I

spend a lot of time on the water, but I still get excited every time I go fishing. The thrill of feeling the strike and hearing a drag sing, and ultimately landing the fish puts a smile on my face that’s hard to wipe off. Years ago, a great friend and charter captain from Steinhatchee, Fla., Capt. Brian Smith, invited me to go on a “thrill fishing” trip. I didn’t know exactly what that meant, and I had certainly never caught a “thrill” fish. Was it some newly discovered deep-water species? As Capt. B explained, the objective was to simply go have fun and experience the thrill of fishing again. We weren’t focusing on

a particular fish or even a particular style of fishing. We were out there to have fun. When I thought about it, this made perfect sense. A lot of us have forgotten the thrill of fishing. We’re so wrapped up in competing in a tournament. Or we’re too serious about catching fish because it’s the only weekend we have to get away. We become so focused on fishing that we forget to have fun. That thrill-fishing experience with Brian brought things back in to perspective. Thrill fishing is pretty easy, especially in a salty environment because the variety is tremendous. You set out a trolling spread of natural and artificial baits and wait for a rod to bend. There’s typically something out there eager to play. One of my favorites is the under-appreciated bonito. When they’re schooling, you can catch them on just about anything shiny that makes a commotion. And they put up a fight that equals a fish twice their size. They are an absolutely beautiful fish, although not at the top of my list for table fare. Enjoy the fight, take a photo, and send them back to the briny depths. Barracuda also rate high on my thrill-fish list. They will eat just about anything, and they are quick to take a trolled lure like a big tube eel. They jump, they tug hard, and there’s the excitement of having something toothy at the boat. Now, thrill fishing doesn’t necessarily mean you’re after “trash fish.” Big grouper will rise off the bottom and attack a big diving plug. It’s kind of like opening presents at Christmas, you don’t really know what might be in the box. It’s all about the experience. This is especially true with kids, or with folks who don’t fish very often. With a crew of kids, the most fun of the day can be when we’re catching bait. A four-inch pinfish is a trophy to a five year old, and a foot-long blue runner is a monster. As many of us know, attitude plays a large role in how your day on the water goes. Since that eye-opening trip with Capt. Brian, I am continually reminded that fishing is as much about the thrill as it is about what you put in the cooler. Capt. or some time I’ve been interested in how fishermen in different times and places fish. I’d like to think I can become a better angler by looking at different cultures and time periods, maybe learning from successful practices around the world and avoiding those that don’t work. Some time ago in this column, I wrote about the fish wheels that natives in Alaska use and suggested other fishermen could employ such wheels in rivers all over the country. This time I’d like to discuss a really unusual type of fishing: from stilts. The Food and Agricultural Organization of the United Nations (FAO) tells us that the world has around 38 million fishermen, including commercial fishermen. I also learned that fisheries and aquaculture operations provide employment to over 500 million people in developing countries. That figure does not include recreational fishermen. The attached photo of stilt fishermen in Sri Lanka by Bernard Gagnon depicts a scene that a lot of us have never seen in person. The fishermen patiently sit on their stilts waiting for the fish that they expect will pass by them in the shallow waters below or over the coral reef. The practice goes back about seven or eight decades and doesn’t seem to have evolved too much. It seems to have begun during World War II, when overcrowded conditions and food shortages forced enterprising fishermen to try different methods of catching fish. After using the wrecks of downed airplanes and capsized ships from which to cast their lines, the men actually built their first stilts over the coral reefs,

which provided a sturdy base on which to build their flimsylooking wooden mini-towers. Or they thrust their poles deep into the sand beneath the water and tied a cross bar to the vertical pole. They would then carefully climb up poles and perch in what seems like a precarious position. The fishermen go out at dawn and dusk, cast their lines into the water, and wait for the passing schools of fish. Lucky anglers can catch herring or mackerel passing by, but the occasional monsoons and tsunamis have altered the coastline too much to make stilt fishing very viable today. It’s true that some of the local fishermen pose on the stilts for camera-toting tourists, especially when the fish are not running or when the threat of monsoons might drive away the fish and the anglers. The practice will probably die out because it is so hard and has diminishing results as the ocean there changes and as villagers move inland to get away from tsunamis. I doubt if the practice of stilt fishing will catch on in Florida, but I still find it useful and informative to see how anglers throughout the world fish. Jack Attack!

