ONE OF MIAMI’S COMMUNITY NEWSPAPERS
Village Police warn residents: Beware of car burglars!
BY RON BEASLEY
A
s the holiday shopping season begins, the Pinecrest Police Department issued a warning for residents to beware of car burglars who steal merchandise left in vehicles while people continue their shopping. Police Chief John Hohensee said there has been an increase in vehicle burglaries in the Kendall and Pinecrest areas, with customers specifically targeted and followed from the Apple Computer Store at The Falls Shopping Center. “Customers who exit the store after a notebook computer purchase have been targeted by thieves as they leave the parking lot in their vehicle,” said Hohensee. “Unsuspecting customers, who leave their purchases in the vehicle while visiting another store, often return to their vehicle only to find out that a burglar has stolen the computer.” Hohensee said that while Apple Computer stores seem to be popular targets, though they are not the only place where the thieves are preying on shoppers. Electronics stores such as Brandsmart and Best Buy JOHN HOHENSEE are also known for attracting would-be burglars, he said. Hohensee offered some tips for residents to keep in mind as the go about their holiday shopping: • Be aware of your surroundings and look to see if someone is watching you or following you. • Go straight home after making a computer notebook purchase or any other expensive purchase. • If you do have to make a stop before going home, take your merchandise with you and do not leave it in the car. • Report any suspicious people or vehicles to the police department immediately. Hohensee also said Village police will begin a crime control strategy of high visibility patrols along South Dixie Highway, along with plain-clothes officers in unmarked vehicles and on foot. At the same time, a holiday season special detail unit will conduct static and moving surveillance of suspicious persons or vehicles during peak shopping hours.

Cyber-bullying more common; becoming very dangerous BY KATHERINE FERNANDEZ RUNDLE Miami-Dade State Attorney
Here’s Pinecrest resident Antonio Paz visiting the Lesedi tribal village just outside of Johannesburg while on a recent field trip to South Africa. Paz, an avid soccer fan and promoter, was in South Africa to lay the ground work for the 2010 World Cup. Of course he remembered to take along a copy of his favorite hometown newspaper. Thanks for thinking of us, Antonio.
Positive PEOPLE
As adults, many of us can recall our early years in the schoolyard when we would witness and, in many cases, personally feel the wrath of bullies who would prey on those who appeared the most vulnerable. It saddens me to think that not only does similar appalling behavior continue to exist, but through advancements in technology this behavior has broadened its scope. It is now a growing social dilemma that we refer to as “cyber-bullying”. Cyber-bullying is defined as the

ALEJANDRO GOMEZ-BARBOSA Gulliver Prep senior Alejandro Gomez-Barbosa has only been back in the United States for two years, but he has already made an impact on many lives around the word. Gomez-Barbosa is intent on helping people, so he created the Uniteen club with a mission of helping less fortunate communities across the world. Through Uniteen, Gulliver students sponsor children in Third World countries, collect and donate fruit, purchase farm animals such as goats and buy immunization packages for distribution to the world’s poor. “Basically we wanted to make a difference in the world, even if it was a small difference,” Gomez-Barbosa says. “We help less fortunate people around the world.” Initially, the club was made up of Gomez-Barbosa and 20 of his friends, all enrolled in the Gulliver International Baccalaureate program. This year, the club has grown and its goals have expanded. “We’re working with World Vision, a well known humanitarian organization that provides educational facilities, sanitary regulations and housing to less developed areas of the world,” GomezBarbosa says. “We chose World Vision because it was one of the most recognized organizations and it works with more than 200 counties.” Uniteen sponsors children and while
the club’s efforts may sound relatively small, last year nine of the 20 members sponsored children in different parts of the world at a cost of $30 a month. “It started with just our own allowances,” Gomez-Barbosa says. “But then we added some fundraising projects.” Those fundraising projects began with a raffle that raised $550. “From this money, we were able to buy immunization packages, a couple of goats and some fruit trees for a community in Africa,” Gomez-Barbosa says. “When we had the cash, we ordered exactly what we wanted our money to be used for.” He says they thought it was important to send vaccination equipment and medical personnel to developing countries to help the people. “That was just one of our projects; we continue to sponsor the nine children,” he says, adding that one of them is Nafi, who lives in small village north of South Africa. “Last year we helped give nine people an improved life. This year, we’ve increased to 30 members, and our goal is for all members to be active sponsors.” Uniteen has a talent show scheduled to help generate funds for its various activities. They hope to raise money not only from the sale of the tickets, but through the sale of a DVD of the show. “These funds will go to sponsorships and to pay for drilling a well in Africa,” Gomez-Barbosa says. “That will cost about $5,000.” Uniteen also will continuing with regular raffles and the group has an art auction scheduled for mid-March featuring items created by club members and art work provided by World Vision. Gomez-Barbosa was born in Chicago and his parents are from Mexico. He came to Miami two years ago from Lisbon, Portugal and previously lived in Sao Paulo, Brazil. He plans to attend college in the U.S. and is considering Boston University, Harvard, Northwestern and Brown. He’s still undecided about a major, but possibilities include the humanities, international relations and law. Other than Uniteen, he’s involved in the National Honor Society, Model United Nations and he plays trumpet in the Gulliver Band.

FRANCIS TAM Palmetto High School senior Francis Tam spent much of the summer working for the Miami-Dade County School Information Technology Services department as an intern. “That’s the branch of the school system that helps repair and install computers, and works on networks,” he says. “We worked around the entire county, but I worked mostly in North Miami Beach to set up the new school, Alonzo and Tracy Mourning High School, and the new Miami Central Senior High.” Tam says it was a great learning experience because it was hands-on and not textbook-based. “Every time I got to help with a set up, there is a technician beside me,” he says. “If you made a mistake, they helped you resolve it.” The experience, he says, helped him learn how to fix his own mistakes and avoid making the same mistake in the future. Tam started working with computers at a young age and when he entered high school one of his teachers signed him up for the Cisco Academy. The academy certifies students in basic networking. “It’s four courses based on your own pace,” he says. “It’s an online-based virtual school. After each course you take a test and then after all four tests you take the real exam that certifies you.” For his community service project, Tam is putting his computer knowledge
to use. Along with a friend, he started a club called Connect America. “We take in old computers, we refurbish them, and then we pack them up and we ship them (south),” he says. “Recently we talked with several Caribbean countries, which is the main area we want to donate to, and to Colombia. We’re basically supplying public schools so students can access computers.” The teens are trying to convince Microsoft to provide serial numbers so the students who receive the computers can use Microsoft Office products such as Word and Power Point to do their homework. Tam says they hope to ship the refurbished computers before the end of December. Although computers keep him busy, Tam continues to be involved in school clubs. He’s a member of Future business Leaders of America (FBLA), the American Technology Honor Society, the National Honor Society and the Science National Honor Society. He has taken part in FBLA and ATHS competitions, winning second place in the districts and competing on the state level in computer problem solving. Community service is important to Tam, so he has volunteered at the Chinese New Year Festival at Miami-Dade College and at Palmetto Bay Urgent Care. “I basically helped the doctors by getting the tools needed for them to heal the patients,” he says. “At first I had an interest in the medical field because I’m learning acupuncture on the side.” But he has ruled out medicine as a career, though he’s still learning acupuncture and plans to get his state certification. Tam is interested in going on to college and majoring in computer engineering and aerospace engineering. He is applying to the University of Central Florida, the Florida Institute of Technology, the University of Florida and Georgia Tech. It is a huge step for someone who didn’t learn to speak English until he was in the third grade. Although Tam was born and raised in Miami, his family spoke Chinese at home. He started in ESOL classes where the rest of the kids spoke Spanish. However, he was quite advanced in math, so he was in the gifted program for that subject. As children do, he quickly mastered English and excels at school today.

