E
very blade-handy angler has their own techniques and tricks for peeling the perfect fillet off a fish. But anyone who has spent enough time around a cutting board knows the perfect way to fillet is a combination of three crucial elements: technique, tools and practice. Whether it’s a 15-pound red snapper or a 6-ounce bream, the basics of filleting a fish are the same. The idea is to remove the meat along the fish’s flanks, while leaving behind the head, bones and guts. Step 1: Make a vertical cut just behind the fish’s gill plate and pectoral fin. This cut should go all the way down to the bone and
extend from back to belly. Step 2: Run the blade from the first cut all the way down the top of the fish, along the backbone to the tail, making a shallow incision as close to the backbone as you can get it. Step 3: Using that long cut along the backbone, utilize smooth, light strokes to work the fillet away from the bones moving from the back to the belly. The other hand can be used to peel back the meat as you go. Cut around the ribcage when you arrive at it. Step 4: With step 3 completed, you should have a beautiful skinon fillet. To remove the skin, place the fillet on the board skin side down. Start from the tail and insert the knife through the meat down to the skin, leaving a tab of meat and skin at the tail to hold onto. Turn the knife horizontal and run the blade up the skin to remove the meat. Step 5: Use tweezers to pick out any pin bones left in the fillet. The technique seems simple enough, but if you don’t have good, sharp, flexible knives that are sized correctly for the fish on the board, you’re going to make a mess out of your fillets. American-Made Innovation At
B&W Trailer Hitches S ince 1987, B&W Trailer Hitches has been using quality and innovation to build one of the most trustworthy names in the industry. veryone who goes out on the water wants to have a good time and come home safely. No matter what boating activity you take part in, there is something freeing about that feeling of the wind in your face, the gentle rocking of the hull and the sound of the waves. Unlike cars, there are no yellow lines to stay between; you can go anywhere you want. But just like in a car, there are some rules you must follow. The Navigation Rules and Regulations Handbook, published by the U.S. Coast Guard, includes the U.S. Inland Navigation Rules or NAVRULES and the international rules known as the COLREGS. These rules were developed for the purpose of avoiding collisions and keeping boaters safe. Every boat owner should have a copy and spend some time understanding them. It is mandatory to have a copy onboard any vessel over 39.4 feet in length. Taking a class on the rules can also be extremely helpful. To break it down, the rules tell you what to do when you come across another vessel. In this case, the term “vessel” is used to classify almost anything that floats on water that can be used for transportation. That means there is a rule that applies to almost every situation involving everything from a kayak to a seaplane. They cover steering regulations as well as sound signaling equipment and navigation lights. As a responsible boater, you should not only be familiar with the basics of how the regulations apply to the specific situations for where you are fishing but should try to know and understand all the requirements. If you regularly go fishing on a small lake or kayak fishing in a river, it is probably rare for you to come into contact with commercial vessels, but you still should know how to handle those situations. Also, just because you are fishing, does not mean you are always a “stand-on”
vessel like a commercial fishing vessel using nets or longlines. Knowing the different rules that apply to all of these situations can mean the difference between a good day on the water and tragedy. At a minimum, you should always have a proper lookout, operate at a safe speed and yield or give-way to another vessel when in doubt and to always avoid a collision, even if that means breaking a navigation rule to save lives and avoid damaging property. Don’t leave the dock without knowing the rules of the road. Through examples, you’ll discover how to avoid collisions in various situations, the differences between power and sailboat rules, and the special rules for fishing vessels. e call them “dinks” here on the Gulf Coast of Texas. They are the spotted seatrout that are undersize or just barely legal. There are many anglers out there this summer who will be happy to catch a limit of trout, even though they are dinks. But there is also a strong contingent of anglers, like me, who would rather catch trout in the 18- to 20-inch or larger Derek Change caught this nice trout on a TroutSupport GrassWalker lure. range or go catch redfish. You can put several things in your favor to help you catch better quality summertime trout. One of those is not fishing too shallow during the heat of summer. The forage better quality trout eat is oxygen level dependent. Species such as glass minnows, silversides and menhaden move deeper in the summer heat. Continuing to fish shallow grass flat edges during July and August is a great recipe for catching smaller-than-average, undersized spotted seatrout. Look for structure that is deeper than 8 feet in your bay system. If it has good current, you’ll find it also has better quality seatrout during the heat of the summer. On rare occasions, a very large trout will be feeding on the small trout and mullet in shallow water. But trying to target fish in this scenario tends to be a Hail Mary more than a good plan, unless it’s an area that typically holds big trout. Big trout can be caught on structure at the edge of deep water pre-dawn until about sunrise, but many will just stay deep during this period. Hunt the fish, and you should have better results. Hide And Seek With World Record Stripers By Tom Schlichter
I
