is year went by fast, right? Maybe it’s just me. But it feels like only last week it was 80 degrees and finding parking at the beach was all but impossible. Actually, that was last week. But many of us were bemoaning the lack of cooler weather because it’s that time of year when a crisp fall morning not only means cozy sweaters and hot beverages, it’s also a sign that the holidays are just around the corner. Holidays mean different things to different people. For some, it’s about the magical atmosphere created by twinkling lights, crackling fires, traditions and foods that bring back favorite memories of holidays past. For others it’s about spending time with family and friends that they haven’t seen all year. Many people
simply enjoy the additional opportunities to focus on giving and helping those in need. If the holiday season holds meaning for you, it doesn’t really matter what those reasons are. What matters is how you experience it. And in this issue, we’ve got some great suggestions to elevate your experience—local celebrations, donating and decorating, slowing things down, and creating new traditions while staying healthy along the way. Anyone who has observed the welloiled machine that is Thanksgiving for Thousands, the Mountaire Farmssponsored event that provides holiday meals for those in need, would agree with company spokesman Zach Evans when he says “It’s like watching a wellchoreographed dance routine. “There are A LOT of moving parts,

there is music, there is excitement, and some years there is even actual dancing!,” Evans said. This year, on Saturday, November 18, about 300 volunteers will gather at a company facility on Hosier Street in Selbyville and within a five-hour period, will pack 14,000 boxes, each of which will include Mountaire roaster chickens and all the fixings for a holiday meal – corn, green beans, cranberry sauce, yams, stuffing, gravy and

brownie mix. “Most of all, the atmosphere is one that reflects a collective effort to accomplish a goal that by ourselves, may seem overwhelming,” Evans said. “Years of practice (more than 25 on Delmarva and a decade now at other Mountaire facilities) and fine-tuning the process have helped us create a safe, productive, and enriching environment,” he said, “where you have the Please turn to page 6

Continued from page 4 opportunity to catch up with old friends, make new friends, and build relationships with like-minded individuals from all over the Delmarva Peninsula. “Thanksgiving for Thousands is a community initiative like no other, and we are grateful to share it with a community like no other here in Delmarva,” he said. About two-thirds of the 300 volunteers come from the community at large, while about 100 Mountaire employees pitch in to help with the massive packing project each year. All of the volunteer spots are filled for this year’s event. From the 1,000 boxes filled during the first Thanksgiving for Thousands, Evans said this year’s total represents the largest ever for the event. Those 14,000 boxes will provide more than 55,000 meals, he said. In past years, the packing day was early in the week