SHAAN PATEL For the second consecutive year, Gulliver Prep senior Shaan Patel is editor of the Gulliver yearbook. Last year, the Columbia Scholastic Press Association commended Gulliver for having an outstanding yearbook.
“It was the first time that Gulliver has ever won a silver medal for its yearbook,” Patel says. Patel has taken over the yearbook this year in a time of transition. The yearbook teacher departed and a new one has assumed the post. Initially, Patel says he did not want to be the yearbook editor, but he reconsidered and changed his mind when he learned that the yearbook was in danger of being outsourced. “It’s a student book,” he says. “It’s for the students.” Because of the uncertainty surrounding the yearbook, the yearbook staff was small last year with only eight students working on it. This year, the staff has grown to eleven. Even with the yearbook responsibilities, Patel manages to be active in other school activities. He is in several clubs and serves as the fundraising chairman for Interact. “I plan to have a school carnival,” he says. “Last year, the big fundraising event was a school fashion show, which we held on a Tuesday night and raised $4,000 in profit.” For that show, they used almost 40 models, both male and female, and had attendance of 250 to 300. Patel says they received donations from a boutique in South Miami, as well as a Brazilian swimwear boutique and a South Miami store that specializes in formal wear.
“We had the band Pure Pink play during intermission,” he says. “We’re doing that again this year in the spring.” Interact also works with the Community Partnership for the Homeless in downtown Miami and every other month members help feed the homeless and work with the children. “We’re starting with the shelter in Homestead,” he says. “We’re going to alternate between the Homestead and downtown Miami shelters.” Patel also is vice president of the club Teens Against Domestic Abuse. He says the group is planning two fundraisers this year. Last year they had a cell phone drive that resulted in the collection of old cell phones that were given to abused women so they could call 911 in an emergency situation. The club also donated money to Victim’s Response (also known as The Lodge), a shelter for abuse victims and their families. Patel wears many different hats for various organizations. He is the Student Council historian, a member of the National Honor Society, secretary for the Support Our Troops Club, and historian of Teens Team Up Against Cancer Community service is important to Patel and he has already accumulated almost
1,000 service hours. Many of those hours came from his volunteer work at Baptist Hospital in the Errand Services Department. “I’m also a math mentor,” he says. “In the last three years, I’ve worked 150 hours tutoring kids in everything from algebra to calculus.” This year, his teacher recommended him as a tutor outside of school where he charges $25 an hour. Patel is interested in becoming an architect and will apply to Rice University because of its outstanding architectural program. He says Cornell, the University of Virginia, Washington University and Carnegie Mellon are also on his list of possibilities. “It’s my dream to own my own firm one day,” he says. With all the time he spends in extracurricular activities at school, one might think that Patel would not have the time to do anything else. But he really enjoys dancing and has been enrolled in hip hop classes since he was in the sixth grade. He says that he only stopped taking the classes this year because he need the time to devote to completing the lengthy and extensive college application forms.

use of electronic means, generally by a minor, to torment, threaten, harass, humiliate, embarrass or otherwise target another minor. Social networking has become ever popular and sites such as MySpace or Facebook are being used to ridicule the appearance, the personality or even the interests of others. This has at times led to unfortunate happenings. Recently, Chanelle Ray, a 14-year-old high school student, committed suicide after being bullied on cyberspace because of her appearance. And we all remember the case of Megan Meier, who suffered a similar death after being manipulated via one of these popular networking sites. It is important that we confront this social dilemma and deal with its potentially cruel consequences from the onset. The following tips should be considered in order to combat cyber-bullying: • Make it clear to your children that all rules that apply to every day social interaction also apply via the web. • Consult with your local school to make sure that Internet safety programming is in place.
• Monitor the online activities of your child informally by constantly being aware of the websites they visit. One can take a more formal approach by investing in software that tracks online activity. Use certain discretion since you would not want your child to feel you are violating their privacy. • Cultivate and maintain an open line of communication with your children so they are willing to come forward to you with any problems they may be encountering. • Look for warning signs that something out of the ordinary is going on with respect to their Internet usage. If your child becomes withdrawn or their online usage becomes obsessive, then something may be going wrong. Legislation regarding this evil behavior is being implemented nationwide and its consequences are becoming more severe. Make it clear to your children that this problem exists and they should never be subject to this harassment. For more information, visit <www.stopcyberbullying.org>.

A GLANCE AT THE PAST Remember when we used to go to drive-in movies and had great fun as we spent the evening fighting mosquitoes and munching popcorn? Who can identify where this drive-in theater used to be? Why are the Dixie Belle shops on South Dixie Highway called the “Dixie Belle” shops? Where could you get a pony ride in Pinecrest in the early 1960s? Do they still even offer pony rides anywhere in Miami?

When buyers become scarce, sellers have to step up and make their offering stand out to attract attention. Without spending a fortune, sellers can easily highlight several of their home’s features. First, beat buyers to the punch with a pre-listing home inspection. By discovering and fixing problems before buyers ever see the home, you can impress them with a worry-free, move-in-now opportunity. Leave your repair receipts out during showings, so that buyers can see all the improvements you’ve made just for them! Once the mechanical and structural features of your home have been addressed, move on to the aesthetic
details. First impressions count, so make sure your home is inviting from the curb. Spiff up landscaping, paint, entries and windows. Inside, pay attention to bath and kitchen details because those rooms are often most important when buyers are making a decision. Aside from deep cleaning, consider updating bath and kitchen features with new and contemporary drawer pulls, faucets and even sinks. Finally, get a jump on your moving by organizing your closets and ditching or packing all you possibly can. A good guideline is to reduce your closets to halffull, so that the buyers can easily picture the space for their own storage needs. A few “preemptive strikes” should be all you need to attract buyers and offers, so ask your agent for tips today!

Interfaith Choir Thanksgiving concerts BY RITA DIAZ What exactly is an Intrafaith Choir and how did this group evolve? Cantor Rachelle Nelson has all the answers for us as she is founder and director of the Intrafaith Choir of South Dade. For the past few years, Rachelle had been organizing and conducting the Interfaith Choir which was made up of choir members from area synagogues and churches. Because the church choir schedules were extremely demanding, it became difficult to get volunteers who had the time to sing in another choir. In 2008, born out of the natural decline of Interfaith participation, the Intrafaith Choir was born. It presently has 25 members from area synagogues including Temple Beth Am, Bet Breira Samu-El Or Olom, Temple Hatikvah, Temple Beth Or and Temple Judea. The purpose and need for this choir seems ironic since most congregations share many of the same practices. However, they share them within their own walls and spend very little, if any, time cele-
brating with their fellow congregations. Cantor Nelson decided that if one kind of choir wasn’t working out, she had nothing to loose in trying something new and different that might create more warmth and harmony within the Jewish community. Anyone can be a member of the Intrafaith Choir, whether they are Jewish or not, or whether they belong to a synagogue or church. The only prerequisite is that you must carry a tune, and not just in the shower! Rehearsals are held at 7:30 p.m. on Tuesday evening at Temple Beth Am. The music is lyrical and easy to learn, while at the same time, educational. Our first concerts celebrating Thanksgiving will be open to the community and held at 4 p.m. on Sunday, Nov. 22, at Bet Breira Samu-El or Olom and on Nov. 24, at 7:30 p.m., at Temple Beth Am. Temple Beth Am’s concert will include a 35-voice children’s choir and guest guitarist Sabian Carrerra. These concerts are free and open to all. For more information, email <rnelson@tbam.org> or call 305-667-6667, ext. 133. For a tour of Temple Beth Am or information about membership discounts, call Rita Diaz at ext. 107.