t’s no secret really big stripers patrol the eastern end of Long Island Sound. Just ask Greg Myerson; he found the biggest one in August of 2012 – the IGFA world record, which weighed 81 pounds 14 ounces! Lucky catch? Hardly. Myerson, 50, of Wallingford, Connecticut, has targeted big bass in these waters since childhood. Over last decade he’s hauled in numerous 50- and 60-pounders, plus a 73-pound behemoth, in addition to the top prize. “I’ve released some others,” he said, “that might have broken my own record.” What draws such big fish into the area? Myerson believes it’s a search for lobster. “The eastern end of Long Island Sound is very rocky and, until recently, it held a ton of lobsters,” he said. “Big bass are lazy. They don’t like
fighting strong currents, so they slip in behind submerged boulders or hold in the lee of outcroppings and reefs. That’s where lobsters like to feed, too, so it’s a convenient ambush spot for the bass.” Myerson noted there is plenty of good bottom to investigate here. “Southwest Ledge and Southwest Reef make good starting points,” he stated, “but there are other obvious opportunities if you poke around.” Once he finds a spot, the current striper king follows a specific routine. He’ll chart a path that avoids lobster pots but still allows access to the lee side of submerged boulders. He’ll fish when the tide is flowing slowly and prefers to ply his trade after dark, just past slack high water, and on the last quarter of the moon. “Lobster feed best from 0 to 1.4 knots of current,” he explained, “so that’s when the biggest bass chew, too.” Myerson’s secret weapon is a special sinker he’s developed and now markets through his business, World Record Striper Company (worldrecordstripercompany.com). Called a Rattlesinker, it rattles at the same 10-decibel sound level lobsters use to send out a buzzing underwater warning when danger enters the area. When bass hear the rattle, they start looking for food. Myerson uses a clip to attach the sinker to a three-way swivel and a 5-foot length of fluorocarbon leader that terminates in 5/0 eel hook to present an eel. Using conventional tackle and a braided main line, he bounces the sinker across the bottom as the eel follows behind. The rattling sound and sea snake have proven to be a lethal combination cow bass just can’t resist. Charleston’s Fishing Forecast for July

he inshore fishing forecast for Charleston in July means two things. Hot and Hot. The Charleston area will have hot weather and hot fishing action this month. July can see temperatures well into the 90’s during the mid part of the day but the early morning and late evening can be very nice. The cool thing about inshore fishing in July is the variety of fish available this month. Almost every species we can catch in a calendar year is available in the month of July. The standard inshore slam of redfish, sea trout, and flounder can be caught almost any given day. You will also have the opportunity to find many of the migrating species that inhabit the Charleston area in the summer months. Many schooling species like Spanish mackerel, blues, ladyfish can be found crashing bait in the mornings. There will be some larger species like jacks, tarpon, cobia, and several types of sharks around. If you’re looking to do some bottom fishing for pan fish you can find pompano, whiting, croaker, sheepshead, and spade fish.

The hardest thing about July in Charleston is deciding what type of fishing to do. If you get out at daylight a great option is throwing top water bait for trout and red fish. Early in the morning red fish and trout are just looking to get one big meal that will get them through the day. A Zara spook “walk the dog” type of top water bait is hard to beat. Getting an over slot red fish on top water bait is very exciting and better than any cup of coffee. You can also head out in the harbor, inlets, jetties, or just off the beach and look for birds and schools of fish busting on glass minnows. You may find Spanish mackerel jumping out of the water waiting for you to cast a lure or fly in the school. If it’s something bigger you’re looking for, you can look for large jacks in the Charleston harbor while they cruise the surface. However, you may want to try for the occasional “Silver King”- a giant tarpon. There will always be several kinds of sharks in July. Fishing with live bait and some heavy tackle will do the trick. Either way you will find yourself hooked to something that will scream the drag on your reel. A great way to spend the day on the water is to book one of the area’s great guides. uly is considered by many people as the peak of the summer vacation season in the Charleston area. Locals and visitors alike take time to visit Lowcountry piers and beaches to relax, soak up some rays, and catch a fish or two. July should provide a wide array of fish species at the pier. June was the month to catch flounder, reds, sheepshead, and even pompano. We expect a variety of other species such as whiting, bluefish, croaker, black drum, and trout to show up in July. You may even see an occasional Spanish mackerel or jack crevalle will find their way up the shipping channel and cobia could be on the prowl around the bridge rock pilings. In fact, Don Mounce landed the first legal size cobia from the pier around this time last year. At the time he had to release it due to state regulations, but the cobia fishery has recently been reopened. Catch a keeper this year and it could be dinner! Spot Light on Business Corbin’s Hitch Shop

f you have ever required a serious hitch to tow your boat and have lived in Charleston for a few years, chances are really good you have visited Corbin’s Hitch Shop, a Charleston institution when it comes to any kind of hitch for practically any kind of vehicle. It all started in 1969 when Roy “Buddy” Corbin a master welder and pipefitter took over the back part of his house to put on hitches and his wife took over the front end of the house for a ceramic shop. Back then there were no hitches in a box readily available from manufacturers, Roy custom welded the hitches. They would hang the hitches on the front porch, which was an interesting way to display inventory, but at that time it was very practical and suitable. Roy’s hitch work progressed, fabricating hitches, and then they picked up the Draw-Tite line and became the largest dealers in South Carolina. They started doing hitch installations back then and continue to do so today. Soon after, they started building a line of