Continued from page 6 conflict with work or school,” Evans said. In addition to the packing, all 14,000 boxes will be distributed on November 18 as well, he said. Evans explained that the recipients of the food boxes from this program are organizations that pick up boxes in bulk for distribution in their respective communities. This year more than 200 non-profits have already registered and been approved to pick up the 14,000 boxes—many of whom have partnered with Mountaire for Thanksgiving for Thousand since its beginning. “We appreciate our partnerships with organizations who have been here since the beginning and have helped us grow,” he said. “What helps make this program sustainable is that the same organizations who have been picking up boxes for years are the same organizations that have been at the event, volunteering to pack boxes,” Evans said. Some of those groups include:
Millsboro Christian Storehouse, Crossroads Community Church, First State Marines, The Salvation Army, Atlantic United Methodist Church, La Red Health Center and First State Community Action Center. A number of volunteers each year come from school-based organizations, Evans said. “Helping to inspire our next generation to prioritize service and helping others is a critical component of our Mountaire Cares program,” he said. “Organizations like the Leo Club at Indian River High School, the Sussex Central Football Team, the Parkside High School Football Team and students from Worcester Tech have all been actively engaged for a number of years.” Evans pointed out that the growth of the event is a testament to “strong partnerships” with organizations that help out, “it is also indicative of the tremendous need in our community for assistance. “We are blessed to be in a position to help uplift our community during the holiday season, but we could not
do that without the non-profits that help distribute our boxes. Those organizations are the boots on the ground who help to ensure the food we send out to the community makes it to those that could benefit from it most, and we are grateful for their work in doing so,” he said. A few reminders for those who have signed up to volunteer: n e building is not temperaturecontrolled; dress accordingly; n Remember to wear gloves; n Volunteers must be at least 12 years old. Activities will be provided for younger children; n Coffee, refreshments and lunch will be provided to all volunteers; and n Each volunteer will receive a t-shirt; veteran volunteers are encouraged to wear their shirts from prior years. ‘Tis the season … for calories
By Darin J. McCann Executive Editor The holiday season is long on tradition. Iconic days of religious importance, making memories with friends and family, festive garb and songs that warm the heart are all part of the general “holiday experience.” As is, obviously, the need to find pants that are a little more “stretchy.” While we join others in the community to spread the holiday spirit and spend time with the ones we love, we often find ourselves eating. And eating. And, just to break up the monotony a bit, eating again. It’s all around us. Cookies and other baked delights. Rich, heavy foods that warm the heart when the air around us is cold. Long meals with people we love that feature — you guessed it — more food. We grab handfuls of colorful holiday candy laid out for guests, sit in potluck office parties surrounded by tasty goodness, and just generally take in a lot more than our bodies are typically used to consuming. And, just to add to that
pound-generating formula, we often find ourselves running around so much that we neglect exercise, proper rest and anything else we can do to combat the “Battle of the Bulge.” And we pay for it, don’t we? Molly McKennedy is a local woman who is a certified online health and wellness coach. She boasts a degree in Exercise and Sports Studies from the University of Texas, is a former collegiate cross-country runner and competitive triathlete, and is a current
weight-lifter. So, yeah. She knows stuff. And she understands the struggles of this time of year. “Absolutely,” she said. “When you’re at a gathering, there are hundreds of distractions that can take your mind off of what and how much you’re eating. In an instant, you can look down and realize your plate is suddenly empty! The best strategy for continued weight control is to stay mindful and focused when you are interacting with food and drink, and ensure that you’re making choices in the best interest of your healthy goals.” McKennedy advised that you shouldn’t let yourself go hungry when you’re enjoying the holidays — just plan. She suggested bringing a healthy snack with you to an event in case there is nothing you feel comfortable eating, or using a small plate at a buffet-style event so you can easily control your portions. “Once you’ve finished, move away from the food and enjoy a lively conversation or the company of those around you,” she offered. Hosting at home? If you control the venue, you control the menu, right? When you are the host of a holiday gathering, you do get a little more say over the food. McKennedy feels you can still provide tasty options for your guests while maintaining some discipline over the kinds of food available. She mentioned items she enjoys, such as shrimp cocktail, prosciutto, cheese cubes and grilled chicken skewers. She also suggested using a little creativity. “Using a cucumber as a base (like a cracker) is a wonderful way to reduce calories and carbohydrates,” she said. “Hummus and tzatziki are both lowfat and relatively low-calorie dips to have out. Having a nice mixed nut option for the healthy omegas is great, too! I always have lean protein options and definitely a vegetable tray, alongside other options that may not be so ‘healthy.’ I believe having a choice is nice.”
Time does pose a challenge
Trying to do the right thing?
Finding the time to work out and properly take care of yourself physically at any time of the year can be daunting. Trying to swing it when the holidays are pulling at you from every direction is… difficult. Very difficult. “I have to acknowledge that it is in fact a time of year when our obligations and commitments are at an all-time high,” said McKennedy. at being said, remember that you will be a better person — for yourself and your loved ones — when you serve yourself first. If you normally work out or casually exercise, just remember that this is part of your daily routine that you have established, and it is important to do for yourself.” She said she has guests that come for anksgiving week, but they know in advance that she makes time for “movement” each day. “Setting the expectation is totally okay to do. Just tell them if you don’t exercise, you turn into the Grinch,” she said with a laugh.
McKennedy said that if you are interested in getting on a healthier path, it is important to go one step at a time. “Start small,” she suggested. “Small changes over time add up. We call it the ‘Compound Effect.’ Eating one salad isn’t going to change things, just like the opposite: Eating one plate of French fries isn’t going to change your life much. It’s what you consistently do that yields great change. “Ask yourself what is one thing I can do today, and for many days, that will have a positive impact on my life,” she suggested. “Is it a goal of walking more each day? Adding two more servings of vegetables each day? Adding in a little more protein? Going to bed earlier? Pick one thing and do that. Continued from page 14 feature a nod to the late Jimmy Buffet — a bit of a Parrothead homage to the singer who passed away in September, if you will. “Several of our board members, myself included, are life-long Jimmy Buffet fans,” explained the QRCF’s Laurie McFall. “We are always looking for something new and fun to do to keep our events fresh, and Jimmy’s recent passing provided us with the opportunity to celebrate Jimmy’s life with the Caribbean theme that we have had for years.” Like many events across the globe, Caribbean Christmas had to take a bit of a hiatus in recent years. “Caribbean Christmas has traditionally been our largest fundraiser of the year,” said McFall. “We had to stop doing it for the last three years because of Covid, but felt that now was the time to move forward with the event. e feedback is that people are excited to be able to gather and support the community again!” Playfully slugged, “Christmas in Mangoritaville,” the night will include the music of Electric Velvet, according to organizers, and cuisine donated by several area restau-