Budgeting and saving in time for the holidays BY TERRENCE BROWN Chief Marketing Officer, Great Florida Bank With the holidays fast approaching, many are worried about the bite that this seasonal uptick in spending can have on one’s budget. Thanks to some old adages and new technology tools, you too can get your finances in order. Here are some tips you can start using right away:
Every child learns in a unique way, and Killian Oaks is designed to enhance each student’s learning style. Our mastery learning program offers: • • • • • •
Accelerated and Remedial Programs Small Student to Teacher Ratio Individualized Learning Strategies Excellence in Academics Opportunities for Creative Expression and Growth Credentialed and Knowledgeable Staff
Make a spending plan — Start with a realistic idea of how much you can spend. Make a list of recipients and decide how much you want to spend on each gift. It’s always best to shop with a list and shop early to avoid the lastminute stress that can lead to overspending. Keep track of your spending with a service like Great Florida Bank’s Personal Finance Works, free for all GFB customers who have a checking account. Powered by Quicken, America’s #1 personal finance software, you will be able to create a simple, onepage overview of your finances, see where you are spending money and where to save, and set up automatic bill reminders to avoid late fees. Get the right credit card — Some credit card companies offer cash-back rewards. Instead of accumulating frequent flyer miles, the credit card company will take a percentage of your spending and periodically refund it each month. These refunds can be given directly to you or deducted from your monthly bill. If you can afford to
MONEY MATTERS pay your balance each month, cash-back reward cards can be a huge boost to savings and help pay off your holiday expenses. Pr epar e for non-monthly expenses — These include anything from holiday and birthday gifts, to unexpected home or auto repair bills. Add all of your non-monthly expenses from the last year and divide by 12. Then, set aside that amount each month and put it in a separate, FDIC-insured savings account. Remember, an FDICinsured account remains the safest place to keep your hard earned money. If something does come up, take money from that account, leaving the money in your checking account budgeted for monthly expenses untouched. Track spending— From gas to groceries to gourmet restaurants, personal expenses continue to be one of the highest monthly bills. Monitoring these expenses is paramount to budgeting and saving. Track where your money goes with a program like Great Florida Bank’s Personal Finance Works, which allows you to view accounts across more than 7,000 financial institutions all from one site. These tips should get you started on budgeting and saving. If there is one thing this recession has taught us it’s that you need to have some money set aside for when times get tough, and for spreading a little holiday cheer.

News @ Gulliver Prep students commended for National Merit Scholarship Program BY JENNIFER VAIDA & NATHALIE SANTA MARIA
Martin Arostegui, Trevor Bannard, Caitlin Hickey, Jacob Koffsky and Zach Poliacoff have been commended in the 2010 National Merit Scholarship Program. About 34,000 students are chosen and recognized for their exceptional academic promise. The commended students placed among the top five percent of more than 1.5 million juniors who entered the program by taking the 2008 preliminary SAT/National Merit Scholarship qualifying test, which serves as the first step in the yearly screening process. ALEXANDER ADES EARNS WRITING AWARD Alexander Ades has been named a recipient of the 2009 National Council of Teachers of English (NCTE) Achievement Awards in writing. More than 1,700 students were nominated and Ade’s writing was judged superior by an esteemed panel of judges. His work was read and critiqued by a high school level and a college English teacher. PHYSICAL FITNESS PROGRAM GETS PRESIDENT’S AWARD Students at Gulliver’s South Miami campus are state champions in the 200809 President’s Council on Physical Fitness and Sports (PCPFS) Physical Fitness. Almost 74 percent of the stu-
dent body earned the President’s Physical Fitness Award. Participation in the program demonstrates Gulliver’s commitment to serving as leader and role model in physical fitness. As the rates of obesity and attention to non-related physical activities rise, it is important to teach students the skills and knowledge to maintain an active lifestyle. Congratulations to the Mandelstam family and the coaches at the South Miami Gymnastics Center for their efforts.
DANCER IS RUNNER UP IN U.S. CHAMPIONSHIPS Gulliver Schools freshman Ashley Sanchez and her partner Gian DiFranco competed in the U.S. Open Amateur Pre-Teen, Junior & Youth Championships and earned a junior runner-up title. They continue training daily for a chance to qualify for Blackpool, the world’s largest Latin Ballroom championships held in England, and for the 2012 Olympics. They will compete at the Ohio Star Ball in November. Sanchez perfected her Latin Ballroom steps over the last six years and competes in the cha-cha, samba, rumba, paso-doble and jive. She attended the U.S. Dance Championship in September, where hundreds of competitors of all ages from around the world showcased their routines for a national title and prize.

• EDUCATIONAL AND TEEN ADVICE • Toby Rose ASK TOBY Is it true that UF will have more budget cuts? Yes, there is a proposed $42 million in budget cuts for the coming fiscal year. The plan includes eliminating approximately 150 faculty positions; also, 49 staff members will be laid off. I also think it’s important to note that several programs are now being eliminated, including the SCUBA program, the Educational Psychology program, the Documentary Film Institute, Rehabilitation Counseling Division and many others. Some of these programs, hopefully, will be funded by non-state money. Is it true that tuition will be more at all Florida schools? Yes, the board of governors voted for a tuition hike of 15 percent. For most students, this means an increase of $5.74 per credit hour for undergraduates, an average about $172 over the fall semester. I want to take a year off between graduating Palmetto High School and going to college. Do you know if the ACT can be used in place of the FCAT? To the best of my knowledge, yes. Is it possible to defer my admission by one or more years? Many of my students have taken a year off to do service in underdeveloped countries. You can defer admissions, but not for more than one year. If I get a full time job in college, will it change my financial aid package? Most definitely. Your package is reviewed every year based on your economical status during the prior year. I would also advise you that working full time really does not go with getting an education. As necessary as it may be, I would advise you to slow down a little bit because you’re not there just to work. You are there to get an education and get your credits. I just came back from my summer college visits and don’t understand what’s happening with the sending of best SAT score. Could you please tell me what the colleges are doing and what College Board has said? This is very confusing to all students who will be attending school for the first time in September 2010. The College
Board issued a statement that said that you may send your score, but only onetenth score, which means not the best English, not the best math, not the best writing. I know for a fact that most schools are deciding for themselves what to do. For example, a student just came back from Washington University, one of the best schools in the United States, when they announced they were going to take the best composite score from three or four different tests. So relax, I think that’s what most colleges will be doing. I don’t know how this rumor got started, but it really has a lot of students and a lot of school administrators quite concerned.
I’m considering going Early Decision. I’m curious. Is it true that your parent must signoff on this as well as your guidance counselor? For most colleges, the answer is yes. Also, you must have your counselor submit your first marking period grades in order to complete your application. Is it true many colleges/universities have wait lists in the hundreds? Yes. You may want to email the college/university that has you on the wait list and try and find out what number you are. My son wants to attend the University of Michigan. I’m concerned about the diversity problem. Are there many minority students who attend? According to their brochure for 2009, the University of Michigan student body comes from all 50 states and 129 countries. University of Michigan can also offer study-abroad and international internship programs in countries around the world. Just another little tidbit, Michigan consistently ranks in Kiplinger’s best values in public colleges. I am really, really confused doing the college aid form (FAFSA) for my daughter. I’m just going to give up and take it to an accountant or CPA. What do you think? I think they really need a simpler college aid form. Many families who can’t afford an accountant just give up before they even start. There are 153 questions on this form. Luckily, the Obama administration plans to review and simplify the federal college aid form. Toby Rose is president of Toby Rose’s College Prep. She is an independent college counselor, was a Dade County Outstanding Teacher, a past president of the Pinecrest Business Association, and served as chairperson of the Dade County School Board Academic Advisory Committee. The Supersize Syndrome: Do You Have Portion Distortion? BY DR. PATRECE FRISBEE Owner, SoBe Well Would you like that meal super-sized? As Americans increasingly drive through the fast food lane for meals, it is evident that portion size does matter. Is there a link between the obesity epidemic in the United States and increased portion sizes? Are super-sized foods contributing to supersized Americans? The most common mistake Americans make when evaluating their nutritional lifestyle is misjudging serving sizes. Portion distortion is widespread in the United States and is a big reason Americans’ waistlines keep spreading. Americans are not only eating too much, they are eating their way to illness. In the early 1960s, 17 percent of middle-aged Americans met the clinical definition of obesity. Today, that figure is 32 percent. The number of Americans who fall into what epidemiologists call Class Three Obesity — that is, people who can’t fit into an airline seat — has risen 350 percent in the past 30 years. In the 1930s, an original Coke bottle was 6 1/2 ounces. Now they are marketing one liter as a single serving. That's five times the original size. Fast food restaurants are notorious for super-sizing foods. McDonald's regular hamburger is 260 calories but now they have a 445-calorie double cheeseburger. Portion sizes have been steadily expanding. When you order a steak, is it supposed to look like it was ordered for Fred Flintstone? Is a muffin supposed to be the size of a 10-inch softball? Let's take a look at how typical portion sizes have grown: Food Portion Portion Then Now Soda
6 ounces (85 calories)
20 ounces (300 calories)
Bagel
3” diameter (140 calories)
5 to 6 inches (350 calories)
Pasta