utility trailers and customized trailers. The towing and hitch aspects as well as the trailers all went hand-in-hand but they realized that manufacturing wasn’t practical so they just started servicing trailers and strongly advocating preventative maintenance. In 1995 Roy turned his business over to his son Steve who had been working at the shop since high school and knew exactly how to operate the business. Today the business has grown to seven employees and they do pretty much everything when it comes to keeping the trailering public going the way they need to whether its horse trailers, boat trailers, U-Dumps, utility trailers used by contractors or huge sailboat trailers, they do it all. Today what is most important to Steve is being able to help people any way he can, and they do a lot of that there. He doesn’t compromise the quality of the service that they provide for the money. He will fix problems even if they are not theirs to make
sure the customer is satisfied. Steve is all about educating the customer, in many cases “out of ” more then he will talk them “into”. They are very serious about what they do; they emphasize customer service. They don’t just say it, they actually live it. As Steve notes, don’t tell me “it can’t be done; it’s not going to fit; or its been wrecked,” because he’ll figure out how to make a hitch fit that car. He’s not going to compromise the safety or integrity of the vehicle, but he will make it fit the vehicle. Steve also says “the customer didn’t come to us for us to say we can’t do it, that’s not our attitude”. Carolina Flyfisher Speak Spanish? By Scotty Davis o say the Spanish have arrived would be an understatement! I thought they were going to jump in my boat this week. A leisurely boat ride around the Charleston harbor or surrounding waters will get you into the right neighborhood and with a few easy tricks you can be grinning ear to ear with one of fly fishings favorite speedsters. Let’s talk tackle. No need to overdo it here, as anything you’d use for redfish is adequate, albeit a tad heavy. Break out the small stuff! Rods as small as 5-7 weights can drastically improve your smile so why not use them? These rockets will run fast but generally not very far, just stay tight and keep side pressure on the rod and let that reel’s drag sing. Spanish mackerel generally feed on small baitfish such as glass minnows and silversides so small flashy flies are in order. Clouser minnows tied with white bucktail work terrific, however, the razor like teeth make quick work of the material- better off with synthetics. Wire leaders will always be a “which side of the fence” argument among anglers. Yes they allow you to land the fish once hooked with better percentages. However, I’ve found my hookup ratio is far greater using fluorocarbon leader material in the 30-40lb range. It allows the Fly to look more natural, true, but are we sacrificing a bite off with no wire? Here’s a scenario that’s all to familiar.... You’re cruising out to catch reds, trout, or whatever you generally do and you run across a school of ravenous, airborne Spanish. You are not ready with the wire and the rigging and the clock is ticking fast. Do you take the time to join a section of wire to your leader and haywire twist (knot) a fly to the wire or do you risk it with your leader and tie on a fly? If you

have the right fly in the quiver it’s an easy choice. Most flies utilize the entire hook shank to create the profile. The flies we like to tie for Spanish and other toothy predators employ a longer shank and the profile is tied to the rear portion of the hook only. The result? No need for wire or complicated rigging! The small 1-2” exposed hook offers enough protection. It’s a fun fishery that’s often overlooked. Accurate and long casts are not entirely necessary here so it’s great for beginning fly fishers. As table fare they are questionable, but as a fighter, they are highly prized- watch your knuckles!

Focus on Fishing Summer Sheepshead By Jiggin Jerry
I
s there a difference between Summer Sheepshead and Winter Sheepshead? The answer is no. It is still the same fish. Are Sheepshead larger in the Winter than in the Summer? The answer is no. The larger Sheepshead are just easier to catch in the Winter because of the lack of competition for food due to a number of other species of fish moving out to sea during the colder months. The main difference between Summer Sheepshead and Winter Sheepshead is their feeding habits. During the Winter, you can target Sheepshead with ease using fresh Clam out of the shell, Oysters, Barnacles and Mussels, usually without the threat of any other species removing it from your hook before the Sheepshead ever know it’s there. As for the Summer months, trying to use fresh Clam out of the shell is like ringing the dinner bell for every Pinfish, Black Sea Bass, Pufferfish, Spot and Croaker in the area. When using fresh Clam or Oyster out of the shell, you will most likely hook one of them before a Sheepshead. So, what should you know before trying to target Sheepshead in the Summer? The first thing we need to look at is their feeding habits in the Winter verses the Summer. A Sheepshead diet—Mussels, Barnacles, Oysters, live Shrimp and Crabs because Sheepshead primary feed on crustaceans. During the Winter in the Lowcountry, Fiddler Crabs, along with other species of Crabs, partially hibernate during the cold months, only coming out of the mud when an abnormal sunny day warms up the mud and sand just enough for them to become active. Our local Sheepshead are quite aware of this. They will primarily be feeding on Oysters, Barnacles and Mussels in deeper water and targeting a number of pilings, jetties and structures, which usually hold a number of these crustaceans for them. In the Summer, Sheepshead will change their feeding tactics. A large number of them in the Lowcountry will start to follow a high tide into the flats and into the grass looking for one of their favorite Summer foods— China-back Fiddler Crabs,