ost people who fish, do it for many different reasons. Some do it to escape from the everyday grind, some do it just for the pure beauty of being on the water, and others for the shear thrill of hunting different species of fish. But, if you are out there to find the best fishing challenge, when it comes to saltwater fishing the fish that comes to mind for pound for pound hardest fighter would be the Jack. There are many different species of Jacks all over the world and are they are all known for their long hard fights. The Jack Crevalle is one of the most popular species that lives here in our local waters. Generally, they travel in large groups and don’t discriminate on what they eat. Look for schools of bait getting blasted in every direction and most likely it’s them. They will eat anything from bait fish to crustaceans. My favorite thing that I like to pitch at them are top water lures like the Yo-Zuri 3DB Pencil. Their top water assaults are ferocious and if the first one misses it, keep on working it because there is going to be another one right behind waiting to explode again! Then the second thing I like throw are Monster 3X Paddle-X soft-plastics with a 1/8 oz. jig head. Swim it very fast with slight twitches and hold on when

it hits! These fish pull like a freight train as you start to look at your reel wondering if you have enough line. When they start to swim in a circle in either direction, this means they are starting to slow down but, even when they start to slow down you still have a good fight ahead of you. The last but definitely not last way I like to target them is with a fly rod. Once you’ve hooked one these fish on a fly rod, you will be hooked for life. They will have you into your backing in seconds! Most of the time it doesn’t really matter which fly or what lure you are throwing as long as you work it fast. You can find these fish from deep in the backwaters all the way out to the gulf. Just make sure your tackle is up to par when playing with these guys because they will surely test it. I hope that on your next trip you run into these tackle testing machines and have some fun. As always please be safe! Take care of your local waters and respect all the anglers on the water. Changes in Attitude

ecember marks the beginning of winter for fishing. The tide levels become much lower than those of previous months, restricting access to many areas along the Gulf of Mexico. Notwithstanding the fact that the past two Decembers have been very warm and pleasant, signs of winter are all around us in the manner of northern winds, cooler water temperatures, fish migrating southward and inward. This year they arrived in good numbers during November, marking the time for a ‘Change In Attitude’ and a ‘Change In Strategy’, both offshore and inshore. Water temperature will determine bait availability inshore and offshore. So long as the water temperatures remain mild, baitfish will remain inshore and the spanish mackerel will be around. When water temperatures get too cool, the mackerel will follow the baitfish offshore. Likewise, water temps will determine locations of Porgy’s, Grunts, Grouper, Amberjack and Mangrove Snappers. As the water temperature drops, these fish may be found closer to the outer islands. Sheepshead are the ‘real’ story for inshore, now through February. Large numbers will move in from the Gulf for their annual spawn. They will be around ‘deserted’ piles, under docks in canals, passes and mangroves. My strategy for catching these is to anchor up and chum with ‘chopped’ up shrimps. Scrapping off the barnacles on the piles will also get these fish excited (that is why they are holding there). Use light spinning rods and reels with 10 to 20lb line test. Attach a 30lb. Fluorocarbon leader with a #1 or #2 hook. I prefer to use small shrimp for bait (that is why I ‘chum’ with shrimp, so as to ‘match the hatch’). Some anglers prefer to use ‘Fiddler’ Crabs. They are often referred to as ‘Sheepshead Candy’. They are found crawling along mangrove roots, making them natural bait for Sheepshead. Sheepshead have a reputation of being hard to catch. That is far from the truth when they are feeding (all fish are hard to catch when they are not feeding)! The bite is usually a soft tug. That is when one sets the hook. If the bite is rapid and hard, it is usually small Mangrove Snapper. Sheepshead will feed in spurts for a period of time. The big ones will eat for a while, then the smaller ones will eat. When they are done, the smaller trash fish and little snappers will feed. I recommend changing locations when the other ‘trash’ fish bite(s) turn on!

have to admit December is one of my favorite months to fish because the temperature can fluctuate and keeps fishing interesting. One day the snook can get fired up on a flat and next day crush the mangrove. Cold fronts generally back off a little and let the warm sunshine through. A wide variety of fish can be targeted this month all depends on Mother Nature. If the wind is blowing and the water is cool use live shrimp and find cover. Sheepshead, redfish, black drum and snook will be holding up where there is structure and food. Snook will still be active this month until water temperatures drop low 60’s and high 50’s then they will be searching warmer water to wait out winter. Sheepshead and black drum tend to get bunch up in numbers more in January with colder weather. Red fishing only gets better in cooler temperatures and will flood the shallows on incoming tides and drop of deep on low outgoing tides. On calmer, warmer weather days I will cast net white bait, as well as pick up shrimp and head to the reefs nearshore. Mangrove snapper can be caught on either tide but it’s hard to get to the bottom when the tide is ripping either way. Often while chumming out live and dead bait kings will show up. I’ve had cobia, amberjack and bonita show up and crash the party so having a heavier spinning set up will be helpful. Tides play a key role to get fish moving and feeding when the water is cool so try to find areas with water movement. Often if the bite slows it’s because the tide slowed so pick up and move. Be prepared with heavier spinning gear spooled with heavier braid like 20# with 30# leader for fishing structure and then go with lighter tackle such as 10-15# braid and 20-25# leader for grass flats.