4 cups or more (560 calories or more)
Hamburger 2 ounces (patty + bun) (270 calories)

Before blaming your local restaurateur for your family’s increased girth, take an honest look at how you value your dining-out experiences. According to the National Restaurant Association's Dinner Decision Making study, most consumers ranked portion size as one of the 10 “hallmarks of a great place.” Ser ving size savvy Serving sizes are specific, standardized amounts of food. They are meant as guides to help you plan and judge your portions. With a little visual aid instruction you can figure out what portion size is: • One ounce of cheese is about the size of your thumb or four dice. • One teaspoon of butter or margarine is equal to a thumb tip. • One cup of milk, yogurt, or chopped fresh greens is about the size of a tennis ball. • A ?-cup of fruit or vegetables is about the size of a small fist. • A computer mouse is the size of one serving of meat, poultry, or fish. • One serving of snack foods is equal to one small hand. Por tion Controlled Tips • In restaurants, eat half of the entree and take the rest home. You'll have tomorrow's lunch already made. • Avoid super-sizing meals at fast food restaurants. • Use smaller plates. It will look like you are eating more. • Eat slower and enjoy your food. It takes about 20 minutes for your stomach to signal your brain that you are full. • Offer to share an entree, appetizer, or dessert. • Parents — don't overload your children's plates. Super-size portions lead to super-size children. • Eat in the dining room or kitchen, not in front of the television. Every time you turn the television, on you'll feel like eating. Learning to recognize and control portion sizes is a crucial step in maintaining a balanced nutritional lifestyle. Remember to enjoy a variety of foods instead of limiting any food group completely. Moderation is your best guide for healthy eating. Do you have a wellness related issue you would like to resolve? Send your questions to Dr. Patrece Frisbee at drfrisbee@sobewell.com.

LA Sweets offers cupcakes in 34 flavors BY PAT FULTON In a shopping mall, you can usually find sandwiches, doughnuts, bagels and ice cream. But, if you’re in the mood for cupcakes, you have to find a full-scale bakery. Welcome to LA Sweets, a cupcake shop that has been open since January 2009 in Shops at Sunset Place. With 34 flavors, including chocolate chip Bacardi rum and, the runaway favorite, guava with cream cheese icing. Pumpkin, sweet potato, red velvet and white chocolate chip are also top sellers. Letty Dominguez, a native of Miami, is not only the co-owner (with husband Eddie), but the one and only baker. The concept of a cupcake store started when these parents of five decided that Letty needed to get a job to help support the family. She was an experienced cupcake baker for her family, so she explored the idea of baking for the public. “I studied the competition,” Letty recalls. “After that, I said to myself, if they can do it, I can do it.” She was right, judging from the growth of the specialty shop since its beginning. Located on the first level of Shops at Sunset Place, across from Urban
Outfitters, the shop offer 15 types of American coffee — espresso, cappuccinos and lattes — and brownies. On the weekends, caramel apples and chocolate strawberries are special treats. A door to the shop that fronts on Southwest 57th Avenue (Red Road) is used for curbside customers, who park briefly and pick up their cupcake orders. Dominguez’ baking starts at 5:30 a.m. each day and finishes up around 10 a.m. Store hours are noon to 10 p.m. Monday through Thursday; noon to 11 p.m. on Fridays and Saturdays; noon to 9 p.m. on Sundays. Eddie, a construction site superintendent, is the chief cupcake taster and helps out at the shop on weekends. His special assignment is handling wholesale and restaurant accounts such as Sergio’s and Laurios, as well as tending the frozen yogurt shop, Red Kiwi, at Coconut Grove. Customers range from University of Miami students, holding meetings on the couch near the TV set, to parents with their children, to employees at the mall who make daily pilgrimages for cupcakes. LA Sweets offers free Wi-Fi and board games for customers who want to linger while they munch on cupcakes in mini and regular sizes.
LA Sweets opened last January in South Miami’s Shops at Sunset Place and was an instant success. Right: Chocolate cupcake
––––––––––––––––––––––––––––––––––––––––––––––––––
One of Letty’s specialties for parties is a “cupcake tower”, a three-tiered display with a cake on the top tier. Cool de Sac, an upscale play café in the mall, asks Letty to supply cupcakes for their young clientele. When LA Sweets has cupcake specials, Letty flashes the news to a long list of Facebook subscribers. When Cool de Sac opens a new unit in Dolphin Mall, LA Sweets will have a place inside the new play café. Another project for the future is the addition of a kitchen for baking onsite. Eventually, Letty and
Eddie may turn LA Sweets (LA are the initials for Letty Alvarez) into a franchise organization. Right now, less than a year into the business, the couple maintains a successful customer service policy: “Whether they’re a customer for one dollar or for $100, they’re all VIPs. We love what we do.” For information, visit LA Sweets at 5701 Sunset Drive in the Shops at Sunset Place or call 305-665-5288.

The Allergy Free Shop - the allergy and diet restriction resource in Pinecrest BY ROBIN KORTH The Allergy-Free Shop, the one-stop shop for all of your food and environmental allergy needs, was founded by Jennifer Herskowitz in 2008. It was Herskowitz’s frustration with the overall lack of conveniently available allergy-free products for herself and her children that inspired her to open a store where customers with special diets could find everything they needed in one place. With the steady increase in food allergies and celiac disease in the United States over the last decade, the Allergy Free Shop is well-situated to meet an ever-increasing local need for allergy-free products. Herskowitz, an asthmatic with a few atypical food allergies, is also the mother of three children – two of whom suffer from multiple food and environmental allergies. She would spend hours every week at the grocery store scrutinizing labels for dairy, peanut or soy ingredients that might lead to hives or worse in Lexi or Brady her two children with specific food allergies that can be debilitating. But it was one particular day in November in 2006 that pushed her into entrepreneurship. When she dropped her son off at school on the annual Thanksgiving lunch day as she was told there was nothing in the
meal that he could eat. "I was driving around Miami searching for what might be close to what the other kids were having, and I was so frustrated, "she recalls, "I wanted to just be able to go to a single place where I could find him something to eat.” So, Herskowitz opened The Allergy Free Shop which offers a variety of products dedicated to meeting the needs of allergic individuals and others who are challenged on a daily basis with their dietary requirements including: • Grocery and food items, shelved, frozen and refrigerated. • Bath and body products such as sham poos, soaps, etc. • Baby needs such as diapers, ointments, and powders, etc. • Household cleaning products such as laundry detergent, dishwashing liquids, all-purpose cleaners, etc. • Pillow and mattress encasings, HEPA filters, air purifiers, HEPA vacuums, etc. • Resource materials such as allergy-free cookbooks, books about living with allergies, etc. • Allergy ALERT products such as clothing, bracelets, etc. • Information on allergies for caregivers, schools, etc.
products and that drove me to launch the Allergy Free on-line store. Now customers from all over the nation and outside the United States can find everything they need and have it shipped directly to their door,” Herskowitz states. The Allergy Free Shop also offers low, flat-rate shipping to its customers so they don't have to pay cost-prohibitive shipping costs to get the products they need. The Allergy-Free Shop hosts a monthly lecture series that is free and open to the public. The lectures deal with various topics related to allergies and special diets. The AllergyJennifer Herskowitz at the counter of the Allergy Free Free Shop offers a discount to all who attend these monthly lectures, and also provides Shop, 8803 SW 132 St across from The Falls product samples at the event.“The goal is to “Soon after opening the Allergy provide a local outlet for people to learn Free Shop, it became obvious that more about their allergies or dietary restricthere were many other non-allergic cus- tions, to offer support when needed and to tomers out there who needed products to carry the widest selection of products for meet their restrictive diets as well,” notes those who truly need them,” says Herskowitz. “So I decided to widen the Herskowitz.” Allergy Free Shop's reach by bringing in gluten-free and sugar-free products as well. Frequently, therapy for swimmer’s ear (otitis externa) involves the use of a prescription ear drop that relieves pain and is now available in a non-brand version known as "antipyrine and benzocaine". However, in some patients, the topical analgesic benzocaine can cause irritation and worsen or prolong inflammation, so in those cases, oral pain relievers may be preferred. For severe ear pain and itching, ear preparations containing an antibiotic and a cortisone-like steroid can be used to fight infection and reduce inflammation. Suspensions may be less acidic and therefore less irritating than solutions that contain the same medications. Special care must be taken if there is a chance that the eardrum is perforated, because some medications can be ototoxic (affect hearing) if they enter the inner ear. According to the Pharmacists’ Letter, if a patient complains about a bad taste after using their ear drops, it is a sign that the eardrum is perforated, and the doctor should be notified. Antibiotic eye drops (ophthalmics) are