along with Mud Crabs. You will be able to observe large fish roaming the flats searching debris, scuffing through sea lettuce and kicking up mud in their attempt to locate and devour as many as these Crabs as they can find. As the tide recedes, the Sheepshead will follow and finish feeding in deeper water until the next high tide. So, targeting Sheepshead with Fiddler Crabs becomes the bait of choice through the Summer months. You will notice that it is easier to spot Sheepshead in the shallow water as they are feeding. Just remember that a Sheepshead can spot you just as easy as you spotted him, so try to be careful, make sure to move softly, try to make yourself as unnoticeable as possible. This will aid in keeping the fish in his feeding zone. Light Carolina rigs, using about ½ ounce to ¾ ounce egg weights, around 12 to 18 inches of 20-pound test fluorocarbon leader with a No. 2 or No. 4 Octopus hook should do the trick when using Fiddler Crabs. The best way to hook a Fiddler Crab is to puncture the hook through the side between two legs and exit the hook out of the center of the Crab’s chest. This will allow the Crab to stay alive and walk around. The very small hook blends itself nicely with the Crab, making it unnoticeable, and in most cases, mimics one of its legs. When casting to a Sheepshead using the Carolina rig while sight fishing, remember not to throw directly at the fish. The Sheepshead will get spooked immediately as the weight splashes and enters the water, causing the fish to leave. Cast softly ahead of the fish at least 4 to 5 feet away, immediately slowly reeling in or raising your rod to bring the rig and the Crab toward the Sheepshead with ease, mimicking the natural flow or drift in the water. This will not spook the Sheepshead. The Sheepshead will become enticed, and you will find that you will be able to watch the Sheepshead slowly approach the Crab and go into his feeding mode. As he takes one, two or three pecks at the Crab, the rest is on you because this is when the timing of setting your hook comes into play, and if you manage a successful hook set, fighting the Sheepshead will be your next endeavor and the fun begins! So, just remember, Summer Sheepshead give you the opportunity to sight fish Sheepshead in shallow water and near the grass lines. Sheepshead of all sizes, including large Sheepshead, you will be able to primarily target them with Fiddler Crabs. bait fish are abundant there’s a chance the Jacks are feeding nearby. The 25-pounder pictured here was caught using a live bait on a trolley rig set up. There’s no SCDNR size limit other than no more than 20 per person per day in combination with all other snapper and grouper species. or’easter after nor’easter made spring look like winter break. But have no fear, because summer is here! June proved to be one of the best months for pier fishing and we’re ready to see what July has in store for us. The shallow surf brought 4+ pound black drum, sheepshead, and plenty of whiting. Moving to the deeper end of the pier we saw lots of bluefish, pompano, and large Spanish mackerel over the 5 pound range. There were even a few king mackerel hits but none landed yet. However, out of all the species caught, the most rare and impressive we’ve seen so far this year was 25 pound Jack Crevalle. Jacks are a gamefish found off the entire Atlantic coasts including North and South America, Europe, and Africa. They’re a tropical looking predatory fish with long dorsal and tail fins and have a vibrant yellow throughout their body. They prefer the calm, warmer summer waters and when the

Lowcountry Kayak Fishing Find the Brush Find the Fish
W
hy crappie fishing? With all of the other species out there why fish for crappie? Bass may provide a thrilling fight on the line, catfish are the illusive giants of the lake and bream are an easy catch on a hot summer day, but crappie fall somewhere in the middle of all of this. They can be illusive or abundant, lazy or aggressive, shallow or deep. Fact is they always make it an exciting puzzle to catch them. South Carolina crappie fishing heats up with the temps this time of year and we are surrounded by some of the best waters in the state. Perhaps the fish that put the “pan” in pan fish, crappie are one of the most sought after species for the table. We have both the black and white sub species found throughout the state. Spring crappies generally stage on woody cover in shallower water near deeper water. Crappies have favorite spots and will return to them year after year… so make sure to note where, when, and what you caught the
fish on, it could be a recipe for success for years to come. Following the spawn, they move to deeper more open water where they again suspend near structure. The darker the water the more likely they are to favor the structure location. Woody cover is the favored staging spot for crappie and the pre and post spawn periods are prime times to find them on the brush. Fishing deep brush is highly predictable and even during the spawn will produce fish because not all crappies move at the same time to or from the shallows during the course of the spawning season…, which can run into summer in some lakes and rivers. To clarify deep is a relative term. It can mean water that is 10 feet deep on one lake or 25+ feet on another, depending on water clarity, spring rains or other factors. Simple experimentation will provide the answer. Finding brush with crappie is job number one. Modern equipment such as down/side scan imaging sonar makes the process simple. Woody cover cannot only be found but fish can be marked and the depths they are holding at can be noted. Depending on the season and therefore their location crappie will dine on all sorts of local forage. Most of their diet consists of zoo plankton, aquatic insects and juvenile fish… so small baits are the ticket. One of the best techniques is simple fishing small jigs vertically over deep brush. Long rods with fast action tips paired with an ultra-light reel are my favorite combination. The rod should have a fast tip for “feel” and plenty of backbone to muscle slabs out of heavy cover. 10 CHARLESTON

