TOUR GUIDE Immediately following the ten regional COCHON 555 events, the winners compete at the national finale and the winner of the Grand Cochon is announced “King or Queen of Porc”. The event includes more than 30 chef dishes, butcher demos, reserve wines, craft brews, bartenders, artisan cocktails, bourbon bars, pig-infused sweets and an award ceremony to announce the national title.

Non-competition events All-Star Cochon, Cochon Epic, and Cochon Island are now listed in the Marquee Series. These brand focused, stand-alone events are 100% customizable and for the first time in Cochon history, a presenting sponsor can help select a host city. Marquee events are great for product launches, trade incentives and travel contests, best of all they start at $40,000 and include a presenting title (available June - Oct.).

The first EPIC was held at the James Beard House in New York for the launch of Chefs Course, our National Awards Program. Friends on Facebook had a chance to “Share Their Best Shot” and in return, we got a bunch of likes. Entries uploaded a “pig related” photograph to a Facebook wall, and we decided who won! Tickets were waiting at the door.

Cochon provided past chef in each market a cooking outline and guests had a chance to guess what’s’ in the pot. One ingredient was designed to stump them, the overall dish was there to inspire them. One lucky person took home cookware.

THE 2014 TOUR CONTINUES TO FURTHER THE CONVERSATION OF HERITAGE PIGS ON DINNER TABLES ACROSS THE NATION. THE GOAL IS TO EDUCATE INFLUENCERS, ULTIMATELY MAKING THEM A BETTER, MORE RESPONSIBLE AND KNOWLEDGEABLE TEACHER. Created in 2008 in response to the lack of education around heritage breed pigs. It started from a series of conversations where family farmers struggled to educate chefs, restaurants looked to source exceptional ingredients, and consumers sought out responsible premium products. They all converged into one idea: the ultimate quest of flavor. Going on six years, the tour serves 10,000 guests and harvests over 500+ million media impressions for “heritage breed pigs”. The tour works with over 1500 pioneers all supporting a better food system and each year, we kick-off the tour in New York City with great partners promoting the message of honest food. The tour has become a

progressive marketing spotlight for luxury brands and responsible lifestyles through a mixture of indoor and outdoor events at distinguished venues. As a result, consumers, trade, media and sponsors now “KNOW THE DEAL” on heritage pigs and our coverage in the media reinforces thousands of conversations surrounding responsible agriculture each day - more than any other event in the country. BRADY LOWE THE FOUNDER Growing up in Iowa, Brady read “Choose Your Own Adventure” books and his mom’s cookbooks, both an influence to the narrative of his culinary future. Lowe is a respected authority of fine wine and artisan cheese community and has been producing exceptional food events since 2003. It was then while working in Atlanta at the dawn of the local food movement, that Lowe was among the first to unite boutique wines and hard-to-find cheeses. One cheese pairing in particular sparked an ‘out of body experience’ in a customer that Lowe would never forget. At that moment, he devoted himself to transcending the boundaries of the food world, to creating unique combinations, not just with ingredients but among stories and people. Now a food educator and taste influencer, Lowe manages one of the most hyper-local food tours in history. Passionate about reaching individuals with a message about social and environmental responsibility, Lowe’s vision aligns with a community of chefs, butchers, winemakers, distillers, brewers and farmers that we all depend on to keep the love of food alive. He created Taste Network in 2003 and now 10 years later, his mission remains the same, to educate consumers on honest food and drink.

With farmer and butcher roots in every major market, we identified the opportunity to rebrand the student experience of the butcher demonstration into something that can be more long term for both student and school. • We created a program that can help students land a job post graduation. The Pop-Up Butcher Shop adds value to student life, benefits the farmer, chefs and culinary school. It’s our way to continue building momentum by raising awareness for whole animal utilization while raising monies for culinary schools. • Over 75% or more of the funds go directly to building “retail shop in a box” butcher kits in for participating schools, funding pigs for them to sell at events, and they keep the proceeds. CONSUMERS ARE SIGNING UP What exactly are the main benefits of the Cochon Chef’s Course program? Chef’s Course is a complimentary tasting portion (3-4 bites per person) served to the a cardmember and guest as a gift. Chef’s Course is always a surprise, delivered at the discretion of the chef -- typically a by product of a daily special, inspired by the moment and utilization of surplus ingredients on hand. The timing is up to the chef. The portion size and timing is at the chef’s dissection, it could be an amuse, a half-sized appetizer or a 3-bite mid-course tasting portion per person. It could be a shared salad for the table, a demi-cup of soup on a cold day and, if the table orders aggressively (i.e. a ton of food), a chef may choose to enhance their experience even more.
