The Pennsylvania State Alliance of YMCAs announced that the Greater Carbondale YMCA has been awarded the 2018 YMCA Community Impact Award for social responsibility. The award specifically praised the Y’s Autism Family Spectrum Group, known as the “A-Team.” The YMCA in conjunction with Parents Loving Children Through Autism (PLTCA) seeks to provide opportunities for youth on the autism spectrum and their families to gather in a nonthreatening environment. Often, children on the spectrum are not given the opportunity to participate socially with typical peers/ siblings during evening events. They stay at home but become increasingly aware

of their social differences with their siblings/peers. A-Team officials say this group seeks to fill that social gap. The A-Team now meets weekly for additional socialization and life skills instruction/ experiences at the YMCA and in the community (bowling, movies, baseball games and restaurants). “The A-Team is a remarkable initiative which further demonstrates the Y’s overall commitment to serve those in need in our communities,” explained Kim Johnson, president and CEO of the YMCA of Reading and Berks County. The inaugural Nina’s High School Football Wing Bite-Eating Contest was held recently at the eatery’s Blakely location, 310 Main St. Eight schools participated, with four players from each team. Each team was given a half-tray of wing bites ( 8 pounds of wing bites smothered in mild sauce; that’s 64 pounds of chicken bites). In less than

40 mins, the winner was chosen: the team from Lakeland, sponsored by The Backyard Ale House. The team won $1,000 and many prizes. The team from Abington Heights placed second; the team from Valley View placed third. Other teams competing were Carbondale Area, North Pocono, Scranton Prep, Dunmore and Mid Valley.

1-1/4 cups chopped onion 2-1/2 cups sliced mushrooms 1 (13-1/2-ounce) can chicken broth 1 cup cream cheese, softened 2 (10-ounce) packages frozen broccoli FAMILY-STYLE florets ROAST TURKEY 1 teaspoon white pepper 15 slices white bread, cut into small Prepare fettuccine according to cubes package directions; drain and keep 1 (8-pound) turkey warm. Lightly spray a large nonstick 1 teaspoon oil skillet with nonfat cooking spray and 1 small onion, chopped heat over medium-high heat. Add turkey 1 cup celery, chopped cutlets and cook until turkey is no longer 2 tablespoons butter or margarine pink and is cooked through. Remove 1 teaspoon dried sage turkey from skillet and set aside. Lightly dash of black pepper respray skillet; sauté onions until soft 1 small apple, peeled and chopped and transparent, about 5 minutes. Add 1 cup water 3/4 teaspoon instant chicken bouillon mushrooms and continue cooking until mushrooms are tender. Stir in chicken granules 3/4 teaspoon butter-flavored sprinkles broth and cream cheese; heat over Layer bread cubes in jelly-roll pan and medium-high heat until mixture almost comes to a boil and thickens. Add turkey, bake at 325º for 12 minutes, stirring broccoli and pepper to skillet; cook over twice until dry. 1/4 cup ground or prepared mustard 1 tablespoon Worcestershire sauce 3 tablespoons prepared horseradish Combine all ingredients in a bowl; mix until smooth. Mustard will thicken as it stands. Store in refrigerator. To make this dip hot and zippy for pretzels and egg rolls, use ground mustard. To make a milder, sweeter sauce that’s delicious with ham and turkey, use prepared mustard. Yield: 1-1/2 cups. WINTER SQUASH WITH LEMON BUTTER 3 acorn and 3 butternut squashes (1 to 1-1/4 pounds each) 1/2 teaspoon salt 1/4 teaspoon black pepper 1/2 cup water For lemon butter: 1/2 stick butter or margarine, softened 1/4 cup firmly packed light brown sugar 1 tablespoon lemon juice 1 teaspoon ginger Preheat oven to 375º. Have ready a large roasting pan or 2 (13-by-9-by-2inch) baking pans. To make lemon butter: Mash butter ingredients with back of spoon until smooth and well blended. Cut squashes in half lengthwise with a heavy knife. Use a spoon to remove seeds. Spread cut sides with lemon butter; sprinkle with salt and pepper. Place cut side up in pans overlapping as needed. Add water, cover with foil, and bake 40 to 45 minutes or until tender when pierced. Remove to a large serving platter. Yield: 12 servings. SCALLION MASHED POTATOES 4 pounds russet potatoes, peeled 8 cloves garlic, peeled 2 bay leaves 1/2 stick butter or margarine 2 bunches scallions, thinly sliced 1 teaspoon salt 1/2 teaspoon black pepper 1 cup chicken broth 1 cup (1%) lowfat milk Cook potatoes, garlic and bay leaves in a large pot in lightly salted water for 20 to 25 minutes or until tender. Melt 2 tablespoons butter or margarine in a large nonstick skillet. Add scallions, 1/2

teaspoons salt and 1/4 teaspoon pepper. Cook over medium heat 1 minute or until scallions are soft. Add chicken broth; simmer 2 minutes. Drain potatoes well; discard bay leaves and return potatoes and garlic to pot. Add milk, scallions and remaining 2 tablespoons butter, 1 teaspoon salt and 1/4 teaspoon pepper. Using a handheld mixer or potato masher, beat or mash potatoes (some lumps may remain). Spoon into serving dish. Yield: 12 servings. PUMPKIN TASSIES 1 stick butter or margarine, softened 1 (3-ounce) package cream cheese, softened 1 cup all-purpose flour 1/4 cup packed brown sugar 1/8 teaspoon salt 1/8 teaspoon cinnamon 1/8 teaspoon nutmeg 1/8 teaspoon allspice 2 well-beaten eggs 3/4 cup canned pumpkin 1/4 teaspoon rum extract 1/2 cup frozen whipped dessert topping Coarsely chopped pecans In mixing bowl blend together butter and cream cheese. Stir in flour; mix well. Cover; chill 1 hour. Make a small walnut-size ball; press into miniature muffin cups. Bake at 350º for 8 to 10 minutes until golden. Cool. In saucepan combine brown sugar and next 4 ingredients; blend well. Stir in beaten eggs, pumpkin and rum extract. Cook on low heat 2 to 3 minutes until thickened. Remove from heat. Cover and chill thoroughly. Fold in whipped dessert topping. Pipe or spoon 2-3 teaspoons pumpkin mixture into each tart shell. Garnish with chopped pecans. Chill. Yield: about 32 pumpkin tarts.