When you catch a crappie note the exact depth and repeat the presentation. 6lb test line is a good starting point for crappie, I go as light as possible and often use 4lb test. Many crappie pros use high visibility line for a reason, they want to see it. Crappie bites can be ultrasubtle, and sometime just a little “tick” of line movement will be the only clue to a bite. A quick snap of the wrist will load that slab on the hook! Jig size is crucial, heavier jigs (1/8 or 1/16) will provide more feel and may produce-but don’t leave a potential crappie brush until you have dropped a 1/32 or even a 1/64 ounce jig. Strangely enough the size of crappie caught is often is inversely proportional to the size of the jig. If jigs are not working-no crappie ever resisted a live minnow. Also, try tipping jigs with minnows or Crappie Nibbles. One of my favorite baits are Gulp Alive Shiners. Lower your jig until it bumps the brush, then raise and lower your rod tip as you swim the jig around the cover. If crappies are home they usually bite quickly. I find that low light periods are often best for active fish but not always. On clear summer days you might have to probe the cover extensively to find the fish. The old adage, “if you are not hanging up-you are not fishing good crappie cover” is often true. These fish hang very tight to cover in deep and shallow water. Now where are those brush piles? Crappie fisherman are among the most tight lipped anglers there are and for good reason. Crappie are consistently found on the same spots year after year. Lakes Marion and Moultrie hold great numbers of both black and white crappie. Don’t overlook the rivers either, the Tail Race Canal/Cooper River and the upper Ashley offer some fine crappie action as well. According to Ross Self, Chief of Fisheries for SCDNR “Crappie population state wide looks healthy, and barring any unusual weather situations, the 2018 crappie fishing forecast is promising.” Go light, get in the yak, find cover and find the fish! Crappie fishing can become highly addictive due to the minimal cost, effort it takes to find the fish and the tasty reward on the dinner table. Hopefully this is enough to get you on the water and on the prowl for a crappie or two. After crappie fishing for a while, you will pick up on their tendencies and be able to more quickly pinpoint their locations and haul them in. Boating in the Lowcountry Trailer Maintenance
I
’ve found over the years that boat trailers really get no respect or care, and they often create misery and heartache as a result. Buyers spend a lot of time trying to find the right boat, but very little time understanding differences in trailers and their options or the importance of properly maintaining them. One of the most obvious is the question of painted, galvanized and aluminum trailers. Painted steel trailers will not be able to withstand a salt water environment and will rust out quickly. Galvanized trailers last much better in a salt water environment. However, over time, especially if not rinsed properly, galvanizing can rust. Aluminum trailers are lighter weight and are the ultimate choice for salt water use. Just remember, due to strength, even aluminum trailers have steel fasteners, tongues, winch posts, axles, springs and other steel components. These parts of the trailer are still susceptible to salt water corrosion and need to be rinsed regularly. Once corrosion sets in, the steel portions will become eaten out, often from within, creating a very dangerous situation. Most people have either seen or experienced a broken frame, axle, hub or trailer tongue. Sometimes the failure happens at the landing when reloading, but if the critical failure happens while on the highway, it is dangerous for you and everyone on the road around you. be rinsed thoroughly after use in salt water, paying special attention to axles, brakes, bunk brackets and all other steel components. To mitigate the hassles somewhat, consider a custom aluminum trailer with aluminum welded bunk brackets, aluminum wheels, torsion axles (replaces leaf springs) and stainless steel fasteners. You still need to rinse the axle, brakes and tongue, but the biggest culprits to corrosion will be improved. Also, you should inspect your trailer carefully or have it serviced annually. It is easier to inspect at the landing while the boat is in the water. Many components like the hubs and winch require grease. Brake systems should be checked. Winch ropes or straps should be inspected. Look for any signs of rust. Check for proper tire pressure and look for signs of cracking in the sidewalls. Finally, be sure that the trailer is loaded properly against the bow stop and secured with transom straps, even if the trailer has side guides. Bottom line, don’t neglect your trailer. Your boat is a major investment. Too many times we’ve seen neglected trailers cause a missed outing, traffic accidents, extra towing bills and actual damage to the boat. Oysters Rockefeller
T
his month I am going to change it up a bit and do one of my favorite appetizers, Oysters Rockefeller. This is a very simple and delish dish to make and they are great for any occasion. We are very lucky to have a nice variety of local oysters available for this. When choosing a certain variety of oyster I generally go with the largest. If large local rock or blade oysters are available go with them but if not there are plenty of alternatives from different areas such as the Gulf, MA, CT, VA, and many more. Rock oysters are easier to shuck compared to the blades. Just check with your local seafood purveyor for availability. The next step is getting the ingredients. You will need to get 1 pint heavy cream, 2 shallots, 1 bottle white wine (something you can drink), 2 cups parmesan cheese, 1/2 small bag fresh spinach, 1 head of garlic, 1 small pack bacon, 2 Roma tomatoes, 1 cup panko bread crumbs, 2 lemons, and your oysters. This recipe will make enough mix for up to 2-3 dozen oysters depending on the size of the oyster or the amount of mix you put on each one. I generally make the mix ahead of time and put it in the fridge but it can also be made and held warm. Now for the mix I divide it into 2 main steps, the cream mix and the spinach mix. For the cream mix I start by getting a small saucepan and add a half stick of butter on low heat.
