Skills in Scranton, the workforce development affiliate of The Greater Scranton Chamber of Commerce, recently hosted its first Educator in the Workplace cohort on logistics and transportation. Among the teachers on hand were Sandra Liparulo of the Mid Valley School District. Offered through a collaboration between the Lackawanna County Workforce Development Board and Skills in Scranton, Educators in the Workplace seeks to align and connect business and industry leaders with local school districts, the career and technical center and the local intermediate unit. The program provides Lackawanna County educators with a week-long industry immersion experience in one of four industry specific cohorts. “We are pleased to be partnering with the Lackawanna County Workforce Development Board to connect our businesses with teachers, students and families, regarding real job opportunities here in our region,” said Bob Durkin, president, The Greater Scranton Chamber of Commerce. For the logistics and transportation session, participants discovered a wide variety of career paths that they could introduce to their students as potential future opportunities. “We are excited to be working with The Greater Scranton Chamber of Commerce and the Skills in Scranton Program,” said Joe Stagnaro, division president, McLane Company. “Our goal is to expose educa-

tors to the exciting career opportunities in logistics, while strengthening the workplace bond between the community and local businesses; knowing that our students will ultimately benefit as they prepare to enter the workforce.” Participants in the logistics and transportation cohort spent two days at the chamber learning about the industry, as well as services available, and completing classroom integration planning. They spent three days on-site at either Kane Is Able or McLane Company. Regional partners from Pennsylvania Career Link Lackawanna County, The Scranton Plan, Penn State Scranton, Johnson College, Luzerne County Community College, Express Employment Professionals and OneSource Staffing Solutions spoke with educators about the industry and services available to job seekers locally. “Kane Is Able is honored and excited to participate in this year’s Educators in the Workplace program,” said Alex Stark, senior director of marketing, Kane is Able. “We’re passionate about spreading the news and getting visibility to the logistics and transportation industry. When logistics is working well, and this is mostly an exceptions business, the industry works silently behind the scenes. That’s optimal for business, however, not ideal for getting on young peoples’ radars as a career opportunity. We hope that through successful programs like Educators in the Workshop.

Carbondale Area students were among the winners of the Lackawanna/Susquehanna office of Drug and Alcohol holiday poster contest. The purpose of the contest is to provide students with an educational opportunity to artistically demonstrate the consequences of substance abuse. The poster design had to reflect the holiday season with a corresponding message on not drinking or driving and celebrating sober. Esbensen’s artwork will be displayed on a billboard in Carbondale during the month of April 2019. They are: Emily Moser (honorable mention); Erin McHale (second place) and first-place winner Cayden Watts. Watts’ artwork will be displayed on billboards, posters and buttons distributed throughout Lackawanna County during the holiday season.

Happy holidays to all of our readers. Here are some great recipes to help you with your meal planning throughout this joyous season. Enjoy. FESTIVE ONION SOUP 2 tablespoons margarine, melted 1 tablespoon olive oil 2 medium onions, sliced 1/8 teaspoon sugar 2 teaspoons all-purpose flour 2-1/2 cups low-sodium beef broth 2 tablespoons Vermouth or dry white table wine 1/8 teaspoon freshly ground black pepper 1/2 cup seasoned croutons (recipe follows) Combine margarine, oil and onions in a saucepan. Cover and cook over low heat 15 minutes. Add sugar and cook uncovered 10 minutes, stirring occasionally, until onions are a deep, golden brown. Add flour and mix thoroughly. Stir in broth. Add

Vermouth and pepper; simmer 20 to 30 minutes. Place soup in cups and top with seasoned croutons. Yield: 3 servings; 1 cup per serving. To make seasoned croutons: 1/2 teaspoon onion powder 1/4 teaspoon garlic powder 1/4 teaspoon dill weed 1/8 teaspoon freshly ground black pepper 1/2 stick margarine, softened 4 slices bread Preheat oven to 300º. In a small bowl, add seasonings to margarine and mix well. Spread margarine mixture on one side of each slice of bread. Cut bread into 1/2-inch cubes. Place on a cookie sheet and bake 15-20 minutes, or until crisp and dry. Cool and store in a tightly covered container. Use as a garnish for soups or salads. Yield: 2 cups; 1/4 cup per serving. STUFFED BAKED HAM 1 cup fine, dry breadcrumbs

Gradually add water, stirring just until blended. Set aside. Slice skin from ham. Score fat on ham in a diamond design, making 2-inch slits, 2 inches apart. Press reserved breadcrumb mixture into slits. Brush ham with egg; sprinkle with 1/4 cup breadcrumbs and sugar. Place ham, fat side up, on a rack in a shallow roasting pan. Insert meat thermometer, making sure it does not touch fat or bone. Bake, uncovered, at

325º for 2 to 2-1/2 hours or until meat thermometer registers 140º. Yield: 15-20 servings. LITHUANIAN KUGEL 5 potatoes, grated 1 large onion, grated 1 stick butter, melted 3 eggs, beaten 1/4 cup milk 2 tablespoons flour 1 teaspoon salt 1/2 teaspoon black pepper Squeeze and drain well the grated potatoes. Add remaining ingredients. Pour into a greased 8x8x2-inch baking pan. Bake, uncovered, at 350º for about 1 hour, or until brown. dry crumbs 1 cup milk 2 eggs, lightly beaten 1 teaspoon salt 1/4 teaspoon black pepper 2 cloves garlic, peeled and crushed To make sauce: 1 cup packed brown sugar 1/2 cup cider vinegar 1 tsp. dry mustard 1 cup crushed pineapple with juice Preheat oven to 325º. Mix all ingredients and shape into balls. Arrange on a greased baking pan. Mix sauce ingredients in a saucepan. Bring to a boil and cook, stirring constantly, for 2-3 minutes. Pour sauce over meatballs and bake uncovered for 1 hour, basting frequently. Yield: 8 servings. WHITE CHRISTMAS PIE (A holiday favorite) 1 (9-inch) baked and cooled pie shell 1 tablespoon gelatin 1/4 cup cold water 1/2 cup sugar 4 tablespoons flour 1/2 teaspoon salt 1-1/2 cups milk 3/4 teaspoon vanilla extract

1/4 teaspoon almond extract 1/2 cup heavy cream, whipped 3 egg whites, room temperature 1/4 teaspoon cream of tartar 1/2 cup sugar 1 cup shredded coconut Soften gelatin in cold water. Mix together in saucepan the sugar, flour and salt. Gradually stir in milk. Cook over low heat, stirring until it boils. Boil 1 minute. Remove from heat. Stir in softened gelatin; cool. When partially set, beat with mixer until smooth. Blend in vanilla and almond extracts. Gently fold in whipped cream. Beat egg whites until soft peaks form; gradually add cream of tartar and sugar and continue beating until stiff. Carefully fold egg whites into mixture. Fold in coconut. Pile into pie shell.
