similar to the pheromones released by nursing mother dogs. “Having a pheromone plug in, or spraying pheromone on a bandana on putting that bandana on your dog often helps,” says Hoult. “It’s never a bad idea to try spraying your dogs bed with calming pheromones, or even ordering a pheromone diffusing collar that your dog can wear on a daily basis so that when a storm hits your dog is already equipped.” Some common pheromones are Comfort Zone and D.A.P. Hoult also suggests rubbing a dryer sheet on your dogs fur prior to a storm. “Yes, it’s weird, but sometimes it works! Many dogs are irritated by the static building in their fur.” Another over the county complimentary therapy is Rescue Remedy (rescueremedy.com), which can be mixed

Paws4You into your dog’s water. If using high value food and complimentary therapies isn’t enough, there is still hope for the storm-phobic canine. The Anxiety Wrap or the Storm Defender cape are two products that may reduce thunderstorm anxiety in some dogs, but experts suggest acclimating your dog to such products before a storm starts. Log on to <anxietywrap.com> or <stormdefender.com> to learn more. Some dogs are so afraid of thunderstorms that hey need pharmaceutical help to get through them. If your dog is one, your veterinarian may prescribe anti-anxiety medication. “Most vets carry alternative herbal medicines that can lower anxiety,” says Dr. Robert Pane of South Kendall Animal Clinic. But when, as dog owners, do we know when we need to seek medical help for our dog’s behavior? Dr. Pane recommends that you seek help from your veterinarian when a dog is causing physical damage to itself or your property. “We frequently recommend multimodal treatments, meaning that we prescribe a medication to help ease a dog’s anxiety so that it responds better to desensitization programs.” It’s always better to do more than one thing to discourage anxiety, as simply medicating an animal usually doesn’t solve the root of the problem. From calming music for dogs (check out throughadogsear.com) to placing your dog in a dark and quiet room away from windows, there’s a lot we can do to help our dogs through storm anxiety. COOKING WITH JAN It seems that these times can only leave one confused and hungry. The stock market is up, gold is down and oil is somewhere in between. Or is it the other way around? I’s impossible to keep track. So here are a few ideas, depending on your day’s needs. THE EXPENSIVE Pan Roasted Halibut with Poached oysters and caviar 4 x 6 oz. halibut filets Olive oil Salt and pepper to taste 16 oysters (medium size; shucked with juice preserved) 2 oz. of caviar (I suggest American Sturgeon) 1 cup white wine 1 cup chicken stock Fresh thyme 1/2 stick of butter Fresh chopped parsley Season and saute the halibut in olive oil for about 4 minutes on each side, set aside. Place the oysters in a small sautÊ pan with the juices (you might add a small splash of white wine if needed). Bring to a simmer, remove oysters, add white wine and chicken stock, reduce to about 1/4 cup, strain, add fresh thyme and whisk in butter. Set aside until assembly. Assembly: Place a piece of halibut onto 4 plates, reheat oysters in sauce without boiling,

place oysters around each filet of halibut, ladle sauce around fish and oysters, place 1/2 oz. of caviar on top of each halibut, sprinkle with fresh parsley. Serve immediately. THE CHEAP Braised lamb shank with lemon-scented mashed potatoes 4 lamb shanks 2 onions 2 leeks 2 carrots 4 bay leaves Fresh thyme 8 cloves of garlic Whole black pepper Olive oil 2 cups of veal stock 2 cups of white wine Brown shanks in a roasting pot; root vegetables (cut into one-inch pieces) are browned in the pot as well; add thyme, garlic, black pepper, bay leaves, white wine and veal stock; cover and cook in a preheated 325-degree oven for about 2-2 1/2 hrs or until meat is done. Remove lamb shanks, strain sauce and bring to a boil, clean sauce from fat and foam, taste for salt and pepper. Pour sauce over lamb shanks and serve family style. Lemon-scented mashed Potatoes Make regular mashed potatoes using sour cream and milk, season with fresh lemon zest and chopped fresh garlic. THE SKINNY Seared Tuna Steak with Soy-scented noodles, fried banana and parsley pesto 4x6 oz pieces of fresh tuna loin (cut as steak) Salt and pepper to taste

Set aside. 2 cups freshly cooked noodles of your choice (I like pappadelle pasta) 1/4 cup soy sauce Splash of sesame oil Thinly sliced scallions 1 Teaspoon of chopped garlic 1 Teaspoon of chopped fresh ginger 1 soup spoon of honey Juice from 1 lemon 1 soup spoon of fish sauce Mix all the above in a mixing bowl and set aside.