While the evening promises a ton of fun, smiles and memories to be made, it also features a strong cause inside the community. “e Quiet Resorts Charitable Foundation provides grants and scholarships to local organizations and kids,” said McFaul. “We have funded two to three scholarships per year for local kids who have displayed
excellence academically and are involved in community service. As for grants, we try to spread them out to help seniors, local youth and areas of financial need.” Caribbean Christmas will take place from 7 to 11 p.m., and tickets cost $75 each. Food banks help fill the need to reach our food insecure families By Mike Smith Staff Reporter Over 24,000 people in Sussex County are considered food insecure, despite the relative wealth and higher economic status and household income of the region’s coastal beach communities. According to food insecurity reports by the National Institutes for Health and Feed America’s food tracking guide, that means 10.9 percent of the local population is food insecure. e average household income in Bethany Beach is $143,000 and the median household income is $102,000, with folks nearby still going hungry. Feed America’s “Map the Meal Gap” study for the overall population and children in every county, congressional district, and
state shows Delaware overall with a nearly 13 percent rate of food insecurity. Five per-

She runs the distribution and food bank in a very orderly, three-stop food pick-up system. “Casapulla’s gives us bread every week,” she said. Owner Al Casapulla is a St. Ann parishioner. “St. Martha’s Episcopal Church gives us Food Lion gift cards every month and I also want to mention how incredibly helpful Lowe’s has been in helping us with a refrigerator for a family who was dealing with a health crisis for one of their children,” said Curran. “Holly Kia has been a great supporter of SVDP, as have many of the communities in our area.” e St. Vincent DePaul charity is hoping to find a storage building, preferable with refrigeration, to meet the needs of hundreds of families who come to the food bank every week at the Our Lady of Guadalupe Mission Church in Frankford. e ultimate goal of Pastor Fr. John Klevence and the Vincentians is to build cold food storage adjacent to the mission parish. “We ask the community for gift cards for

People facing an immediate family hunger emergency are asked to call 211, which is a free, confidential helpline for food and housing assistance. Food assistance packages in Milford are offered just one time every 14 days.
Mariners distributes 5,000 meals per month

Fran Milio, like Curran, was a nurse in her career working in Baltimore area hospitals and healthcare facilities. Mariners Bethel Global Methodist Church will distribute food on the Wednesday before anksgiving and on December 21, a few days before the Christmas holiday. Mariners and its Hope Center building on Central Ave., have weekly meals offered on Tuesdays for no cost and pick-up boxes for a nominal fee. “Please come on Tuesday for our Feed My Sheep Café,” said Milio. “We are also offering fellowship for those who are lonely. Loneliness is a huge factor for our seniors in the area. If somebody needs a meal, just call us.” “When I was a nurse in Baltimore, I also provided home health care in my career and got to see the food insecurity problem up close,” said Milio. “You see it big time.” e Mariners’ ministry was started in 2011. Milio picked up the food bank coordinator duties along with Carl Gude and the two have managed the food distribution for about 10 years. “ere are food insecure people in Dagsboro, in Selbyville, in Frankford and some folks are living paycheck-to-paycheck,” she said. “Or others who are living on the oncea-month government check they are receiv-
ing. How do you live on that amount?” “e volume of food we are distributing will increase for the holidays,” said Milio. “We can really use people to become part of our mission.” Interested volunteers may send an e-mail to fmiliode@gmail.com “We take anyone, regardless of financial or physical issues, and we take a lot of seniors,” she said of the Feed My Sheep soup kitchen and meal program. “ey get a meal that includes soup, a casserole dish and dessert,” said Milio. “We are serving families in a 12-mile radius with our food deliveries and that takes us out to Route 113 and even as far as the Millsboro area.” Pantry boxes are packed every Tuesday as well. Milio said Mariners works with Harris Teeter, Weis Market and G&E Hocker to take grocery store food donations. “We will get bread, milk and cheese from the grocers. e Lewes farmers market gives us fresh vegetables. We also get our chicken from Mountaire in Selbyville. Mountaire is a super help to our mission,” she said. “We have 25 people in Frankford on the regular route,” said Milio. “We have a seniors’ pantry service which provides them with 35 meals per month in cooperation with the USDA food program for senior citizens.”