Stress is a small word, but it packs a powerful punch. We experience stressors on many levels, but the normal stress response is an important part of a healthy life. It allows our bodies to adjust to changes in the environment, as when we wake up in the morning or deal with life-threatening situations such as avoiding a swarm of bees. When our bodies are healthy and in balance, stress responses are moderate and short lived. But when the stress responses become too frequent or intense, they become harmful influences, as stress hormones continue to flow through the body at elevated levels. Research now shows that long-term activation of our stress hormones can have hazardous effects on the body. They can impair one’s immunity, reproductive system and growth. In taking into account one’s family history and genetic predisposition, they can also increase the risk of obesity, high blood pressure, heart attacks, depression, and a variety of other illnesses. It is also extremely common to see stress manifest as physical symptoms. The following symptoms are frequent presentations of stress: • Back pain • Joint pain • Headaches • Labile temperament and mood swings • Loss of focus and concentration • Gastrointestinal symptoms (e.g. constipation, irritable bowel syndrome) • Poor sleeping patterns No matter how harmful the effects of stress, however, it is difficult to avoid stress completely in the modern world. Furthermore, allopathic medical therapies such as anxiety medication therapies can be employed to treat symptoms of stress but they are not permanent solutions. Instead, the key is to learn how to manage stress and develop healthy
Women Mean Business strategies for mitigating their effects. Natural therapies such as meditation, craniosacral therapy, applied kinesiology and acupuncture are gaining popularity among patients and healthcare professionals alike. Many of these therapies work on reversing the impaired energy flow that develops in the face of persistent stress. These modalities mobilize stagnant energy resulting from chronic stress, creating an active state of relaxation. By restoring a proper circulation of energy, the body is able to harness its own restorative healing process. Natural therapies are being embraced by many academic institutions. Harvard, Johns Hopkins, the University of California – San Francisco, the National Institutes of Health, and many other high profile institutions are studying these healing modalities and offering them to patients in conjunction with traditional allopathic care. A growing number of allopathic physicians are also incorporating natural therapies into their practices, blending the best of conventional treatments with natural healing. If you live in the modern world with its deadlines, pressures, and stresses, there is a good chance your body and mind could benefit from natural healing therapies. The effects of chronic stress are powerful. The more you can harness your body’s healing energy to counteract these effects, the better your chances of living a healthy and peaceful life.