1 stick of butter (melted) 1 cup of fresh Marcipan (almond paste, very cold or frozen so it can be grated) 2 apples (Granny Smith, peeled, cored and diced) 2 tbs of sugar Splash of white wine Vanilla 1/2 cup raisins (golden) 4 spoons of Cuban dark rum 2 cups of Crème Fraiche Cinnamon 1 tsp of powdered sugar Juice from 1 lemon 1 egg, beaten

Parsley Pesto 1 bunch fresh Italian parsley (or flat leaf, rinsed and dried) 2 cloves of garlic 1/4 cup extra virgin olive oil. Juice from 1 lemon 1 soup spoon pine nuts (toasted) 2 soup spoon of grated Reggiano Parmigiano Place all ingredients in a blender and pulse regularly until blended and smooth 4 bananas, cut in half length wise (with peel) Salt and pepper Olive oil Heat skillet, add olive oil, season bananas and let caramelize skin side up for about 4-5 minutes. To assemble: Divide noodles on to 4 plates, arrange tuna (sliced nicely on the bias) on top of noodles, spoon pesto on top of tuna and serve rest on the side. Fried bananas are served family style.

Filling - In a pot combine apples, sugar, white wine, vanilla, raisins, rum; cook for about 10 minutes until apples are tender; set aside. Arrange one sheet of filo dough on a the table, brush with melted butter, grate marcipan over sheet, repeat with remaining three sheets of filo dough. Cut filo dough into four pieces, divide apple compost onto each square of dough and roll them like a “spring roll.â€? Place on a baking sheet, closing down. Brush with the beaten egg and bake about 10 minutes at 325 degrees. Whip Crème Fraiche, cinnamon, powdered sugar and lemon juice smooth and serve next to apple – marcipan strudel.

Once upon a time in a county not so far away from our own, there came to be a bureaucrat who was recruited to improve the test scores of the students. He had wandered from place to place before he was hired there, leaving in his wake schools whose faculties put in for transfers and whose student achievement scores rose rapidly and just as rapidly fell. There was always a sigh of relief when he moved on. But, of course, he moved on not because he was fired but because he was promoted. Such is the way of bureaucracies. So the good citizens of that county, not knowing of the ire of those who had previously worked under him were persuaded by their superintendent that he was just the man they wanted. He arrived promptly at 8:00 AM one sunny morning and began issuing proclamations. “All teachers will teach bell-to-bell!” he proclaimed. “What about my new kindergartners who are crying for their mommies?” asked a kind-hearted kindergarten teacher, who seemed not much older than her students. “Bell-to-bell!” was his response. “No teacher will be seated at his or her desk! You must move around the students!” he proclaimed. “But my students are writing an essay at their desks, and it breaks their concentration when I walk around,” protested another teacher. “You will be marked down on your evaluation if I find you seated,” he answered. And so it went. All second grade students were to be on page eighty-