e three major facets of the Mariners operation are dry goods for food prep and pantry boxes, in-person cooking with café staff support, and food delivery which always requires local drivers to use their own vehicles. “We need drivers on a regular basis,” said the Mariners coordinator. “We have done our own calculation based on the average of 1.2 pounds of food comprising a meal,” said Milio. “We give out about 5,000 meals per month here.” Restaurants in the area provide a great deal of food to avoid food waste. Recently, the Penguin provided Mariners with 40 dozen eggs and cheese which was passed along for meals. “ere is so much food waste that we know more restaurants want to support our food programs,” said Milio. Mariners presently operates with 75 volunteers. “We need drivers, cooks, dishwashers, and pantry box packers,” she said. “We will take anyone who is willing to work and help families over the holidays.”

By Taryn King Editor Just weeks away is one of the biggest holidays celebrated around the globe. While every observant country has its own cultural approach and traditions, if you’re reading this, chances are you’re currently in the good ol’ US of A. Which means we often take a more-is-more approach to our festive season. A large part of that approach is due to the ingrained consumerism that so many of us grew up with—thanks to a daily barrage of advertising, celebrity influencing, and the general desire for “the good life”. But let’s pause on that last bit for a moment. “e good life”. What does that look like for you? No doubt your mind promptly conjured a picture or concept, that for you, is the ideal representation of said good life. is could be anything from the tangible (house, cars, clothes, money, etc.) to the intangible (relationships, experiences, spirituality, qualities, etc.). Now let me be clear, there is nothing inherently wrong with any of the above items, or the desire to possess them. Quite frankly, I suggest a healthy balance that includes them all. But, (oh yes, there is a but!) …as much as reaching that tangible point of “the good life” is a pinnacle of the American dream, there are millions of Americans who are struggling just to get through the day. Holiday light displays should be carefully plotted and executed. Be sure to assess what you’d like to do, your budget, and the time you’re willing to put into this rite of the holidays. After gathering your supplies, find a protected place such as a garage, porch, or interior space where you can untangle lights and lay them out neatly for easier accessibility when they are needed.

Explore New Traditions for anksgiving Day
By Cori Burcham Freelance Writer e evolution of anksgiving Day traditions is an enigmatic thing. Instead of passing around the anksgiving table shellfish, wildfowl, and deer—the bounty at the original anksgiving feast between the Wampanoag tribesmen and the Puritans—, our holiday meal features a cornucopia of sweet potatoes, tart cranberry sauce, and savory turkey. Despite the fact that the Pilgrims didn’t historically wear buckles on their captain hats or conservative black-andwhite clothing, caricatures of turkeys wearing buckled hats and solemn black doublets dominate our anksgiving decor. While some of the traditions we associate with the holiday today arose out of misconceptions, the one tradition that hasn’t been lost to the passage of time is the intent behind the holiday: the idea of welcoming the people in your life to your table—to share in the fruitful harvest and ruminate over the

blessings of the past year. In keeping with modern-day traditions, many families spend the day basting the turkey, watching the lineup of football games, and/or the procession of elaborate floats down the streets of Manhattan in the Macy’s anksgiving Day Parade. While these traditions have become synonymous with the holiday, the culinary-challenged, non-football fans and late risers often miss out on some of these anksgiving Day festivities. To encourage the entire family to get involved and build more meaningful anksgiving Day memories, here are a few recommendations of activities to do on the day that could evolve into yearly traditions aligned with the holiday’s value of fellowship and togetherness.
Turkey Trots & 5ks With dinner as the holiday’s main event, one tradition that is guaranteed on anksgiving Day is the promise of fall comfort food. To indulge in all of

your seasonal favorites at anksgiving dinner guilt-free, consider signing up for a local fun run earlier in the day. Every year on anksgiving morning, Bank of Ocean City hosts their BethanyFenwick Turkey Trot. Consisting of a short 2-mile-long run/walk around downtown Bethany Beach, the event is perfect for families with little ones or pets since it also encourages participants to dress up in festive anksgiving-themed costumes. Not only does the event benefit the Bethany Beach Volunteer Fire Company, but the winners of the race and costume contest are each awarded a pie for their efforts. In addition to the event in Bethany, there are several other fun runs in the area occurring anksgiving weekend, including the Gabby Gobble 5k on November 24 in Lewes and Huffin’ for Pumpkin Pie 5k on November 25 in Rehoboth. On November 26 Sea Colony will celebrate a 20-year milestone with their Turkey Trot 5K run/walk with proceeds supporting the Special Olympics