Dr. Deborah Longwill is director of the Miami Center for Dermatology and a board-certified general and cosmetic dermatologist in private practice since 1992. She has developed a loyal patient following with a holistic approach to dermatology that involves listening to patients, explaining treatment options and creating short- and long-term treatment programs tailored to each patient’s skin-care needs. “It’s essential to get to know each patient as a complete individual,” says Dr. Longwill, one of the first dermatologists in South Florida to use Botox, facial dermal fillers and lasers, and perform Tumescent Liposuction. “Factors like lifestyle, diet and emotional condition can affect skin conditions, as well as medical disorders and the overall aging process.” Longwill has taken advanced training courses in the latest skincare treatments and techniques, including non-surgical facelifts and skin rejuvenation, as well as state-of-the-art laser technology for treating facial and body conditions. She is one of the few board-certified dermatologists in South Florida with special training on the dermatoscope, a handheld device that provides enhanced visualization of pigmented lesions which may indicate the presence of skin cancer. Two board-certified physician assistants, Yamille Barge and Jennifer Martinez, help in the diagnosis and treatment of patients with conditions such as acne, rosacea, skin cancer, or remedy lines, wrinkles and sagging skin caused by aging. Barge and Martinez help patients look better with laser technology and other state-of-the-art procedures such as Intense Pulsed Light, used to treat pigmented lesions and rosacea; the Fraxel Laser, used to resurface facial skin; and the NLite, used to rejuvenate the skin and treat acne. Licensed aestheticians Monica Narbona and Lissette Torres have extensive training in custom facials and chemical peels, as well as non-abrasive microdermabrasion. Narbona is also trained in the Thermage procedure and frequently sees patients who suffer from rosacea. Torres has training in No-needle Mesotherapy, an excellent procedure for rejuvenating the face and body.
Dr. Deborah Longwill
Longwill has designed the Miami Center for Dermatology, 7700 SW 104 St., with a peaceful ambiance derived from the Colorado mountains. Patients relax to the sounds of flowing water, amid stone flooring, slate walls and colorful wildflowers pressed between glass. “I am truly inspired by nature,” says Longwill, “and my patients really appreciate our unique office atmosphere.” A native of California, Longwill and her husband Kevin, also a physician, enjoy skiing, hiking and other outdoor activities with their four children, Joshua, 21, Jeremy, 18, Ariella, 16, and Danielle, 14. “I find that being a woman, a wife and a mother helps me relate to many of my patients in a more personal way,” Longwill says. “I can share and understand their concerns.” Longwill, 46, earned her doctor of osteopathy degree at Nova Southeastern University College of Osteopathic Medicine where she serves as clinical assistant professor of dermatology. She is board certified by the American Osteopathic Board of Dermatology and is a member of the American Academy of Dermatology, the American Academy of Cosmetic Surgery and the American Society for Laser Medicine and Surgery. Berrin lecture series promotes Jewish writings Linda K. Landy ALPER JCC NEWS The second annual Ray Berrin Memorial Lecture Series: Judaism Yesterday, Today and Tomorrow announces an ambitious new program covering everything from the history of Yiddish and the resurgence of Hebrew to the role of global enterprise in the prospect of peace for Israel, Jewish roots in Miami, pursuing social justice through Jewish law and how Israel can win the war that will never end. A variety of local rabbis, authors and teachers will discuss these fascinating books in this seven lecture series honoring the memory of Ray Berrin, who is fondly remembered in the South MiamiDade Community as a founder and longtime supporter of the Dave and Mary Alper JCC, as well as the Berrin Family Library, which bears his name. Nov. 18: Norma Salz, Yiddish speaker and teacher, reviews Yiddish: A Nation of Words by Miriam Weinstein. Weinstein traces the remarkable journey of a humble language which took vigorous root in Eastern European shtetls, flowered between the wars in Europe and America, was rejected by emancipated Jews, fell victim to the Holocaust and experienced a modern rebirth. Dec. 16: Rabbi Edwin Goldberg of Temple Judea reviews A Safe Haven: Harry S. Truman and the Founding of Israel by Allis Radosh. Radosh covers the history of Harry S. Truman’s fight to galvanize American support for Israel. Jan. 20: Rabbi Jaime Aklepi of Bet Breira Samu-el Or Olom reviews The Hebrew Republic: How Secular Democracy and Global Enterprise will Bring Israel Peace at Last by Bernard Avishai. Addressing
the state of Israel’s democracy and security, Avishai covers key topics relating to Israel’s internal dynamics as well as its regional and global position now and in the future. Feb. 17: Rabbi Micah Caplan of Bet Shira Congregation reviews There Shall Be No Needy; Pursuing Social Justice through Jewish Law and Tradition by Jill Jacobs. As rabbi-in-residence of the Jewish Fund for Justice, Jacobs examines Jewish texts and contemporary social concerns to explore problems of poverty, workers, housing, health care and the environment. Mar. 17: Author and historian Seth H. Bramson presents his own book, L’Chaim!: The History of the Jewish Community of Greater Miami. Talk a walk down memory lane with this historic look at the people and places that have made the Jewish impact and influence on the Greater Miami area such an important part of the fabric of the community. Apr. 21: The JCC’s Rabbi Jeffrey Falick reviews Saving Israel: How the Jewish People can Win a War that may Never End by Daniel Gordis. Gordis contends that Israel’s existence is more important than peace and that Israel can never be a copy of the Americanstyle liberal democracy. What is at stake is not merely a state, but the only Jewish State in 2000 years and the very future of all Jews worldwide. May 26: Cantor Mark Kula of Bet Shira Congregation reviews Resurrecting Hebrew by Ilav Stavans. Stavans tells the stirring story of how Eliezer Ben-Yehuda transformed Hebrew from a dying language to the living tongue of a modern nation. The lectures are on the third Wednesday of each month at 10:30 a.m., with the exception of the final presentation which will be held on the fourth Wednesday in May. Budget Blinds creates window treatments for home, business BY PAT FULTON With the late-year holiday season approaching, Budget Blinds owner Jeremy Sherman knows that his phone soon will be ringing non-stop as people begin to redecorate their homes for the holidays. And that includes replacing window treatments such as draperies or blinds. At Budget Blinds, 11801 SW 144 Ct., shopping for new window treatments is frequently done in the client’s home because Sherman has outfitted the company van as a showroom. A customer can see and touch samples of blinds, color decks and design guides. Sherman say he sees an interesting difference between the shopping habits of husbands and wives, with men interested in the price and specifications, while their wives want to touch the samples and examine the color tray closely. “Men tell me they don’t need the visuals, however 90 percent of the purchasing that is done the wife is making the decision and she typically likes to have visuals to look at,â€? he says. most popular products right now is Plantation Shutters, which can be made out of real wood or faux (fake) wood. “We help guide the shopper through the decision-making process without actually making the final choice for them,â€? Sherman says. When Sherman visits a client’s home, he will hold up samples of blinds to a selected window, allowing the shopper to literally see what the final treatment will be. At Budget Blinds, there is no “one-size-fits-allâ€? approach because every order, whether draperies, valances or blinds, is custom-tailored to the customer’s requirements and desires. Maintenance for blinds is simple; light vacuuming and dusting will do the job. “If you have a clean home, you will have clean blinds,â€? Sherman says. When cleaning and touchups are needed, he says that a moist cloth (with a non-bleach soap) will do the job. However, Sherman cautions that families with small children should take
precautions with cords on blinds or draperies. He notes that 25 children in the U.S. die each year as a result becoming entangled in the cords and of strangling. He says his products may be ordered with child-safety tassels or even in a cordless format, with the blinds controlled by a hand-held electronic device. Sherman employs professional installers who have been specially trained in company standards and have taken classes given by product vendors. After placing an order for blinds, customer can expect installation in about two weeks. For fabric treatments, the wait is three to four weeks and custommade plantation shutters will take six to eight weeks. Sherman says a homeowner or business owner looking for window treatments should be sure that the vendor they select is a professional. He cautions that there are unscrupulous people who operate out of their cars and are not registered with the state, while changing their company names every year. He says these people may offer rock-bottom prices, but they use shoddy material and the blinds quickly fall apart and must be replaced. And when the homeowner tries to get the vendor to replace the blinds, he soon finds that the company he dealt with is no longer in business. Sherman says his products come with a no-questions-asked guarantee and if the customer damages the blinds and the cause is not applicable to the limited lifetime warranty from the manufacturer, then his company will repair or replace the product one time for free. 2010 Mazda3 is a versatile sport compact Ron Beasley AUTOMOTIVE EDITOR
LET’S TALK CARS The 2010 Mazda3 is the second generation of this versatile sport compact vehicle. It’s the Japanese automaker’s answer to consumer demands for an affordable, fuel-efficient four-door sedan. The Mazda3 has been a popular vehicle in the United States, accounting for 44 percent of Mazda’s North American sales volume in 2008, and it ranks as one of the best vehicles on the market for under $25,000. It’s stylish and has a rising beltline that gives it a crouched look, like a cat ready to pounce. The low front window opening allows for excellent visibility, while the elevated decklid serves as an aerodynamic aid and maximizes trunk space. In addition to the four-door sedan, the Mazda3 also comes in a four-door hatchback body style. The sedan is offered as 2.0liter i and 2.5-liter s models, while the hatchback is available only as an s model. Sedan trim levels include Mazda 3i SV, i Sport, i
Touring, s Sport and s Grand Touring. Hatchbacks come in only s Sport and s Grand Touring levels. The MazdaSpeed3 is available only as a hatchback. Mazda engineers have given the 2010 Mazda3 several platform improvements that stiffen the structure and make it sportier, with sharper and more precise steering. It handles sharp turns and bumpy roads much better than its predecessor. As for power, two four-cylinder engines are available — the base 148-hp 2.0-liter (25/33 mpg) and an optional new 2.5-liter 167 hp, available with a sixspeed manual transmission or a five-speed automatic with manual shift. The base-level Mazda 3i SV ($15,045) comes with cloth upholstery, power mirrors, power windows, reclining front bucket seats, tilt/telescoping steering column, 60/40 split folding rear seat, AM/FM/CD stereo with four speakers, auxiliary audio input jack, and P205/55R16 tires on steel wheels. It is offered only with a manual transmission. The Mazda 3i Sport ($15,975) adds air conditioning, an outside temperature display and an available automatic transmission. The Mazda 3i Touring model ($17,500) adds power door locks, remote keyless