three in their math books at 10:15 AM, while all juniors were to be on page fiftyone in the novel Moby Dick. Each student was to be at a certain page or taking a certain test or doing a certain assignment at precisely the right moment. Each moment was to be accounted for. As you can imagine, many students felt ill. Tummies were upset and heads were achy and even the children who had always rushed to school dragged their feet. “I don’t want to go to school,” children told their worried parents. So the parents started to blog. They started to gather. They looked up school board meetings and they signed up to speak. What they wanted for their children, said these parents, was a school system that was more than a test factory. They wanted a system that taught their children without terrorizing them. They wanted a system that fostered creativity and critical thinking. They wanted an end to the time clock. More than a thousand parents held a rally. They protested that their children were more than test takers. They protested that advanced children were not allowed to advance, and children who needed more time had no extra time. The hands of the clock were stripping their children of real learning. This story is not over. The parents in that county far, far away have only started the parent revolt. I’m not a psychologist and I’m not a criminologist. From what I’ve read and heard from professionals in these areas, this behavior many times results in the actions of a serial killer later on. I wish I had the answer. I’m 16 years old and a junior at Palmetto High School. I feel that I have to contain my rage at all times. I don’t know why, but I just feel this terrible anger inside me all the time. What can I do to help myself? You need professional help. Please call me at 305-238-7737. There is a lot that I can do to help you and I will be glad to refer you to a psychologist or psychiatrist. It’s very good that you recognize that you’re angry. Please call me. Can you give me some advice for my daughter who will is a freshman at the University of Florida? Stay focused, you are there to learn. Try not to be overwhelmed and if that happens, see a counselor; they are there to help. Ask questions of faculty and upperclassmen. Don’t be shy. Be prepared in class and don’t procrastinate. I suggest you wait until your second semester or sophomore year to join a sorority. And give college a chance, you are there to become independent and learn. Don’t be disappointed if, in the beginning, your experience is not what you hoped it would be. It is very difficult to adjust to a

Do you know how many words are in the typical college essay? The average essay can range anywhere from 250 up to 800. I’m wondering why most colleges appear to have their applications online. I have an application for Washington University and it’s in paper form and I don’t know which is worse. It has so many pages and I’m overwhelmed. I receive many questions on what to do on a college application. If the student had poor academic grades in the beginning and had a good reason for it, explain it. If a student freezes on tests or if there’s anything else that could hurt their chances of being accepted, explain that as well. There is a space on most college application to explain your child’s situation. I’m looking at WashU’s application and it says “Additional information: if there is any additional information you would like to provide regarding special circumstances, additional qualifications, etc., please do so in the space below or on an attached sheet.” I feel that this statement to a college is extremely important. Nine out of 10 children that I work with have had some special situation or experience in life that cannot be explained by test scores or essays. Christmas just isn’t the same this year in Pinecrest. After four decades of bringing smiles and wonder to literally millions of people, the Clot family has pulled the plug at Southwest 119th Street. In the same yard where the yearly display of festive ornaments and dozens of elaborate decorations overflowed, a for-sale sign now stands alone in the darkness. The man whose passion was Christmas, Bill Klot, passed away two years ago. Understandably, his grown children felt it was time to move on. As they explain on their website, it was a tough decision. After long and emotional reflection, they realized that their joy came from working so closely with their father to make his dream come true, year after year. No longer able to see the delight in their dad’s eyes, it just wasn’t the same. I’m sure I speak for many in expressing my sincere thanks to the Clots and all the volunteers who created something that we don’t have a lot of in South Florida: Tradition. Like you, I have my own memories of the first time I was enchanted by the display. I couldn’t believe all the work that went into the production; from the countless number of volunteers to the heavy equipment needed to bring the winter wonderland to life. I watched the little children delighted by the mechanical skaters, the automated animal band, the choo-choo trains and even the skinny “Father Christmas” who majestically stood amongst the freshly mulched front yard. I loved that they erected a sign that answered all of our questions. Monthly electric bill? Four-thousand dollars. How long does it take to assemble the display? Fifteen

Life With kelly days and 15 volunteers. Total number of lights? Seven-hundred-thousand. Who’d have thought that the best holiday home in the entire country could be found in the heart of sub-tropical South Florida? We were all so proud of the Clots when the Today Show bestowed that title on “our” Christmas house. Even though his mega-display was featured in numerous national publications and on countless television shows, it seemed as though it was the little things that made Mr. Clot the happiest. He made sure that every tot who came to visit had a tiny candy cane to enjoy. He loved to listen to people tell their own stories of Christmases past. Who wasn’t touched by the big grin on Mr. Clot’s face when he received a proclamation in his honor from the city? It was his quiet humility that I’ll remember. Thanks to a modest on-site donation box, the family was able to raise close to a half-million dollars for the Women’s Cancer Association at the University of Miami, a cause close to their hearts. Yes, the lights have gone out at Southwest 119th Street, but the Clot’s have graciously donated many of the decorations to Miami Metrozoo, where even more people can enjoy their father’s luminous legacy. Somewhere in Heaven this year I’m sure there’s a man with a ladder, a string of lights and a fistful of candy canes who’s very happy about that. 2010 Cadillac SRX redesigned with new engine options Ron Beasley AUTOMOTIVE EDITOR