Pay Tribute to Native American History In addition to reviewing the history of the first anksgiving feast, make it an annual tradition to pay tribute to Native
American culture by visiting landmarks in our area that commemorate Nanticoke Indian history. Walk around the grounds of Phillips Landing State Park and visit the Captain John Smith monument, which memorializes the spot where the English settler first met the Nanticoke Chiefs after sailing the Nanticoke River. Another historical marker, located at Cupola Park in Millsboro, memorializes the former site of the Askekesky Reservation, a 1,000-acre reservation where remnants of Nanticoke and Assateague Indian Tribes relocated after Queen Weatomotonies was granted the land by the colony of Maryland in 1711. e winter gift that keeps on giving By Susan Lyons Publisher e big holiday is almost here. e lists are made and ideas are popping in your head for the perfect gift. en, as you look down the list, you see it. What in the world are you going to buy Uncle Henry? We all have that one person on the list that is hard to buy for. Either they already have everything you could possibly think of or they are constantly returning anything that you get them. My dad is the hardest one to buy for in my family as he has at least two-tothree of everything, with one still in the box. A few years ago, my husband gave me a bird feeder for Christmas. As I tore off the wrapping paper, the thought going through my head was “Well, this was not on my Christmas list of suggestions that I gave

him. Where did this idea come from?” At first, it did not seem too exciting. It sat in the box for a couple of weeks, and then we got a cold spell and I got to thinking that maybe I should put that bird feeder out in the yard. Within days, different varieties of birds started appearing at the feeder. Each morning we would go outside first thing and quietly sit at the table on our deck with a cup of coffee, watching to see what type of bird was coming to the feeder. It became a morning routine. en we wondered how many different birds could we find at the feeder? A Mid-Atlantic bird book was purchased to identify them. is progressed into how many different photos could I get of these birds that ended up in the yard? Even sitting in the cold still in PJs, wrapped in a blanket and as still as possible waiting for a bird to appear. So much enjoyment out of one little gift that I didn’t even know
I wanted or needed. It was a great way to start the day, peaceful and quiet, hardly moving, coffee to the left and a camera to the right, waiting to see who would arrive. e cardinals were there almost every day but very shy. I needed to be quite still to keep them around. A pleated woodpecker could only come once in a while but was always a very special treat. Titmouse, chickadees and sparrows were there in multiples.

the number one ingredient. Always buy a supreme or premium marked seed mix, she recommends. I totally agree, as I have learned this from experience. Last year I bought some seed from a discount store thinking that I would save some money. My birds only ate about half of the seeds in it leaving the others to just clump up in the feeder. Lesson learned the hard way.

Location, location, location Placement of your feeder is important for optimum viewing. Where are you going to be sitting to watch the birds? On your deck, from your kitchen window or out on your front porch swing? Place it in a spot where you can easily view it. Also, place it on a pole or shepherd’s hook at least 6 to 8 feet from a fence or tree to keep the squirrels away as they will eat all of the seed. Found that one out the hard way, too. Better yet, get a squirrel-resistant feeder.