In spite of the hard economic realities that have taxed many non-profits recently, the Community Garden Charitable Fund is moving forward with great momentum. This charity was founded to assist Pinecrest in the mission to renovate and polish Pinecrest Gardens, the botanic jewel in our community. The group has been making notable strides in that direction after less than three years in operation. This dynamic corps of dedicated activists saw a need and they have worked ever since to fill it. By the time the Village completed the purchase of the old Parrot Jungle property in 2000, it had become overgrown and it was later severely damaged by the hurricanes of 2005. Even though great progress has been made ever since under the direction of local government, parks director Loren Matthews, and head horticulturist Craig Morrel, Garden Fund members wanted to help further the process along even more quickly, while providing the Garden with some extras along the way. With monies raised from private individuals, family foundations and their yearly Soiree in the Garden, they have funded several completed projects there, including the purchase of hundreds of orchids, which are being installed in the tree canopy; the purchase and planting of Royal Poinciana trees adjacent to the Community Center, and the renovation of the colonnade area which lines the Garden’s meadow. Approval recently has been granted by the Village Council and the Historical Review Board, and work is about to begin on their latest undertaking, a lushly landscaped new pathway and seating area in the hardwood hammock section, which, until now, has been an impenetrable jungle. When completed, it will afford visitors a peaceful place to reflect, while giving them a rare glimpse into a preserved bit of ancient history. Because of their rapid growth, the Garden Fund had been in need of an official place to call their own. Members of the board of directors had been using their own homes as meeting places and temporary offices, but this was quickly becoming too difficult to oversee. The
solution lay just around the corner. The Whilden-Carrier cottage was built in 1932, and it had been home to the Whilden family from the time of the Great Depression to the early 1970s. It was designated an historic site in 2000, and in 2003 it was moved from its original location on Ludlam Road to the northwest corner of the Garden amid tall trees and much greenery. It had been sitting there empty ever since. Garden Fund president Karen Mashburn requested and Mayor Lerner and the Village Council generously agreed to rent the cottage to the Fund for a nominal fee. It turned out to be a perfect fit and on Thursday, Sept. 24, Fund board members welcomed approximately 40 guests to an afternoon reception and celebration at their new headquarters. There was much to be grateful for and they wanted to share their good fortune with those who have supported their work. Now that they have a home in the place where they focus their efforts, Garden Fund members feel that they can more efficiently accomplish their goals. “This historic cottage has been entrusted to us, and it’s such an honor to be able to work here,” says Mashburn. “Being only steps away from the splendor of this Garden inspires us to do even more to help make every corner of it shine.” Plans are well underway for the Community Garden Charitable Fund’s annual Soiree in the Garden on Friday, Feb. 26. This greatly anticipated event is the largest fund raiser of the year and it will feature dinner, drinks, a silent auction and a very special concert by Grammy Award winning artist Nester Torres. This is one of the few opportunities for the public to experience this magical garden in a nighttime setting during the most beautiful time of the year, and all funds raised will go directly to Pinecrest Gardens for the benefit of the entire community. Involvement in the Community Garden Charitable Fund is open to all who appreciate and wish to further enhance the great treasure that lies only steps from our own backyards. For information about the Soiree, to make a donation or to become a member, visit <www.gardenfund.org> or call 305-669-1028.

Local tennis pro develops iPhone apps BY LEE STEPHENS
Safe, friendly learning environment
South Florida tennis pro Brad Jeffries has added a subtitle to his name — iPhone entrepreneur. A popular and successful tennis coach for many years, Jeffries has developed the games of youngsters and adults in Pinecrest, South Miami and Coral Gables. “I am blessed with having a job that I love, and a beautiful and peaceful place to teach, he said. A native Australian, Jeffries followed his dream of coming to America to play tennis. His travels took him to Texas, Georgia, California, South Carolina and Florida, where he met and practiced with many tennis greats. These experiences translated into his unique way of connecting with his students. Recently, Jeffries redirected his focus and designed several tennis-oriented iPhone applications. Hundreds of hours of watching his students’ progress made him see the tennis court as more than a playing surface. From those observations, he developed Matchstats and TennisXpns, two computer applications that Apple recently accepted into the iPhone family. TennisXpns gives players, parents and coaches a simplified method of tracking expenses associated with tennis. For an aspiring player, this app serves as a monitor for business receipts and sponsor commitments. Matchstats allows the user to chart the statistics of tennis matches by entering each stroke a competitor executes, all on the screen of a tennis court on an iPhone or iTouch. With this knowledge, the app is a teaching tool for tactical ball placement and percentages.

McGlannan School - Miami Day School 6 - 14 years • Founded 1964
BY KELLY CRAIG We’ve all heard of the Four Horsemen of the Apocalypse. You know, those biblical equine trouble-makers empowered to wreak havoc on the world. Well, last June I got my own feathered version of looming disaster when a beautiful peacock showed up in my front yard. The sight of one of these colorful creatures strutting around the neighborhood is nothing new for a lot of South Floridians, but I’d never before seen one on my street. On this particular Saturday evening, the bird not only inspected the grounds, he actually swooped up onto my roof and perched there for about 10 minutes, staring straight at me. I actually said to my husband, “Wow, it’s as if the peacock knows he’s found safe haven on the home of an NBC staffer.” Hubby just rolled his eyes, but I basked in my own esoteric revelation as the bird gently floated down from the roof. The spell was broken when he unceremoniously left a sizeable souvenir on my driveway. That should have been a hint. The following Monday I stepped in it. I, along with several other parttimers, got laid off from NBC-6. Damn peacock! (Yep, I know, I broke my own resolution not to curse; sorry, but it was worth it.) Here’s the thing though; I kinda like life on the other side and here’s why. First, I had a great relationship with the folks at the station, management included. How can you work at a place for 19 years and go away bitter? The economy being what it is, I knew that my part-time status made me vulnerable, so it wasn’t a complete surprise. Second, no person was to blame for this; it was the weak economy, plain and simple, so why hold a grudge? Third, I can now actually take a breath and smell the roses. Yup, I now understand the perks that
Life With kelly stay-at-home Moms get to enjoy. I’m up bright and early to wake my family, fix them breakfast and take my son to school. Then I happily motor back home so I can go back to sleep until the crack of noon. This might sound easy, but you try getting some shuteye when that pesky lawn guy won’t stop buzzing around next door or the phone rings or, God forbid, I actually have to do something that requires me to be in an upright position. Do you know how hard it is to feign disgust when other parents of teenagers complain to me about how late their little slackers sleep in? And what about the panic that sets in when I realize I might have forgotten to reset the alarm to six a.m. after my snooze fest? If Hubby sees that it was somehow “mistakenly” set for noon, the jig would totally be up. I’d get busted worse than the father who concocted that freaky little Balloon Boy hoax. Thank you to all the ladies in Publix who stop me and say, “Gosh, we miss you on TV.” Truth be told, yes, there are days when I miss it, too. All in all though, for now it feels good to get off the work-a-day treadmill and onto a real one. My inner thighs still applaud me for the effort, but certainly not as loudly now that I am making exercise part of my daily routine. I’ve also become reacquainted with my old bathroom cleaning tools (isn’t it rewarding when that stubborn blob of dried-on toothpaste finally lets go of the sink?) and, don’t laugh, but I’ve even wiped the dust off a couple of cookbooks. Yes, it’s great to smell the roses, especially when they open after noon.