Mince your shallots and add to the butter and sweat until translucent. Add 2 tablespoons flour and cook the roux for a few minutes on low heat. Then add 1 cup of wine and stir. This should start thickening up at this point. Cook it for a few minutes and then add the heavy cream. Cook on low heat for about 20 minutes until it is nice and thick and the 12 CHARLESTON

flour flavor is no longer present. While still warm and not over heat, whisk in 1 cup parmesan cheese, salt and pepper, and the juice of 1 lemon. Next the spinach mix, start by getting your spinach, bacon, garlic, and tomatoes ready. Get ½ pound of bacon and dice it up raw then add to a sauté pan and cook until crispy. Take the crispy bacon out of the grease and set aside. Now dice your tomatoes and mince 4 cloves garlic and add to the bacon grease and cook for a few minutes until soft. Then add the fresh spinach and lightly wilt and season with salt and pepper. Add all the spinach and bacon into the cream mix and stir well. From this point you can keep it warm or save it in the fridge for another day. The next part is getting everything assembled and ready for baking. Take your oysters and rinse them well. Shuck the top off and make sure no shell fragments are present. I will keep the adductor muscle in tact (this is what keeps the oyster in the shell). I do this because sometimes the mix and oyster will slide out if you shuck the muscle off and because most oysters are not flat. If you are eating them raw it’s a different story. So now that the tops are shucked off, top with the mix, parmesan cheese, and then followed by panko bread crumbs. Bake in a 400 degree oven for about 10 minutes until lightly golden brown and bubbling. Garnish with a lemon wedge and fresh herbs. Enjoy! Feel free to add or take ingredients out. July Forecast for Kiawah Island, Seabrook Island & North Edisto Island

ot Weather – Hot Fishing. ‘Reel, reel, reel…get’em’. That sums up near-shore reef and in the Lowcountry creeks and rivers fishing coming in July. After a slow spring start you can count on fishing at the reefs to be back to normal. With warm waters you can find the usual species at the reefs, big redfish, black bass, a variety of sharks, the occasional lingering cobia, Spanish mackerel, etc… . The issue is what do you target. Live shrimp and menhaden on the bottom with heavy tackle will catch everything. Menhaden or larger bait fish under a balloon can bring in sharks, King mackerel, and all the larger predators. Spade fish will be prolific. 12 lb flouro leader to a 1/0, or smaller, circle or kale hook threaded with shrimp or pieces of a jelly ball will provide terrific action. For a change, use an 1/8 oz or ¼ oz Z-Man black or green jig head with a Z-man Opening Night, or other light color swim bait on a light spinning rod. I’ve caught big cobia on this little bait. Cut bait on heavy tackle
for sharks is always fun. In-shore. Early and late in the day provide the most comfortable times, BUT the tides are everything when fishing the Lowcountry rivers and creeks. Throw shrimp under a cork on the flats or use a sinker and throw the shrimp to the grass lines, creek openings, points, under docks, etc… . GULP! Shrimp also work under a cork. You can pull redfish, trout, and flounder using these methods. Keep that Z-man rig handy, too. Works great for all of the slam species. Always throw the Z-man rig in 7-to-10 ft of water off a drop-off to check for big redfish. For additional fun put a blue crab on a big hook and sinker on the flats – Bonnet head shark bite will be terrific. Send me a note if you want to know more about fishing the Lowcountry Estuary. Capt. Charleston Offshore Fishing Climbing The Ladder By Patrick Brogan
I
t has always been a dream of mine to work on a sport fishing boat but if you weren’t brought up in the business it takes some work to get there. Everybody has to start somewhere and for me it was inshore fishing with my dad and brother on an old nitro bass boat. I remember watching all the charter boats coming in and thinking to myself, “I can’t believe people are getting paid to go fishing”. Little did I know there is a lot more work that goes into working on a boat than just backing down on blue marlin and washing the boat. If you want to work in this industry you must be eager to learn and willing to do some work for free. I remember being excited when friends would let me hang out in the cockpit while they cleaned the boat. I would always make sure to help and ask a
I would always, and still always, write detailed notes in my log book on the way home about things I liked or new ideas I came up with. The sport fishing industry is small and word spreads fast, each and every boat you step on could be a new job opportunity or a reference to add to your resume. Before someone hires you for a job they are going to make sure
thousand questions about fishing while doing it. Finally, I started getting asked to come ride along and that’s when my addiction set in, I knew that I wanted to make a career out of it. First impressions go a long way and what I lacked in knowledge I made sure to make up for in work. There is always something to do in the cockpit and there is no reason to sit down. Making the mates job easier will lead to another invitation and make them more willing to share their knowledge and experience. Some of the best experience you can get is when you go fish on other boats, everyone has their own way of doing things. As I started to fish with different charter boats and fill in for other mates I started to develop my own methods. Whether you’re watching the captain drive on a fish or watching the crew do something a little bit different, you can always take away knowledge every time you go out. 14 CHARLESTON