By Susan Canfora Staff Reporter Just as Christians keep Christmas and the Jewish community commemorates Hanukkah from December 7 until the evening of December 15, other cultures have their own celebrations during the final month of the calendar year. In the African-American culture there is Kwaanza, celebrated from December 26 to January 1 this year and ending with the Karamu feast. Meaning “first fruits” or “feast of celebration” in Swahili and created by activist Maulana Karenga in the 1960s, Kwaanza is based on traditions involving harvests in parts of Africa. You’ll often find foods made with African ingredients such as okra, peanuts, root vegetables, tamarind and ginger with the Kinara—a seven-candle holder with red, black, and green candles—overlooking the feast. Along with African inspired foods, there is also dancing, hand-made gift-giving, and stories of tradition and community. Latin-American families look forward to Las Posadas, marking the journey of Mary, the mother of Jesus, and her husband Joseph, from Bethlehem to Nazareth and their search for a place for Jesus to be born. Participants ask for a place to rest, or a posada. Las Posadas, planned for the nine days before Christmas and celebrated mainly in Mexico and Central America, was written about with fondness by Saul Lopez, a graduate assistant at Marquette University in Milwaukee and posted at www.marquette.edu. “We ate the 24th and rested the 25th. But leading to the big day, there was a celebration that was never left out, Las Posadas. “Las Posadas is the name of a religious festivity that takes place every December and forms part of the Hispanic Christmas tradition. e word posada translates to “dwelling” or “lodging” … To remember the journey of Mary and Joseph, a group of people gather and break off into two groups: the travelers seeking posada and the “host family” inside the house. “In a back and forth, the outside group asks to be let in, while the “host family” refuses entry at first. Both sides exchange songs, until the “travelers” convince the “host family” to let them inside. After this,

By Taryn King Editor “You’re invited”. ere it is. Whether by text, email, call or letter, you’ve gotten the invite to somebody’s shindig. Or party, soiree, dinner, celebration, get-together…call it whatever you want, but you’ve officially been invited to the holiday event. Because, it’s that time of year when people tend to socialize more and spend additional time with their friends and family (voluntary or otherwise) and you’ve made the list. Assuming you’ve accepted the invite, there’s two things you must now decide. What to wear, and what to bring. I’m going to assume that you can figure out the wardrobe side of things, because, well…birthday suits aren’t optional. You have to wear clothes, and I wish you the best of luck figuring out which ones. Seriously, I have a hard enough time figuring out what I’M wearing from day-today. You’re on your own. Now the question of what to bring—I can help you there. First thing; ask! I know it’s a long shot. But

if you’re lucky, the host(ess) might actually give you an answer besides the dreaded, “Just yourself!” response. At which point you have your answer and you can stop reading here.

If you aren’t close with the host, avoid food or drink-type gifts. You don’t want them to feel obligated to serve your gift along with their already planned meal. But…that’s not a likely situation. I realize that some of you may also be asking, “Why do I have to bring anything, especially if they said not to?” To which I’ll respond with one word: gratitude. It’s an appreciation thing. You’re showing thanks to the hosts for thinking of and including you in this celebration that clearly means something to them. Also, some of us have mothers that ingrained this social expectation into us from birth—never, ever arrive empty-handed as a guest. So, there’s that. But as an added incentive, if you really like attending these types of things, a host(ess) gift is also likely to score you a future invite. Now that I’ve got you thoroughly convinced, read on and take note for whatever type of event you’re attending!
A large formal event — we’re talking black-tie, gala style: You really don’t need to bring anything.
Casual get-together:

Holiday party: If your hosts drink, give a favorite bottle of champagne. For the non-drinkers, a tray of cookies to share or a small seasonal plant.
Dinner Party: If you know the host well, bring a

Show your thanks by being helpful—pour drinks, assist in prep or clean-up. One-time events are different. A final note: if the host is adamant that you not bring anything, do listen. Some people simply don’t want gifts that they may deem as clutter or more “stuff” to deal with. Ingredients:
n ½ cup shortening n 1 cup sugar n 1 egg
n 2 tsp baking soda n 1 cup molasses
Method: Cream together shortening, sugar, and egg. Dissolve baking soda in hot water, and add molasses to water. Combine with creamed mixture and set aside.
n 4 cups flour
Sift together flour, salt and spices. Mix into wet ingredients.
n 1 tsp ground ginger
Drop by teaspoonfuls onto a greased cookie sheet and bake for 8 minutes at 400F.
n 1 tsp ground cloves
When cooled, ice with vanilla or cream cheese frosting.
n ½ tsp salt
n 1 tsp ground nutmeg n 1 tsp ground cinnamon n 1 cup hot water

n 2 3/4 cups of flour
n 3 tsp baking powder n 1/3 tsp salt

n 1/2 cup brown sugar n 1 egg
n 1/3 cup softened butter (unsalted)
Method: Sift flour, baking powder, salt and spices together and set aside. In a separate bowl, mix molasses, sugar, egg and butter together with a mixer until mixed well. Add in sifted ingredients to make a soft dough. Form dough into balls about 1 inch in diameter and roll in granulated (white) sugar and place on cookie sheet. Gently flatten with a fork to get nice marks on each cookie. You can also choose to roll out the dough and cut out Gingerbread men/people to decorate! Bake on greased cookie sheet or use parchment paper, Bake at 375F for 10 to 12 minutes.