Durable Woodworks builds the kitchen of your dreams The DW team gathers in a “Going Green” kitchen. Pictured from left to right: Wendy Iglesias, Ernesto del Sol, Odalys Cabrera, William Zapantis, Silvana Silva, Cynthia Segovia, Leslie Gomez and Grace and Vasilio Zapantis.
BY NANCY EAGLETON In most homes, the kitchen is the gathering place for families…the heart of the home. The team at Durable Woodworks has been helping families throughout South Florida for the past 16 years revive their outdated kitchens and baths because they know how important it is for families to have functional and comfortable spaces. “Now, more than ever, people are looking to invest in their homes,” said William Zapantis, General Manager of Durable
Woodworks. Durable Woodworks builds dream kitchens and baths with their signature custom cabinetry and molding, unique hardware and beautiful granite countertops. The company offers clients design services, in-home measuring, cabinet and granite installation and friendly customer financing. Zapantis describes his business as a large scale custom cabinetry business. “We’re a family business with roots embedded in South Florida since 1993,”
said Zapantis. Durable Woodworks was started 16 years ago in Medley by Zapantis’ parents, Vasilio and Grace Zapantis. The couple is still very active in the business, serving as President and Vice President, respectively. William Zapantis joined Durable Woodworks in 1999 after attending the University of Miami School of Law. As General Manager of the company, he runs the day to day operations. The company employs 65 people and occupies an 86,000 square foot building in the Doral area. “We offer everything under one roof,” explained Zapantis. “Customers have the convenience of one-stop shopping for their renovation, but with personalized service. There’s really no other business in this area that can do what we do.” Zapantis explained that if the client can dream it, Durable Woodworks can build it. “Clients often know what they want and that’s exactly what they can get,” said Zapantis. “We don’t farm anything out. Everything is built right here so there are no restrictions on door style, wood color or glazes. That’s the competitive advantage that we have.” Most people know someone whose kitchen renovation took an agonizing six
months to complete. Zapantis reports that his company’s turnaround time to build custom cabinets is three weeks and if everyone does their part, a kitchen can be remodeled in less than a month. “We work to meet our customers’ deadlines,” said Zapantis. “It’s a collaborative effort with the customer to come up with a design that is unique and suited to their taste, but not overly expensive. The client is the king and the price is a matter of negotiation.” Vasilio Zapantis talked about the new trend in kitchen design – the “green kitchen.” He is proud to offer customers as well as builders who are looking to build homes that are certifiably green, eco-friendly cabinet choices. “We offer cabinets that are made with wood from Columbia Forest Products,” he said. “This wood is not processed with formaldehyde or other toxic materials. The path of the wood can be clearly traced from the grower to the manufacturer to the fabricator. Why serve turkey at Thanksgiving? couple of easy dishes that will be on my dinner table on this very special occasion.
Chef Jan OWNER, TWO CHEFS RESTAURANT
COOKING WITH JAN In English the word “turkey” originally applied to the guinea fowl. But why turkey anyway? One tradition is that the first turkey to find its way into a British stomach was eaten in Cadiz (Spain) by merchants on their way home from a business trip to Turkey. They encountered it at the house of a friend who knew explorers of the West Indies. Perhaps he was a Jesuit, since Jesuit was the disrespectful French nickname for the bird for quite a long time. The merchants’ host gave them some live birds, which they brought back to England. This may or not be true, but then why the name turkey rather than Spain? The advent of the turkey is something of a mystery. It is usually said that what Brillat-Savarin described as “the best gift of the new world to the old” was brought home by Cortez, who had feasted on turkey in the West Indies during the 16th Century. But, citing the accounts book of one Annot Arnaud finds that roast turkey was served on Nov. 12, 1385 at a banquet given by the luxury-loving Philippe of Burgundy. We do know, however, that the bird appeared on the last Thursday in November 1620 to feed the starving colonists from the Mayflower. With that said, this wonderful American tradition of Thanksgiving is upon us once again, when turkey will be consumed at one of the most important meals of the year. So, Happy Thanksgiving from me and my staff at Two Chefs Restaurant, and here are a
BRAISED RED CABBAGE with prunes and a splash of Brandy Serves 10 1 head of red cabbage (sliced as thinly as your knife skills allow) 2 cups of dry prunes (no pits) 1/2 cup sugar 1 cup orange juice 1 cup water 2 clove 1 cup chestnuts (chopped roughly) Salt and pepper to taste A generous splash of your best Brandy (added at the end) Simply add all ingredients to the pot and simmer for about 1 hour, stir occasionally. Season with salt and fresh peppermill; finish with a generous splash of brandy. Cook for another 10 minutes and serve family style. ROASTED GRANNY SMITH APPLES with thyme and apple cider Serves10 5 Granny Smith apples, peeled, cored and cut in half 1/4 cup butter (melted) 1/4 cup apple cider 5 sprigs of thyme Place apples in a small roasting pan, pour over melted butter, add thyme sprigs. Roast at 350 degrees for aproximately 20 minutes or until apples are tender and caramelized. Remove from oven, place apples in serving dish, add apple cider to deglaze roasting pan, pour sauce over apples and serve.

Two of my trees are failing to thrive while others of the same type are doing well. What is the problem? The trees may simply be planted too deep. When a tree Right Tree – Right Place is planted too deep, the base of the tree has soil and moisture right up against the trunk. This impairs tree growth, encourages root rot and pest infestation. The tree is working so hard to defend itself against this damage that it fails to thrive. Deep mulch packed around the base of a tree results in the same damage as too-deep planting. Mulch should be limited to less than 6 inches deep, start at least a foot away from the tree trunk, and be used underneath the canopy out to the canopy edge, if possible.
THE ARBORIST
Circling or girdling roots impair tree health and growth This occurs when roots circle back and girdle the trunk of the tree. The roots turn up towards the surface and cross back in over the base of the tree strangling the tree and causing moisture

retention at the base of the tree. This problem can be avoided by looking at the root ball of a tree before you plant. A root system with lots of roots growing back in towards the center is not a good choice. How can I tell if a tree is planted too deep? If you cannot see the flare of the trunk at the base of a tree, it is planted too deep or mulched too high. The tree should have a “trumpet” shape at the bottom. If you have a tree that is failing to thrive, call a certified arborist before you decide to replace the tree. There are ways to remedy the problems and save a tree you have invested time and money in. Ron von Paulus is an International Society of Arboriculture certified arborist (ID #Fl-5770A). He has more than 20 years experience working with trees in South Florida. He offers free consultations to homeowners and businesses. LOST DOG TARZAN.... Pure breed German Shepherd. About 3 yrs old. Tarzan came to us a year ago & was very mistreated. He was kept in a crate too small for him and had a lot of ticks and fleas. He is a really good dog that needs someone to care for him. He was adopted to a couple w/another dog and 2 small girls. They all got along fine especially with the children. He just knows how to be a good dog. He eats well but the stress is not allowing him to gain weight. The husband is in the Army and is being shipped to Iraq and they can’t keep him. He has a skin problem that we are trying to solve. He has lost a lot of hair. It is not contagious at all.. He gets along with all other dogs real good and with young children. If you love dogs, especially German Shepherds & would like to help us bring this dog back to normal, please give us a call. His weight is only about 61 pounds and he should be closer to 80 pounds. Is Your Association Attorney Taking Their Legal Fees Out of Your Assessments?
Some naïve attorneys also allow lenders’ counsel to convince them that the statutory cap for a qualified first mortgagee (who completes a foreclosure against its borrower) also includes a cap on the association’s legal fees and costs. It does not. Such statutory caps, if applicable, only apply to “assessments” and, as such, the legal fees and costs are all recoverable in addition to the capped amount of assessments due from the prior owner. If the Florida Legislature had intended to cap legal fees and costs for qualified first mortgage holders, it would have stated so in the applicable statute. Practically speaking, this also could not have been the intent because the legal fees and costs are typically more than the statutory cap in the first place, which would mean that if the legal fees were capped, the association would not only typically get nothing (because the fees would be greater than the assessments due), but would possibly leave the association upside down owing an additional balance to the attorney, in which case no association would be able to hire an attorney for such purpose. (ALG) and practices in the areas of developer representation and association representation. www.AssociationLawGroup.com / ben@algpl.com

Additionally, some attorneys either bill their association clients up front or at some other stage of the collection matter instead of deferring such legal fees until the matter is successfully concluded and the association also receives its money. While smaller practitioners may need to bill their clients up front or along the way in order to cover overhead expenses and other financial needs, the irony is that most associations in this market cannot afford to pay any legal fees (which is why they need a good collection attorney in the first place) and therefore should consider finding an attorney who agrees to defer all of their legal fees until such legal fees are fully collected from the debtor or the lender. Additionally, having to pay legal fees up front or along the way is actually a deterrent to many associations from even pursuing advisable legal remedies such as filing their own association foreclosures against delinquent owners (instead of just waiting for the lenders to come through) because the legal fees are cost prohibitive.

BY: BEN SOLOMON, ESQ.
If your homeowners or condominium association attorney is taking their legal fees and costs out of your assessments they are collecting (or only collecting the assessments due to the association and then billing the association without collecting such fees and costs on top of the association assessments), then you may want to consider finding a new attorney. Florida Statutes and most association governing documents protect an attorney’s right to collect his or her legal fees and costs in addition to the assessments due to the association. Therefore, if the attorney only collects the assessment amount for the association and then separately bills the association for their legal fees (which fees, in some cases, may be more than the actual assessments collected) then, in essence, the attorney has taken their fees out of the association’s money instead of taking advantage of the association’s legal right to collect all of its legal fees and costs in addition to the assessments.