orthern snakeheads are a nasty invasive species, which makes them all the more fun to shoot with a bow and arrow. Andrew Fox, of Mechanicsville, Maryland, spent Memorial Day weekend bowfishing with buddies at Mattawoman Creek in Charles County, Maryland. He came home with a new state record. The trio was out on the water for a few hours the night of May 24, waiting for low tide, but despite the favorable tides, recent rains made visibility nearly impossible. By pure luck, Fox caught a glimpse of a fish illuminated in the glare of the boat’s lights. Thinking it might be carp, Fox said he was slow to respond, but after a few seconds determined it was a snakehead. “That’s the biggest snakehead I’ve ever seen,” said Fox. Pulling back his bow, Fox struck the snakehead and hauled in the monster “frankenfish.” With the snakehead in the boat’s hull, Fox removed the arrow and said, “This might be a new state record.” In fact, it is now the biggest northern snakehead caught in the state of Maryland. Fox’s snakehead tipped the scales at 19.9 pounds with a length of 35.157 inches, breaking a 2-year-old record.

The team that accumulates the most points for blue marlin, white marlin and spearfish during the event’s three fishing days earns $25,000, while second- and third-place prizes are $10,000 and $5,000, respectively. All billfish must be released, except potentially record-setting blue marlin that exceed 600 pounds. Teams also can enter one fun fish (tuna, dolphin, wahoo or released sailfish) per boat per day for additional points. Marlin division competitors can pay an additional fee to compete for $10,000 in the fun fish division. Cash prizes await anglers who catch the three heaviest dolphin, three heaviest tuna (yellowfin, blackfin and skipjack) and three heaviest wahoo. The Key West Marlin Tournament is to begin with a 4 to 6 p.m. final registration Wednesday, July 18, at the Waterfront Brewery, 201 William St. A captains meeting, auction and raffle are to follow. Fishing is set for 8:30 a.m. to 4 p.m. Thursday and Friday, July 19 and 20, and 8:30 a.m. to 3 p.m. Saturday, July 21. Weighins take place after each day’s fishing on the dock behind the Waterfront Brewery. Tournament social events include cocktail gatherings, an island-style pig roast and a fish fry. An awards banquet at the Margaritaville Key West Resort & Marina, 245 Front St., is scheduled Saturday night. Entry fees are $1,800 per boat before June 15 ($2,100 thereafter) for two anglers, a captain and mate to compete in the marlin division and attend social events. ingfish might be the most explosive-biting fish in the Gulf of Mexico. We often see them skyrocketing a surface bait and jumping 8 feet into the air. They’ll hit live bait doing 30 mph, and all you’ll hear is a screaming reel. Kings in the 40- to 50-pound class are common here off Franklin County, Fla, with many 20- to 30-pounders mixed in. The state record is 90 pounds. It was caught off Key West in 1975. Kingfish might be in a school of hundreds, or a solitary big one might cruise the reefs and wrecks like a lone wolf. There are many ways to fish kings, but live bait can be a sure thing. Trolling dusters with a cigar minnow in tow has been a standard in the northern Gulf ever since powerboats have plied these waters. The old guys used drone spoons with long wire leaders to defeat the sharp array of teeth that can instantly cut a leader off. Light tackle is the way most Franklin County anglers fish kings today, and it gives quite an experience to the angler who has never hooked one of these torpedoes. They will hit jigs tipped with bait, trolled plugs and even take a grouper bait off the bottom. The food value of kingfish is very good, depending on how you prepare and cook them. Being high in omega 3 oils, they don’t freeze well if they are not precooked. Fresh fillets broiled or fried are hard to beat, and you don’t have to get fancy with the seasoning. Make sure to remove the dark bloodline from any part of the fillet, since it offers too strong of a taste for some. Kings in the 15-pound class are fantastic on the grill, and slicing the fish into steaks with a drenching of Italian salad dressing makes a nice presentation. If you have a smoker, this opens up another great way to do kings. Cut fillets into manageable pieces and smoke them for 6 to 8 hours with a dusting of seasoning. Kingfish makes a superb fish dip, and it is great for parties. Kings are abundant in our waters, so get out there and catch some. I
t all started for me when I began focusing on the big bull reds that prowl the waters around the St. Andrews Pass and the bridges in Panama City, Fla. I knew many of them lurked in those deep waters, and using live bait was usually a sure bet, but I get such a kick out of fooling fish with artificial lures that I had to explore the world of deep jigs like the Shimano Butterfly jig and the Offshore Angler Freestyle jig. When attempting to fool fish holding in water 50 to 100 feet deep, or more, you need a lure that gets down in a hurry. Not many tools can fill this niche, but these heavy, lead, streamlined jigs with the cool paint jobs come through in spades. Equipped with one or two hooks on a short tether, these jigs produce a wild, erratic fluttering on the fall, and when worked correctly, produce an enticing jumping action when ripped up off the bottom with the rod. The action is similar to a spoon more than a conventional jig, and fish of all species fall for it. It’s crucial to team your jig up with a properly rated rod. Deep jigging rods are usually short and work very well, but many rod types will get the job done. Spinning reels work fine, but I’ve found reels built for bottom fishing, like the Shimano Torium, to be my favorite. They’re smooth and fast, perfect for this technique. Spool up with 50• Safer to 80-pound test braid and a shock • Easier leader made of • Better 30- to 60-pound monofilament or fluorocarbon. Typically this is a vertical presentation with your boat positioned right on top of your target. Casting the jig, however, can be a very effective way of targeting fish that may be suspended somewhere in the water column and away from the boat. You can cover a lot of water using these jigs as a searchbait. Cast or drop the jig and let it settle to the bottom.