GIANT Cinnamon Rolls INGREDIENTS | 14 Rolls DOUGH

CREAM CHEESE FROSTING

• 1 cup butter, melted • 2 cups packed light brown sugar • 4 teaspoons cinnamon • 1/2 cup raisins (optional)

• 1 (8 ounce) package cream cheese, softened • 1/2 cup butter, softened • 3 cups powdered sugar • 1 teaspoon vanilla

4 cups warm water 1 cup sugar 2 tablespoons yeast 2 tablespoons salt 2 eggs 1 cup vegetable oil 13 cups flour

METHOD Dissolve yeast and warm water in a very large mixing bowl for about 5 minutes. Add sugar and stir. Stir in lightly beaten eggs and oil. Gradually mix in flour and salt to liquid mixture. You might not need entire amount of flour. Add enough until dough begins to move away from sides of bowl and is soft but manageable. Cover dough and let rise until doubled. Punch dough down and divide in half. Roll out one half into a rectangle. Combine filling ingredients except raisins. Spread evenly over rectangle with rubber spatula. Sprinkle evenly with raisins if desired. Roll up dough, beginning at long end. Pinch ends to seal. Using thread or dental floss, slice into rolls, about 14. Place cut side down in a greased pan. Repeat with remaining half of dough and filling. Cover and let rise until doubled. Bake at 350 for 15-20 minutes. Time varies from oven to oven. Check at earliest time to prevent over browning. For frosting, beat together softened cream cheese and butter. Beat in milk and vanilla. Gradually beat in powdered sugar; beating until smooth. Generously frost warm rolls, about 5 minutes after removing from oven.

Language Barrier

his past month I got to experience a major language barrier on my boat. I had some clients that flew here from Germany because they saw me on TV with the goliath grouper. My client’s name was Max and he was an avid fisherman. We started with exchanging emails back-and-forth and he told me his best redfish was 45” and his best snook was 39”, so I knew it wasn’t going to be an easy trip. When we finally met at the dock, the first five minutes was extremely awkward because there was no English. A few words he did know, somewhat of the basics, so it was a start. We started off the trip to find bait for the goliath grouper and ran into tarpon. I had everything ready and laid out a quick plan. Within about 5 minutes we were on. I tried my best to explain how to fight this fish and anyone that knows tarpon knows it’s hard to enough to learn in 5 minutes in English, so imagine my difficulty. The first jump survived but the second he broke off, due to the fact Max was yanking back on the rod.

After that excitement, we ran into a school Jack’s; luckily, he knew what he was doing there and we grabbed a dozen in the live well. We headed off to Boca Grande to target Goliath. We dropped our first bait and within seconds we were on. It ended up being about a 100-pound Goliath. We went in for the next try and hooked into a bigger boy that ended up being over 250 pounds. Anyone that has fought this fish around structure knows it’s the ultimate tug of war. A man using a setup valued at over 1k with no drag, pulling against a 250-pound fish...I was nervous. I ran up, loosened the drag to give the client a better chance of landing the fish. I work with Fish and Wildlife so we take the fish extremely close to the beach to conduct a biopsy, plus get some measurements. I generally use 20/0 circle hook, with a 400lb mono leader by TrikFish and 800lb braid from Tuf-Line. I use the Makira 50w reel with a Dan James Custom Rod, which has held up against 520 lb. fish. After we conducted our study we got some great pictures and released the fish to conduct some data for the research we’re doing. Family Fishing Fun

When I take my family camping, we usually end up fishing! The two activities just seem to go together. Most of my fishing is done in salt water, but many of the places where we camp, lend themselves more readily to freshwater fishing. There is something very satisfying about having a fish fry outdoors with fish that were just caught that day by the same group of people that are eating them. One skill that I have learned; that has facilitated this experience on several occasions, is set lining for fresh water catfish. It is straight forward, fun, and effective. It can be a group effort in which people of all ages can participate. Basically, it involves tying a baited hook and line to a tree branch and coming back later to check it for any fish that may have been hooked. The bait that I prefer is chicken livers, bought at nearly any grocery store. Set lining can be the main purpose of an outing, or can simply be one added part of a canoe trip, camping trip, or hunting trip. My sons and I have gone on an annual archery hunting and camping trip with friends on the banks of the Apalachicola River for several years, but have never failed to catch catfish on set lines. Heavy line is a good idea, so that a large fish does not just break your set up and get away. I usually use 50# test monofilament and a 1/0 or 2/0 Circle hook. A split shot or small weight is added so that the bait will sink. When setting the line, it is a good idea to gauge the depth of the water and set the length of line so that the bait rests just above the