LET’S TALK CARS Since better fuel economy tops just about every consumer’s list of necessities in a new vehicle these days, most manufacturers are trying to deliver, and that includes Cadillac. The luxury manufacturer has redesigned the SRX for 2010 and given it a pair of more efficient engine choices. The luxury midsize SRX is powered by Cadillac’s advanced V-6 engines, the smallest-displacement engines that the company offers in North America. A new 3.0-liter, 265 hp direct-injected engine (direct injection results in more power, 10-15 percent better fuel economy and lower emissions) mated to a new Hydra-Matic 6T70 sixspeed automatic transmission is standard, while a new 2.8-liter turbocharged V-6 is optional. Both have advanced technology that helps produce high performance typical of larger-displacement engines, but with greater fuel economy and lower emissions. They replace the 3.6-liter and 4.6-liter

engines of the previous generation SRX. The new turbocharged V-6 is derived from engines that GM uses in luxury European models and it delivers about 300 hp under full throttle, but gets the fuel economy of a smaller engine during lowerload driving conditions such as highway cruising. An Aisin AF40 six-speed automatic transmission is matched with the 2.8-liter turbo and includes a driver-selectable “eco mode” that alters transmission shift points to maximize fuel economy. The new SRX seat seats five adults (the optional third row is no longer available), has ample cargo room, tows up to 3,500 pounds when properly equipped and rides on a wide track that delivers responsive handling. It has the typical edgy Cadillac design of recent years, with minimal body overhang, and the wheels are pushed out to corners. Eighteen-inch wheels are standard and 20-inch wheels are offered. A multi-piece shield grille marks the face and vertical headlights blend into a sweeping body that tapers downward to give the vehicle a sporty, raked profile. A bold accent line dives across the body side and ends at a chrome front fender vent that incorporates a side marker light. An integrated spoiler on the rear edge of the roof extends the sleek

design line and improves aerodynamics. On the inside, luxury abounds, with hand-sewn leather covering the dashboard and seats. An integrated center stack houses controls for climate and audio systems. The 2010 SRX has many advanced electronic systems, including adaptive headlights that swivel in synch with vehicle steering, a power liftgate with programmable height setting, an integrated hard disc drive for audio storage and a dual-screen

system for rear entertainment. Bluetooth compatibility is standard, as is OnStar’s Turn-by-Turn Navigation service. Pricing on the 2010 Cadillac SRX starts at $33,330.

Local ‘young adult’ author has successful book debut BY LINDA RODRIGUEZ BERNFELD

When Danielle Cohen Joseph’s first book, Shrinking Violet, came out in May, it was an immediate hit. Not only was it popular with teens, the Disney Channel optioned it for a television movie. In fact, the book sold so well that it pretty much sold out its first printing by fall. She found out about the shortage when she went to order some for a conference she was attending and was told they didn’t have any more in stock. “They are all shipped out, all the 5,000,” she was told. Normally, selling out the first run is a good thing and a second run is ordered. But in today’s economy, things are different. Initially, the publisher, MTV Pocket Books, balked at ordering a second printing. That worried Joseph because she had a number of events scheduled where she needed to be able to sell her books, including the Society of Children’s Book Writers and Illustrators Regional Conference, Jan. 15-17, at the Wyndham Miami Airport Hotel. Additionally, having to pay legal fees up front or along the way is actually a deterrent to many associations from even pursuing advisable legal remedies such as filing their own association foreclosures against delinquent owners (instead of just waiting for the lenders to come through) because the legal fees are cost prohibitive.