Ingredients: n 1 cup sugar
Method:
n 2 sticks of salted butter or margarine n 4 eggs
n A dash of vanilla n 3 3/4 cups flour
n 4 tsp of baking powder
Mix wet ingredients in an electric stand mixer or with a handheld electric mixer until well blended. In a separate bowl mix the dry ingredients. Slowly add the flour and baking powder to the wet ingredients until all ingredients are well blended. Line cookie sheets with parchment paper. Use a teaspoon or small cookie scoop to form balls. Dough might be sticky so sprinkle flour onto hands as needed. Leave space between because these cookies will spread. Bake for approximately 10 minutes at 375400F. Bottoms will be slightly brown. Watch very carefully as they will get over done

Method (Icing):
n 2 cups confectionery sugar n 1 tsp of anise extract (add a little extra if desired)
Combine ingredients in a medium bowl, mix by hand. Mixture should be runny. Leave cookies on cookie sheets to ice, the parchment paper makes cleanup easier as the icing will drip down the cookies. Top with Nonpareil Rainbow Sprinkles. Work quickly and add sprinkles to a few cookies at a time because the icing dries quickly.

Ingredients:
n 1 – bone-in ham steak
n 3-4 Lbs - Russet potatoes
n 16oz – Sharp cheddar - shredded n 16oz – Mild cheddar - shedded n Milk
n Butter – yes, real butter! n Salt & Pepper
n 9 x 13 Pyrex baking dish
Method: Pre-heat oven to 400F. Collect all ingredients and measuring utensils. Peel potatoes and slice potatoes into ¼ - ½ inch slices. Par-boil potatoes (cook ½ way). While potatoes are boiling, cut ham into 3” pieces. Mix cheeses together. Spray pyrex dish with pan spray. Place the ham in the dish – spread it out evenly – try not to stack the ham pieces on top of each other. When potatoes are ready, strain and place 1 layer on top of the ham. Add salt, pepper, butter and ½ the cheese. Top with the remaining potatoes. Add salt, pepper, butter and the remaining cheese. Add milk, just to cover the ham. Cook – uncovered – in 400F oven for about 30 minutes until the cheese is golden brown and the milk bubbles.

Ingredients Salad:
n Your favorite salad greens n Butternut squash – peeled and cubed n Beets – 1 can large dice – drained well n Sunflower seeds or toasted nut of choice n Gorgonzola or goat cheese crumbles n Craisins n Sliced apples or pears
Ingredients Dressing:
n 2 tbs Montreal Steak Seasoning n 1 tsp Tosemary n Maple Dijon Vinaigrette n 1-1/3 cup - Maple Syrup n 12 tbs (3/4 cup) - Dijon Mustard n 1 cup - Oil n 1 cup - White Balsamic Vinegar n 1 cup - Mayo n 2 cloves (4 tsp) – Garlic
Method (Salad): Assemble all ingredients and measuring utensils. Platter for serving. Heat oven to 400. Roast the butternut squash. Line a cookie pan with foil. Place cubed squash in a bowl. Add EVOO to coat. Add 2 Tbl Montreal steak seasoning. 1 tsp rosemary. Toss ingredients to coat the squash. Place squash on cookie pan and roast in oven until tender, soft and slightly brown. Remove from oven and let cool to room temp. On your platter, layer in this order. Greens, butternut squash, beets, craisins, apple or pear slices, gorgonzola or goat cheese crumbles. Top with toasted sunflower seeds, nuts or any crunchy topping of your liking. Drizzle maple dressing over the salad or serve it on the side.. Add any protein of choice – chicken, maple glazed salmon, bacon, etc
Method (Dressing): Add all the ingredients for the maple dijon vinaigrette to a small mason jar. Shake well to mix.