bottom. State law requires each line to be marked clearly with the name and address of the fisherman who set it. I am always careful to know exactly how many lines have been set, so that none are left to hook fish wastefully or to litter the bank. A piece of brightly colored survey ribbon tied to a branch near the line can save you a lot of time searching when you return. Mostly what is caught is one of the freshwater catfish varieties or softshell turtles. My family enjoys eating both. Most people are familiar with eating freshwater catfish, but many are unfamiliar with eating soft shell turtle. It is a favorite food of many long time Florida residents, and a real delicacy. I will admit that they can be difficult to clean if you are not accustomed to the task, but in my opinion, turtles are delicious when fried and well worth the effort! Set lining is a great supplement to a more traditional fishing trip with rods and reels. It has provided my family with fresh fish many times when I would have been serving my kids canned chili for dinner if I had not taken the time to branch out into this often-overlooked facet of fishing. ly fishing and kayaks can go together like peanut butter and jelly once you master the combination. Although it does have its challenges, once you fine-tune everything it can become game changing. Your process will depend on your own person skill set and you will have to learn different casting techniques that you would normally not use on land or in a bigger boat. There are many advantages to moving your fly fishing game to a kayak, for example, you can get to places that no one else can get to. Also, your presence is so small that you see and get shots at many more fish. Here are a few pointers for making your kayak fly fishing journey a success. Being organized can be the night and day difference of having a poor day or the day of a lifetime! I bring minimal equipment out on the yak, and getting things ready the day before is mandatory: picking out what size rods, lines, and flies helps ensure that there are fewer things that could go wrong on game day. Generally, the only thing I bring on my kayak is my paddle, 1-2 rods/reels, anchor stick, a dry bag to put phone, keys, flies, etc… and maybe a small cooler for drinks and food. On my body, I have on my life vest, a pair of pliers, and some type of snips for cutting lines or trimming flies. The less stuff you have on your yak, the less likely you are going to tangle or catch your lines. Once you have fly fished out of a kayak a few times and are starting to get the hang of it, there are a few more things that I would recommend bringing. Landing net: Using one with a longer handle or an extension handle with rubber mesh can make it easier to land fish depending on how long of a leader you are using. Also, on windy days it can make a great stripping basket. Stripping basket or mat: Bringing these out on the yak and storing them away while not using them can be kind of difficult. But, on really windy days it can make huge difference with line management. Push pole: Some sort of push pole depending on the area that you are fishing in. It can help you control and move your kayak while standing. Standing makes it easier to see and locate fish. The more stuff you bring out with you the more things you have to be aware of your line getting tangled around. I even ask myself sometimes… why did I bring so much stuff! ish everywhere you can. Well, that’s what I try to do. I am always thinking and searching for the right location for the current conditions. This could be the upcoming weekend in my local waters, a fair-weather destination while mine is blown out, or a place to set the hook while on a business trip or family vacation. Several years ago, my wife had to travel to Aruba for business. When she mentioned Aruba, the first thing I did was research the area she would be staying, from a fish-eye perspective. When I found it was on the beachfront, I was booking my flight. This was fly rod territory, so some casting practice was in order for me. I continued my research for species, tactics and tackle typically used in the area. I was open to catch anything, but bonefish were at the forefront of my list. You can never get enough information on fishing tactics and techniques, and I always search for new ways of doing things to hone my skills. If I am planning to fish a new area, species, or just wanting to learn more about my area, I find it helpful to use all available resources. Books, articles and videos, like the ones from Trout Support, are all great avenues to strengthen your skills. Conditions were perfect each day we were in Aruba. The wind was calm and the water was clear, which made spotting the fish easy. Each morning, I was able to land some jacks and other species that I didn’t identify, and I had a few shots at small bones and even a few tarpon. The tarpon were small and something I could potentially handle with my gear, but they kept their distance and never came into my casting range. As the tourists made their way out, I packed up my gear and headed away from the crowd. I spotted my first good-size bone, and as my adrenalin rushed I made my cast. The accuracy was right on target, but the line slapped against the water with force and away she went. The fact that I do not fly fish very often became obvious. I stayed in that area for a while practicing my cast to make it more natural while making my way down the shore picking up a few more jacks. Then I saw the shadow! I assessed the movement of the fish, calmed myself and made the cast. She streaked through the crystal-clear flat, causing me to fear the line would sever on the abundance of coral lining the sea floor. After a long and nerve-racking battle, I had my trophy in hand and watched her swim away. Destination fishing can be successful even without an outfitter if you do your research ahead of time. A little time studying can save you a lot of money, and the rewards can be just as good or better because you’ll know you did it yourself. Just remember to fish everywhere! Capt.