Then begin pumping it back to the boat. Work it with hard jerks several feet off the bottom, and let it settle on a semi slack line. Usually, a hard jerk works best. This triggers a strike without giving the fish time to think about what it’s looking at. You will feel the strike, and it will likely be on the fall, so hold on! I once had a large fish rip a rod right out of my hand. Down it went, the whole rig. That was a learning moment! Adjust your drag properly. I have experienced several days, both nearshore and offshore, when I caught fish about four to one against my partners using live bait. This is due to the bait’s ability to cover a lot of water in a short time with extremely effective results. I’ve caught reds, grouper, bonito, snapper, Spanish and king mackerel, trout, amberjacks, mahi and more using these jigs. It is an extremely exciting and productive fishing technique; give it a try! here’s no denying the effectiveness of presenting lively, active baits on the surface for just about any predatory offshore species. And kite fishing has to be the ultimate way to do it. he oldest fishing tournament on the Gulf Coast, The Deep Sea Roundup will return July 12-15 to the Texas Gulf Coast to celebrate its 83rd year. Hurricane Harvey roared into the Coastal Bend last year and left its mark on Port Aransas, but the PABA will hold the 2018 Deep Sea Roundup with the help of volunteer and the community fishing spirit. The Deep Sea Roundup began in 1932 as the Tarpon Roundup and has grown from a handful of Port Aransas fishing and hunting guides pitting their skills against one another to the largest family fishing tournament on the Texas Gulf Coast. The Roundup attracts anglers of all ages and skill levels, drawing over 800 contestants annually. FLY FISHING
I
t’s summertime, and that means mako sharks on the fly in southern California! If you ever get a chance to try it, mako sharks are the premier summertime gamefish off our coast, and being able to sight fish a fly to them is an experience like no other in fly fishing. Here are some suggestions on tackle and flies to get you into the Mako shark game. Rods The fly rod used when mako shark fishing is more a fish fighting tool rather than a casting tool. Fly rods in the 12- to 15-weight range are what I recommend. These rods easily cast a large fly and have enough lifting power to fight a mako shark from deep water. For larger makos, I use one-piece custom rods that are 7 ½ feet to 8 feet in length and can cast a fly to 30 feet quickly and accurately. They are great fish-fighting tools, especially for makos in to 200- to 400-pound range. Reel The drag system must be able to apply at least 18 pounds of drag pressure at its maximum setting. Most fly reels used in the saltwater these days are designed to apply up to 20 pounds of drag pressure. The reason you want a reel to have this amount of drag pressure is to be able to apply maximum pressure on the fish when it is swimming away from the boat and during the final moments of the fight. You want to be able to “lock down” on the mako and hold it at the boat so you can get a quick release. If the drag is too light (not enough drag pressure), you will never get the mako to the boat. Line retrieval The rate at which the fly line can be retrieved depends on the size of the reel’s arbor. The larger the arbor, the more line you can retrieve in one revolution of the fly reel spool. I recommend using the largest arbor reel possible. Many fly reel companies make reels with large arbors specifically for big saltwater gamefish like makos, tuna and marlin.

Flies The flies I use for mako sharks are large-profiled flies with a foam popper head. These flies are typically 8 to 12 inches long and tied on plastic tubing. I prefer tube flies because they are able to slide up and down the steel leader, saving the fly from getting eaten up by the shark. My hook size varies from 6/0 to very large 10/0. As for fly colors, red/orange combo is what I like best. This color combo is easy to see in tough lighting conditions. However, I will have one rig with a different color fly. The reason I do this is if the mako gets turned off by the red/orange color combo, a change in fly color can get the mako to react to a different color fly. Now go catch some Makos on the fly!!