Ingredients:
n 1 box premade pie dough
n 1 can of your favorite pie filling (or more, if you want to try different flavors!) n 1 egg
n 1 TBS milk
n A large cookie cutter (at least 4”) n Rolling pin
Optional Frosting: n 2 cups powdered sugar
n 3 TBS milk or warm water
n 1 tsp vanilla or other flavoring n sprinkles or other toppings
Method:
Let the pie dough rest at room temperature for about 30 minutes until it’s easier to unroll. Cut out as many pop tarts with your cookie cutter as you can, utilizing the scraps by putting them together and rolling them out either with your hands or a rolling pin. After your pop tart “shells” are cut out (be sure you have an even number so you have tops and bottoms) line a baking sheet with parchment if you have it, and spray the parchment paper or pan with nonstick spray, line the bottom pop tart shells on your baking sheet. Mix the egg and milk in a small bowl and brush the pop tarts lightly with the egg wash. Spoon about 2 tablespoons of your pie filling right into the middle of the pop tart shells, it’s easiest to fill them all at once. Once they are filled, take a top layer pop tart shell and brush the underside with the egg wash and place it on top of the filling pressing into the lower pop tart shell. (It may get messy, and that’s ok!) Use a fork to then go around the edges and seal the pop tarts together. Once they are all filled and sealed, place the tray in the refrigerator for about a half hour. In the meantime, pre heat your oven to 375F, pull the tray of pop tarts out of the fridge and brush the tops with the egg wash, poke the tops once or twice with a fork (to help release heat) and bake for 15-20 minutes, checking them after 15 minutes (possibly rotating your tray). Bake until the tops are nice and brown and firm. Average bake time is 20 minutes but it could be less or longer, depending on your oven and how thin or thick your pop tarts are. Cool on the pan for 15 minutes, then cool completely before frosting (optional). To make the frosting, mix the powdered sugar, milk (or water), and vanilla in a bowl with a fork. If it’s too dry, add a little more liquid until it’s a nice consistency to either spread onto your pop tarts or drizzle. Add sprinkles while the frosting is wet! Let the pop tarts cool completely before enjoying. Keep them in an airtight container at room temp for up to 3 days, or in the fridge up to a week.

Method: Gather a little bundle of whole spices (cinnamon, cloves, allspice, orange peels) in cheesecloth. Tie with a string and float it in a crockpot full of apple cider. Add a little orange-pineapple juice for extra flavor. Heat until very warm and serve to chilly people! Refill with cider and juice a little at a time, so it stays warm! Cut an orange in half, press cloves into center and float in the cider for garnishment.

Butter the sheet pan and cut parchment paper to fit in it, and then butter the parchment paper. Be sure to get in the corners of pan.
(is recipe is very similar to Heath bars but we add almonds or peanuts or a mix of both. You will need a half size sheet pan (with sides) 13x18 and a candy thermometer)
Ingredients:
n 2 cups butter (4 sticks) n 2 cup sugar
n 1 cup chocolate chips (usually use 1 to 1&1/2 cups)
n 2 cups peanuts or almonds or a mix
n 1 tsp salt
n 2 tsp vanilla

Ingredients:
n 1 ½ lbs. almond paste (broken into pebble-size pieces) n 1 ½ cups sugar
n 1 cup confectioners’ sugar
n 4 egg whites (room temperature) n 2 cups raw pine nuts
Method: Preheat oven to 350F In an electric mixer, combine almond paste, sugar, confectioners’ sugar, and egg whites on low speed until blended. Mix for 2 minutes on medium speed. is will make a sticky dough. Roll dough into 1-inch balls. Roll balls in bowl of pine nuts, covering top and bottom. Place the cookies on a parchmentlined cookie sheet, spacing them 2-inches apart. Using your fingers, slightly flatten the tops of the cookies. Bake for 15 to 20 minutes, or until golden brown. Remove the cookie sheet from the oven. Let cookies cool on parchment for easiest removal. When cookies are completely cool, use a metal spatula to remove them from the parchment paper. Store in an airtight container.

Method: Mix all ingredients together to form a dough. Roll the dough out very, very, thin. Cut 6” long x 2” wide strips. Cut a diagonal slit in the middle of each strip and pull one end through. Deep fry until lightly golden, remove and drain onto a paper towel. Once dry, sprinkle with confectioner’s sugar. ey will be delicate. Store covered.

Ingredients:
n 1 beef brisket (3 to 3 ½ lbs.), cut in half
n 1 cup ketchup
n ¼ cup grape jelly
Method: Place half of the brisket in a slow cooker. In a bowl, combine the ketchup, jelly, soup mix and pepper, spread half over meat. Top with the remaining meat and ketchup mixture. Cover and cook on low for 8 – 10 hours or until meat is tender.

Beat heavy cream and vanilla pudding mix until stiff peaks form, 1-2 minutes.
